Cookies Homemade Oreo Cookies Mix cookie ingredients together well. Mix icing ingredients together until creamy. Roll cookie dough into small balls and place on cookie sheet pan. Bake 175C/350F for 8-10 minutes. Dough will flatten as it bakes. Wait until cookies are cooled and place icing between cookies.

Everything Cookies Ingredients
• 1 egg • 1 cup flour • 1 cup coconut • 3/4 cup chocolate chips • 3/4 cup dried apricots • 1/2 cup finely chopped pecans
• 1/2 cup shortening • 1/2 cup sugar • 1/4 cup brown sugar • 1 tsp of vanilla • 1/2 tsp of baking soda • 1/4 tsp of salt
Whipped Shortbread Ingredients • 1 1/2 cups flour • 1 cup butter • 1/2 cup icing sugar
2 DOZEN COOKIES
Beat shortening with 1 egg, sugar, brown sugar and vanilla. Add flour, baking soda, salt, chocolate chips, dried apricots, coconut and chopped pecans. Drop by tablespoons on a slightly greased cookie sheet.
Combine ingredients and beat for 10 minutes. Drop teaspoon of batter onto cookie sheet. Bake at 175C/350F for 10 - 12 minutes or until bottom turns light brown.

Cookies Cappuccino Crinkles Beat butter in a large mixing bowl with an electric mixer on medium to high speed for 30 seconds. Add the brown sugar, cocoa powder, coffee granules, baking soda, and cinnamon. Beat until combined, scraping sides of the bowl occasionally. Beat in egg whites and yogurt until combined. Beat in as much of the flour as you can with the mixer. Stir in remaining flour with a wooden spoon. Place granulated sugar in a small bowl. Drop dough by heaping teaspoons into sugar and roll into balls. Roll again in sugar. Place balls 2 inches apart on an ungreased cookie sheet. Bake at 175C/350F for 8 to 10 minutes or until edges are firm. Transfer cookies to wire racks and cool. SUBMITTED BY

Ingredients: 3 lbs. 3 tbsp. 1 1/2 c. 3/4 c. 2 c. each 1/2 oz. 1 head

Beef Chuck, cut into 2” pieces olive oil, divided chopped onion each chopped carrot & celery Red Wine & beef broth dried porcini mushrooms, rinsed garlic, top third of bulb removed
Method:
4 sprigs ea. flat leaf parsley & thyme 2 bay leaves Salt and pepper GARNISH 5 slices 10 oz. 8 oz.

Heat oven to 300’F. Season beef with salt and pepper. Heat half the olive oil in Dutch oven. Working in batches, brown beef. Add remaining oil as needed. Transfer to bowl. Add onion, carrot and celery; cook until softened. Return beef to pan, add red wine, beef broth, dried mushrooms, garlic parsley, thyme and bay leaf. Bring to boil. Cover, and bake 2 1/2 to 3 hours. Meanwhile, cook bacon; set aside and discard all but 1 tbsp. fat. Add pearl onions; cook 5 minutes and add mushrooms and cook until browned. Stir in bacon, When ready to serve, stir into stew. Sprinkle in parsley. Serves 6

Do not overcook! From our family to yours, we wish you all a very Merry Christmas and a prosperous New Year. It has been a family tradition for many years to read “T’was the night before Christmas” every Christmas Eve. Even as our children have grown, we still pull the book out and sit by the fireplace to read it together. • 10 oz of frozen chopped spinach • 1 cup sour cream • 1 cup mayonnaise
• 3 green onion chopped • 1 can water chestnuts chopped • 1 rounded • 1 package of vegetable soup mix sourdough bread
Combine all ingredients and mix well. Chill in refrigerator for 2 hours. Put in hollowed out sourdough bread. Serve with small chunks of sour dough bread or crackers for dipping. SUBMITTED BY

• 8 oz. sour cream • 8 oz. softened cream cheese • 1 cup grated cheddar cheese • Salt to taste
• 1/2 cup finely chopped green onion • Garlic powder to taste • 5” - 10” flour tortillas

Preheat oven to 305ºF (175ºC). Prepare muffin pans. Combine flour, sugar, baking powder and salt, cut in margarine until mixture resembles coarse crumbs. Beat together 1 egg and milk and stir into dry ingredients/ Turn dough out onto a floured surface and knead lightly about 9-10 times. Roll out dough into a rectangle about 1/4” thick. Brush with beaten eggs, sprinkle with sugar and glazed cherries and roll up like a jelly roll starting from the long side. Cut into 1 1/2” slices. Place slices cut side down into muffin

Appetizers Baby Cheddar Tarts Cream cheese pastry: Beat margarine and cream cheese in medium bowl until smooth and light. Add flour, mix well. Roll into long thin log. Cut into 24 slices, and press into mini tart pans to form shells. Filling: Divide cheddar cheese evenly among tart shells. Beat egg in small bowl until frothy, add milk, onion salt and salt, mix well. Spoon into tart shells over the cheese. Bake at 175C/350F for 20-25 minutes until set. Makes 24 tarts.

Press mixture evenly and firmly into the bottom of an un-greased 15 x 10 x 3/4 inch jelly roll pan. Bake at 175C/350F for 15 minutes. Meanwhile beat egg slightly in a large bowl. Stir in the remaining 1/3 cup of brown sugar and salt. Add nuts, cherries and chips. Toss mixture lightly to coat. Spoon the fruit mixture evenly over the baked layer. Press firmly to adhere layers. Bake an additional 20 minutes. Let cool and cut in 1 1/2” x 2” bars SUBMITTED BY

Cocktails Champagne Cosmo Combine the cranberry juice, Grand Marnier, and lime juice in a small pitcher and mix well. Divide the juice mixture equally among 8 Champagne flutes. Top each flute with the sparkling wine (depending on the size of your flutes, you may not need all of the wine). Serve immediately. Great drink before dinner or while you enjoy the first course.

• 6 large eggs separated • 1/4 tsp salt • 1 1/4 cups whipped cream • 2/3 cup sugar divided
• 2 cups milk • 2 1/2 cups light cream • Nutmeg • Rum or Rye
Beat egg white and salt until frothy, gradually add 1/3 cup sugar, beat till stiff peak. In another bowl beat egg yolk until light. Gradually add remaining sugar, beat until thick. Very slowly add light cream and milk, beat constantly. Whip cream until softly stiff; beat egg white until stiff. Gently fold whipped cream and meringue into egg cream mixture. Chill thoroughly. Melt chocolate and peanut butter in microwave. Stir often to mix well. Add all remaining ingredients and stir until coated evenly.

Dessert Sugar and Spice Pumpkin Pie Heat the oven to 325°F. In a large bowl, whisk the pumpkin, eggs, egg yolk, cream, and brandy. In a small bowl, mix the brown sugar, ginger, cinnamon, salt, nutmeg, pepper, and cloves. Whisk the sugar mixture into the pumpkin mixture. Pour the filling into thawed pie crust. Bake until the pie is set around the outside but still slightly wet and jiggly in the center, about 1 hour. The filling will continue to set as it cools. Let the pie cool completely on a wire rack and then refrigerate for at least 2 hours and up to 2 days before serving. Make the cream just before serving. Whip the cream with an electric mixer on medium-high speed until it forms very soft peaks, about 2 minutes. Add the sugar, ginger, and brandy and continue whipping until it forms medium-firm peaks, about 30 seconds longer. Dollop in the center of the pie, leaving a band of filling visible around the edge of the pie, or dollop on individual servings. SUBMITTED BY

Dessert Key Lime Pie Whisk egg yolks & zest together for about 2 minutes, whisk in condensed milk till smooth then add lime juice and mix till smooth. Set aside at room temperature for 30 minutes. Add filling to crust and bake at 160C/325F for 15-18 minutes. Cool in wire rack then cover and chill. Whip cream and icing sugar together and spread on pie.

Dessert Bun Tarts Mix ingredients like pie crust and add 1 beaten egg and 1/4 cup milk. Roll to 1/4 inch thick and put into tart tins and fill with raspberry jam (about 1/2 tsp.) Notemedium-small tart tins are best, as pastry puffs up. Bake at 350F until lightly brown. This pastry is very soft to work with; the best part is that is tastes like shortbread!

Dessert Brandied Chiffon Mince Pie Combine 1/2 cup brandy (L.C.B.), 1 cup mincemeat, 1 envelope unflavored gelatine and 1 tbs of lemon juice in small pan. Let stand for a few minutes. Heat slowly, stirring, until gelatine completely dissolved. Set aside. Combine 2 tbl of sugar, 1/4 tsp of salt in top of double boiler. Place over hot water & cook, stirring constantly, until slightly thickened, 5-8 min. Remove from heat & stir in mincemeat mixture. Cool until mixture begins to thicken and jell. Beat 3 egg whites until stiff. Beat in 2 tbp of sugar gradually. With same beaters, beat 1 cup whipping cream until stiff. Fold egg whites, cream & 1 cup of

chopped candied cherries into filling. Chill a few minutes until mixture mounds on a spoon. Turn into baked 9� pastry shell and chill till firm. About 5 hours. Serve with Brandy: Combine 1/3 cup brandy, 1/3 cup orange juice, 1/2 cup water, 3 tbl of sugar, 1 1/2 tbs of cornstarch, 1/2 tsp of grated orange peel and dash salt. Simmer stirring until mixture boils and thickens. Remove from heat and blend in 1 tsp of lemon juice. Cool thoroughly before serving. Sauce should be made same day it is served. Serves 8 people. Ingredients • 1 1/2 cups icing sugar • 1 1/2 cups fine shredded coconut (unsweetened)
Ingredients • 1/2 cup margarine or butter softened (not melted) • 30 glace cherries • Graham crumbs
Mix together icing sugar, coconut and margarine. Roll into 30 balls. Press a cherry into each ball and roll so that the dough surrounds the cherry completely. Roll dough covered cherries in graham crumbs. Enjoy! SUBMITTED BY
