DRY VENISON JERKY SAFELY Venison jerky is an easy to make flavorful snack. Remember when processing any meat, food safety must be at the forefront. In recent years, illnesses due to Salmonella and E. coli O157:H7 from homemade jerky have raised questions about the safety of traditional drying methods. It is important that the meat strips reach a sufficient temperature in the drying process to kill harmful pathogens that may cause foodborne illness. A food dehydrator, or your oven, should maintain a temperature of at least 145°-155°F for 4-6 hours when drying meat. But, to ensure the meat strips reach a temperature where pathogens are destroyed, the University of Wisconsin recommends heating the jerky (after drying) in a preheated 275°F oven for 10 minutes. This method, as a final step in the drying process, achieves an extra margin of safety and produces a quality jerky product. Take time to check the temperature of your dehydrator before drying. Place the metal stem of a dial thermometer between 2 trays so you can read the dial outside the dehydrator. Turn on the dehydrator and allow the temperature to stabilize. Adjust the thermostat to reach current research temperature recommendations of 145°F or above. For quality jerky, use only lean meats The Area’s #1 Choice for Deer Processing and Sausage!

Always marinate meat strips in the refrigerator, not on the counter. Dehydrate until a test piece cracks but does not break when it is bent. DEWEY L L. OLSON Dewey “Wimpy” Louis Olson died peacefully on the morning of Thursday, Oct. 29, 2015 surrounded by family. He was 93 years old. He was born in Spring Valley, Minn. on Sept. 3, 1922. He was the 10th of 11 children born to Lillian and Andreus Olson. He was a hard worker from the start. At the age of 7 he supported his family by selling Chore Boys, which earned him the nickname “Cigar Box Salesman.” On Nov. 13, 1942 he enlisted in the U.S. Army, serving as a demolition expert in the 49th Combat Engineer Regiment. He fought Desert Fox in North Africa. His unit was attached to the 101stAirborne that stormed Omaha Beach on D-Day. He did not stop at Normandy, how-

Sadly missed by, Jamie Janssen, Kelly Janssen, Greg and Beth Janssen, Bobby and Hollie Lindner, Ruta Kalnins ever, and fought in the infamous Battle of the Bulge in ArdennesAlsace, France. After marching through Hitler’s Rhineland and Central Europe, he was among the first American troops to liberate the Dachau death camp. Upon leaving the service in 1945, he was united in marriage to the love of his life, Shirley Evonne Nord, and they had four children. He lived with his growing family in California until 1989 when they moved back to Minnesota. He spent the last years of his life with his grandson, Andrew, granddaughterin-law, Jennifer and their children. He was preceded in death by wife, Shirley and son, Andrew. He is survived by children, Clayton (Trudi) of Mora, Mari Ann (Jeff ) Ruud of Bullhead City, Ariz. and Don (Viola) of Eagan; grandchildren, Andrea, Andrew, Richard, Breann, Larry, Josh, Krista Hawkinson, Rick Hawkinson, and Taylor Dainty; and many great-grandchildren. Funeral services will be held at Fort Snelling on Nov. 13 at noon. Please join us in saying goodbye to this man, myth and legend on Nov. 14, 2015 from 2 to 5 p.m. at his favorite, “beer joint,” Off the Road Bar & Grill in Brook Park. Share your favorite stories and make a toast to a long, amazing life lived.
