In the series of these 3 posts, we will be looking at the tips and precautions to be taken in the three major steps of cake making namely preparation of batter, baking and decoration. Today, we will be looking at the first step i.e. the preparation of batter. Here are some of the things you need to keep in mind while preparing the batter:Preparations- Before you start preparing the batter, heat the oven and ensure that there is a middle shelf left in it. Line and prepare the tins. Ensure that the eggs are at room temperature and the butter is soft without being greasy. Creaming- Creaming is the process of mixing sugar and butter in order to make it light & fluffy and trap air This can be done with a hand mixer or an electric one. Beating- Beating eggs into this mixture traps even more air making it fluffier. However, you need to proceed with extreme caution as beating eggs in a wrong way may lead to splitting of the batter making it hard. Add the eggs one-by-one to the sugar- butter mixture and beat it till the egg is completely incorporated. Repeat the process till all the eggs are finished. After finishing all the eggs, the mixture will become light and fluffy one. However, if it looks slimy, just add 1tbsp of all- purpose flour and beat it again. The fluffiness will recover. Folding- Add a raising agent like baking powder in the flour as it will help in the process of baking later. Add this flour gradually to the mixture and fold the batter making the shape of the digit 8. For folding, try to use a metal spoon or rubber spatula as using a wooden spoon can crush your carefully crafted bubbles. Remember that you should not beat the batter hard and just fold it.
Maintaining the Consistency- Consistency refers to the fluidity of the batter you have prepared. Ideally, a teaspoon of batter should fall into the tray when given a slight shake. If your batter is highly viscous, add 1 tbsp of milk and fold it again. This will make it more fluid and your batter will be ready to be baked. Following these simple steps can improve the batter which will consequently improve the taste of your cake as preparation of batter is the base of the art of cake making.
