With summer right around the corner, the itch to get outdoors becomes difficult to ignore. Our family likes to make time each summer for a few camping trips and, since we have a toddler, I like to ensure our food is organized. I plan simple meals and prepare food before we go, trying to use certain foods in multiple meals and snacks, such as cheese, yogurt and bread, to save space in the cooler. Of course, we also pack less healthy snacks for around the fire, whether it’s making s’mores or passing around a bag of chips. But, like at home, I think it is important most of our food be nutritious.

PREPARE IN ADVANCE HERE ARE SOME FOODS OFTEN FOUND IN OUR CAMPING COOLER:

• Make and freeze whole grain muffins, pancakes or loaves. • Pre-measure bags of rolled oats with nuts, seeds and dried fruit to cook on the camp stove. • Hard boil eggs for protein at breakfast or lunch. • Cook rice, quinoa or pasta the night before you leave and eat it in the first couple of days. • Make and freeze chilli and/ or pasta sauce. It will act as ice in the cooler and keep for a couple of days.


• Freeze lean meats or fish with marinade in freezer bags so they are ready for the BBQ. • Make and freeze hamburger patties. Pulses are a dried crop with a high nutrition value and a long shelflife, and given their environmental benefits to soil, like nitrogen fixing, our love for these pulses is as much about their sustainability as it is about how they sustain us. India is the world’s leading consumer of pulses, enough so that the country can’t produce enough to satisfy demand. That’s where Canada comes in. Our country exports more pulses than any other in the world, and most of them are grown in Saskatchewan and Alberta. In fact, 75 per cent of the pulses we grow are for export, supplying one third of the world’s market. This is possible as a result of innovations in agriculture, like those from Bayer, that protect pulse crops from disease. From our prairie heartland, we ship them to 150 countries for feed, food and commercial ingredients. But India stands apart, receiving one in every four tonnes we export. As the world’s focus on staple foods shifts to the future, pulses are expected to take on a greater role in the diets of many developing nations. This is in part because of their nutritional benefits, but also because they have the potential to expand agriculture in those countries and create an export commodity for the local economies. This year is the United Nations’ International Year of Pulses, and when it comes to these affordable, protein-packed crops—which include lentils, peas, chickpeas, dry beans and faba beans—no nations could be more united than Canada and India.

Summer is heating up and many of us are thinking about heating up the barbecue — especially for entertaining. If you need a little refresher before your guests arrive, here are some helpful tips, each one designed to turn up the heat on your next barbecue:

• Prep in advance. To ease last minute anxiety, marinate meats, assemble side dishes and chop any fruits or vegetables you’ll need beforehand.

• Transform the basics. Go beyond ketchup and mustard and offer an assortment of cheeses, roasted veggies, hot sauces and other garnishes.

• Plan your menu. Have a list ready before you leave for the store so you don’t forget burger buns or any condiments.

• Provide entertainment. Classic backyard games like horseshoes or badminton, cards or even a fun music playlist can liven up your backyard bash.

Sundried Tomato Spread How about a fresh, homemade spread to tantalize your guests? This is a quick and easy appetizer to serve with pita or even use as a topping on your burger Total time: 5-10 minutes INGREDIENTS: • 1 1/2 cups roasted pumpkinseeds • 3/4 cup grated parmesan cheese • 1/4 cup sundried tomatoes in oil • 1/4 tsp black pepper • 8 large fresh basil leaves • 1/2 cup extra virgin olive oil

INSTRUCTIONS: Place pumpkin seeds, parmesan cheese, sundried tomatoes, pepper and basil leaves into a food processor. Pulse for a few seconds to blend. Add olive oil in a slow stream while blending, until desired consistency is obtained. Remove from processor, place in serving bowl and chill until ready to serve.
