e might have to wait until Dec. 24 for Old Saint Nick to visit us in our homes, but we can get an early peek at the big man himself during the annual Santa Claus Parade that will be rolling through downtown Kamloops on Nov. 24. It’s a family favorite event, sure to fill the sidewalks along Victoria street with fans both young and old. And it’s sure to be busy, so you’re going to want to stake out your sidewalk space early. This year marks the 38th anniversary of the parade, and the 2018 theme is Retro Rockin’ Christmas. Just like past year’s, you’ll be sure to find live music, dancers, and maybe even a theatre troupe alongside the traditional holiday floats. The day’s events begin at 10:30 am with the waking of Santa at Kamloops Square. A half hour later, at 11:00 am, the parade begins at Second Avenue and St. Paul street It will

travel down Second Avenue to Victoria street, where it will turn right and continue on Victoria street. until reaching Sixth Avenue. It will then turn left into Lansdowne Village. Please note that there are no spectators allowed in the 600 block of Victoria street. With the parade complete, Santa’s workshop will open at noon in Lansdowne Village. Games, refreshments, and photos with Santa will be available until 3:00 pm. Downtown Kamloops encourages parade spectators to take public transit or carpool to the event, but if you must drive, downtown parkades (located on Seymour and Lansdowne Streets) are free of charge on weekends.

Laughing Stock Theatre

RAPUNZEL A TANGLED PANTO

T

he Laughing Stock Theatre Society’s annual pantomime theatre production has quickly become a Christmas tradition in Kamloops. And this year’s show is sure to delight audiences as much as previous years’ productions. Past productions have included such recognizable titles as Cinderella, Aladdin, Snow White, Beauty & The Beast, Treasure Island, and most recently, The Little Mermaid.

Rapunzel - A Tangled Panto marks the eighth year that the Laughing Stock Theatre has been bringing these hilarious, British-style pantos to the stage. This year’s show tells the story of Rapunzel, a young woman eager to explore the world who has been kept secluded in tower by Mother Gothel, who has made her promise to never leave her home and never cut her hair. But after years locked away, Rapunzel finally gather up the nerve to escape the tower while Mother

Rapunzel was written by Dave Marklinger and directed by Vance Schneider, both of Kamloops, and will put the usual panto-spin on this very well know fairy tale. ELF Western Canada Theatre

THE MUSICAL

O

ne of the winter holidays’ most cherished movies has been adapted as a stage musical, and Western Canada Theatre will be bringing it to life. It’s Elf – The Musical, and it will be hitting the stage from Nov. 29 to Dec. 12 at the Sagebrush Theatre. The original film, which stars Will Farrell, has become something of a Christmas classic since its release in

2003. The musical adaptation first appeared on Broadway in the Christmas season of 2010-11. It tells the story of Buddy, an orphan baby who was mistakenly brought to the North Pole, where he grows up unaware that he is a human. When his enormous size and inability to properly craft holiday toys reveals the truth about him, Buddy returns to New York City in

search of his birth father. And along the way, he’s sure to teach at least a few people about the Christmas spirit. There are over two-dozen performers involved in Elf – The Musical, including 12 young Kamloops musical actors. Western Canada Theatre cautions that while Elf – The Musical is suitable for all ages, it may be best enjoyed by those seven and older.

I

t’s been almost 20 years since CP Holiday Train took its first trip, and it’s going stronger than ever. Over those years, the train has raised more that $14.5 million and 4.3 million pounds of food for North American food banks. Best of all, everything raised in a particular community stays in that community, and helps the people in that community. Along with the great fundraising work that the Holiday Train is responsible for, it’s also a site to behold. The entire train is about 1,000 feet in length with 14

brightly decorated train cars. They’re decorated with hundreds of thousands of technology-leading LED lights sporting fantastic holiday-inspired designs. So what’s the Holiday Train event all about? Here in Kamloops the train will pull up to a stop just outside the Sandman Center on Lorne St. at about 4:30 pm on Dec. 16. At 5:00 pm the stage door lowers and the bad on board the train will start to play. Following that first song, there will be a brief presentation with local food bank officials and dignitaries, and after the

presentation the band will fire up again, playing a mix of traditional and modern Christmas songs. All told the event will last for about 30 minutes before the band plays its final song, the stage door closes, and the Holiday Train heads off to its next destination. Food donations are of course welcome and encouraged at the event. You’re welcome to bring either a food item or a cash donation. If you’re wondering what to bring, you can always contact the Kamloops Food Bank at 250-376-2252 to find out what’s on their wish list.

Winter days and nights are ripe for entertaining possibilities when Mother Nature takes a chilly turn. These events help squash the cabin fever that can sometimes develop during the colder times of year. INDULGE IN SWEET TREATS Comfort foods can make even the most blustery winds easier to tolerate. Invite people over for a dessert party. At a dessert pot luck party, everyone brings along a favorite decadent dessert, from molten lava chocolate cake to warm bread pudding. HOST A “SNOWED IN” PARTY Spending a day cooped up inside when the roads are covered in snow might not be your idea of fun, but invite a mix of friends and neighbors who live nearby over, and this impromptu party can make the cabin fever disappear. Ask guests to bring one food item or beverage. Light a fire in the fireplace and set out some cozy throw blankets. If possible, invite everyone outdoors to build a snowman. GET PHYSICAL Get physically active with friends or family members by staging mock Olympic events in the yard. These can be fun “sports” created by participants or variations on fun winter activities. If space permits, set up one room with a children’s movie for youngsters, while the adults retire to another room for movies that are more their speed. WASTE

T

he holiday season is a time for families to gather and express their love and appreciation for one another. Exchanging gifts has become a big part of the holiday season, and while such a tradition is well-intentioned, gift-giving annually produces substantial amounts of waste. Food plays a big role at many holiday celebrations, and uneaten food contributes heavily to the excess waste during the holiday season. Time magazine reports that an estimated 1.3 billion tons of food, or about one-third of global production, is lost or wasted each year. Food is not the only thing wasted during the holiday season. Everything from packaging to gift wrap to the number of gifts purchased can contribute to excess holiday waste. As big a problem as holiday waste has become, there are several simple ways to reducing holiday waste. MAKE A LIST AND STICK TO IT Retailers are very good at upselling and getting people to purchase items they do not need during the holiday season. Stick to a shopping list for food or other supplies for the holiday season and beyond. Do not be tempted to buy more than is necessary.

SCALE BACK THE MENU If you typically have lots of leftovers after the holiday, you’re likely overestimating just how much people will eat. Learn from past experience and cook less this year. If you have a lot of leftovers, send guests home with their own plates instead of letting them pile up in the refrigerator and spoiling. And keep in mind that leftover food can always be donated to nearby food banks and homeless shelters. REUSE WHATEVER YOU CAN Diligently collect and store holiday wrappings and trimmings that are in good condition and put them to use again and again. Gift bags and boxes are easily reused. Once materials have passed their prime, attempt to repurpose and recycle them before discarding them. GIVE AN EXPERIENCE RATHER THAN “STUFF” When gifting, think about giving experiences rather than traditional gifts. Experiences may include trips to a museum or tickets to a concert or a play. Such gifts will make for memorable experiences and, because experiences are not packaged, will help cut back on holiday waste.

MAKE YOUR OWN WRAPPING When wrapping gifts, use comics, maps, old calendars, and items that you would otherwise discard. You even can decorate newsprint with rubber stamps or drawings from the children. PURCHASE A ROOTED TREE. Look for a tree that has the root intact so it can be planted afterward. COMPOST FOOD SCRAPS Eggshells, coffee grounds and vegetable peels can be put to use in the garden when composted. DECORATE WITH ITEMS FROM AROUND THE HOUSE. Costume jewelry and other trinkets can adorn the limbs of Christmas trees. Look throughout the house to see what you might have that can serve as replacements for heavily packaged, storebought decorations. Reducing waste during the holiday season can be accomplished without affecting the festive atmosphere synonymous with this time of year.

WILD LIGHTS T

he B.C. Wildlife Park will soon be a brighter place to visit when they begin their 21st Annual Wildlights Festival. The festival begins on Dec. 14 and runs to Jan. 6, 2019, every day from 5 pm to 9 pm except Christmas Day, when it will be closed. The Wildlights Festival turns the B.C. Wildlife Park into a bright, colourful experience for the whole family, with light displays featuring animals, familiar cartoon characters, and more. In all, thousands of lights will be on display throughout the park, which is located just east of the city. Along with the lights will be a number of activities to enjoy including performances by Uncle Chris The Clown, a Snowflake Scavenger Hunt, Meet a Reptile, Winter Story Time, and a Holiday Maze. You can also take a trip on the Wildlife Express Miniature Train to really get a good look at the Wildlights displays. Be sure to plan for a visit sometime this winter, as the display will only be up for a short time, and it’s not something you’ll want to miss.

your holiday season

F

amilies big and small typically celebrate the holiday season together. For some, celebrating the holidays with family requires traveling, while others stay put and welcome family and friends into their homes. At some point during the holiday season, celebrants who host family and friends will no doubt prepare a homecooked meal for their loved ones. Cooking for a crowd can seem like a daunting task, especially for first-time hosts. However, there are various ways for hosts to simplify cooking for a crowd this holiday season.

PREPARE A FAMILIAR DISH Hosts may agonize over their holiday menus, and some may feel compelled to prepare a family specialty or the same dishes their parents or grandparents prepared for holiday dinners when they were children. But holiday hosts can make things easy on themselves by choosing dishes they’ve made in the past, regardless of their place in family history. Chances are the ingredients for hosts’ own specialties are already in the pantry, saving a potentially time-consuming trip to the grocery store. And thanks to the familiarity factor, hosts’ own specialties likely won’t require as much time to prepare.

NLY MAKE WHAT O GUESTS ARE LIKELY TO EAT Hosts also should not feel pressured to cook more food than is necessary. Holiday meals have a tendency to be lavish, but hosts don’t have to spend all day in the kitchen preparing food that will likely end up as leftovers or trash. Get a final headcount in the days before everyone comes over and adjust your recipes accordingly.

SHARE SOME COOKING DUTIES Another way to simplify cooking for a crowd is to invite guests to bring along a side dish or dessert. Guests who live nearby can make something in advance of the big meal, while hosts can hand over their kitchens to overnight guests who express a willingness to contribute their own homecooked dish to the party. Sharing the cooking duties gives hosts more time to connect with friends and family and serves as a great way to plan the menu in advance.

START EARLY If the big is on Christmas Day, that does not mean hosts have to start cooking while everyone unwraps their presents. Hosts who are uncertain about what to cook can look for meals that can be prepared in advance so come the big day all they need to do is turn on the oven and let meals cook while the family spends time together.

Traditional Cranberry Apple Pie

2 Pie Crust Shells 8-10 Medium-sized Apples 1 bag uncooked cranberries 1 cup Chopped Pecans 2 tsp Apple pie spice 2 tsp Orange Zest 2 tsp Cinnamon

Prepare cranberries as directed on the package and set aside. Peel and core the apples, enough to fill your pie shell in a thick layer. Add apple pie spice, orange zest, cinnamon and ½ cup of the cranberry mix to the apples. Stir on luke-warm stove until well mixed. Add 1 cup chopped pecans to the apple mix. Pour the cranberry/apple pie mix into pie shell so it is heaping in the center. Then take second pie shell and place on top. Press the edges together to secure, and take a fork to poke three spots in top of crust. Bake at 400 F for 35-40 min. or until crust is golden. Serve warm with whip cream or ice cream.

1 egg 1 cup flour 1 cup chocolate chips ½ cup shortening ¾ cup chopped marachino cherries (well-drained) or chopped glace cherries

¾ cup white sugar ½ tsp almond extract ½ tsp baking powder ½ tsp salt ¾ cup coconut

Makes 3 dozen cookies. Cream shortening with sugar. Beat in egg and almond extract. Combine flour, baking powder, and salt. Stir into creamed mixture. Mix in chocolate chips, coconut, and cherries. Drop from a teaspoon onto a greased cookie sheet. Bake at 350 F for 12 to 15 min.

Magic Santa Cookie Bar

1 can EagleBrand milk 2 cups graham wafer crumbs 1 cup dried cranberries 1 cup flaked coconut 1 cup jet-puffed mini – marshmallows ½ cup chopped pecans ¾ cup melted butter ¾ cup while or semi-sweet chocolate chips

Makes 24 bars. Combine graham crumbs with butter. Press evenly onto parchment paper-lined 13” x 9” baking pan. Pour 2/3 can of Eaglebrand over crumbs. Sprinkle with pecans, chocolate chips, cranberries, coconut, and marshmallows. Press down firmly. Pour remaining Eaglebrand overtop. Bake at 350 F for 25 to 30 min or until lightly browned. (325 F for glass dish). Cool thoroughtly and cut into bars.

Makes 3 dozen very rich tasting bar! Combine chocolate chips, coconut, and crumbs. Mix in milk, butter, vanilla and salt. Spread in a greased 9” square pan. Bake at 350 degrees for about 25 min or until lightly browned. Cool, and cut into bars.

Emsland Insurance Chocolate Chip Cookies 3/4 cup margarine 1/2 cup brown sugar 1/2 cup white sugar 2 eggs 5 ml salt 5 ml baking soda 5 ml vanilla 2 cups flour 1 heaping cup of chocolate chips

Mix margarine, white sugar, brown sugar and eggs. Then add salt, baking soda and vanilla and stir. Finally, add the flour and chocolate chips until all is moist. Batch makes 15 cookies. 1 egg 1 ½ cup salted mixed nuts 1 ½ cup halved candied cherries 1 ¼ cup flour 1 cup semi-sweet chocolate chips ¾ cup softened margarine 2/3 cup b rown sugar ½ tsp salt

Combine flour with 1/3 cup brown sugar. Cut in margarine until mixture resembles coarse crumbs. Press mixture evenly and firmly into bottom on an ungreased 9” x 13” pan. Bake at 350 F for 15 min. Meanwhile, beat egg slightly in a large bowl. Stir in remaining 1/3 cup of brown sugar and salt. Add nuts, cherries, and chocolate chips. Toss mixture lightly to coat. Spoon fruit mixture evenly over the baked layer. Press firmly to adhere layers. Bake for an additional 20 min. Cool, then cut into 1 1/2” x 2” squares.

Hokey Pokey Biscuits (Cookies) 125g butter

Preheat oven to 350 F. Combine butter, sugar, golden syrup & milk in a saucepan over medium heat. Heat until butter is melted & mixture almost boiling – stirring constantly. Remove from heat & allow to cool to lukewarm. Mix flour & baking soda together then add to cooled mixture & stir well. Roll tablespoonfuls into balls and place on buttered cookie sheet or parchment covered sheet & press down with a floured fork. Bake for 15-20 minutes – till golden brown. Leave on tray 1-2 minutes then place on a wire rack to cool. These are a crisp cookie with a great taste.

Aunt Luverta’s Dr. Pepper Cake CAKE 2 cups all-purpose flour, sifted 1 tsp baking soda 2 cups granulated sugar 1 cup (2 sticks) unsalted butter 11/2 cups miniature marshmallows 3 tbs unsweetened cocoa powder 1 cup Dr. Pepper 2 eggs 11/2 cups buttermilk 1 tsp vanilla extract DR. PEPPER FROSTING 1/2 cup (1 stick) unsalted butter, softened 6 tbs Dr. Pepper 3 tbs unsweetened cocoa powder 1 pound box confectioners’ sugar, sifted 1 tsp vanilla extract 1 cup chopped pecans

Spiced Yogurt Muffins

61/2 cups Dannon plain fat-free Greek yogurt 4 cups water, room temperature 1 box (5 lbs) Gold Medal® Muffin Mix, Whole Grain Variety 3 tbs McCormick pumpkin pie spice 2 tbs McCormick Chipotle cinnamon 350º F

Combine yogurt and water in mixing bowl. Whisk until blended. Set aside. Add spices to dry muffin mix in a large bowl. Add yogurt and water mixture to the muffin mixture. Mix until just blended. Don’t overmix. Using a scoop, portion into greased or lined muffin pans. Bake at 350 F for 24 minutes, or 17 to 20 minutes in a convection oven, until the tops are golden brown.

Grease, but do not flour, a 9- by 13-inch pan. Set it aside. To make the cake, in a large bowl, sift together the flour and baking soda. Gradually stir in the sugar. Set aside. In a saucepan, heat the butter, marshmallows, cocoa, and Dr. Pepper. Stir constantly until the butter and the marshmallows are melted. Do not allow the mixture to boil. Pour the marshmallow mixture over the flour mixture. Beat well. Set side. In another bowl, beat the eggs until they are light and fluffy. Stir in the buttermilk and vanilla extract. Mix well. Beat the egg mixture into the flour mixture until well blended and the batter is smooth. Pour the batter into the prepared pan. Bake for 50 to 55 minutes, or until the center of cake springs back when lightly touched. Let the cake cool on a rack for 10 minutes.

To make the frosting, in a saucepan, combine the butter, Dr. Pepper and cocoa powder. Bring the mixture to a boil over low heat, stirring constantly. Remove the pan from the heat. Gradually stir in the confectioners’ sugar until the mixture is smooth, then fold in the vanilla extract and pecans. Spread over the warm cake.

Cinnamon Caramel Cheesecake Squares

2 8-ounce packages seamless crescent dough 2 8-ounce packages cream cheese 1 egg 2 tsp vanilla extract 3⁄4 cup sugar, divided Flour for dusting 1 tsp cinnamon 1⁄2 cup caramel topping 350º F

1. Preheat oven to 350 F. Unroll one package of crescent dough into a shallow baking pan. Roll out the dough to edges. 2. Heat the cream cheese in a microwavesafe bowl, uncovered, on high for 30 to 40 seconds, or until softened. Whisk until almost smooth. 3. Add the egg, vanilla and 1⁄2 cup of the sugar to the bowl. Whisk until smooth. Spread over the crescent dough.

4. Lightly sprinkle the flat side of a cutting board with flour. Unroll the second package of crescent dough and roll it into a 13- by 12-inch rectangle.

5. Fold the dough in half from the short end; gently lift and place in the pan. Unfold and gently stretch the dough over the cream cheese layer; press the edges to seal. Cut off corners of dough hanging over and discard. 6. Bake 22 to 24 minutes, until golden brown. 7. Combine the remaining 1⁄4 cup sugar and cinnamon in a small bowl. Place the caramel topping in a 1-cup measuring cup. 8. Remove the pan from the oven. Immediately pour the caramel topping over the cheesecake and spread to the edges of the crust. Sprinkle with the cinnamon-sugar mixture; let stand for 10 minutes. 9. Using a utility knife, cut into 4 x 6 rows to make 24 squares.

1. Place the strawberry halves in a single layer in the bottom of the pie crust.

1 store-bought (or homemade) chocolate cookie pie crust 2/3 cup sugar ¼ cup cornstarch 2 tbs unsweetened cocoa powder 1⁄4 tsp minced crystallized ginger 1⁄8 tsp ground nutmeg Pinch of kosher or sea salt 6 large egg yolks 21/2 cups half-and-half 6 ounces bittersweet or semisweet chocolate, chopped 1⁄2 tbs rum extract 1 tsp vanilla extract

2. In a medium saucepan, whisk together the sugar, cornstarch, cocoa powder, ginger, nutmeg, and salt over medium heat. 3. Whisk in the egg yolks to create a thick paste. Gradually whisk in the half-andhalf until the mixture thickens, about 5 minutes. Bring to a boil and cook for 1 minute. Remove from the heat. 4. Add the chocolate and whisk until combined. Add the rum and vanilla extracts. Cool the mixture for 4 minutes. 5. Pour the filling over the strawberries and up to the top of the crust. Chill the pie for 2 hours or until set. 6. Garnish with additional strawberries, if desired.

Frosty the Snowman

Frosty the Snowman, was a jolly happy soul, With a corn cob pipe and a button nose, and two eyes made of coal.

Frosty the Snowman, is a fairytale, they say. He was made of snow, but the children know he came to life one day. There must have been some magic in that old silk hat they found, For when they placed it on his head, he began to dance around! Oh, Frosty, the Snowman, was alive as he could be; and the children say he could laugh and play, just the same as you and me.

You know Dasher, and Dancer, and Prancer, and Vixen, Comet, and Cupid, and Donder and Blitzen But do you recall The most famous reindeer of all
