Strawberry Pretzel Dessert You will need: 2 cups of crushed pretzels ¾ cup of butter, melted 3 tablespoons of white sugar 1 (8 ounce) package of cream cheese, softened 1 cup of white sugar 1 (8 ounce) carton frozen whipped topping, thawed 2 (3 ounce) packages of strawberry gelatin 2 cups of boiling water 2 (10 ounce) packages frozen strawberries

Preheat oven to 400 degrees F. Stir together crushed pretzels, melted butter and 3 tablespoons of white sugar, mix well and press mixture into bottom of 9 X 13-inch baking dish. Bake 8-10 minutes until set; set aside to cool In a large mixing bowl cream together cream cheese and white sugar. Fold in whipped topping. Spread mixture onto cooled crust. Dissolve gelatin in boiling water, stir in frozen strawberries and allow to set briefly. When mixture is about the consistency of egg whites, pour and spread cream cheese layer. Refrigerate until set.

Why I like it? It reminds me of summer and all of the traditions and occasions that my family has had together. It is also sooo good!

Traditions in my family: In my family my grandma always makes this dish. She makes it for summer parties like the Fourth of July. It is not a family gathering without this dessert from my grandma!

Beef Vegetable Soup 1.5 pounds cut up chuck roast 3 cups beef broth 1 tablespoon vegetable oil 3 cups V8 vegetable juice 3 cups of water 2 stalks celery, diced I med onion, chopped 2 carrots, sliced 1 small can peas 2 cans of green beans 2 small cans of lima beans 1 can diced tomatoes 1 can of tomato sauce 5 potatoes, peeled and cubed 2 beef bouillon cubes ½ teaspoon salt ½ teaspoon pepper In a large pot, heat vegetable oil and add cut up chuck roast and brown on all sides. Add onions and sauté for 5 minutes. Dump in rest of ingredients and stir well. Bring to almost a boil, then cover with lid and let simmer for 1 hour stirring occasionally until all vegetables are tender.

Directions 1. Bring a large pot of lightly salted water to a boil. Add ziti pasta, and cook until al dente, about 8 minutes; drain. 2. In a large skillet, brown onion and ground beef over medium heat. Add spaghetti sauce, and simmer 15 minutes. 3. Preheat the oven to 350 degrees F (175 degrees C). Butter a 9x13 inch baking dish. Layer as follows: 1/2 of the ziti, Provolone cheese, sour cream, 1/2 sauce mixture, remaining ziti, mozzarella cheese and remaining sauce mixture. Top with grated Parmesan cheese. 4. Bake for 30 minutes in the preheated oven, or until cheeses are melted.

Great Gram’s Chocolate Pie Bake a Pet Ritz deep dish frozen pie crust as . directed on the bad. Set aside and let cool. In a pot over medium-high heat, mix ¼ Cup Cocoa, ¾ Cup Sugar, 4 Tbsp Corn Starch, 2 Whole eggs, and 1-3/4 Cup Milk. Stir over medium-high heat until it looks like pudding. Remove from heat and stir in 1 Tsp Vanilla. Pour into cooled pie crust and refrigerate for at least 3 hours. Top with Cool Whip.

I was told this chocolate pie recipe has been passed down from my great grandma, to my grandma, and now my mom. They’ve made it every year for Thanksgiving since the 1920s.

CRANBERRY APPLE CASSEROLL

INGREDIENTS 3 cups chopped peeled tart apples 2 cups fresh or frozen cranberries 1 cup sugar 3 tablespoons all-purpose flour TOPPING

DIRECTIONS - Peel and chop apples - Combine apples and cranberries in large mixing bowl. - Add sugar and flour. - Pour into a greased 11-in. x 7-in. baking dish. TOPPING - In a bowl, mix topping ingredients until crumbly - Sprinkle over apple mixture. - Bake at 350° for 50-55 minutes or until fruit is tender

Why I like this… Cranberry apple casserole is a very good dish in the fall. All of the fruit is in season, so it make a very good dessert.

The Tradition My family makes this dish every year for Thanksgiving. After that we will eat the leftovers for breakfast.


Dirrections: 1.

Beat eggs in the top of a double boiler. Add milk, sugar, cinnamon (if using) and salt, and mix thoroughly. Fill the bottom pan of the double boiler with about an inch of water. Bring the water to a boil and turn down the heat so that it is simmering hard. Place the upper pan containing the eggs and milk over the pan with the simmering water.

Stir frequently with a wooden spoon until the mixture curdles, approximately 20-30 minutes or until no more whey (the liquid) is exuded. By the way, don't throw away the whey! Use it in place of the milk in this paska Easter bread recipe.

Line a colander with damp butter muslin or two layers of cheesecloth that is large enough to hang over the sides of the colander. Place the muslin-lined colander over a bowl to catch any whey.

Use a skimmer or slotted spoon to ladle the curds into the cheesecloth. Allow the curds to drain for 10 minutes. Then, gather up the edges of the cheesecloth to form a bundle in order to drain as much whey as possible from the egg cheese. Use a length of butcher's twine to tie the cheesecloth containing the curds into a neat bundle, pressing on the cheesecloth a bit to help the whey drain off.

Tie the twine to a wooden spoon or dowel, and hang the egg cheese curds over a pot or container to collect any remaining whey and continue draining for 30 minutes.

When the egg cheese ball has cooled and not dripping any more whey, place it in the refrigerator overnight still suspended over a pan so it will retain its round shape. When ready to serve, remove the cheesecloth. Serve sliced. This cheese is very perishable and should be consumed within a day or two. Store tightly covered in the refrigerator

Zucchini Pie Zucchini Mixture  8 cups zucchini – remove skin and seeds then peel them like an apple  1 cup sugar  2. teaspoons cinnamon (heaping)  2/3 cup lemon juice Put above mixture in a pot and cook for 8-10 minutes till tender (will not thicken) Crust  4 cups flour  2 cups sugar  3 sticks margarine Mix above together, take ½ of mixture and pat down in a 9x13 pan. Bake on 325 for 13 minutes. Take zucchini mixture and put on top of crust use a slotted spoon then pour the juice on top of zucchini mix. Sprinkle other half crust on top and bake at 325 for 45 to 50 minute’s

Why I enjoy this recipe I like this recipe because it tastes like apple pie even though its zucchini.

Bobalki A Slovak Christmas Dish By: Devan M. Ingredients

2 cups water 3 tablespoons plus 1 tablespoon sugar 2 teaspoons salt 5 tablespoons canola oil or butter 2 packages active dry yeast 6 cups all-purpose flour 1/2 cup poppyseeds 1/2 cup honey Prep Time: 15 minutes Cook Time: 20 minutes Total Time: 35 minutes

1. In a medium saucepan, bring to boil 2 cups water, 3 tablespoons sugar, salt and oil. Cool to lukewarm. Meanwhile, dissolve yeast in 1 tablespoon sugar and 1/2 cup warm water. 2. Place flour in the bowl of a stand mixer or a large bowl. Add lukewarm water-sugar mixure and yeast mixture. Combine thoroughly and knead until smooth, about 7 minutes in the mixer and at least 10 minutes by hand. Cover and let rise until doubled. 3. Punch down dough and turn out onto a lightly floured surface. Roll dough to 1/2- to 1-inch thick and cut into pieces that will result in 1-inch balls when rolled between the palms of the hand. 4. Place on a parchment-lined or well-floured cookie sheet with dough ball sides touching. Heat oven to 375 degrees. Let rise, covered with oiled plastic wrap until nearly doubled. Bake 15-20 minutes or until lightly browned. Cool completely. 5. Meanwhile, grind poppyseeds in a mortar and pestle with a little water or milk and set aside. When bobalki are cool, break the balls apart and place in a colander. Pour just enough boiling water over bobalki to soften but not turn them into mush. Drain well. Pour warm honey and ground poppyseeds over all. Stir lightly and serve immediately. Bolbaki in my family is a tradition to eat around Christmas time - Bolbaki is traditionally eaten around Christmas Eve - There has to be 12 different kinds of dishes served on Slovak Christmas Eve.


Italian Cookies Recipe makes 3 dozen: 1/2 cup of butter, softened 1/2 cup of white sugar 3eggs 2 teaspoons of vanilla extract 3 cups of all-purpose flour 3 teaspoons baking powder .

Directions: 1. Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets. 2. In a large bowl, cream together the butter and sugar until smooth. Mix in the egg and vanilla. Combine the flour and baking powder; stir into the creamed mixture until blended. Divide dough into walnut sized portions. Roll each piece into a rope and then shape into a loop. Place cookies 2 inches apart on the prepared cookie sheets. 3. Bake for 8 to 10 minutes in the preheated oven, until firm and golden at the edges.

Ingredients

-11/2 cups warm milk, no warmer than 110 degrees -2 packages active dry yeast (remember to proof yeast before you begin) -1/2 cup sugar -4 ounces butter, at room temperature -1 large room-temperature egg -3 large room-temperature egg yolks -1 tablespoon brandy or rum -1 teaspoon salt -41/2 to 5 cups all-purpose flour -1 gallon oil for deep frying -Granulated sugar, optional -Confectioner’s sugar, optional

I eat Paczki almost every year for New Years. It’s a tradition because I’m Polish and so is my dad.

- Paczki is translated into English as “donuts” - The alcohol evaporates - It’s been known since the middle ages

1 Add yeast to warm milk and stir to dissolve and set aside. 2 In a large bowl or stand mixer fitted with the paddle attachment, cream together sugar and butter until fluffy. 3 Beat in eggs, brandy and salt until well incorporated. 4 Still using the paddle attachment, add 4 1/2 cups flour alternately with the milk-yeast mixture and beat for five or more minutes by machine and longer if doing it by hand. Mixture should be smooth. 5 Dough will be very slack, if too soft, add remaining 1/2 cup flour, but no more. 6 Place dough in a greased bowl and cover and let rise until doubled in bulk, anywhere from one to two and half hours or follow this Quick Tip to cut the rise time. Punch down and let rise again. 7 Turn dough out onto lightly floured surface and pat or roll to 1/2-inch thickness. 8 Cut rounds with 3-inch biscuit cutter. 9 Remove scraps, and re-roll and re-cut. 10 Cover and let rounds rise until doubled in bulk, 30 minutes or longer. 11 Heat oil to 350 degrees in large skillet or Dutch oven. 12 Place paczki top-side down (the dry side) in the oil a few at a time and fry two to three minutes or until bottom is golden brown. 13 Flip them over and fry another one to two minutes or until golden brown. 14 Make sure the oil doesn’t get too hot so the exterior doesn’t brown before the interior is done. 15 Test a cool one to make sure it’s cooked through and adjust cooking time and oil heat accordingly. 16 Drain paczki on paper towels or brown paper bags and roll in granulated sugar while still warm. 17 Dust filled paczki with granulated sugar, confectioners’ sugar or glaze.

Cover w] foil and refrigerate. Remove ½ hr. prior to baking *Preheat oven 3500 Bake covered for 35min.[more if needed], remove foil and bake an additional 15min. or until top is evenly browned [ test w/ toothpick]
