Molasses Cookies 3/4 cups butter 1 cup dark brown sugar 1 egg 1/2 cup molasses 2 1/2 cups flour 1/4 tsp. salt 2 tsp. baking soda 1 1/2 tsp. cinnamon 1 tsp. ginger 1 tsp. nutmeg sugar

Cream butter and brown sugar. Blend in egg and molasses; mix well. Sift all dry ingredients; mix into butter mixture. Cover and chill dough until firm. Roll dough into small balls, then roll into white sugar; slightly flatten. Place on greased cookie sheet. Bake at 350 F for 10 to 12 minutes.

Chocolate Snowballs 1 1/4 cup margarine 1/2 cup cocoa 2/3 cups sugar 2 chopped pecans 1/8 tsp salt 1 tsp. vanilla 2 cups flour 1 1/2 cups chocolate chips

Mix all ingredients, except the crushed jolly ranchers, in a bowl. Roll out dough on a lightly floured surface and cut out shapes. Cut the middles out with a smaller cookie cutter and replace with a Jolly rancher pieces. Bake at 350 for 10 minutes or until candy fills center.

Cream margarine with sugar. Add vanilla. Blend in flour, salt, and cocoa. Stir in nuts and chocolate chips. Refrigerate for one hour. Shape into balls. Bake 350 degrees 15 to 20 minutes. When cool roll in icing sugar. ENJOY!

1/2 cup white sugar 1 tbsp vanilla 1 whole egg 1 yolk egg 2 cups chocolate chips

Mix together dry ingredients in a large bowl. Grate frozen butter into dry ingredients and stir. In a separate bowl, whisk together one whole egg and one egg yolk, and vanilla. Add to dry ingredients and mix well. On a cookie sheet with parchment paper, place 1/4 cup drops about 3” apart, and bake at 125 degrees for 15 to 20 minutes. Let cool and enjoy! Makes approximately one dozen.

Gingerbread Cookies 3 cups of flour 11/2 tsp baking powder 3/4 tsp baking soda 1/4 tsp salt 1 tbsp ground ginger 1 3/4 tsp cinnamon 1/4 tsp ground cloves

6 tsp unsalted butter 3/4 cup brown sugar 1 large egg 1 cup molasses 2 tsp vanilla 1 tsp lemon zest

In a small bowl mix flour, baking powder and soda, salt, ginger, cinnamon and cloves. In a large bowl beat butter, sugar and egg. Add molasses, vanilla and lemon zest. Gradually add in dry ingredients until blended and smooth. Roll dough in two portions and let sit on the counter for two hours. Line cookie sheets with parchment paper. On a lightly floured surface roll dough out to 1/4” thick and cut out cookies. Bake at 375 for seven to 10 minutes.

Emsland Insurance Chocolate Chip Cookies 3/4 cup margarine 1/2 cup brown sugar 1/2 cup white sugar 2 eggs 5 ml salt 5 ml baking soda 5 ml vanilla 2 cups flour 1 heaping cup of chocolate chips

Mix margarine, white sugar, brown sugar and eggs. Then add salt, baking soda and vanilla and stir. Finally, add the flour and chocolate chips until all is moist. Batch makes 15 cookies. Cinnamon Roll Cookies 3 cups flour 1 tsp. baking powder 1/2 tsp. salt 1 cup softened butter 1 1/2 cups sugar 1 1/2 tsp. vanilla extract 1/2 tsp. almond extract 2 eggs

Mix together flour, baking powder and salt; set aside. In a large bowl beat butter and sugar until light and fluffy. Beat in eggs one at a time. Stir in vanilla. Slowly add flour mixture until fully absorbed. Separate dough in two disks, wrap in plastic wrap and refrigerate for minimum of two hours or overnight. Divide dough in two halves. On floured surface roll each half to about 1/4 inch thickness. Brush with 1 tbsp. melted butter. In small bowl mix 1/4 cup sugar and 1 tbsp. cinnamon. Sprinkle over dough. Begin to roll up dough starting at long end. Wrap in plastic wrap and put dough in freezer for 20 to 30 minutes. until firm but not hard. Take dough out of freezer and cut into 3/4 inch slices. Place on cookie sheet and bake for 10 to 12 minutes until edges are lightly browned. Cool for two minutes on cookie sheet and remove to cooling rack. Cool completely. In small bowl mix 3/4 cup icing sugar and 1 tbsp. milk. Drizzle over cookies. Unique and tasty!

In a large bowl beat butter and confectioners sugar until light and fluffy. Slowly add in flour and cornstarch until well blended. With lightly dusted corn starch hands Roll in to 1” balls and place 1” apart on baking sheet. Press down slightly and add cherry halves. Bake at 300ºF for 20 to 22 min or until lightly browned.

The Best Roast Turkey Recipe Ever! 1 sprig fresh sage , leaves picked 12 strips higher-welfare pancetta or thinly sliced streaky bacon 1 bulb garlic , broken into cloves 4 medium red onions , peeled 2 sticks celery , trimmed and chopped 1 big handful breadcrumbs 1 handful dried apricots 300 g higher-welfare minced pork 1 lemon , zest of 1 pinch grated nutmeg 1 large free-range egg

sea salt freshly ground black pepper 12 small sprigs of fresh rosemary , plus a few extra 4-4.5 kg higher-welfare turkey , at room temperature 2 carrots , peeled 1 large orange olive oil 2 tablespoons plain flour 1.1 litres organic chicken or vegetable stock

Method Preheat the oven to maximum. Heat a saucepan until medium hot and add a splash of olive oil, the sage leaves and 6 of the pancetta or bacon strips. Peel and chop 2 garlic cloves and 1 onion. Add the garlic, celery and onion to the saucepan and fry everything gently until soft and golden brown. Take the pan off the heat, add the breadcrumbs and, while the mix is cooling down, chop the apricots roughly and stir them in. When the stuffing has cooled down, add the pork, lemon zest, nutmeg, egg and lots of salt and pepper, and mix everything together well. Slice the remaining strips of pancetta or bacon in half and slice 1 peeled garlic clove into thin slivers. Place a rosemary sprig and a garlic sliver on one end of a halved strip of pancetta and roll it up tightly. Repeat with the other pieces of pancetta until you have 12 little rolls. Stab the thighs and drumsticks of the turkey in 6 places on each side. Push a little pancetta roll into each hole until it just peeps out. This’ll give your turkey thighs a fantastic flavour and will keep them moist while they cook. Chop the remaining onions in half and slice the carrots thickly. Give your turkey a good wipe, inside and out, with kitchen paper, and place it on a board, with the neck end towards you. Find the edge of the skin that’s covering the turkey’s breasts and gently peel it back. Work your fingers and then your hand under the skin, freeing it from the meat. If you’re careful you should be able to pull all the skin away from the meat, keeping it attached at the sides. Go slowly and try not to make any holes! Lift the loose skin at the neck end and spoon the stuffing between the skin and the breast, tucking the flap of skin underneath to stop anything leaking out. Pop the orange in the microwave for 30 seconds to warm it up and stuff it into the cavity. Weigh the stuffed turkey and calculate the cooking time (about 20 minutes per 500g/1lb 2oz). Place the bird on a large roasting tray, rub it all over with olive oil and season well. Surround with the chopped carrots, onions, remaining garlic, cover with tinfoil and place in the preheated oven. Turn the heat down right away to 180°C/350°F/gas 4, and roast for the calculated time, or until the juices run clear from the thigh if you pierce with it a knife or a skewer. Remove the tinfoil for the last 45 minutes to brown the bird. Carefully lift the turkey out of the tray and rest on a board that’s covered loosely with foil for at least 1 hour, preferably 2 hours for bigger birds. When the resting time’s nearly up, skim the surface fat from the roasting tray and add the flour and stock. Place the tray on the hob and bring to the boil on a high heat. When the gravy starts to thicken, strain it into a bowl. Carve your turkey, serve with the gravy and dig in!

BRINE: 3 cups white vinegar 1 1/2 cups water 1 tbsp. coarse pickle salt 1 tsp. peppercorns 2 tsp. peppercorns 2 tsp. mixed pickle spice tied in cheese cloth bag 2 or 3 chilli peppers (optional)

Hard boil one dozen eggs, cool and peel. Pack into sterilized jars. Bring brine to boil. Simmer for 10 minutes. Remove spice bag. Pour brine over eggs to completely cover. Seal. Wait two to three weeks to eat. Note: Thinly sliced onions may be added to jar before eggs.

10 -12 white button mushrooms 1/2 cup Panko bread crumbs 1/4 cup Parmesan cheese 2 tablespoons olive oil Hot water to mix

Mix the crumbs, cheese and oil. Add hot water until mixture is combined, but not soggy. You should be able to pack the crumbs into a ball and it stays. Heat oven to 375F. Remove stems from mushrooms and clean. Place on baking sheet. Fill to heaping with the crumb mixture. Cover with foil and bake 30 minutes. Uncover and bake another 15 minutes. or until the mushrooms are soft and the crumbs are crisped on top.

Put popped corn in large roaster. In medium sauce pan bring syrup, salt, sugar and margarine to boil. Boil for exactly five minutes. Stir constantly. Do not over boil. Add vanilla and stir. Add soda and stir (soda makes it frothy). Pour over popcorn and nuts. Mix with wooden spoon until well coated. Bake at 325 F for one hour, stirring every 10 minutes.

Pork Chops Parmesan 6 thick-cut pork chops 3 Tbsp. butter 1/2 cup flour 1 cup milk 2 eggs, beaten 1 medium onion, grated 3/4 cup parmesan cheese salt & pepper

Salt and pepper chops, brown well on both sides in heavy skillet. Cover and reduce heat to low. Melt butter in heavy saucepan and stir in flour, blending well. Add milk slowly to make smooth paste. cook, stirring constantly Until mixture is very thick. Stir in beaten eggs, cook for about two minutes. Add onions, cheese, salt, pepper (to taste), mix thoroughly, stirring often. Cook over low heat until mixture thickens. Transfer meat to shallow baking dish and top each chop with cheese mixture. Dot with diced pimento if desired. Place in 350 F oven for about 25 minutes. Yields six servings.

1 Tbsp. unsalted margarine or butter 2 Tbsp. soy sauce 2 tsp. hot pepper sauce 3 garlic cloves, mashed 1 pound blanched whole almonds 3 tsp. seasoned pepper 1/4 tsp. dried red pepper flakes salt & pepper

Easy Cheese Ball

Preheat oven to 350 F. Coat a rimmed baking sheet with 1 Tbsp. butter. Sprinkle with soy sauce, hot sauce and garlic. Scatter almonds on sheet. Stir until well coated. Sprinkle with pepper, dried pepper flakes and salt. Bake for 10 minutes. Sprinkle with additional pepper and salt to taste. Bake for 15 additional minutes. Let cool and store in a covered jar.

Allow cream cheese to soften at room temperature. Measure, drain, and pat dry the crushed pineapple. Blend cream cheese, pineapple, pepper and chives together with electric mixer on low speed. Form into a ball. Roll the cream cheese ball with chopped pecans until completely coated. Cover with plastic food wrap and refrigerate until ready to serve. Serve on a platter with an assortment of crackers.

1 large head cabbage (shredded) 1 medium onion sliced very thinly 4 large carrots (shredded) 3/4 cup sugar. 1 cup vinegar 1 cup oil 1/2 tsp. salt 1 1/2 tsp. celery salt

3lb Puff pastry 1 large yellow bell pepper thinly sliced 3 oz. parmesan cheese 4 tomatoes sliced 6 oz. Goat cheese crumbled 6 thin slices of prosciutto 2 mozzarella cheeses cut into 6 slices

Cut the pastry into six slices and roll each slice into 9”×6” and cut each into three pieces. Lay out your squares on a slightly damp baking sheets. Make three sets of 12 with the following bell pepper and parmesan, goat cheese and tomato and prosciutto and mozzarella. Bake at 425ºF for about 12 to 15 or until browned and puffy. Serve warm with your choice of herbs sprinkled on top (Chives, parsley and basil recommended)

Mix the shredded cabbage, cut onion, and shredded carrots. Sprinkle 1/2 cup of sugar over top and let mixture sit for at least 1/2 hour. Combine 1 cup vinegar, 1/4 sugar, 1 cup oil, 1/2 tsp salt, and 1 1/2 tsp celery salt in saucepan. Bring to a boil and pour over the cabbage mixture. Do not stir through until cool. Put in well sealed containers and keep in fridge. Will keep up to 45 days.

Coconut Lover’s Treats 8 cups miniature marshmallows 6 cups Rice Krispie cereal 2 cups additional miniature marshmallows 1 1/2 cups sweetened shredded coconut 1/4 cup sweetened shredded coconut for topping

English Gingerbread 1/2 cup shortening 1/2 cup sugar 1 egg 1 cup molasses 2 1/2 cups flour 1 1/2 tsp. soda 1/2 tsp. salt 1 tsp. each cinnamon, ginger cloves 1 cup hot water

Line a large cookie sheet or a 9x13” pan with parchment paper and set aside. Melt butter in a large pot over medium heat. Add 8 cups marshmallows and stir until they melt. Remove from heat. Add cereal and stir until combined. Stir in additional marshmallows and coconut. Scoop the sticky mixture onto the lined pan. Use a lightly buttered spatula or spoon to gently press mixture across the pan, being careful not to press too firmly. Sprinkle additional 1/4 cup coconut over top. Press lightly with hand. Step 1: Drain one can of peaches. Step 2: Crush a 5 oz. package of vanilla wafers. Line a 8”x8” pan with a layer of wax paper. Cover the bottom with vanilla wafers (save some for the top). Step 3: Beat 2 egg whites stiff. Step 4: Whip 1/2 pint whipping cream until stiff. Step 5: Take 1/3 cup butter, 1 cup powdered sugar and 2 egg yolks and cream until light and fluffy. Step 6: Fold in beaten egg whites into the butter mixture. Spread over base of vanilla wafer crumbs. Step 7: Place fruit over butter mixture, cover fruit spread with whipped cream, sprinkle with rest of wafer crumbs. Step 8: Place in refrigerator for several hours. Step 9: Remove from pan and cut into squares and serve.

Easy Chocolate Fudge 1 package (350g) semi-sweet chocolate chips 1 can sweetened condensed milk 1 1/4 cups icing sugar 1/4 tsp. salt 1 tsp. vanilla 1/2 cup chopped nuts

In heavy saucepan over low heat, melt chips with sweetened condensed milk. Stir in remaining ingredients. Spread in eight-inch buttered pan. Chill until firm (two to three hours). Cut into squares. Store at room temperature. Makes two pounds. Tip: line pan with wax or parchment paper for easy removal.

Pecan Sauce 1/4 cup margarine 1 can Eagle Brand condensed milk 1/2 tsp. rum flavouring 1/4 cup chopped pecans

Melt margarine in pan over medium heat. Add remaining ingredients. Cook 10 minutes or until slightly thick, stirring constantly. Cool 10 minutes. Sauce thickens as it cools. Serve warm over backed apples, ice cream or over Christmas pudding.

Chocolate Peanut Butter Clusters 1 cup semi-sweet chocolate chips 1/2 cup milk chocolate chips 1 tps. creamy peanut butter 1 cup cocktail peanuts

Place parchment paper on cookie sheet and set aside. Melt semi-sweet and chocolate chips and peanut butter in large bowl in microwave. Stir until melted. Add peanuts to the melted chocolate and peanut butter and stir until well combined. Drop mixture by the teaspoonful onto the parchment paper. Allow to cool in the refrigerator for approximately 30 mins. to an hour until completely firm. Makes 30 teaspoon sized clusters. Store in an airtight container. Quick, easy and delicious!

Makes 12 servings. In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Add extracts. Combine the flour, baking powder, cinnamon and shaved almonds (optional) and salt. Gradually add to creamed mixture alternately with eggnog, beating well after each addition. Mix in cherries. Pour into two 9” round

Place dry ingredients in a large bowl. Grate frozen butter into dry ingredients and mix by hand until it feels similar to oatmeal. Whisk ingredients together in a separate bowl. Fold wet ingredients into dry ingredients, and press the mixture to the bottom of the bowl to form a ball. Do not work the dough too hard! Add coffee as necessary to combine the mixture. On a lightly floured surface, flatten dough to 7-8” in diameter, and cut diagonally into eight pieces. Place dough on a non-stick sheet or parchment paper and bake at 400 F for 10 to 12 minutes. Place on cooling rack, and enjoy!

Mix all crust ingredients in a medium-sized mixing bowl. Put half of mixture into the bottom of a 9X9 pan. Bake for 10 minutes at 350 F. Sprinkle chips and nuts over baked crust. Blend caramel and flour and drizzle over chips. Put the rest of the crumbs on top. Bake an additional 15 to 20 minutes. Chill and enjoy!

Black Forest Mousse Trifle 1 1/2 cups cold milk 1 package (4 serving size) Jell-O Chocolate instant pudding 2 cups cool whip topping , thawed 16 Oreo mint cookies 1 1/2 cups canned cherry pie filling

Pour milk into large bowl. Add dry pudding mix. Beat with mixer until well blended. Gently stir in 1/2 cup of cool whip topping. Crush 10 of the Oreo mint cookies coarsely and stir into pudding mixture. Spoon half of pudding mixture into a trifle or dessert bowl. Spread 2/3 cup of cool whip topping over pudding mixture. Top with 1 cup of cherry pie filling. Top with remaining pudding mixture. Top with remaining cool whip topping. Top with remaining 1/2 cup of cherry pie filling. Crush remaining six Oreo mint cookies and sprinkle on top of dessert. Cover with plastic food wrap and refrigerate until serving time. This is an extremely easy and yummy layered desert. Preheat oven to 350’. Grease and flour a standard loaf pan. In large mixing bowl cream butter and sugars; add the egg and vanilla and beat till smooth. Carefully pour in the wine and sour cream. Blend. In a separate bowl, sift together the dry ingredients. Add dry ingredients to the wine mixture in three batches and mix only until incorporated. Pour batter into baking pan. Bake for 55 minutes or until a toothpick inserted into the centre comes out clean. Allow to cool in pan for 10 minutes before inverting onto rack to cool.

Rudolph The Red Nosed Reindeer You know Dasher, and Dancer, and Prancer, and Vixen, Comet, and Cupid, and Donder and Blitzen But do you recall The most famous reindeer of all Rudolph, the red-nosed reindeer had a very shiny nose and if you ever saw it you would even say it glows. All of the other reindeer used to laugh and call him names They never let poor Rudolph play in any reindeer games. Then one foggy Christmas eve Santa came to say: “Rudolph with your nose so bright, won’t you guide my sleigh tonight?” Then all the reindeer loved him as they shouted out with glee, Rudolph the red-nosed reindeer, you’ll go down in history!

Treat your guests to an assortment of delicious appetizers to nosh on while they socialize. If you’re serving dinner as well, having a selection of small bites buys you some time to finish up the main course while keeping your guests occupied.

The Perfect Ham

Choose a ham

When choosing a ham calculate for one pound for every three people with a bone-in ham and one pound for every four to five people with a denser boneless ham.

Choose a glaze recipe

The glaze is best brushed on towards the end of the cooking time, usually in the last 20 minutes, to prevent the sugars from burning.

Prepare the ham for baking

Use a sharp knife to score your ham — a crisscross pattern is traditional as it lets the glaze sink in a bit and looks nice when it comes time to serve. Be careful to only cut into the skin and not all the way through to the meat.

Bake the ham

Heat your oven to 325° F. Cook the ham for about 20 minutes per pound. Use an instant-read thermometer to check the internal temperature of the meat, being careful not to touch the thermometer to the bone. The

ham is done when it reaches an internal temperature of 140° F.

Slice and serve the ham

Bone-in ham is a little trickier, but if you slice down to the bone then carve around the bone to release the meat you’ll end up with nice uniform slices. Serve with a high-quality mustard, scalloped potatoes, and your favourite veggie side-dishes.
