Memorial Day Weekend Events
M
emorial Day Weekend is the official kick-off to summer! Here is a listing of parades, ceremonies, events, and services going on along the North Shore. Have a wonderful weekend and remember, Memorial Day is a day to honor those who have died while serving this great nation. WINNETKA: Memorial Day Parade and Ceremony The Winnetka Park District and the Village of Winnetka invite residents to the annual Memorial Day Parade on Monday, May 30. The Parade begins at 10 a.m. on the corner of Glendale and Elm, and ends with a ceremony at the Village Green. In case of rain, an indoor ceremony will be held in the auditorium at the Skokie School. WILMETTE: Memorial Day Parade The Memorial Day Parade will take place on Monday, May 30 beginning at 10:30 a.m. at St. Joseph’s, head east along Lake Avenue, south on Park, and east on Central and will end at the intersection of Continued on PG 12

eading into Memorial Day weekend some people look forward to the pool opening, others head down to the beach if it’s warm. But for many, it’s all about food. While Memorial Day marks the unofficial start to summer, it is also marks the beginning of grill season. Sure, people grill year-round these days. But nothing says summer like firing up the grill and entertaining in the backyard. Let’s face it, grilling in the winter just isn’t the same. But cooking over an open flame can present challenges. The North Shore Weekend spoke with local butchers from all over the North Shore who shared expert advice on all things meat-related. “We always give people tips. The biggest tip is to pay attention,” said Gail Ferrari of North Shore Meats & Deli in Wilmette. Sean Hofherr, owner of Hofherr Meat Co. in Northfield, recommended having everything on hand — the French call this mise en place. The idea is that you’ve got everything ready before you fire up the grill so that you don’t need to keep running into the house to get something. Hofherr keeps a sturdy grill brush on hand to keep the grill clean and prevent flair-ups, a nonstick grill spray, spring-loaded tongs with a long handle and basting sauce. And don’t forget the cold beer. He also makes sure that he has a plate to move the meat to in the event of a flair-up. Domenic Poeta, owner of Poetas Food Market in High-

wood recommended not grilling too high, and also advised against closing the grill lid and forgetting about it. He likes to check the grill every minute or so. Hofherr’s rule of thumb is close the lid if the cut of meat is thicker than the palm of your hand — if it is thinner, keep the lid open and be attentive. But what’s the best cut of meat to buy? What to grill depends on various factors, such as how many
people are coming, whether you want to cook the food ahead a time and personal taste. That said, each shop has its own favorites and can recommend unconventional cuts of meat most customers may never have heard of. Joe Spero, owner of Al’s Meat Market in Wilmette, recommended a bone-in sirloin. He said the cut is typically two to four inches thick, great for larger groups and has a lot of
flavor. Spero is a minimalist when it comes to flavor — he recommends a hot grill, and salt and pepper. Hofherr recommended a cut called the sirloin flap, which is similar in texture to a skirt steak, but has bigger bang for the buck and a robust, beefy flavor. Hofherr said the sirloin flap tends to be leaner than a skirt steak, which comes from the diaphragm, and recommended marinating in
advance. Dave Zier, owner of Zier’s Prime Meats & Poultry in Wilmette, recommended a flat iron steak, which looks like a flank but has more marbling and doesn’t need to be marinated. “It’s about the beefiest and most flavorful cut,” he said. LOan FundamentaLs: What Is a mOrtGaGe? Mortgage is the term collectively used by most people when they refer to a loan used to buy real estate. This can be misleading, in that these securities are not always mortgages, but deeds of trust. A true mortgage is a written contract that specifies how the property will be used as a term of security for the loan. In these contracts, the primary mortgage lender will usually have a first lien on the property, giving the lender priority over all other lien holders, with the only exception being a tax lien. In a true mortgage contract, all due taxes must be paid prior to closing and the mortgager (borrower and buyer of real estate) is required to pay into an escrow account specifically earmarked for taxes and insurance, thereby protecting the interests of the primary lender. In these contracts, however, the title of the property is in the name of the mortgager, not the lender; should the mortgager default on the loan, the lender (mortgagee) is required to foreclose on the property in court. If the court approves the action, the property is sold to the highest bidder. A deed of trust differs from a mortgage in that it gives the title to a neutral third party (trustee) who is partial to neither the interests of the borrower nor the lender. In these contracts, the lender is the beneficiary; should the borrower (trustor) default on the loan, the lender then asks the trustee (neutral third party) to foreclose on the property. Following the procedure set forth in the deed of trust and adhering to state laws and regulations, the trustee then forecloses on the property. Lenders prefer deeds of trusts over true mortgages for the provision of security in the event of a defaulted loan due to their quicker and less costly method of foreclosure. The ease and security of deeds of trust has not weakened the state of mortgage contracts. Mortgages are still the prevalent security instrument in many states whose laws and regulations favor the specifications of mortgage contracts. These states are called lien theory states. States whose legal regulations favor deeds of trust are referred to as title theory states. Other states have adapted their legal structures to an intermediary approach, which grants security to both the borrower and the lender in cases of default. The intermediary approach makes provisions for deeds of trust, but also requires the lender to provide a notice of foreclosure to the borrower prior to the physical repossession, allowing the borrower the opportunity to rectify the default. Before entering into any kind of real estate contract, discuss with both your Realtor® and your lender whether you live in a lien or title theory state, or if your state takes an intermediary approach. Though one never enters into a contract with the goal to default on the loan, it is important in today’s economy to be informed and well-prepared for the worst-case scenario.

powder, which Avale-Koryzna combines with commercial concrete at a 30/70 ratio. “I have a prototype of the concrete mixed with the plastic; it’s the same volume, same weight, you can’t tell the difference,” he says. “It has a little bit darker tone to it, but that’s it.”
So far, Avale-Koryzna’s been getting Fintercon’s plastic from specially marked bins he’s put up around DHS, turning his fellow students’ garbage into experimental concrete. However, he reached out to an organization called The Ocean Cleanup, currently working to intercept and collect plastic
pollution from the ocean on a massive scale. If Avale-Koryzna finds a way to expand operations, they’ll provide plastic they recover to Fintercon. Before he can expand, he needs to make sure the concrete with his plastic additive stands up to industry standard testing. Those tests, run through a Chicagoland area inspection lab are going to cost some serious money. More than Avale-Koryzna can raise through the part-time jobs he works when he’s not thinking up new enterprises. So far, he’s been seeking funding through the Contribute tab on the Fintercon website. “I don’t have the tools or the knowledge to test these things, like slump testing, freeze and thaw cycles, and a bunch of other tests. I can’t do that. I need to raise money to get the professionals involved,” Avale-Koryzna says. “This thing can change the world. driving along the Edens, north of Willow Road and a Bald Eagle flew in front of your car, rising from the Skokie Lagoons, crossing the highway, heading who knows where. You saw it. Then it was gone. But you didn’t get it wrong. That bird with its dark body,
bright white head and white tail is not only huge, it ’s unmistakable. Yeah, you saw it. It was out of its usual habitat and in our civilized North Shore. And you think: hey, it’s a free country. Why shouldn’t this bird go anywhere it wants? Especially this bird.

During their annual spring luncheon, “Planting a Foundation for Education”, supporters of the Lake Forest High School Foundation enjoyed a day of friends and fundraising at a private club in Lake Forest. Co-chaired by Molly King and Lauren Kuetemeyer, the day featured lunch, as well as a twist to the traditional silent auction. Guests present at the luncheon and supporters not at the event were allowed to bid online at a vast array of great items. Funds from the luncheon will go on to support the LFHS Foundation’s mission to enhance teaching curriculums within the high school. In the past 13 years, more than 150 grants have been provided, totaling more than $1.6 million.

Aidan Ritzenthaler — Loyola Academy’s record holder in the pole vault — still trying to go higher and higher BY BILL MCLEAN, SPORTS@NORTHSHOREWEEKEND.COM
T
he best boys pole vaulter in Loyola Academy history had just won a sectional championship at the Ramblers’ home facility. The champ, a firsttime state qualifier, is not smiling. He is not frowning. The champ politely answers questions about his 14-feet-7 first-place effort and his school-record 15-feet clearance and the boy he is convinced will reduce each of his indoor and outdoor school marks to No. 2 status in the next year or two. “Not satisfied,” Ramblers senior Aidan Ritzenthaler, a Wheeling resident, says. That 15-0, accomplished on April 16 at the Bartlett Flyin’ Hawk Invitational, satisfied him. So did the series of 16-feet feats he had achieved at practices. A 14-7, at the Class 3A Loyola Academy Sectional on May 19? Not satisfied. Ritzenthaler wanted to go higher than that in the meet before the Class 3A state track and field meet in Charleston (May 26-28). Most pole vaulters at the prep level would trade a 14-7 height for their first car. Aidan’s brother, sophomore Declan Ritzenthaler, went a personal-best 14-1 at the sectional, good for runner-up honors and his first state berth. Aidan’s 14-7 ranks eighth among Class 3A state-qualifying vaulters. “He’s a lot stronger than I am,” Aidan says of the 5-foot-10, 160pound Declan, a football player (defensive back) when he is not tackling one of the most challenging events in track and field, maybe in sports. “I have more pop on the top end, but he bends the pole a lot more than I do. “He’ll break my records,” the champ adds. Aidan’s tone is a matter-of-fact tone. The University of St. Thomas (Minnesota)-bound pole
Ritzenthaler. The brothers drive to school together. Their conversations in the car each day, to and from Wilmette, range from pole vaulting to … pole vaulting. “We talk about it nonstop,” Declan admits. Ryan Gibbons is in his 20th year of coaching pole vaulters at Loyola Academy. Coaching one Ritzenthaler is a treat. Two Ritzenthalers? Luxury. Luxury. “Both are very focused, very competitive,” Gibbons says. “They challenge each other, and they work hard. Aidan is more serious than Declan is. Declan is a little goofier. “I had never had two pole vaulters with this much talent on the same team. It’s impressive; they’re impressive.” Notable: Loyola Academy finished eighth (34.5 points) at its Class 3A track and field sectional on May 19. ANOTHER EPIC BATTLE Davidson, Barr supply wire-to-wire drama in sectional 3200 meters BY BILL MCLEAN, SPORTS@NORTHSHOREWEEKEND.COM
T
hey sped toward the finish in the 1600-meter run, neck and neck, a couple of Highland Park High School teammates about to record personal-best times. It was early May. It was the Lake County Meet, held at Antioch High School. Giants senior Brett Davidson finished second, with a time of 4:24.41. Shortly after starting his deceleration beyond the finish, he turned and … caught a Giant. The exhausted teen in his arms was Jonathan Rosenfeld, the thirdplace finisher, with a time of 4:24.9. Neck and neck had become chest to chest. “It was good thing Brett did what he did then,” Highland Park boys track and field coach Steve Buti recalls. “That race by Jonathan, what a breakthrough, a huge breakthrough. He would have probably collapsed and fallen had Brett not been there for him. “That was a cool moment,” the coach adds. “It showed that Brett isn’t just focused on his times, on his finishes. Brett cares a lot about his teammates. Brett was there for his teammate. Brett was the first to congratulate Jonathan on a great time.” Davidson found himself in another neck-and-neck situation last week, this time in the 3200 run, this team at the Class 3A Loyola Academy Sectional in Wilmette, this time against Villanova-bound and Niles North senior Martin Barr. Rivals. Respectful rivals. Appreciative rivals, each thankful for the presence of the other at big meets. You push me. I’ll push you. Davidson, sporting a neat, close-cropped head of hair, took the lead and kept it, barely, for the first six laps of the eight-lap journey on May 19. Mop-haired Barr inched ahead in the seventh lap and maintained the edge, barely. Davidson wore hot pink socks, a gift from girlfriend Veronica Kriss, under his see-through spikes; Barr did not. They hustled toward the finish, hip to hip. They completed the 3200 meters. Another close one.
Davidson, a Norwood Junior High School product, did not take track seriously until his freshman year. The son of a marathoner/ cyclist (Kara) and a former soccer player (Paul) saw the top HPHS varsity runners run in 2013. He saw how they trained. He could see himself settling in nicely as a track guy. Davidson, though, did not settle for settling. He threw himself into distance races, his times steadily melting. He began to thrive as a track guy. The team aspect appealed to him, too. Junior Charlie Skurie was a freshman distance runner when Davidson was a sophomore distance runner. Davidson welcomed Skurie to the world of high school track and dispensed advice in 2014. It’s what seasoned athletes are supposed to do for their new teammates, Davidson probably thought. To Skurie? It was a big deal. “It was nice knowing he cared,” Skurie recalls. “Brett is one of the most dedicated guys I know. Everything he does is planned out perfectly. The way he trains, the amount of time he puts into training … amazing. He’ll run before school if he needs to, after school if he needs to, and he’ll do whatever he has to do to make sure he’s prepared to compete. J
ohn Brumund-Smith is never quite sure where things might go conversationally, when he huddles with his high-spirited and highly talented sprint corps. Those pre-race chitchat sessions on the infield grass can get a little wacky. They can get kooky. Unpredictable. They can go in a lot of different directions. What’s said in a Lake Forest High School relay huddle stays in a Lake Forest High School relay huddle. “You just never know what’s going to be said,” Christopher Meng says. “Shenanigans,” adds Jonathan DiValerio. “There are always shenanigans.” Brumund-Smith, resident fun guy and head track and field coach for the Scouts, says there are “no boundaries” with this group. And you get the feeling that Brumund-Smith wouldn’t want it any other way. He likes his sprinters loose and loquacious. “They’re fun. They’re goofy,” the coach says. “They’re a bunch of jokesters. “It’s better to go into a race that way than to be super nervous,” Brumund-Smith, a former sprinter and relay runner, adds. Besides, these guys can get serious in a snap. Put a baton in their hands and the smiley face goes away. Business is business. They exchange thoughts, feelings and ribbings about as well as they exchange handoffs. On May 19 at the Class 3A sectional at Loyola Academy, LF’s heralded sprint contingent — featuring Meng, DiValerio, Quinn Julian, Matthew Mick and Matt Begley — turned in three wildly good performances. It all started with a first-place finish in the 4x100 relay (42.15), when the foursome of Mick, DiValerio, Meng and Julian caught batons darn near perfectly and blasted right past two higher seeds in Wheeling (42.76) and Evanston (43.03). “Our guys are perfectionists

when it comes to handoffs,” says Brumund-Smith. “And that’s how you get people.” Smashing records has been a common theme. Thus, no one in the LF camp was surprised, when Meng, Begley, Mick and Julian teamed up to break their own school record in the 4x200 relay with a 1:28.11 clocking. They beat the state cut (1:29.34) but not top-seeded Glenbrook North (1:27.76). The Scouts also qualified to state in the 4x400 relay by smashing their own school record. Meng, DiValerio, Julian and Mick cruised the four laps in 3:20.30 to
earn runner-up honors behind Evanston (3:18.82). There’s work still to be done. The school record in the 4x100 (42.06) has eluded them — thus far. The Scouts hope to rectify that on the bright blue oval at Eastern Illinois University in downstate Charleston, when the state meet commences this weekend. “It will be a fast track,” says DiValerio. “We’ll be gunning for it.” Having the Mighty Quinn — Julian — anchoring the 4x100 and 4x200 definitely is working in LF’s favor. The senior knows how to get to the finish line. He knows
how to take it to the house. As a star running back/receiver/kick returner for the LF football team in the fall, he scored 30 touchdowns. Meng also proved that he could be trusted with the pigskin. He joined Quinn on the all-North Suburban Conference football team. The senior, who is headed to the University of Iowa, is even more sure-handed with a baton. The leadoff role has been a good fit for Meng, especially in the 4x200 and 4x400. “I get out of the blocks pretty well,” says Meng, who also took fifth in the long jump (personal
best 21-2) at sectional. “We spent the season figuring things out,” he adds. Mick, a soccer player in the fall, gave up a chance at individual glory — he beat the state cut in the 400 meters (50.13) with his fourth-place showing (49.82) at the Lake County Meet on May 6 — to concentrate solely on the relays. “Mick is pretty dang fast,” says DiValerio, a defensive back on LF’s football team. “The kid is a freak in the 400. He’s having an insane season.” “Yeah, the football guys let me,” says Mick, cracking a smile. “They
let Begley [a starting guard on the LF basketball team] in, as well. “I love these guys,” Mick adds. “We’re just competitive guys who love to run. We push each other to get faster.” The camaraderie thing has been special. And it comes complete with a nickname. “Everyone knows us as The Squids,” Mick says. “I really don’t know how that came up.” But it has stuck. According to DiValerio, the moniker can be traced back to a fellow sprinter, junior Chase Horvat. “In football, the defensive backs were known as The Sharks,” says DiValerio. “He wanted [the sprint corps] to have something similar.” “It unique. Random. Kind of funny,” says Meng. And, of course, BrumundSmith is all in. “It’s a clique,” he says. “But it’s a very inclusive clique.” One of the other members of this ‘clique’ is senior Gavin Hoch. The senior qualified to state in two events: 110 hurdles (3rd, 14.71) and 300 hurdles (2nd, 39.01). His efforts at Loyola were gutsy, considering that he continues to deal with a hamstring injury. The Iowa recruit hasn’t practiced since the first outdoor meet. “He’s significantly the fastest kid in the bunch,” says BrumundSmith. Which definitely is saying something — with this group. Notable: The Scouts placed third (51 ½ points) behind Evanston (85) and Prospect (80) in the 16-team field at Loyola. There were some tough moments. Senior distance ace Mark Myers took fourth in the 3200 (9:27.76) and missed the state cut by three seconds. … Senior Stephen Mathew, a state qualifier last year, finished in a tie for fifth in the high jump (5-11). He needed a 6-3 to advance. Sophomore Landon Edwards took fourth (6-1).

t was easy to root for New Trier senior Ricky Mayer, Wyatt Mayer’s twin brother, at the Niles West tennis sectional last weekend. Wyatt had entered sectional action as a two-time state doubles qualifier, both times with Thomas Hanley (Class of 2015, current freshman netter at the University of Redlands in California). Ricky? He had entered sectional action last weekend as a Trevian looking for his first state berth. Trevians tennis coach Tad Eckert paired Ricky in doubles with … Wyatt. Brothers in arms, holding rackets. Ricky and Wyatt Mayer, partners at various points during the regular seasons, captured the sectional doubles championship without dropping a set in four matches on May 21. They beat duos from North Shore Country Day and Niles West in the first two rounds and solved Loyola Academy’s No. 1 doubles team in a semifinal and LA’s No. 2 pair in a 6-1, 6-0 final. “They’re hungry to play, espe-
cially Ricky,” Eckert said. “Wyatt, in general, is a pretty excitable guy. Ricky has positive energy. Their best attribute, together, is a high energy level. “Wyatt,” he added, “is a finisher, more dynamic than Ricky. Ricky can be a pest, and I mean that as a compliment. Ricky is that steady guy, that grinder type of player. He’s also curious. He asks questions, a ton of questions, probably more than the other guys on the team ask, combined.” No need to question the Mayers’ doubles mark of 19-4. They defeated teams from Highland Park, plus a Hinsdale Central pair and a Glenbrook South pair and a Lake Forest High School pair. Steepedin-tennis-tradition schools, all of them. Just like New Trier. The Mayers should earn a state doubles seed, no lower than 9-16. “The first few matches at state can be really nerve-racking, because you’re playing for the team, thinking about the team, and you want to get points for the team,” said

LA (16 points) finished runner-up to New Trier (32) in the team standings at Niles West last weekend.

A
girl named Grace sits in the back row of a statistics class at Indiana University, circa 1984. It is easier to survey the crop of boys from that location. Grace and a classmate learn a boy named Chris, sitting in the front row, is acing the class. Grace is doing Bminus/C-plus work in the class, good but not good enough in her mind. Grace and the classmate end up flanking Chris in the front row. Grace and Chris become study partners. Grace gets an A-minus in the class, gets into IU’s business school and works in investment banking for several years. “He completely changed my life,” Grace, a native of Ohio and a resident of Wilmette, says. “Chris tutored me, taught me how to study. Great teacher. Gentle, very patient, my best friend.” They are still best friends, Grace and Chris. They are also husband and wife. Grace Wright is sitting at a table at Fuel in Wilmette, having ordered Genny’s Benny — marinated portobello, spinach, oven dried tomatoes, poached eggs and Hollandaise. It is 2016 again. The mother of four had a blast reliving parts of her sophomore year at IU and sharing them with a breakfast partner/note taker. It is clear her daily disposition is like a typical Palm Springs forecast: sunny and pleasant, with a zero percent chance of rain. “On our first date,” she adds, “we
saw The Big Chill.” How fitting. Their children — Maggie, now 26, Caroline, 23, Nick, 21, and Emma, 18 — played serious ice hockey for Loyola Academy teams. Maggie helped LA capture a state hockey championship in 2004. Emma skated for the Ramblers’ 2016 state title team. Caroline also starred on LA lacrosse and field hockey teams. Nick ditched the hockey stick and wielded a lacrosse stick for two Division I seasons at College of the Holy Cross in Massachusetts. Their mother, in early April, received a BMO Harris Bank/Chicago Blackhawks Volunteer of the Month Award at United Center. Grace Wright wore a No. 12 Loyola Academy hockey jersey for the on-ice ceremony, the number representing the number of years she had served on the Loyola Academy Hockey Board. “I never played hockey,” Grace says. “My husband never played hockey. Date night for us, though, was whenever one of our kids played in a Loyola hockey game. Chris ran the clock; I took care of the score sheet. So many games, so many dates. Hockey … it’s such an empowering sport. It has done so much for our girls beyond their experiences on the ice. “Maggie,” she adds, “was 12 when she decided to try the sport. She made a team. She wasn’t the best skater, wasn’t the best player, but guess what she did? She scored the winning goal [in a shootout] in a championship game. Today I consider her a Renaissance woman.
We named Maggie after my grandmother, Sarah Margaret, who could open up a refrigerator and make a great meal using only celery, cream cheese and pickles.” Grace inadvertently knocks her fork off the table at Fuel but catches it before it hits the floor. Her reflexes are hockey-goaltender quick. She cracks another smile. She returns to discussing her favorite topic in the world, her children. Nic k’s shoe size grew from 9 to 13 in 11 months. She re-
members those numbers years later because she had to donate Nick’s shoes practically every other month for nearly a year. Seattle Children’s
Hospitalbound Maggie is set to graduate from Northwestern University’s Feinberg School of Medicine. Five
days later, on May 28, Emma will graduate from Loyola Academy. At each ceremony Grace will blink and spill teardrops, the proud kind. Wright splashes paint on canvas every Thursday at Winnetka Community House, her method of choice usually gouache, “like watercolors with a little chalk,” she explains. Wright was an artist in Gates Mills, Ohio, well before her first day of classes at Mayfield High School, located east of Cleveland. She learned calligraphy at a young age. Her very first Christmas card design featured a little girl and a dog. Her parents made copies of it. The cards landed in mailboxes of loved ones. She was in her 30s when she created the cover illustration of an author’s selfpublished book. The Wilmette Park District l o g o ? Wr i g h t crafted it. The Loyola Academy hockey logo? Wright’s work. Her painting of Wilmette Harbor at sunrise hangs in her husband’s study. The Wrights’ current home is their second in Wilmette, after stops in Evanston and London.

Grace and Chris, a pair of business school graduates, designed it top to bottom some two years ago, proving numbers people can be inventive people, too. Now that her youngest child, Emma, played in her last game in a Loyola Academy hockey uniform, Grace Wright will no longer be a fixture — sometimes shivering, always smiling — in between benches during LA games. Mr. and Mrs. Wright will have to come up with something else to do on date night. Time for an entirely different shift. The nest will be empty, too quiet. Grace will stay busy. She is a trained Minister of Care, offering compassion and prayer and Holy Communion to nursing home residents and hospice patients. Emma has watched her mother comfort folks in their final days. “It has impacted her,” Grace says. “She understands people so much. I see Emma getting involved in a non-profit after her college years. I see her running one. Nonprofit organizations need good people who also have a strong business sense. Emma will touch other lives. Touching other lives … that’s why we’re all here, right?” Emma got accepted into Indiana University’s Kelley School of Business. Another Wright in Bloomington, Indiana. Chris Wright, several years ago, wrote “The Top 10 Keys to Succeeding in College” for his children. Grace Wright doesn’t recite all of them. Just one. “ ‘Sit in the front row in class,’ ” she says.
