SANTA CLAUS PARADE returns to downtown Kamloops
A
fter the pandemic left him and his reindeer parked at the North Pole, Santa Claus is back in Kamloops this year. Following a one-year hiatus, the Santa Claus Parade will return to downtown Kamloops. The annual event hosted by the Kamloops Central Business Improvement Association includes community floats and a visit from the Jolly Old Elf in a red suit. It will take place on Sunday, Nov. 28. In years past, Kamloops residents lined Victoria Street in order to catch a glimpse of Santa and other community members, who put countless hours into decorating their parade floats and getting dressed up for the occasion. Last year’s event, however, was cancelled amid the COVID-19 pandemic. The event takes This year, the KCBIA confirms the event — the 41st annual parade — will be back bigger and better than ever. The theme of the parade this year is Luminous Loops. With parade festivities getting underway in the late afternoon, participants are being asked to utilize lights in creative ways. Parade floats this year are to be illuminated with lights and feature props, movement, costumes, colour and music. Participants who are walking are also being encouraged to wear battery-operated lighting to add to the ambiance. The event takes place at dusk and the hope is Christmas lights will provide a uniquely festive holiday atmosphere.Wake Up Santa starts at 4:10 p.m. and the parade begins at 4:30 p.m. Floats will travel along Victoria Street from Second Avenue to Sixth Avenue. Bands and performers will also be featured along the parade route. Thompson Rivers University is the event’s title sponsor. Bundle up the kiddies, grab a cup of hot chocolate and head on down to one of the first community events to return in the city amid the pandemic.

From theatre to dog sledding and more, KTW compiled a list of activities, for those who want to join in some seasonal merriment. • Volunteers at the Overlander Ski Club have been busy getting the trails in order, in anticipation for another busy year. WILDLIGHTS TO RETURN TO BC WILDLIFE PARK Annual event sees animal light displays set up throughout the park in East Kamloops
A
lthough planning and approvals are still underway, Wildlights is set to return and once again welcome guests into the BC Wildlife Park. Last year, the light display event was cancelled in December after health guidelines changed to prohibit events. But since then, about 85 per cent of the province has received two doses of the COVID-19 vaccine. BC Wildlife Park executive director Glenn Grant said the biggest question that remains right now is whether or not the park will have to use the vaccine card system. He explained that, while the event itself is outdoors, the park is accessed through an indoor area. “But we’re basically an outdoor event, so how do the rules that are in place right now apply to us, and what do we need to do to move forward?” he said. Grant said he and his staff are meeting to determine next steps, which will include consulting with Interior Health and the Provincial Health Office.

Last year, the park was able to operate during its normal business hours, with a thousand people moving through the park. “And then, after closing, we wanted to re-open at five o’clock for an event, but we couldn’t because it was classified as an event,” he said about the 2020 attempt at Wildlights, which ultimately became a virtual event. Grant said the park has remained a safe place to visit and all existing protocols will remain in place to keep visitors and staff safe. In the wildlife park’s case, that also includes a vaccine mandate for its staff. “We have a mandatory vaccination policy. Right now, 100 per cent of our staff is vaccinated,” he said. Grant said he is also planning more online booking, in order to keep people out of lineups. Information on those tickets will be available on the park’s website. The event typically runs from mid-December to early January, and in the past, has seen upwards of 20,000 visitors through the park.

KTW CHRISTMAS CHEER FUND RETURNS TO SUPPORT CHARITIES Annual fundraiser raises money for the Y Women’s Emergency Shelter, Kamloops Therapeutic Riding Association, Chris Rose Therapy Centre for Autism and Kamloops Brain Injury Association

he KTW Christmas Cheer Fund helps to provide valuable financial support to a number of local nonprofit organizations every year during the holiday season. This year, four charities will be helped by your donations: Y Women’s Emergency Shelter, Kamloops Therapeutic Riding Association, Chris Rose Therapy Centre for Autism and Kamloops Brain Injury Association. New this year to the fund is its donation partner, the BC Interior Community Foundation. The fund has partnered with the BC Interior Community Foundation so more money can go to the charities. Receipts will be given for donations of $25 or more, with the foundation running the online donation portal, cutting cheques to the charities and writing tax receipts to the donors. Every year, Kamloops has embraced giving to the fund, from individuals to groups, it continues to grow each year. “The Christmas Cheer Fund is one of the most important things I think we do at Kamloops This Week every single year,” said Tim Shoults, operations manager of Aberdeen Publishing. “We tell the stories of the community all the time and we help other organizations raise funds, but this is where we are directly raising the funds for local charities and we get to put our money where our mouth is,” he said. “We get to put our readers’ money to great use in the community. It’s one of the things that makes me feel really, really good about being in community media. It’s something I’m so pleased has lasted through multiple papers over more than two decades.” For the BC Interior Community Foundation, the partnership with the KTW Christmas Cheer Fund is a great blend. “This, obviously, is the first time that we’ve played this role, so clearly we’re thrilled to be there and support not only KTW and its charitable endeavours, but to provide

the community with a tax-receipting means of showing their donations and support,” said foundation executive director Rob Miller. The BC Interior Community Foundation began as the Kamloops Community Foundation in 1984 with a core group of volunteers and the City of Kamloops. By the early 2000s, part-time staff were brought in and a process began in 2015 to ensure the mandate of its regional scope, including its service area beyond Kamloops to include the Thompson-Okanagan and South Cariboo areas. To better reflect the nature of that broad, diverse service area, it recently re-branded to the BC Interior Community Foundation. “We’re the most significant charity you’ve never heard of,” Miller said. “Everybody knows what a hostel foundation does or a food bank does. Our mission statement is a bit more complex. We do grant dollars to charitable organizations and sponsored non-for-profits. Sectors from health and environment, to youth and education, seniors, families, arts, culture — it’s all about championing community sustainability and community vitality.” Miller said the foundation likes to encourage the community to “give where you live” through the KTW Christmas Cheer campaign. 1 1/2 cups flour 1 tsp cinnamon 1/2 tsp baking soda 1/2 tsp salt 3/4 cup brown sugar 1/2 cup butter
1 egg 1/2 tsp vanilla 1 cup grated carrots 1/2 cup chopped walnuts 1/2 cup raisins

Grease cookie sheets. Combine flower, cinnamon, baking soda, salt in a bowl. Beat brown surgar and butter, till creamy then add egg and vanilla. Beat in flour mixture. Stir in carrots, walnuts and raisins. Drop tablespoon, size dough onto cookie pan. Bake 12 -14 minutes or until lightly brown.

5 ml baking soda 5 ml vanilla 2 cups flour 1 heaping cup of chocolate chips

Mix margarine, white sugar, brown sugar and eggs. Then add salt, baking soda and vanilla and stir. Finally, add the flour and chocolate chips until all is moist. Batch makes 15 cookies. DESSERTS Holiday Rainbow Cake 1 package (2 layer size) white cake mix 2 packages (3 ounce size) Jello 1 Raspberry and 1 Lime 2 envelopes of Dream Whip

Prepare cake mix as directed on package. Put in 2 greased and floured 9 inch layer cake pans, and bake at 350 degrees for 25 to 30 minutes. Cool in pans for 15 minutes. Poke each cake with a fork at 1/2 inch intervals. (do not remove from pans). Dissolve each package of jello powder separately in 1 cup boiling water. Pour raspberry jelly over one layer, and lime jello over the other. Chill 4 hours. Prepare Dream Whip as directed. Unmould one layer onto a serving plate, and top with 1 cup of the dessert topping. Unmould second layer onto the first. Frost top and sides with the remaining dessert topping. Chill

In a large bowl toss to liberally coat the sweet potato wedges with the emulsified balsamic-olive oil mixture. Arrange the potato wedges on the parchment paper lined pan in a single layer, without over-crowding. Sprinkle with sea salt and roast for 45 minutes until tender and the balsamic glaze has caramelized.

DESSERTS Traditional Cranberry Apple Pie 35 to 40 m

2 Pie Crust Shells 8-10 Medium-sized Apples 1 bag uncooked cranberries 1 cup Chopped Pecans 2 tsp Apple pie spice 2 tsp Orange Zest 2 tsp Cinnamon
Prepare cranberries as directed on the package and set aside. Peel and core the apples, enough to fill your pie shell in a thick layer. Add apple pie spice, orange zest, cinnamon and ½ cup of the cranberry mix to the apples. Stir on luke-warm stove until well mixed. Add 1 cup chopped pecans to the apple mix. Pour the cranberry/apple pie mix into pie shell so it is heaping in the center. Then take second pie shell and place on top. Press the edges together to secure, and take a fork to poke three spots in top of crust. Bake at 400 F for 35-40 min. or until crust is golden. Serve warm with whip cream or ice cream.

Magic Santa Cookie Bar
1 can EagleBrand milk 2 cups graham wafer crumbs 1 cup dried cranberries 1 cup flaked coconut 1 cup jet-puffed mini – marshmallows ½ cup chopped pecans ¾ cup melted butter ¾ cup while or semi-sweet chocolate chips

Makes 24 bars. Combine graham crumbs with butter. Press evenly onto parchment paper-lined 13” x 9” baking pan. Pour 2/3 can of Eaglebrand over crumbs. Sprinkle with pecans, chocolate chips, cranberries, coconut, and marshmallows. Press down firmly. Pour remaining Eaglebrand overtop. Bake at 350 F for 25 to 30 min or until lightly browned. (325 F for glass dish). Cool thoroughtly and cut into bars.

Chipits Cherry Jewel Bars
1 egg 1 ½ cup salted mixed nuts 1 ½ cup halved candied cherries 1 ¼ cup flour 1 cup semi-sweet chocolate chips ¾ cup softened margarine 2/3 cup b rown sugar ½ tsp salt
350º F
Combine flour with 1/3 cup brown sugar. Cut in margarine until mixture resembles coarse crumbs. Press mixture evenly and firmly into bottom on an ungreased 9” x 13” pan. Bake at 350 F for 15 min. Meanwhile, beat egg slightly in a large bowl. Stir in remaining 1/3 cup of brown sugar and salt. Add nuts, cherries, and chocolate chips. Toss mixture lightly to coat. Spoon fruit mixture evenly over the baked layer. Press firmly to adhere layers. Bake for an additional 20 min. Cool, then cut into 1 1/2” x 2” squares.

Makes 3 dozen cookies. Cream shortening with sugar. Beat in egg and almond extract. Combine flour, baking powder, and salt. Stir into creamed mixture. Mix in chocolate chips, coconut, and cherries. Drop from a teaspoon onto a greased cookie sheet. Bake at 350 F for 12 to 15 min.
