Entertaining Made Easy! Treat your guests to an assortment of delicious appetizers to nosh on while they socialize. If you’re serving dinner as well, having a selection of small bites buys you some time to finish up the main course while keeping your guests occupied.

The Perfect Ham Choose a ham

When choosing a ham calculate for one pound for every three people with a bone-in ham and one pound for every four to five people with a denser boneless ham.

Choose a glaze recipe

The glaze is best brushed on towards the end of the cooking time, usually in the last 20 minutes, to prevent the sugars from burning.

Prepare the ham for baking

Use a sharp knife to score your ham — a crisscross pattern is traditional as it lets the glaze sink in a bit and looks nice when it comes time to serve. Be careful to only cut into the skin and not all the way through to the meat.

Bake the ham

Heat your oven to 325° F. Cook the ham for about 20 minutes per pound. Use an instant-read thermometer to check the internal temperature of the meat, being

careful not to touch the thermometer to the bone. The ham is done when it reaches an internal temperature of 140° F.

Slice and serve the ham

Bone-in ham is a little trickier, but if you slice down to the bone then carve around the bone to release the meat you’ll end up with nice uniform slices. Serve with a high-quality mustard, scalloped potatoes, and your favourite veggie side-dishes.

elcome to Christmas Traditions, Kamloops This Week’s annual salute to the holiday season, replete with readers’ recipes and craft ideas, with a generous helping of your favourite Christmas carols. This popular publication is meant to be well worn by the time the presents are opened as we hope you give some of the recipes and crafts a try at home. From Sheila Astle’s Easy Stuffed Mushrooms on page 6 to Emsland Insurance’s Chocolate Chip Cookie on page 4 to Christina Mader’s Black Forest Wreath on page 11, this year’s edition of Christmas Traditions will satisfy the most discerning holiday appetites. While you thumb through Christmas Traditions, grab the

Caramel Pecan Thumbprint Cookie 1 egg 1 cup flour 1/3 cup cocoa powder ¼ tsp salt ½ cup butter 2/3 cup sugar

2 tbsp milk 1 tsp vanilla ¼ cup pecans crushed 16 caramels unwrapped 3 tbsp heavy cream ½ choc chips

Separate egg and beat the white lightly. Preheat oven to 350. Whisk flour, cocoa and salt and set aside. In a bowl cream butter and sugar, adding egg yolk, milk and vanilla. Slowly add in dry ingredients. Shape dough into small balls proceed to roll into egg white then pecans. Place on pan and press with thumb. Bake for 10 min. while cookies are cooling heat caramels and cream in a pan until melted then fill indentations in cookies and drizzle with caramel mixture. Melt chocolate chips in bowl and drizzle over the top.

Emsland Insurance Chocolate Chip Cookies 3/4 cup margarine 1/2 cup brown sugar 1/2 cup white sugar 2 eggs 5 ml salt 5 ml baking soda 5 ml vanilla 2 cups flour 1 heaping cup of chocolate chips

Mix margarine, white sugar, brown sugar and eggs. Then add salt, baking soda and vanilla and stir. Finally, add the flour and chocolate chips until all is moist. Batch makes 15 cookies. Super Soft Sprinkle Pudding Cookies 3/4 cup butter 1 cup granulated sugar 1 egg, plus 1 yolk 1 tsp vanilla 1 tsp baking soda 1/2 tsp kosher salt 1 (3.5-ounce packet instant vanilla pudding mix) 2 cups flour 1/2 cup sprinkles

Preheat oven to 350°F. Line a baking sheet with parchment paper and set aside. In the bowl of your stand mixer fitted with the paddle attachment beat the butter and sugar on medium speed for 2 minutes. Add in the egg, vanilla, baking soda and salt. Mix until combined, scraping the sides of the bowl as necessary. Next mix in the pudding mix for 30 seconds. Turn the mixer to low and add in the

flour, mixing until just combined. Finally add in the sprinkles and mix until incorporated evenly. Using a medium (2 tablespoon) sized cookie scoop drop dough onto the prepared baking sheet 2 inches apart. Bake for 8-10 minutes until the cookies are almost set. Don’t over-bake if you want super soft cookies. Allow the cookies to cool on the baking sheet for 3 minutes before transferring to a wire rack to cool completely.

Hokey Pokey Biscuits (Cookies) 125g butter ½ cup suger 1 tbsp Golden syrup 1 tbsp milk 1 ½ cups flour 1 tsp Baking Soda

Preheat oven to 350°f. Combine butter, sugar, golden syrup & milk in a saucepan over medium heat. Heat until butter is melted & mixture almost boiling – stirring constantly. Remove from heat & allow to cool to lukewarm. Mix flour & baking soda together then add to cooled

mixture & stir well. Roll tablespoonfuls into balls and place on buttered cookie sheet or parchment covered sheet & press down with a floured fork. Bake for 15-20 minutes – till golden brown. Leave on tray 1-2 minutes then place on a wire rack to cool. These are a crisp cookie with a great taste.

Chewy Chip Cookies 2 cups flour 1/2 tsp baking soda 1/4 tsp salt 3/4 cup unsalted butter 1 cup brown sugar 125º F

1/2 cup white sugar 1 tbsp vanilla 1 whole egg 1 yolk egg 2 cups chocolate chips

Mix together dry ingredients in a large bowl. Grate frozen butter into dry ingredients and stir. In a separate bowl, whisk together one whole egg and one egg yolk, and vanilla. Add to dry ingredients and mix well. On a cookie sheet with parchment paper, place 1/4 cup drops about 3” apart, and bake at 125 degrees for 15 to 20 minutes. Let cool and enjoy! Makes approximately one dozen.

Easy Stuffed Mushrooms

10 -12 white button mushrooms 1/2 cup Panko bread crumbs 1/4 cup Parmesan cheese 2 tablespoons olive oil Hot water to mix

Mix the crumbs, cheese and oil. Add hot water until mixture is combined, but not soggy. You should be able to pack the crumbs into a ball and it stays. Heat oven to 375F. Remove

stems from mushrooms and clean. Place on baking sheet. Fill to heaping with the crumb mixture. Cover with foil and bake 30 minutes. Uncover and bake another 15 minutes. or until the mushrooms are soft and the crumbs are crisped on top.

Bacon Cheddar Ranch Pinwheels Pizza Crackers 8 ozs. softened cream cheese 1/4 cup ranch dressing 1/2 cup finely grated Cheddar cheese

6 pieces bacon, cooked and chopped 1 tsps minced chives (6 small or 3 large) flour tortillas

In a small mixing bowl combine cream cheese and ranch dressing. Mix until smooth. Stir in Cheddar, bacon and chives. Spread a generous layer over tortillas. Roll tortillas tightly and slice into 1 inch pieces.

10 tsps pizza sauce 1/2 – 3/4 cups shredded cheese

10 Ritz crackers (original) 10 thin slices of pizza pepperoni

Preheat broiler. Line a baking sheet with tin foil. Spray with non-stick spray. Place crackers on baking sheet. Top each cracker with a piece of pepperoni and spread with 1 teaspoon pizza sauce. Sprinkle with cheese. Broil for 1-2 minutes, just until the cheese is melted. Serve immediately.

Mulled Cider

2 liters of cider 6 cloves 3 star anise Âź tsp nutmeg 1 cinnamon stick

Cocktails & Drinks 1 vanilla pod halved 4-5 tbsps castor sugar The juice of 1 orange, 3 clementines, 1 pomegranate and seeds

Pour cider into pot to start warming and mix with all other spices. Boil for 7-8 minutes and then add sugar to taste.

Butter Ripple Hot Chocolate for Adults 1 cup of cocoa 1 ounce of butter ripple schnapps

Trifle

2 cups cherry Jello 2 cups cake cubed 1/3 cup sherry or fruit juice

Make 1 cup of cocoa and add 1 ounce of butter ripple schnapps.

2 cups soft custard 2 cups fruit cocktail, drained Whipped cream

Mix Jello as per package directions (assembly is done in layers). Place cake in bottom of glass bowl; drizzle with sherry or juice. Add layer of custard, layer of fruit cocktail, layer of Jello. Allow to set firm. Top with whipped cream. Chill and serve.

Chocolate Rum Balls 3¼ cup crushed vanilla wafers ¾ cup confectioners sugar ¼ cup cocoa powder 1½ cup chopped walnuts 3 tbsps. Light corn syrup ½ cup of rum

In a large bowl mix wafers, sugar, cocoa and walnuts. Gradually add in corn syrup. Shape into 1 small balls and roll in confections sugar. Let sit for several days for flavor to meld. Roll in confectioners sugar again before serving.

Buck Eyes

1 cup peanut butter ½ cup graham cracker crumbs

1 cup confections sugar 2 cups chocolate chips 2 tbsps shortening

Christmas Wreaths

½ cup butter 30 large marshmallows 1.5 tsp green food coloring

1 tsp vanilla 4 cups of corn flakes 2 tbps or cinnamon hearts

Combine peanut butter, graham cracker and sugar and refrigerate for 1 hour. Roll a teaspoon of mix into balls and refrigerate. Melt chocolate chips and shortening in double boiler and dip peanut butter balls into the chocolate mix with one side not dipped. Refrigerate until cooled.

Melt butter on low heat and add marshmallows. Take off burner and add food coloring, vanilla and corn flakes. Quickly drop heaping tablespoons onto waxed paper and shape them into wreaths. Add cinnamon heats on top and wait to cool.

Jackson’s Mocha Scones 2 cup Flour 1/3 cup White Sugar 2 tsp Baking Powder 1/4 tsp Baking Soda 1/2 tsp Salt 1/2 cup Butter 1/4 cup Chocolate Chips (chopped) 1/3 cup Soft Cream Cheese 2 tbsp Milk or Cream 1 whole Egg 1 tsp Vanilla 1/4 cup Brewed Coffee (strong)

Place dry ingredients in a large bowl. Grate frozen butter into dry ingredients and mix by hand until it feels similar to oatmeal. Whisk ingredients together in a separate bowl. Fold wet ingredients into dry ingredients, and press the mixture to the bottom of the bowl to form a ball. Do not work the dough too hard! Add coffee as necessary to combine the mixture. On a lightly floured surface, flatten dough to 7-8” in diameter, and cut diagonally into eight pieces. Place dough on a non-stick sheet or parchment paper and bake at 400 F for 10 to 12 minutes. Place on cooling rack, and enjoy!

10 Minute Skor Bars 1 cup butter 1 sleeve Christie Premium Plus Soda Crackers) 350º F

1 cup brown sugar 1 bag of milk chocolate chips slivered almonds

Preheat oven to 350 degrees. Melt butter and sugar together. Bring to a rolling boil and cook for 2 minutes, while stirring. Place a layer of crackers on a buttered baking sheet. Pour the butter/sugar mixture over crackers and bake in the oven for 8 minutes. Remove from oven and sprinkle chocolate chips over the top while hot. Spread the chocolate evenly. Allow to cool before breaking into pieces.

Yule Log

2 cups heavy cream ½ cup confectioners sugar ½ cup cocoa 1 tbsp vanilla 6 egg yolks ½ cup white sugar 1/3 cup cocoa 1 1/2 tsps vanilla 1/8 tsp salt 6 egg whites ¼ cup white sugar

Ginger Crinkles 2/3 cup oil 1 cup sugar 1 egg (beaten) 1/4 cup molasses 2 tsp baking soda 350º F

Set oven to 35o degrees. Mix all the ingredients together & shape into small balls. Roll in white sugar. Bake for 15 minutes. These are so easy to make & are always delicious with a cup of tea at Christmas time.

Preheat oven to 375. Line a 10x 15 jelly roll pan with parchment paper. In a large bowl whip cream, confections sugar, cocoa and vanilla then refrigerate. In another bowl beat egg yolks with with sugar until pale in colour. Add to it cocoa,vanilla and salt. In a clean bowl beat egg whites until soft peaks form then gradually add in sugar and beat whites until stiff. Immediately fold yolk mixture into whites. Spread batter into pan. Bake for 10-15 min. dust a clean dishtowel with confections sugar and turn

warm cake out of pan onto it. Discard parchment paper and roll into a log starting at the shortest end. Cool for 30 minutes. Unroll cake and spread with filling (whipping cream, jam, cool whip) and re roll and dust with confectioners sugar.

Black Forest Wreath

Wines

My late brother and I grew up with this Black Forest tradition. Each year come end November, we would go into the woods and get evergreen boughs with our parents. Back home we cut them into 6-inch twigs that had lots of needles. These my dad tied into a garland with thin wire. Then fashioned it into a wreath the size of our biggest plate filled with water. Mom wound a red ribbon around the wreath. My brother and I stuck four red candles onto the greenery equal distance apart. The first Sunday in December—The First of Advent; we’d sit around the kitchen table with the wreathe in the middle. We’d light the first candle. Most nights until December 24 we’d sit there and sing Christmas carols without accompaniment. Each Sunday we’d light another candle. Christmas Eve we’d light the 4th candle. Then my brother and I sang songs until we were allowed to go into the living room. We were waiting for the sound of the silver bell that the "Christkindle" rang. It was the signal that the Christchild had flown through the window and brought us presents. It meant we could go and open our gifts. My brother and I, no matter how quickly we ran, never saw the Christkindle. Only our parents or grandparents who lived one floor below us did so. As adults we kept up this tradition sometimes by ourselves, sometimes with our parents and grandparents. And later in Squamish with our own children and grandchildren. For the latter we did the “Santa Claus” stuff as well. Everyone gets to open their stocking Christmas Morning filled with small presents oranges, nuts, candies, cookies, mittens, socks, tiny books, music tapes etc. Now in Kamloops, (even the rare times I was alone) I faithfully light advent wreath candles and sing English, German, and French carols.)

Walnut Santa Ornaments Walnuts in the shell Small googly eyes Small red pompoms Red construction paper Ornament hooks Cotton balls Hot glue gun or glue sticks

Cut construction paper into a 3” half-circle. Twist half-circle into a cone shaped hat, and glue in place. Bend a wire ornament hook into a ring on one end. Insert wire into tip of hat and glue in place then glue hat and wire onto walnut. Pull apart white cotton ball and glue around the bottom of the hat. Attach another small piece of cotton ball to top of hat and allow all glue to dry. Next, make Santa’s face by gluing googly eyes, red pompom nose and a cotton ball beard to walnut. Attach another ornament hook to wire ring glued to top of hat and hang finished ornament on Christmas tree.

Frosty the Snowman Frosty the Snowman, was a jolly happy soul, With a corn cob pipe and a button nose, and two eyes made of coal. Frosty the Snowman, is a fairytale, they say. He was made of snow, but the children know he came to life one day. There must have been some magic in that old silk hat they found, For when they placed it on his head, he began to dance around! Oh, Frosty, the Snowman, was alive as he could be; and the children say he could laugh and play, just the same as you and me. Thumpety thump, thump, thumpety thump, thump, look at Frosty go. Thumpety thump, thump, thumpety thump, thump, over the hills of snow. Rudolph The Red Nosed Reindeer You know Dasher, and Dancer, and Prancer, and Vixen, Comet, and Cupid, and Donder and Blitzen But do you recall The most famous reindeer of all Rudolph, the red-nosed reindeer had a very shiny nose and if you ever saw it you would even say it glows. All of the other reindeer used to laugh and call him names They never let poor Rudolph play in any reindeer games. Then one foggy Christmas eve Santa came to say: “Rudolph with your nose so bright, won’t you guide my sleigh tonight?” Then all the reindeer loved him as they shouted out with glee, Rudolph the red-nosed reindeer, you’ll go down in history!

It’s beginning to look a lot like Christmas, Toys in ev’ry store, But the prettiest sight to see is the holly that will be On your own front door.
