They toured the apple orchard, each walking away with two freshly picked apples. They found themselves a pumpkin from the pumpkin patch, and were fascinated by the ears of Indian corn they were able to pick. What a fun way to learn about and celebrate the Fall Harvest! Katie McKy, well-known author and storyteller came to perform her array of amazingly energetic and inspiring stories for not only Fairview and Trailview Elementary staff and students, but the community as well. She had adults and children laughing uncontrollably as she pummelled them with soft stuffed pumpkins and encouraged them to imagine themselves as one of the story’s many characters on stage for her “Welcome to Pumpkin Town” storytelling night Friday, Oct. 27. Katie is shown here signing her book “Pumpkin Town” for local students as part of the Mora C.A.P.P. (Comprehensive Arts Planning Program) Committee’s SWIM With the Arts Series of family friendly events. SWIM stands for Storytelling, Writing, Imagery and Movement as the committee connects local audiences with a variety of artists throughout the school year and is made possible by the voters of Minnesota through a grant from the East Central Regional Arts Council thanks to a legislative appropriation from the Arts and Cultural Heritage Fund.

Students Earn Limo Ride Trailview students held it’s annual Chip Shoppe fundraiser and raised nearly $12,000 for the “Trailview Incentive Fund”. Students that sold 25 items or more were treated to a limo ride and a trip to the Dairy Queen courtesy of the Chip Shoppe. Funds will be used for updating Physical Education and recess equipment, expenses for ﬁeld trips, and technology. Thank you to the community for their continued support.

Native American Studies 3rd graders discussed ancient Native American culture in social studies. This year they created an authentic experience for the students by weaving cattail reed mats. The students worked in groups creating the mats with actual cattail reeds.

Bus Safety/ Evacuation National School Bus Safety Week held on Oct. 19 -23. The bus safety team went to Fairview and Trailview to talk with all students in Grades K-6 about how important bus safety is for our students. Don Semelhack talked about the “Danger Zone” and keeping eye contact with the driver while outside the bus. Jody Anderson talked about the behavior the students should be showing while waiting for the bus. James Simpson was all about the safety of entering and exiting the bus. Kim Smith reminded the students of the bus rules. Gayle Stassen ended the presentation with a question and answer time. The picture shows one of our dedicated drivers showing students what NOT to do on the bus. The entire bus ﬂeet conducted an evacuation drill as part of the safety week. Here at Mora Schools, the bus drivers are dedicated to the safety of all students that ride the bus.

Fire Safety Week Mrs. Olson’s kindergarten class visited the fire station with the fire chief, Joe Heggernes. While there, they received a tour of the station and equipment. This trip coincides with fire safety week.

Red R d Ribb Ribbon W Week k Mrs. Paulson discussed Red Ribbon Week at lunch last week at Trailview. Red Ribbon Week is an alcohol, tobacco, drug and violence prevention campaign. Here students are signing their pledge to maintain positive choices in their lives. Students also had an opportunity to spin the wheel for a prize ranging from water bottles to pencils during their lunch period.

Student Council 5k

Weather Natasha Stenbock, a former morning meteorologist at KFMB in San Diego, presented to Mrs. Smith’s 3rd grade class. Students discussed numerous weather related topics and was impressed with our young scientists that asked great questions and listened attentively throughout the presentation.

On Friday October 30, the Mora High School Student Council hosted the first ever Halloween 5k Fun Run at the Nordic Center. More than 275 staff, students, and community members participated on what turned out to be beautiful running and walking weather that evening. Around 30 kids also participated in the ½ mile kids’ fun run, which weaved around the grassy trails by the Nordic Center. Miniature pumpkins were awarded to the top three boys’ and girls’ finishers, and each child also received a bag filled with Halloween candies. Following the kids’ race was the 5k event, which began at 5:30 PM near the softball fields next to the Nordic Center. The 5k involved two big loops, going behind the track and field and around the softball fields and trails. Participants were able to see their finishing time on the big clock, graciously donated for use by the Vasaloppet Committee. The top three male and female participants were awarded with miniature pumpkins as well as gift cards to Subway, Dairy Queen, and Holiday. Post-race refreshments included freshly-made popcorn, hot chocolate or hot cider, granola bars, and candy corn. Each participant also got a glow stick bracelet and Halloween tattoo. The council is looking forward to making this event an annual one and would like to thank all who participated as well as the many volunteers that helped out!

3 oz. cream cheese 1 c. sour cream 2 tsp. lemon juice 1 pkg. dry Italian dressing 2 T. chopped onion 2 T. chopped green pepper Mix above ingredients on a dinner plate. Make a rim around the plate. Slow Cooker Reuben Dip 16 oz. jar sauerkraut, drained 8 oz. pkg. cream cheese, softened 2 c. shredded Swiss cheese 2 c. chredded cooked corn beef 1/4 c. 1,000 Island salad dressing In a slow cooker, combine sauerkraut, cream cheese, Swiss cheese, corn beef and 1,000 Island dressing. Apple & Cheddar Mini Scones 3 c. all-purpose ﬂour 3 tsp. baking powder 1/2 tsp. salt 1/2 tsp. baking soda 1 c. cold butter

1 egg 3/4 c. (6 oz.) vanilla yogurt 3 T. 2% milk, divided 1/3 c. shredded peeled apple 1/3 c. shredded sharp cheddar cheese 1 T. minced fresh sage 1 T. sugar

Beat cream cheese, sugars and vanilla until smooth. Stir in toffee bits. Pour lemon and lime juices over apples to prevent browning.

Preheat oven to 425°. In a large bowl, whisk ﬂour, baking powder, salt and baking soda. Cut in butter until mixture resembles coarse crumbs. In another bowl, whisk egg, yogurt and 2 T. milk; stir into crumb mixture just until moistened. Stir in apple, cheese and sage.

Turn onto a lightly ﬂoured surface; knead gently 10 times. Divide dough in half; pat each portion into a 6-inch circle. Cut each circle into eight wedges. Cut each wedge in half. Transfer to parchment paperlined baking sheets. Brush tops with remaining milk; sprinkle with sugar. Bake 10 - 12 minutes or until golden brown. Serve warm. Makes 32 mini scones For regular size scones: Do not cut wedges in half. Bake as directed increasing baking time to 12 - 14 minutes. Makes 16.

Chocolate Peanut Butter Chip Fudge 2 c. (12 oz.) semi-sweet chocolate chips 1 (14 oz.) can sweetened condensed milk 1 tsp. vanilla extract 1 c. (6 oz.) peanut butter chips Line 8 or 9-inch square pan with waxed paper. Melt chocolate chips with sweetened condensed milk in a heavy saucepan over low heat, stirring frequently. Remove from heat. Add vanilla and peanut butter chips, stir throughout mixture. Spread evenly into pan. Chill two hours or until ﬁrm. Turn fudge onto cutting board, cut into squares. 1/4 /4 c. honey or Karo syrup 1 stick butter 1 tsp. vanilla 1/2 tsp. baking soda 1 bag Old Dutch Puffs White bark - 3 cubes, microwave on High for 85 seconds Preheat oven to 250°. Combine brown sugar and cinnamon in a microwave-safe bowl and mix well. Chop butter into chunks and place on top of sugar mixture. Pour syrup over it. Microwave 30 seconds, stir, then microwave 2 minutes, stir and microwave another 2 minutes. Add vanilla and soda. Mix well and pour over Puffs. Mix well to coat. Spread on a roaster or cookie sheet lined with parchment paper and bake for 30 minutes, stirring every 10 minutes. Take out and spread. Drizzle with melted bark when cool.

Kahlua Creamy Fudge 1 3/4 c. granulated sugar 1 jar (7 oz.) marshmallow creme 2/3 c. evaporated milk 1/4 c. butter 1/4 c. Kahlua 1/4 tsp. salt 2 c. semi-sweet chocolate pieces 1 c. milk chocolate pieces 2/3 c. chopped nuts 1 tsp. vanilla Line an 8-inch square baking pan with foil or butter bottom of pan. In a 2-quart saucepan, combine sugar, marshmallow creme, milk, butter, Kahlua and salt. Bring to a rapid boil, stirring constantly for 5 minutes. Remove from heat; add all the chocolate, stir until melted. Add nuts and vanilla, stir. Turn into prepared pan. Refrigerate until ﬁrm. To serve, cut in squares. Makes about 2 3/4 pounds.

DESSERTS Lemon Sheet Cake 1 pkg. lemon cake mix 4 eggs 1 can (15 3/4 oz.) lemon pie filling 1 pkg. (3 oz.) cream cheese, softened 1/2 c. butter, softened 2 c. powdered sugar 1 1/2 tsp. vanilla extract In a large bowl, beat cake mix and eggs until well blended. Fold in pie filling. Spread in greased 15 X 10 X 1 inch baking pan. Bake 350° for 18 - 20 minutes or until toothpick inserted comes out clean. Cool. Pumpkin Upside Down Cake

Favorite pancake mix (I use Complete) Box of Oreo cookies, any ﬂavor Powdered sugar, may use colored sugar Cooking oil In a large, heavy skillet, heat enough oil to do deep frying. Mix a batch of your favorite pancake batter according to package directions. Test oil for temperature by dropping a small amount of batter into oil. If it puffs up the batter and browns slightly, you are good to go. Place 4 to 5 cookies in batter (depending on size of kettle). Let battered cookies fry for only a very few seconds, using a metal slotted spoon, turn them only once. After a few more seconds (if they are puffed up and brown) remove them to a plate lined with paper towels. Do not stack them while hot. Remember always keep your eyes on the heating oil. Never, never leave hot or heating oil unattended.

When fried cookies have cooled, coat them with powdered sugar, using a small paper bag and very gently rolling several at a time. Remove and keep in a single layer.

Transfer to a large bowl. Stir in ricotta cheese, 1/2 c. of the Parmesan cheese, 1/2 c. of the basil, the egg, and salt. For sauce, in a small bowl combine broth and ﬂour; set aside. In the same saucepan heat the remaining 1 T. oil over medium heat. Add the remaining garlic; cook and stir until garlic is tender. Stir in ﬂour mixtue and half-and-half. Cook and stir until mixture is thickened and bubbly. Remove from heat. Stir in the remaining 1/2 c. basil. In a small bowl combine mozzarella cheese and the remaining 1/2 c. Parmesan cheese. Spead about 1 c. of the sauce evenly in an ungreased 3-quart baking dish or a 9 X 13 baking pan. Arrange three of the cooked lasagna noodles on the sauce in the dish. Spread with one third of the artichoke mixture and one third of the remaining sauce. Sprinkle with 1/2 c. of the cheese mixture. Repeat layers twice, starting with noodles and ending with cheese mixture. Bake, uncovered 35 to 40 minutes or until edges are bubbly and top is lightly browned. 1 c. cooked chicken, cut up 1 tsp. basil 1 bag frozen broccoli 1 c. diced celery 3 c. cooked brown rice 3 T. oil 4 oz. cream cheese 1/4 c. parmesan cheese 1 c. water 1 c. chopped onion

2 (12 oz.) pkg. frozen squash or fresh cooked squash 4 T. butter 1 tsp. salt Dash of pepper 2 eggs, slightly beaten 1/2 c. ﬁrmly packed dark brown sugar 1/2 tsp. cinnamon 3 T. butter, soft 1/2 c. chopped pecans (any nuts will do)

In a skillet saute celery and onions. Add broccoli and cook. Add cream cheese and water to skillet making a gravy, add chicken, rice and basil. Put in a 9 X 13 greased pan and sprinkle with parmesan. Bake for 30 minutes at 350°.

Combine squash, butter, salt, pepper and eggs in a saucepan. Cook over low heat until squash is hot, stirring well. Pour squash into greased 1-quart casserole. Combine brown sugar, cinnamon, butter and pecans. Sprinkle praline mixture over squash. Bake in moderate 350° oven for 30 minutes. Yield: 6 servings

Orange Tapioca Fruit Salad 1 (3 oz.) pkg. orange Jell-O 1 (3 oz.) pkg. vanilla tapioca pudding (not instant) 1 (3 oz.) pkg. vanilla pudding (not instant) 1 (16 oz.) can mandarin oranges (drained, save juice) 1 (16 oz.) can crushed pineapple (drained, save juice) Measure both saved juices, add water to equal 3 c. liquid 1 8 oz. tub Cool Whip

Oil for deep-fat frying Chipotle mayonnaise, opt. In a large bowl, whisk the ﬁrst six ingredients. In another bowl, whisk eggs, pumpkin, milk and melted butter. Add to dry ingredients, stirring just until moistened. In an electric skillet or deep fryer, heat oil to 375°. Drop batter by tablespoonfuls, a few at a time, into hot oil. Fry 1 1/2 to 2 minutes on each side or until golden brown. Drain on paper towels. Serve warm. If desired, serve with chipotle mayonnaise or ranch dressing.

8 ounces bow tie pasta or penne pasta 2 tablespoons butter 6 ounces baby portobello mushrooms or button mushrooms, sliced 6 ounces shiitake mushrooms, stemmed and sliced 4 cloves garlic, minced 3 tablespoons all-purpose flour 2 cups milk 1 tablespoon Dijon-style mustard 1/2 teaspoon salt 1 15 - to 19- ounce can cannellini beans (white kidney beans) or navy beans, drained 3/4 cup finely shredded parmesan cheese Freshly cracked black pepper Preheat oven to 375°. Cook pasta according to package directions. Meanwhile, in a large skillet, melt 1 tablespoon of the butter over medium-high heat. Add mushrooms; cook for 2 to 3 minutes or until mushrooms begin to soften. Add garlic; cook for 1 minute more. Transfer mixture to a large bowl. Place the remaining 1 tablespoon butter in the skillet; melt over medium-low heat. Stir in flour. Gradually add milk, mustard, and salt. Cook and stir for 2 to 3 minutes or until thickened and bubbly. Stir in mushroom mixture. Remove from heat. Drain pasta; add to mushroom mixture. Stir in beans and 1/2 cup of the cheese. Season to taste with pepper. Transfer to an

Stuffed Spaghetti Squash

Southwest Quinoa 2 1/2 c. chicken broth, divided 3/4 c. dry quinoa, rinsed 2 T. olive oil 1 c. diced onion 1 c. diced carrot 1 c. diced red bell pepper 1/2 c. diced celery 1 (4 oz.) can diced chilies, drained 1/2 tsp. black pepper 1 T. chili powder 2 tsp. ground cumin 1/2 tsp. ground coriander 2 T. minced garlic 1 (14.5 oz.) can diced tomatoes with green chilies, drained 2 c. diced cooked chicken 1 c. ﬁnely shredded Mexican cheese blend Preheat oven to 350°. Bring 1 1/2 cups chicken broth to a boil in a 2-quart saucepan. Add quinoa; return to a boil, cover and cook over medium heat 12 minutes or until quinoa has absorbed all the broth. Remove from heat, ﬂuff, cover and set aside. Heat olive oil in a large skillet over medium heat. Add onion, carrot, red bell pepper, celery and diced chilies, saute until tender, about 3 minutes. Add black pepper, chili powder, cumin and coriander and saute 2 minutes. Add garlic and saute 1 minute. Add

Italian sausage 2 c. of your favorite spaghetti sauce 2 T. fresh basil 1/2 c. ricotta cheese (or cottage cheese) 1/2 c. shredded mozzarella cheese (plus extra for topping) Olive oil Salt and pepper Roasting the squash: Preheat oven to 400°. Wash spaghetti squash, cut off stem and slice squash lengthwise. Scoop out seeds and strands. Brush with olive oil, season with salt and pepper and place, cut side down, in 9 X 13-inch baking dish with a little water in the bottom of the dish. As squash cooks, you can add more water if it dries up. Roast for 45-60 minutes, depending on squash size, or until inside is soft and easily “ﬂuffs” with a fork. While squash is roasting, brown Italian sausage in large skillet over medium heat. Drain excess grease. Add spaghetti sauce to pan and simmer. In a bowl combine ricotta, mozzarella and fresh basil, set aside. When squash is tender, remove from oven and using a fork, scrape inside squash until it

looks like spaghetti. Squash remains in shell. Begin to layer, starting wtih meat sauce, and then cheese mixture. Repeat until squash is ﬁlled. Top with mozzarella cheese. Place under broiler for cheese to melt and brown. Yields 2-3 servings. Submitted by Donna Carpenter, Finlayson

Spicy Shrimp Soup 1 lb. cooked shrimp 2 cans Campbell’s Cream of Shrimp soup 1 can artichokes, drained and separated 2-3 stalks of green onion 1 small block Mexican Velveeta cheese 3 c. half & half Cayene pepper Lawry’s Seasoned Salt Garlic powder Onion powder Tabasco sauce, to taste Pour soup in crock pot with 3 c. half & half. Soften and melt cheese over medium heat. Rinse shrimp and season lightly with cayene pepper, set aside. SNOW REMOVAL POLICY 2015-2016 SEASON KANABEC COUNTY TOWNSHIPS With the advent of another Minnesota snow season comes the concern about the access to work, school, and business. The safety and convenience of the traveling public is a main concern of the township supervisors of Kanabec County. The goal of the Townships is to have all roads passable within a reasonable amount of time after a snow fall. The Supervisors do not assure a completely bare road. The traveling public is reminded to exercise caution and drive with care and have your vehicle under control at all times. The legal speed limit may not be possible at all times. SNOW REMOVAL PROCEDURES 1. Dispatching of snowplow: The town will usually not dispatch the snow plow until after the snow fall has stopped. During extended periods of snow fall, exceptions may be made. The snowplow will not be sent out in situations that may be hazardous due to restricted visibility. The snowplow will not be dispatched if the snow fall does not exceed a total of 4 (four) inches. If snow fall stops during the night or early morning hours, the plow will be dispatched at 5:00 am. Weekend plowing will be handled in a similar manner. 2. Operations: Generally, the clearing of roads will consist of three phases: 1. Making the road passable, 2. Widening the road, and 3. Cleaning up. Dependent on the situation, more than one phase may be accomplished at one time. 3. Personal Properties: A. Mail boxes and fences damaged during snow removal will be evaluated case by case. Only those mailboxes that were properly located and installed per State Statute 169.072 and which were damaged by actual contact with equipment responsible to the town will be repaired at Town expense. B. Town residents are reminded that it is unlawful to plow snow from driveways onto or across public roads. Piles of snow left on or near the road can freeze into a solid mass, creating a hazardous situation for vehicles and snowplows. Accidents and damage caused by snow piles placed in the roadway may result in liability to the property owner. Piles of snow increase the chance of drifting snow onto the roadway. C. Town residents are reminded to remove parked vehicles from town roads to assist in snow removal. D. The Town vehicles will not attempt to remove stuck vehicles from Town ditches, snow banks, or any other impediment. E. When directed by the supervisors or the sheriff’s department, the Town will make every effort to make emergency plowing. 4. Information: The Town will be plowing roads in the most efficient order.
