our story As a busy mother of two, Epicure’s President and Founder, Sylvie Rochette, developed her original herb and spice blends as healthy, time-saving alternatives to store-bought mixes. Their popularity with family and friends inspired Sylvie to begin selling her blends from the back of her blue station wagon at local craft fairs and markets. As the company grew, Sylvie’s line of products expanded to include an extensive selection of blends, time-saving recipes, professional-quality cookware and environmentally friendly home and body care products; all made to help the home chef discover the joys of cooking and eating delicious and flavourful meals with family and friends. Quick Everyday Biscuits Prep 10 min • Cook 15 min • Makes 8 biscuits • Cost per serving: $0.26 1 ¾ cups (430 ml) all-purpose flour 1 Tbsp (15 ml) VE Baking Powder (p.30) 1 tsp (5 ml) sugar ½ tsp (2.5ml) salt ¹⁄ ³ cup (80 ml) cold vegetable shortening, butter or lard ¾ cup (180 ml) skim milk

2. Whisk first 4 ingredients in a large mixing bowl.

Crystallized Ginger: Add ¼ cup (60 ml) finely diced VE Crystallized Ginger and ¼ tsp (1.25 ml) VE ground Nutmeg. For the ideal flavour complement, serve with marmalade, cheddar cheese and a bracing cup of VE Victorian Afternoon Tea.

3. Cut in shortening with a pastry blender or 2 knives until mixture resembles coarse crumbs.

Summer Berry: Replace sugar in the Simple Sweet recipe with VE Summer Berry Fruit Dip Mix. Ideal for berry shortcakes.

4. Make a well in the centre and pour in milk. Immediately stir dry ingredients into the centre until a rough dough results.

Easy Vegetarian Lasagna Prep 15-20 min • Cook 40 min • Makes 16 servings • Cost per serving: $2.56 4 large eggs, beaten 4 cups (1 L) light ricotta or low-fat cottage cheese ²⁄3 cup (160 ml) grated Parmesan cheese 2 tsp (30 ml) VE Pizza Seasoning (p.16) 6 cups (1.5 L) prepared VE Marinara Sauce (p.11) 2 cups (500 ml) water 24 pre-cooked, oven-ready lasagna noodles 4 cups (1 L) grated, partly-skimmed mozzarella cheese 1. Preheat oven to 350° F (175° C). 2. Combine eggs, ricotta or cottage cheese, Parmesan and VE Pizza Seasoning in a large mixing bowl. Set aside. 3. In another bowl, mix VE Marinara Sauce with water – thinning sauce ensures proper re-hydration of precooked noodles during cooking.

4. Lightly grease 2 – 9" x 13" (23 x 33 cm) baking dishes and spread ½ cup (125 ml) sauce in the bottom of each. Layer with 3 lasagna noodles. 5.
