WELCOME from the ceo
CELEBRATING AND INNOVATING “Celebrating 40 years of success: using that experience and its underlying values to develop and realise our vision for the future.”
Welcome to Cyprus and to Kanika Hotels. We hope this anniversary issue will give you an insight into our business group and our values. This year, we celebrate a milestone: it is 40 years since the Company was first established, and its history provides unquestionable proof of the Group’s success. Kanika’s foundations were built on solid ground by a genuine leader with a clear vision to carry the Company successfully into the new century. I am, of course, referring to our founder, the late Mr Theodosis Karaolis. We, as the next generation of senior management, are determined to ensure that his mission lives on. The Group’s continued success and bright future are undoubtedly thanks to his example and we will use that heritage to bring our collective visions to reality. Human Capital is the cornerstone of Kanika’s ongoing success, while the origin and source of our values is summed up in the Kanika SPIRIT – which stands for Service, Professionalism, Innovation, Respect, Integrity and Teamwork. We believe that if we look after our people, they will look after our guests, giving them the best possible experiences and ensuring their satisfaction, which will in turn secure the success of the company. Last year was very successful for the Group, and one in which we managed to achieve all our goals across each Division, with your help. Because of you, our guests, we received 18 important awards in 2015 that acknowledge the high standards of service in our hotels. Among those, two stand out: The Olympic Lagoon Resort Paphos was ranked among the 10 Best New Hotels Worldwide, and the Olympic Lagoon Resort Agia Napa as one of the 25 Best Family Hotels in Europe. In this anniversary year, we are excited to announce the development of a new luxury hotel, Infinity, with construction expected to begin soon on one of the most exclusive seafront sites in Cyprus, adjacent to the fully renovated Alexander the Great Beach Hotel in Paphos. Its completion is anticipated for 2019. You will find more information about the adults-only Infinity concept in the pages of this magazine. Alongside its role in the hotel industry, another of the Group’s member companies, Kanika Developments & Construction Ltd, continues its activities with high standard commercial and residential projects including hotels, luxury villas, apartments, offices and shops. As land developers, we are very aware of the legacy we leave, so - with new building techniques available - we always aim to use the most energy-efficient designs, methods and materials in our projects. Kanika Hotels aims to offer guests their dream experiences and we will always bring you up-to-date with what’s new. We hope that you will continue to be a part of our success. Spyros Th. Karaolis Group Executive Chairman

a new vision
As Kanika commemorates its 40th anniversary, the Group is celebrating its past achievements and preparing for the future. Indeed, gazing into Kanika’s metaphorical crystal ball reveals a vision that will make your eyes twinkle – and the vision has a name: Infinity. Infinity is Kanika Hotels’ latest project, which expands the Group’s footprint in Paphos, joining Alexander the Great Beach Hotel and the Olympic Lagoon Resort Paphos.
But make no mistake; Infinity is not an extension of either of its sister hotels. It is an all-new creation, a unique gem in the Kanika treasure chest, with its distinct shine, design and appeal. Already taking shape in a prime location within walking distance from the picturesque and bustling promenade ending at the old harbour and the castle, Infinity is scheduled to open in 2019. Let’s take a closer look…

What makes Infinity special is its basic premise: a luxurious, ultraromantic destination for two, which combines the privacy of home with the privileges of five-star hospitality. How is that achieved? First, the ambience of this seafront resort will allow you to instantly relax and spread out thanks to generous dimensions with all-comfort features. As all traces of stress evaporate in the sun, you will start to notice the different facets of Infinity. The sea-facing architectural design guarantees a therapeutic view from every guest room. With its artistic skylight and full-height glass walls, even the indoor pool delivers Mediterranean relaxation. To not only feel but also look your best, Infinity’s luxury Spa and Health Centre balance health, wellness and beauty. And wherever you are, the high staff-to-guest ratio will ensure prompt yet discreet attention that exemplifies Infinity’s promise to take the couples' experience to the next level. Romancing the
Everyone will agree that wining and dining is an indispensable element of any romantic scenario. Infinity’s ‘Half Board Plus’ terms are designed accordingly and start with breakfast that can be either buffet or à la carte. Later in the day, four restaurants – two indoor and two under the soft, clear Mediterranean skies – offer multiple opportunities to mix and match flavours from kitchens around the world. Every day you will have two restaurants to choose from, as well as two themed restaurants to enjoy twice a week. At no extra charge, your meals will include a bottle of wine per couple, or unlimited premium beers, soft drinks, mineral water, and coffee or tea. For casual quick bites and refreshments the dilemma will be: which of the three bars – or perhaps the Coffee Shop? The day will never end with dinner, as sophisticated high and low energy evening entertainment options will be available every night; simply follow the music that reflects your mood. As a whole, the five-star service Infinity provides from sunrise to sunset and beyond reflects Kanika’s understanding of couples’ needs and delivers the ultimate response. And it will be yours to enjoy in summer 2019… mark your diaries.

WHY NOT TAKE… …a sip!

NEW BAR MENUS
Kanika is always looking for ways to upgrade its guests’ experiences. Check out our new bar menus, innovative cocktails, and the branded alcoholic drinks on our all-inclusive drinks menu. Plus: the hugely popular Rock’n’Roll Diner – a family favourite from day one – is now open at lunchtime as well as in the evenings, offering you even more choice!
Juicy, sweet watermelons are grown abundantly in the region and are the major fruit of the summer. Locals like to enjoy a breakfast of Halloumi cheese and watermelon, whilst watermelon-based cocktails are also popular in bars.
…it home!
Spoon Sweets
Sticky and intensely sweet, these traditional preserves come in a variety of candied fruits, vegetables, rinds and peels and used to be served on a small spoon and offered to guests as a symbol of hospitality. Take a jar of fig, watermelon rind, marrow or cherry back with you and enjoy ‘sweet’ holiday memories at home!

Herb gardens
The fragrant Cyherbia Botanical Park and Labyrinth in Avgorou village has nine beautifully landscaped herb gardens, a woodland area with endemic trees and shrubs that form the shape of Cyprus, and the island's first and only maze, which is a challenging 2000m2. In the herb shop you will find a large selection of herbal teas, tinctures and essential oils - all handcrafted at the park. The fun and educational day out has something for all ages, including children's activities and seasonal events.
Going for Gold
We’re proud of our Travelife Gold Certification 2015-2017. Travelife – the international sustainability certification scheme – assesses a hotel’s performance in managing its social, environmental and economic impacts. For the Gold certification, we had to meet their 150 sustainability criteria. These include environmental issues, such as minimising waste, energy and water saving, and the careful use of chemicals. Additionally, taking positive action on social issues such as employee welfare, working with the local community, child protection and human rights. We also showed how we help to support local businesses and protect local traditions and wildlife. We also won the Thomas Cook Golden Sunny Heart Award, 2015 in the category ‘Best All-Inclusive Worldwide’.

ALL INCLUSIVE DINING
TEXT BY DINA MYLORDOU PHOTOGRAPHY LOUCA STUDIOS
Kanika has designed and embraced an ongoing programme of culinary innovation under the banner of ‘World Inclusive Dining’.
Dining without borders
The upgraded luxury all-inclusive offerings in several different restaurants satisfy your appetite for flavours from Cyprus and Greece, as well as Asian and Italian cuisine, alongside American diner favourites.
In the hotel industry as in life ‘the way to a man’s – or a woman’s – heart is through the stomach. Although your decision to book a Kanika holiday was probably not driven by your taste buds alone, now that you’re here, deciding where and what to eat will be a daily tantalising multiple-choice question – with several correct and delicious answers! The extended dining options you can pick and choose from are the result of Kanika Hotels’ new Culinary Innovation programme. Based on the concept of ‘World Inclusive Dining’, the programme is not a one-off effort; it is an ongoing process – even a mindset – that defines the modus operandi in all Kanika kitchens. The ultimate goal is to charm your palate with authentic flavours from around the world. Cooperating with Kanika’s culinary brigade in this process is UK Consultant Executive Chef, Peter Gorton. As a former proprietor of several restaurants, holder of a Michelin Star and 3 Rosettes for several years, author of various cookery books and known for his popular TV cooking programmes, Gorton worked intensively with the Kanika team in preparation for the 2016 season. A follow-up schedule of periodical additions and annual reviews promises a steady flow of culinary surprises. As Kanika Hotels’ Group General Manager Christos Pericou says: “We have to think ahead to stay ahead; and we will continue to work hard to offer our guests a contemporary and enjoyable taste experience that takes them around the world.”

The rich meze combines all our traditional delights, including olives, various dips, marinated sausages and popular meat dishes such as pork belly krasato, chicken souvlaki, grilled sheftalia and lamb chops.
Seven Orchids, Pan Asian cuisine
Repeat Kanika guests have probably noticed the change: the former Kiku Japanese Restaurant has outgrown its original geographical boundaries and has been replaced by the new Seven Orchids pan Asian concept. The new and imaginative menu is based on a ‘recipe’ with three ‘ingredients’: Kanika’s understanding of guests’ preferences, Gorton’s experience in kitchens across Asia, and the overall trends in gastronomy. Featuring both popular as well as more exotic culinary creations, Seven Orchids treats you to a taste symphony that balances the four basic tastes – sour, bitter, sweet, and salty. Enjoy teppan style cooking from Japan, traditional five-spice dishes from China, coconut and lime infused recipes from Thailand and the ever-popular green curry with its Malaysian signature. Indeed, Seven Orchids blends cuisine and culture in every bite. Enjoy the Seven Orchids cuisine in all our hotels.
From miso soup to Korean beef kalbi and much more, you can explore the different cuisines of Asia during your Cyprus holiday!

Cyprus Taverns
When in Cyprus, eat as the Cypriots eat! That’s why every Kanika hotel serves meze delights with all the local trimmings. Just look for the typical taverna décor, follow the sound of Greek music and clinking glasses, and let the seemingly endless cascade of tapas style mini-dishes mesmerise you. Such is the popularity of tavern treats that one might wonder how and why culinary innovation comes into play. And yet, the Kanika team has a plan that is being finetuned and tested for the coming season: traditional Cyprus cuisine, with a twist. On the one hand, traditional outdoor cooking methods will be introduced – such as the original clay oven and outdoor barbecue. On the other, established favourites will be reinvented with subtle flavour-enhancing ingredients, modern food preparation techniques, and creative presentation – the kind of innovative modifications that will make any foodie’s heart beat faster. Enjoy Cyprus cuisine at The Captain’s Deck, Olympic Lagoon Resorts in Agia Napa and Paphos Limanaki, Alexander the Great Beach Hotel in Paphos Blue Paradise, Elias Beach Hotel in Limassol

ALL INCLUSIVE DINING
In addition to juicy steaks and burgers, the enriched diner menu features the ever popular rack of baby back ribs topped with sticky BBQ sauce, served with steak potatoes, onion rings and green salad.
Garibaldi Ristorante Italiano
Slow-cooked lamb shank served with Marsala Sauce, creamy polenta and vegetables is only one of many full-flavoured options on the Garibaldi à la carte menu.
For many years, dinner at the Garibaldi Ristorante Italiano was a privilege reserved for guests staying at the Alexander the Great Beach Hotel in Paphos. Within the Culinary Innovation programme, and in line with Kanika’s policy of upgrading its Luxury All-Inclusive proposition, the Olympic Lagoon Resort in Paphos added Garibaldi to its dining options. But it wasn’t just a case of reproducing the existing menu. In fact, Garibaldi is a prime example of Culinary Innovation in action. Staying true to the principle of serving authentic and generous Italian cuisine, the menu was elevated to gourmet levels. Elements of molecular cuisine were incorporated, sous-vide cooking was introduced, fresh fish and premium beef are waiting to tempt you. In the elegant adults-only environment, Garibaldi is without a doubt the fine dining experience you’ve been waiting for at the Olympic Lagoon Resort Paphos. The Garibaldi Ristorante Italiano welcomes you at the Alexander the Great Beach Hotel Paphos and Olympic Lagoon Resort Paphos
Rock ‘n’ Roll Diner
Kanika’s American style family restaurant – an extract from the American landscape – was a hit among guests, right from the start. The overwhelming response of families in particular to the classic burgers-fries-milkshake-and-dessert menu gave the Culinary Innovation team the high-octane fuel they needed to accelerate their efforts and enhance the menu. Now the 50’s music and fun family ambience welcomes guests around midday as well as in the evening, with different menus for lunch and dinner. For your energy boost around noon, the lunch menu focuses on the original favourites as well as wraps and salads. Head for the diner in the evening and you will enjoy the new dinner menu, which has been upgraded to cater to the more adult palate, with a variety of steaks, spare ribs and other dishes with American roots. The Rock ‘n’ Roll Diner welcomes you at the Olympic Lagoon Resort Agia Napa and Olympic Lagoon Resort Paphos
Our Winning Team
As all the members of Kanika’s Culinary Innovation committee will tell you, every chef is only as good as his team, and the Kanika team has what it takes to excel. Led by Group Executive Chef Andonis Nicolaou, Kanika Hotels participated in the Gastronomia 2016 culinary competitions and achieved remarkable success: 4 Gold, 11 Silver and 5 Bronze awards. Join us in congratulating our chefs, and enjoy your World Inclusive Dining experience at Kanika Hotels.

NATURAL CYPRUS

NATURAL CYPRUS
Valued by everyone olives and olive oil are a major contributor to Cypriot cuisine and the healthy ‘Mediterranean Diet’.
The riches from two special trees
Carob and Olive trees hold the culture and tradition of our island in their roots (or maybe we should say ‘fruits’). Fragrant olive oil is an important part of the Mediterranean diet; whole or sliced olives feature in Cypriot bread, pies, pastries, salads... and even cocktails. Since Mediaeval times, the island has also been famous for its carob trees, exporting pods, thick syrup and carob gum while carob seeds gave their name to the jewellery weight known as a ‘carat’. Carob mills were features of countless villages, though many have now been converted to restaurants or museums.
The Animal on Our Coins
You may, unwittingly, already have come face-to-face with the Cyprus mouflon as the animal represented on our issue of the euro 1, 2, and 5 cent coins. Ancient mouflon are considered by some to be the world’s ‘mother of all sheep’ and the impressive species endemic to Cyprus is the largest of the island’s nondomesticated mammals. A protected species, it can (if you’re lucky) be seen in the wild in the forests of Paphos. However these impressive creatures are shy, move quickly and are incredibly agile. They have remarkable curved horns which, in an adult male can be up to about 60cm long. From excavated mosaics, it appears that the mouflon was very well known on the island during the Hellenistic-Roman period.

The Shy Pink Lady
A protected species, the endemic Cyprus cyclamen is our national flower. A small delicate perennial, its fragrant pink and white flowers appear in the cooler months, with the plant going dormant in summer – hiding all above-ground evidence of its existence. Typical of cyclamens, the nodding flower faces downwards, making it appear reluctant to face the curious world.
NATURAL CYPRUS
Birds of a feather
Of 374 species found on the island, two birds are endemic - the Cyprus Warbler and the Cyprus Wheatear. The Wheatear’s main claim to fame is that it was featured on the country’s old ten pound note. Cyprus is also known for the many migratory birds passing through each year, attracting ornithologists from across the globe. The wetlands of Limassol and Larnaca are famous for the pink flamingos which visit annually (an estimated 15,000 were counted in mid January) and a rare black flamingo has also been spotted. www.english.akrotirienvironment.com
National Parks – nature at your feet The Cute Little Cypriot Mouse
A previously unknown type of mouse (Mus cypriacus) has been discovered on the island, and DNA testing proved it to be the first new terrestrial mammal species discovered in Europe in decades. Endemic to the island, it is believed to have colonised and adapted to the Cypriot environment over 9,000 years ago, several millenia before the arrival of man. The only native Mediterranean rodent still alive, it is considered a "living fossil" with a bigger head, ears, eyes and teeth than other European mice.

A trip to the impressive Visitors’ Centre at the Troodos Geopark will intrigue you with its illustrated history of the ancient geology of Cyprus ‘in a nutshell’, with stories alongside of the island’s famous copper mining. The nearby Leventis Botanical Garden has transformed the site of a former asbestos mine into an amazing botanical garden, where you can see 92 of the island’s 143 endemic plants - 37 of which are only found in this location. The Cavo Greko National Park, on the south-eastern tip of the island (between Agia Napa and Protaras) is home to about 400 plant species, including around 14 endemics. Many of the 36 different orchid species growing on the island are found here, as well as crocuses and irises. 14 indigenous species in the park are considered rare. The fauna include foxes, hares and hedgehogs, several species of snakes and lizards, and numerous butterflies.

Where to Buy?
Contemporary Luxury: discerning clients seek elegant, exclusive and personalised villas in prestigious locations
For some, purchasing outside the nation of their citizenship may be easy. For others, a relatively new concept - the global market for ‘investor immigration’ - has become increasingly diverse, and subsequently the competitive challenges to developers in each country greater. ‘Investor Immigration’ provides a means for individuals or families to buy overseas properties, and enjoy unrestricted entry to that country regardless of normal visa restrictions. In Cyprus, there are two attractive schemes available to non-EU investors: the possibility of Permanent Residency status for those buying property valued at over euros 300,000 and Cypriot Citizenship for those investing over euros 2.5 million (generally in commercial ventures, individually or in partnership).

Both come with a series of conditions. For example, the money invested must come from overseas; those granted Permanent Residency under the scheme are not granted the right to work in Cyprus; the investors must have guaranteed annual overseas incomes at or above specific levels; and they must maintain bank accounts in Cyprus. Kanika Group can offer profitable and secure “pathways” for investors who wish to acquire a Cyprus Passport or a Cyprus Permanent Residency Permit, and has to date assisted clients from a number of non-EU countries who wish to invest under one or the other of the schemes, offering pre-purchase advice and post-purchase support.
