PREHEAT oven to 160°C. HEAT oil in a large saucepan and cook onion until softened, about 5 minutes, then add garlic and all other vegetables. Cook for a few minutes stirring constantly. ADD tomato paste, canned tomatoes, vegetable stock, wine and herbs. BRING to the boil and simmer for about 30 minutes. Do not reduce the sauce too much as any excess will be absorbed in the pasta/lasagne sheets. HEAT milk and nutmeg in saucepan, add cornflour and stir until it thickens. LAYER the tomato sauce, a lasagne sheet and white sauce in the baking dish. Repeat with two more layer. SPRINKLE with cheese and bake for approximately 45 minutes to an hour. Pickleball Promises for Plenty of Fun!
Come and try the fastest growing sport in Australia at Samford – Pickleball a mixture of badminton, table tennis and tennis create a sport that’s fun for everyone
Zak, who founded Samford Pickleball off the back of his tennis centre Samford Valley Tennis said this practical paddle sport that you can learn in minutes, and play for a lifetime is accessible to everyone from all walks of life. ‘All of our new players can play a match within about 20 minutes of practice, and now enjoy our round robin match play sessions twice a week,’ said Zak. ‘Pickleball is more versatile than tennis The crew at Samford Pickleball where you can have four players of different skill levels enjoy a competitive match - unlike tennis where the skill levels need to be similar. The rallies are generally longer, while still being less physically demanding compared to other racket sports,’ said Zak. Along with their match play sessions, Zak runs occasional training sessions where players can improve their skills to prepare players for the many Pickleball tournaments held throughout the year. The most recent training session was held at River City Classic, Shaw Park late last month. If you would like to see what all the ‘Pickleball’ fuss is about, pop along to a sessions below with both outdoor and indoor court options available. Latest Heartening Scoop from Local Netball Club
Dakota, an 11-year-old Indigenous girl, was new to Raiders Netball Club this season—all thanks to her wonderful classroom teacher Mrs Fiona Davies at Newmarket State School. With Dakota’s father being in no position to pay or take her to and from training, Fiona voluntarily decided to pay for her registration feeds, netball shoes, and a netball out of her own pocket. Raiders also offered to provide Dakota with a uniform so she could kickstart her netball journey. However, not only does Fiona bring Dakota and her father to training each week, but she also takes the younger sibling Xavier to his Valley’s Rugby League Stafford trainings with help from his classroom teacher Anne. Fiona and Annie have been teaching the two kids for over 6 years, and recognised sporting abilities that could not go to waste. Dakota was very obviously interested in netball, and Xavier with football. With Fiona being a single parent herself, she understood the difficulty of providing the financial and organisational commitment for your kids to engage in extracurricular activities. Therefore, she took it upon herself to go the length and get these kids into sport. As well, Fiona and Anne understand that playing club sport as an adolescent is almost crucial. They get to exercise, learn new skills, make new friends, become good sportsmen, work as a team, rise to challenges, and not ‘drop the bundle’ if they don’t at first succeed. These sort of skills, the women agree, is the sort that you can implement for the rest of your life. Also, for Xavier and Dakota, they were able to find positive Indigenous role models in their clubs for them to look up to and emulate. Both children are reportedly loving their involvement in club
Dakota had a chance to meet one of her idols, Jemma Mi Mi a Suncorp Super Netball First Nations player for the Firebirds sport and can’t wait for their respective seasons to start! As Fiona explained, ‘Anne and I are doing what a lot of teachers do every day – provide extra support to their students above and beyond what it considered part of their job. We all do this because we care about our students – not just in the classroom but outside of it as well.’ On behalf of the community as a whole, we’d like to thank Fiona and Anne for their kind acts, and Raiders for giving Dakota a heart-warming welcome into their club. They are truly living up to the Aussie golden rule of giving everyone a ‘Fair Go’. It’s All Progress
An update from the Ferny Grove & Upper Kedron Residents Association
There’s lots happening across our suburbs at the moment, much of it changing the landscape as we know it, but all to do with servicing the ever-expanding community as the Ellendale development at Upper Kedron releases new stages and areas north of Ferny Grove also grow.
The Transport Oriented Development (TOD) is making good progress and taking shape as one of the tallest buildings this side of Mitchelton. The Rosella Street bridge construction has commenced with the land across the creek cleared and sub-structures being dug in. Foundations for the retail development along Canvey Road are also well underway. What would Mrs T. Marshall, a member of one of the area's founding families, have thought? Here’s what she had to say in the Courier Mail on 1 February 1938. ‘Sir - Why is it that Upper Keron, a farming district in the Brisbane area, only ten miles from the heart of the city, is without electricity? Surely if ‘the electrification of the rural area in the city has proceeded rapidly,’ ‘this district should not be without the convenience of electricity’ Mrs T Marshall Ferny Grove Fire Safety: During June, Council placed a large number of signs around the area alerting that ‘Bushfire risk is real around here.’ A timely reminder that despite the recent rains, we are surrounded by bushland and should be prepared not only to reduce the risk of fire, but plan for a safe exit if needed. Koalas on the move: It’s that time of the year with Koalas on the move during mating season. Slow down on the roads and keep your pets restrained, especially at dawn and dusk. If you see a sick or injured Koala, contact Moreton Bay Koala Rescue 0401 080 333 (available 24/7). It’s also helpful to report all sightings to assist with conservation efforts. Report feral animal sightings: Give our wildlife a fighting chance and report any feral animal sightings via the Brisbane City Council website. Our locale is frequented by foxes, feral cats, wild dogs, rabbits and feral deer. FGUKRA researches and advocates for residents to all levels of government on local issues. To join for a once only $10 fee, please contact us at fguk. communications@gmail.com or visit their website https:// www.fguk.org for more information.
New Techniques To Learn at the Cake Decorators Club
The next Brisbane North Cake Decorators meeting will be on Saturday 16th July at the Arana Hills Community Hall, Dawson Parade, Arana Hills, commencing at 1pm.
This month, Lorna will be showing the group how to do Brush Embroidery, a technique that is used frequently on cakes to highlight the details of a piped design, using royal icing. The June workshop kept members engrossed ,and thanks to Robyn’s guidance, they all completed the ‘Girl with Balloons’ in bas relief. All the finished ones looked lovely. This club is a branch of the Queensland Cake Decorators Association and aims to foster and improve the art of cake decorating and sugar craft by providing the opportunity for an exchange of ideas and skills. Disability discrimination - how do you know when it happens to you and what can you do about it?
The Australian Institute of Health and Welfare (AIHW) says discrimination happens when a person, or group of people, is treated less favourably than others because of their background or personal characteristics. It can include everything from refusing a patron entry to a café because they have a guide dog or reducing an employee’s hours because they suddenly find themselves living with disability, to difficulties facing access to buildings or facilities. A person unable to participate in everyday activities, or who avoids situations, may be at higher risk of adverse outcomes, including social isolation, unemployment and poor health. What are the sources of discrimination? The Disability Discrimination Act 1992 covers people who have temporary and permanent disabilities; physical, intellectual, sensory, neurological, learning and psychosocial disabilities; diseases or illnesses; physical disfigurement; medical conditions; and work-related injuries. It even extends to disabilities that people have had in the past and potential future disabilities, as well as disabilities that people are assumed to have. What’s being done to address the problem? In 2019, the Disability Royal Commission (DRC) was established in response to community concern about widespread reports of violence against, and the neglect, abuse and exploitation of, people with disability. Its interim report found people with disability routinely experience being called ‘inferior’, ‘a burden’, or ‘a menace’.

What to do if you feel you have been discriminated against: Write things down when they happen or as soon as you can afterwards. Record times, dates, names and what people said or did. This can be used to support your complaint. Try to stay calm. Being treated unfairly can be upsetting but try not to talk to anyone involved when you are angry or distressed. Ask for help. Confronting someone about a discrimination problem is hard to do on your own. It might be easier if you have a friend, relative or support person there with you. Keep a copy of any letters or emails you send or receive and don’t discard any other relevant paperwork. Community legal centres are non-government communitybased organisations that can provide free legal advice about discrimination. There are time limits that apply to starting legal action. If you want to try non-legal options but you’re getting close to the deadline, you can start legal action and then ask for it to be put on hold while you keep trying the non-legal options. FLU
The current winters’ cold spell is a timely reminder that the threat of a flu epidemic may be close at hand. On average, flu kills over 3000 Aussies each year and those have occurred during largely warmer winters. Having just experienced a Covid-19 pandemic which resulted in a World Health Organisation estimated 15 million deaths worldwide and nearly 9000 in Australia, we are now wary of any virus that can spread rapidly with devastating results. Since Australia’s first recorded epidemic in 1834, we have had a further four, in 1890, 1957, 1968 and the swine flu pandemic in 2009.The term `influenza` has an interesting derivation. In 15th century Italy, the infection was thought to have been `influenced` by the stars, hence the term. The 1918 Spanish flu sometimes known as The Great Influenza Pandemic was by far the most devastating flu epidemic ever. With an estimated 50 million deaths worldwide resulting from the disease, it easily supplanted the 18 million deaths that resulted from the 1914-18 World War. The 14th century Black Death Bubonic Plague still holds the record for the most deaths counted. The Spanish flu epidemic spread so quickly that the world was both alarmed and confused. The New York Times announced that the origins of the disease was a result of a poor vegetable diet, largely of turnips, in war ravaged Europe. The prestigious London Times erroneously reported that chemists in England were running out of two supposed cures for the illness, cinnamon and quinine. It was estimated that 20% of the world’s population had been infected by this `mysterious illness`. It was only in 1933 that scientists were able to accurately identify the illness as influenza.

The two course lunch with tea or coffee is $30, and we will have our usual lucky door prizes and raffles. We will also have our next ‘Make, Bake and Grow’ table at the August meeting. This always is so well supported and the proceeds going to supporting our Learning for Life Students with the Smith Family. The other benefit is we have some nice purchases to take home, especially any cakes or slices. Another important way we raise funds is with our Bunnings Sausage Sizzles, and we were fortunate to have one at Keperra Bunnings mid-June. We raised just over a thousand dollars. It was a great effort from those who helped on the day. Our guest speakers in July are Ali and Jan Schutt from Stationery Aides. If you or any family members have any unused school stationary from last year (pens, pencils, exercise books) please bring them along so they can be recycled. Contact Carol on 3355 5349 by midday on Monday 1st August to attend the lunch meeting. A massive congratulations goes out to local Hills District kindergarten, Willmore Kindergarten! The centre scored a $1000 grant from the 2022 Woolworths Junior Landcare Program to develop projects focusing on sustainable food production, improving waste management practices or enhancing native habitats.

Teaching Kindness One Flower at a Time
Towards the end of term two, Albany Hills State School celebrated Wellbeing Week.
Wellbeing Week is an initiative of the Mental Health Foundation, which is run in some of our local schools. The program aims to provide young people with knowledge, skills and tools to manage their own mental health and wellbeing. Schools can hold their own Wellbeing Week at any time during the year, using the week as an opportunity to raise awareness of the importance of looking after our mental health and wellbeing. Albany Hills State School celebrates Wellbeing Week several times a year, at the end of each semester. This has been occurring for a number of years and it is a special time within the school community. It is an opportunity for staff, students and families to take some time to reflect, and consider their own physical and mental health and wellbeing. In fact, Wellness Week has become such a staple in the Albany Hills State School calendar, that the school now has its own dedicated Wellness Team. The role of the Wellness Team is to plan a series of fun and interactive activities and events around a specific theme each semester. During 2022, their focus has been on their four school values; respect, resilience, kindness and confidence. This semester, Wellbeing Week has promoted kindness and respect, and in the upcoming Semester their focus will be resilience and confidence. With kindness being one of the primary topics this Wellbeing Week, the school constructed a magnificent Kindness Garden in their school grounds. Students decorated hearts with messages of kindness and placed them on the lawn creating a garden of hearts. This made for a truly breathtaking scene as the lawn was literally covered in a sea of kind messages - sure to brighten anyones day. As a school spokesperson tells us, the garden has become a real talking point amongst students, staff, parents and visitors to the school. ‘Upon the completion of the Kindness Garden, everyday there has been such a buzz with students, staff and parents taking time to read and talk about the messages,’ reported the school. Warwick Brown
Director Farmer Browns Pizza & The Farm Shack Farmer Brown’s Pizzas, has earnt its title as one of the area’s most popular mobile catering services in The Hills District, but how did it all begin? The answer is Warwick Brown, a man who spent his childhood living the farm life on the outskirts of Dayboro. From chasing cows, to getting chased by cows, to stacking motorbikes and learning how to gracefully fall off horses, Warwick sure made the most of it. The food especially. In the Brown household, meals were always fresh and jam-packed with flavour due to the numerous veggie patches and fruit trees on their doorstep. However, once childhood was over and Warwick had gained experience working in management, he set out to chase his dream of operating his own small business. Pizza was his passion, and Warwick wanted to share it with our community. December 2015 marked the official launch of his fully licensed, mobile wood-fired pizza set up, Farmer Brown’s Pizzas. All the ingredients are fresh as day, some home grown and some sourced locally. With Warwick’s dedication and young driven team, the business has thrived over the past 6 years, enabling the business to not only add 5 trailers to the Farmer Browns fleet, but also to launch a permanent brick and mortar pizza store in Ferny Hills—the Farm Shack. Not to mention, the booming business has since earned itself a pretty significant following. With a menu full of
0449 944 406 www.echo-news.com.au
favourites such as Ham and Pineapple, Margherita, and Pepperoni, to fresh new tongue-tinglers like Pesto Pizza, Tandoori Chicken, and Nutella and Marshmallow, Farmer Browns Pizzas has generated a huge community-wide hype, with 3000 loyal Facebook followers and glowing reviews sprinkling the page. Warwick and his pride-filled staff are renowned for their catering skills, their customer service, their personal interactions with patrons, and their ability to deliver molto bene meals to all. The team usually caters for events such as parties, festivals, special occasions, weddings, and fetes. Their mantra is product and service, strongly believing that if you serve a great product with exceptional service, everybody wins. Clearly, Warwick and his dream have come a long way. Farmer Browns Pizzas is now fortunate enough to be booked out most Saturday nights for a few months in advance and The Farm Shack is thriving. His team of nearly 20 staff are his pride and joy, as they all take so much care in what they do. Best yet, with all his success in the suburbs, Warwick never abandoned his roots; he still lives out at Dayboro with his partner and their 2 cattle dogs, a border collie Kip, and a cat Gus. The Farm Shack is open 4pm-8pm Tuesday to Sunday, and its crew welcome the whole community with open arms—and pizzas galore!

Online Support Group for Parents of Children with a Disability
The birth of a child with a disability, or the discovery that a child has a disability, can have profound effects on the family and it can be hard to know where to turn. Luckily, there is a dedicated, supportive community literally at our fingertips. The ‘Success Community’ private Facebook group offers support, guidance and tips to local members of the community on raising children with a disability or are on the autism spectrum, with a diagnosis or not. A wealth of knowledge can be offered to members of the group from school transitionally, navigating the NDIS / Carer Gateway system to general getting started / or supporting those who aren’t eligible. The driving force behind this incredible community is founder, Carrissa Ahern. She has successfully led this community to
Page 26 - July 2022, The Hills Echo
its 7th year, alongside, angel administrators and its equally beautiful members. Carrissa is known for her heart of gold, she is a modest yet colourful, powerful, understated fighter and most importantly a strong devoted mum of two active boys, simply reaching out to the community for inclusion. Carrissa instigates and brings attention to new posts within the Facebook group such as; helpful links, reputable articles to reduce stigma, gain extra understanding, explore educational tools and apps, free webinars / presentations, government information, school holiday fun specific to members kids’ needs, upcoming disability expos, hospital trials plus so much more. Current member, Ester explains this group is always there to advocate for members and help them put the jigsaw puzzle pieces back together when it is hard to speak or articulate sometimes. ‘From my perspective, since 2017, I was new to the primary education scene and found this group to be a blessing for me as it provided a platform outside of the ‘medical world’ and created some breathing space, and inspiration. The group helped me find my voice being an advocate for my child who has a physical disability, cerebral palsy,’ said Ester. ‘Success Community’ provides honest, down to earth advice on urgent member requests about local recommendations such as NDIS accepted reputable clinics for OT, physiotherapists, psychologists, paediatrics, in addition to regular social catchups for debriefing in an understanding and safe environment. Ester explains, the group doesn’t tolerate ‘hate speech,’ bullying, or any judgement, but promotes a kind, courteous, respectful space for parents to ask questions without judgement. ‘If you intend on allowing your kids to shine, their way, with inclusion, love and acceptance, not let their disability define them, need a gentle push to reach your child’s potential, want to take care of your own mental health and wellness, join Success Community,’ urges Ester. Exercise Support For Cancer Treatment
Everton Park is part of a national network of locations where Cancer Care Activate is being run, a rehabilitation program designed for people who have experienced a decline in functioning and quality of life as a result of cancer treatment.
North West Private Hospital allied health manager Graeme Walker said since the program launched locally around a year ago. It has welcomed patients from within the hospital, other hospitals, and directly from the community. ‘It’s such a great evidence-based program and I’ve seen patients benefit from it,’ said Mr Walker. ‘While years ago, the thinking may have been to rest during treatment, there’s a strong body of evidence showing the benefits of appropriate exercise during cancer treatment.’ Australia’s leading cancer organisations have called for exercise to be prescribed to all cancer patients as part of routine cancer care. As outlined on the Cancer Council website, research shows exercise can help cancer patients tolerate aggressive treatments, minimise the physical declines caused by cancer, counteract cancer-related fatigue, relieve mental distress and improve quality of life.(1) Mr Walker says the Cancer Care Activate program combines education, exercise and support in a small group setting, twice a week for six weeks – delivered by a team including rehabilitation physicians, physio and occupational therapists, exercise physiologists, dietitians and psychologists. The program supports patients to improve quality of life, with a focus on functional and psychological wellbeing. They can start the ACTIVATE program at any stage of the cancer pathway – before, during or after cancer treatment. Exercises are tailored to each individual’s activity level and education topics range from activity pacing and nutrition to stress management and healthy sleep patterns. North West Private Hospital offers a range of day patient rehabilitation programs, available to eligible privately insured, self funded and veteran patients. Speak with your treating specialist or GP about the program and a referral – and learn more at northwestprivatehospital. com.au under our services > rehabilitation > day programs. A Little More About Our Fleet
An update from the Brisbane Tramway Museum
TRAM 99 This tram was built in 1943 and was known as a ‘Baby Dreadnought’. It was the last of six built specifically for the line between Queen Street and Gregory Terrace (along Edward Street). This route precluded the use of bogie trams due to the sharp, steep curves in Upper Edward Street. A unique feature was the ability to drop sand behind the wheels as well as in front in case the tram slid backwards on those steep grades. 99 and the other similar trams also ran the shortest route – a shuttle service from Queen Street to the City Gardens, also along Edward Street. TRAM 341 Built in 1936 by the Brisbane City Council (BCC), this is one of a total of 191 trams of this type (the first being built in 1928), making it the largest class operated by BCC. It was officially classified as a Drop Centre Combination Car but more commonly as a Drop Centre. 341 is 13.9 metres long Tram 341. Brushing Up on Skills at the Gem Club
An update from the Mitchelton And Districts Gem Club A great majority of our retired members take get in touch with either John (0407582980) or Lloyd (3351 advantage of the winter months to go fossicking. 2093) who will be only too happy to have a chat to you about Several go to the Central Queensland Gemfields and others go further afield to the Western Queensland Opal fields and the Northern areas of Agate Creek (for Agate) and O’Brien’s Creek (for Topaz and Quartz). Those who go to the CQ Gemfields are generally seasoned travellers who go to these fields almost every year. Some have a leased area on which they have a hut to live in while they dig for the elusive Sapphires. It is during these winter months that our Club workshop is rather quiet and a good time for new members to be taught the skills of cutting and polishing semi - precious gemstones, such as cabochon cutting and flat lapping using such material as Agate, Jasper and Petrified Wood. Learning to facet is a time consuming stage of learning to cut your stones. Faceting is used to cut Sapphires and other translucent precious gemstones such as Topaz, Amethyst and Labradorite. We have three faceting machines at the Club but instructions on how to use these machines is done on a one on one course that is undertaken individually by a Club member. It is recommended that new members learn how to cut cabochons before attempting to learn faceting. The Mitchelton and Districts Gem Club has its clubrooms located at 46 Ferneydell Street, Ashgrove and is open every Thursday from 9am to 12 noon for sawing, cutting and polishing rocks and from 12 noon to 3pm for silverwork. It is also open on Saturday from 1pm to 4pm. The Club caters for Gemstone enthusiasts in the North Western area of Brisbane. If you feel this type of hobby interests you, do not hesitate to

Reduce your salt intake for a healthier heart Whether you’re working full time, a busy parent, or younger adult with a hectic social calendar – it can be hard to keep track of your average salt intake and maintain a healthy diet. But a high intake of salt often leads to increased blood pressure and the risk of heart disease for you and your family. Sadly, there are often no visible signs of high blood pressure, which means many people don’t even know they have it. Despite being unable to see or feel it, it is certainly a health risk to be taken seriously. Other than high blood pressure and heart failure, high salt intake is also commonly associated with conditions such as kidney stones, fluid retention, strokes and osteoporosis. Reduce your risk by making healthier choices each day, and the first step is avoiding processed food. Seventy-five per cent of our salt intake comes from packaged and processed foods we eat daily such as
bread, cereals, processed meats, cheese, sauces and spreads. High levels of salt are also added to foods such as packet soups, pies, sausage rolls, sausages, processed meat, pizzas and frozen meals. For a healthy heart – and to improve your health in general – make the switch to Gourmet Meals. Not only will you be able to eat a variety of dishes that are salt-reduced and fat reduced, but you’ll save time at the supermarket as well as cooking and cleaning at home. At Gourmet Meals, we can help you eliminate processed foods, excessive carbs and sugars in your diet as our meals are all portion and calorie controlled and contain little or no additives. Gourmet Meals are packed with flavoursome whole foods and vegetables and are all high in fibre and protein, and 100% gluten free. Radio Club Want You On Their Wavelength
Amateur Radio – What is it, who are we and what do we do?
Amateur Radio as a hobby started in the early 20th century, with the advent of wireless radio communication. Back then radio experimenters built their own equipment to communicate with other like-minded radio enthusiasts and experimenters. The hobby was born and very shortly after, Australians formed the first Amateur Radio Association in the world – the Wireless Institute of Australia. Today in Australia, there are around 13,000 licenced operators who form part of a global community of hundreds of thousands of radio enthusiasts. Amateur Radio operators still build equipment and communicate with each other, but in place of the Morse Code, scratchy voices and glowing vacuum tubes of last Century, operators use a whole range of communication means from voice to digital to video with sophisticated modern equipment. Yes, there are some who still use Morse! The Redcliffe and Districts Radio Club, is located in McFarlane Park, Kippa-Ring, on the Redcliffe peninsula. The club is now nearly 50 years old and occupies a newly renovated building in the park – the old Girl Guide hut. The Club building caters for Amateur Radio enthusiasts with a meeting area, an operating radio room and repair and test facilities. Members make very good use of our equipment and gain knowledge from other members in the use of the test equipment and the radios which the club owns. The Club provides regular technical talks on aspects of the hobby and is accredited to provide training and examinations to qualify interested people for their Amateur Radio licences. The club has regular meetings every Monday night, Wednesday
Morning, Friday night and Saturday morning, where we socialize, talk radio and solve the world’s problems! The club also supports the Scouting Movement with Jamboree On The Air each year, setting up and running portable radio stations for the cubs and scouts to communicate globally with other scouts. For those who like the outdoors, the Club regularly ‘goes bush’ where we set up several stations in the bush with portable radios and antennas using battery and generators for power for a 24-hour competition. Members also climb up mountains and visit national parks to conduct portable operations from there and gain prestigious awards in the Amateur Radio community. And radios these days are small enough to have in vehicles and with caravans when doing the ‘big lap’ around the country keeping in touch with friends and providing reliable emergency communications, even in remote locations. The hobby is far more involved than space for this article will allow. There are many different avenues in the hobby: we can communicate worldwide, bounce signals off the moon, talk to the International Space Station as it passes over head, and build antennas, radios and accessories for our hobby. We welcome people – men and women – from all walks of life. Radio and electronics is an inclusive hobby. Our members not only include people from technical backgrounds; we have a retired medical specialist, computer programmers, commercial sales reps, and even a military Chaplain. You don’t need a university degree to play with radios, only the desire to learn about technology. We can teach you the rest and have you on the air building friendships and feeding your technical interests in no time. Come down to meet us, or visit www.redclifferadioclub.org.au

Supurb Sushi
By Ryan, Year 9, Padua College Writer’s Club, the Eagle’s Quill From teriyaki to salmon, every bite causes your mouth to drool at the wave of flavours, as your tastebuds dance with the glee of a 9-year-old getting an Xbox for his birthday. This is the feeling I’m sure many of you have had as you take a bite (or a gulp) of sushi. How did this wonderful food evolve and why does it taste oh sooooooo good? By definition, sushi is a Japanese dish consisting of small balls or rolls of vinegar-flavoured cold rice, served with a garnish of vegetables, egg, or raw seafood. But sushi is more than a definition, having evolved over hundreds of years in the unique and isolated culture of Japan. Sushi first appeared in Japan over 1000 years ago in roughly 900 AD. Back then it was just salted fish stored in fermented rice used to stop the fish from rotting – it wasn’t even meant to be eaten. During the Edo Period in around 1800 AD, people started to pickle the rice, making it much tastier and around the same time seaweed paper was discovered (also known as nori). This seaweed paper was used to hold the rice in place and because of this stronger structure more fillings were added such as chicken, avocado and beef. Over time, different types of sushi evolved as seen below. Now an international phenomenon, even diners of a basic palate have tried sushi. So, what is it that makes it taste so good? Well, first we have to understand the concept of flavour itself. Flavour has five main types: salty, sweet, sour, bitter, and savoury. Most types of sushi have three or four of these flavours, which is unusual as most foods have only two. This is a clear
reason why sushi comes out on top. Whether the flavours be in the soy sauce, seaweed, or sashimi, sushi tastes delicious. There is also the fact that there are many different types of sushi, which means that you have lots to choose from to suit you perfectly. So, how can you make this delicious meal at home? All you need is some sushi rice, a sushi mat, plastic wrap, nori seaweed sheets, soy sauce, and your choice of filling. Firstly, lay the seaweed onto your sushi mat then flatten your rice over it. Then place your desired ingredients lengthwise across the sushi and roll it up tightly using a bamboo mat or plastic wrap. Make sure the sushi is rolled up tightly, thin not fat - advice helpful to my father! Now, cut up the result into sizes of your choosing and TA-DAH, SUSHI! Personally, I love sushi, and eat it every single week. I’m sure there are some delicious restaurants near you where you can get a bite of this delicious dish, or you can make your own. Having come from humble beginnings as fish in rice, sushi is now a culture of its own with world class chefs spending decades to perfect the art of sushi making. You too can join this tale - all it takes is one bite of superb sushi.

Our Local Dog Parks
REVIEWS
By Rose NW, Aged 10 yrs My name is Rose, and I am here to tell you all about our local dog parks. In the Hills District, there are plenty of options for where to go, including; Arana Hills, Bunya, Ferny Grove, Keperra, and Mitchelton. Mitchelton is my family’s most-visited Dog Park. In this specific park, there are fenced areas for small and large sized pooches. My dog Banjo loves this park. He runs freely around meeting and sniffing different dogs. These parks don’t just bring our furry little friends together, but also enhances a welcoming opportunity for us owners to also socialise and get to know unique personalities. Just not with the sniffing method! My own little dog is two, but over the years of visiting the Mitchelton dog parks, I put together a list of some of the pups I met, thinking that it might come in handy one day! With some dogs, I recognised or asked the breed of the owner. See below, you might even notice your pup’s name, the breed is in brackets.
Dogs I have met at the Dog Park:
Darcy, Bozzly, Stevie (Dachshund), Sammy, Bonnie (Scottish Terrier), Montly, Abby, Rosie (Cocker Spaniel), Bagel (Beagle), Beverley (Frenchie), Leia, Arnie (Cavoodle)

Life Memberships For Samford’s Finest
History
Recently, Samford Museum’s president Geoff had the pleasure of presenting two members with life memberships.
Jim Kelly of Everton Park and Alan Morris of Arana Hills have each given exceptional service to Samford Museum for more than a decade using their professional trades. It is the work carried out by these members, and the team who work with them, that makes many of the displays special. Thank you gents and congratulations. For residents of the greater Samford area, travelling via Everton Park and the Hills Districts has changed dramatically since the earliest days of settlement. ‘A memorial signed by most settlers on the road through the Ironbark Ranges, Upper South Pine River, Cedar Creek and at Samford was presented to the Minister for Works. This memorial prayed that new bridges be erected over the Jim Kelly, Life Member with Geoff Harris and Alan Upper South Pine River and Kedron Brook and that the road Morris another Life Member be otherwise made serviceable. Very large quantities of agricultural and other produce are annually being conveyed to town by this road.’ From Brisbane Courier Saturday 22 August 1874 Bullock teams carrying logs to Poultney’s sawmill at Everton Park and horse- drawn vehicles taking produce to Brisbane from the Samford/Bunya region travelled Bunya and South Pine Roads when it was just a rough track through the Ironbark Ranges (Bunya Conservation Reserve). Later milk trucks transporting milk supplies to Brisbane replaced the teams and horse-drawn vehicles on the gravel road. Prior to Arana Hills becoming the suburb and shopping centre it is today, families in the vicinity worked and socialised with Samford and Bunya locals. If readers would like to know more about Samford Museum, visit www. samfordmuseum.com.au or feel free to drop by during opening hours on Wednesdays and Sundays from 10am - 4pm. Dickson News Peter DUTTON MP Federal Member for Dickson
A message from Peter I have hit the ground running since the election both locally and in my new role as Leader of the Opposition. It is a great privilege to be returned as your parliamentary representative here in Dickson. I am looking forward to working with you to keep delivering our community and making it an even better place to live, work and raise a family. As Leader of the Liberal Party, I will work hard to hold the Government to account and to ensure the interests of Australians are put first and foremost. I want our country to support aspiration and to reward hard work. To take proper care of those Australians who short term, or long term, can’t take care of themselves. By the time of the next election in 2025, we will have presented a clear plan and laid out our vision. Locally, there is a lot going on in our community and it is an exciting time in the Valley. There are many events happening over the school holidays and we are getting towards the completion of new community projects in our region. Local shows are returning but I would encourage you to support Dayboro Show on 2-3 July. Dayboro Show was not able to

The Expo was such a success, with the help of the Dickson Seniors’ Council we have held the Dickson Seniors Expo. It is always a fun event and provides seniors an opportunity to meet local organisations and businesses working with seniors, see our range of stall holders and exhibits, live entertainment, guest speakers and much more. The Lord Mayor’s Budget for 2022-2023
The Lord Mayor Adrian Schrinner recently brought down the 2022-23 $4 billion Budget, that is focused on the recovery of Brisbane’s suburbs. This Budget targets the rebuilding of our communities, our parks, our playgrounds and our sporting clubs. All of us have endured the pandemic in its various strains since March 2020 along with the impacts from the February 2022 flood event. This Budget will be Brisbane’s biggest-ever rebuild with a calculated damage bill of $660 million. The Schrinner Council has once again demonstrated why experience matters and the recovery will prioritise rebuilding to ensure we are prepared for the 2032 Olympic Games in Brisbane and setting Brisbane up for future generations. The damage across Brisbane included: 198 buildings on community-leased facilities, 106 sporting fields, 863 parks, 292 playgrounds, 285km of roads, 42 public barbecues, 25 public toilet blocks and 4 public pools just to provide a snap shot of the huge reconstruction efforts that are required. The February flood event was an extra-ordinary event that involved overland water flow, creek and river flooding. It was noted by the Lord Mayor ‘that Brisbane received more rain in just a few days than London received in an entire year.’ I wish to thank the entire community here in The Gap Ward that helped during this time. More than 13,000 property owners received a $250 rates rebate and more than 270 clubs have received Council’s $5000 cleanup cash payment. Brisbane is renowned for being a clean and green city, and it is through this Budget that Brisbane will recovers and continues to be the largest government organisation in the nation that is carbon neutral. Council will continue to deliver critical projects like the Brisbane Metro, knowing a fully-electric mass transit solution is important to shaping the future of this city and protecting our city for generations and caring for the network of more than 2100 parks. Whilst the City is important for our economic recovery, the

Lord Mayor recognises our suburbs, the place we live work and play is important to the rebuild and recovery of Brisbane. Sports and community clubs are part of the fabric of our suburbs and weave communities together. The introduction of ‘Suburbs First Guarantee’ ensures more than 80% of our investment each year will occur in our suburbs where we will continue to invest in road and transport projects, ensuring residents get home soon and safer. To read the Lord Mayor’s 2022-23 budget speech and cost breakdown head to www.brisbane.qld.gov.au (search Council Annual Plan and Budget 2022-23). My commitment as your local councillor has been to listen to community feedback and advocate for the best outcome for the residents. This year’s budget will continue to lay the foundations for The Gap Ward through delivering improvements to parks, creek catchments, roads and major infrastructure. As always please do not hesitate to contact me. Regenerating Ross Road Park, Upper Kedron The Schrinner Council continues its commitment to support the registered bushcare groups throughout the ward. These groups are funded via the Habitat Brisbane Program and it is our goal to ensure our natural areas are protected to allow our unique biodiversity to thrive. Again I would like to thank all of our volunteers who dedicate their free time to work along our waterways through Enoggera, Ithaca and Kedron Brook catchments. Over last year with the support of Rotary over 40,000 new trees and shrubs were planted in works to rehabilitate Ross Road Park, Upper Kedron. I am dedicated to ensuring the Green Future Fund continues to support our Green Suburbs Program and I look forward to working with you all again this year.

THE FERNY REPORT by Mark Furner M.P.
State Member for Ferny Grove Ferny Hills State School This year’s Queensland Budget has allocated $1.2 million in funding to replace Ferny Hills State School’s amenities block. The replacement to the amenities block is one small part of the $10 million investment in Ferny Grove State Schools in this budget and brings to more than $60 million invested in our schools since I first took office back in 2015. At the end of 2020, Principal Geisel invited me to tour the amenities at Ferny Hills School and I got to see for myself just how run down they had become. Last year I managed to secure $60,000 to conduct repairs, but I knew that would not be enough so kept pushing for the complete replacement of the fifty-year-old facility. Now, I am pleased to report that the Education Department has engaged a designer to come up with an entirely new plan for the replacement block. I have not been informed what sort of timeframe this will take at this stage but will keep you updated when I have more news to hand. Budget In other budget news, the Queensland Government is working with Moreton Bay Regional Council on an upgrade of Nulty Way Park and on the intersection of Hutton Road, Caesar Road, and Plucks Road. This has long been a black spot site and I am pleased that multiple levels of government can work together to address the problem. The final instalment of the government-funded parking
The intersection of Hutton and Caesar Roads, Ferny Hills
expansion at Ferny Grove Railway Station has also been made with the project on track to deliver a more than a 42% increase in commuter parking. Over the next few months, work will commence on the installation of the right-hand turn pocket on Samford Road outbound into Glenholm Street. The project will require some nightworks and some temporary lane closures outside of the peak traffic periods. More details will follow later in the year. Picabeen Community Centre Community Centres have been the cornerstone for our communities for people experiencing homelessness, domestic violence, and social isolation – especially since the start of 2020. This year’s budget provides a massive funding boost to our community centres with our local, Picabeen Community Centre, receiving more than double its regular funding for the next four years! Storylines Art Bursary The 2022 Storylines Art Bursary is on again and is open to residents of the Ferny Grove Electorate. The Bursary’s intent is to fund all, or part of costs associated with the successful applicant’s pursuit of studies or experiences to further their art and add value to the Ferny G r o v e c o m m u n i t y ’s creative potential. Artists may apply for the cost of purchase of materials, texts, course or study fees or other expenses deemed appropriate by the assessment panel. 2022 applications close Friday 23 September. The applications will be judged by an independent assessment panel and the winners will be announced in October. The Major Award will be $2,000 with a runner up receiving $1,000. Please visit www.markfurnermp.com.au/storylines for details.

Labor Ignores Everton Roads
Tim Mander MP with Steve Minnikin MP, Shadow Minister for Transport and Main Roads
In spite of my continued advocacy for the State Labor Government to fund the intersection upgrade of South Pine Road and Stafford Road in Everton Park, the recent Queensland State Budget has once again failed to provide any funding for this crucial project. I am extremely disappointed that the Minister for Transport and Main Roads, Mark Bailey, has ignored the importance of this upgrade and has refused to consider the impact of this issue to motorists in the area. I will continue to advocate strongly for the State Labor Government to resolve this issue of serious congestion and safety. Furthermore, the Queensland State Budget has failed to address the deteriorating section of Old Northern Road from Rode Road to the Jinker track. It is very frustrating that the required reconditioning and resurfacing for the safety of motorists along this road has also been ignored.

Sorry Day Commemorations
National Sorry Day commemorations were delayed this year due to the rain. Nonetheless a very moving ceremony was hosted by the Teralba Park Stolen Generations Support Group to honour this important day. Sorry Day is an essential reflection of societies role in the healing of the challenges faced by Aboriginal and Torres Strait Islander people across Australia. It was an honour to be asked to speak at the commemorations and I would like to thank all those who attended as well as the Teralba Park Stolen Generations Support Group for an emotive morning. Gardening
Vegetable Bonanza at HOG An update from the Hills Organic Community Garden
What a difference the cooler weather makes. Over the last few weeks we have been very busy planting vegetables for our spring harvest and with the cooler weather, our little seedlings are now starting to flourish. We have Bok Choy, Leeks, Shallots, Baby Spinach, Beetroot, Lettuce, Silverbeet, Tomatoes, Cabbages, Cauliflowers, Broccolini, Beans, Snow peas, Eggplant, Carrots, Orange Sweet Potatoes and Strawberries all doing very well. Our members are all enjoying their time at the garden as it is so pleasant to be out in the sunshine watering and weeding and maintaining our beautiful community garden. We have a wonderful bunch of keen gardeners who are all willing to lend a hand and each Sunday afternoon we gather at the garden to tend to the plants and keep the surrounds neat and tidy. At the moment, our herb garden has flowering basil, which is attracting the bees, society garlic (which has beautiful lavender flowers that are edible), thyme, tarragon, mother of herbs, and garlic chives. The HOG community is a friendly group who offer people in the Hills District the opportunity to grow vegetables using organic principles. Age is no barrier, so feel free to come along one Sunday afternoon to have a chat and a look around our beautiful garden. As the days are getting shorter and cooler, we have decided to change our working bee time on a Sunday afternoon. The new time will be from 2pm to 4pm. As well, our members attend the garden through the week to water and do general maintenance. You will find us at 416 Bunya Road, Bunya, next to the Off Leash Dog Park. Membership Fees per year are $15 for adults, $25 for family and $5 for Juniors. Visit hog.org.au, search ‘The Hills Organic Garden’ on Facebook or phone 0407 582 980 for information. We look forward to meeting you. A great tip for growing garlic is to
water your soil until your cloves Garlic not have germinated, which will occur two weeks Growing approximately after planting. Following this, ensure you water the soil often enough so that it Tip remains moist but not wet.

Winter Garden Tips & Tricks
An update from the Mitchelton and Districts Garden Club
All being well the next meeting of the Mitchelton and Districts Garden Club Inc. will take place at the Enoggera Memorial Hall on Thursday morning, 4th August. Entrance to the hall is at 36 Trundle Street, Enoggera. The hall is accessible by wheelchair and close to public transport. The guest speaker is Matt, a representative from Rocky Point Production, a company which produces all types of potting mixes, mulches, etc. to enhance the garden and its surroundings .The company's mission is to make earth a better place to live, by growing and producing healthy and sustainable products. If you would like to read more about 'Rocky Point' go to https://rockypoint.com.au It's not far away from the middle of winter and during this season, hosing the garden should be limited. When needed, only hose between the hours of 9am and 4am because any moisture on the ground or plants will encourage fungi and mould to develop. There could be powdery mildew already developing on your sweet peas, calendulas or roses. Dusting sulphur is a treatment to use or you could spray both sides of the leaves with a mixture of one part full cream milk and ten parts water. This mixture will not keep, so just make enough for the current job. Keep checking your citrus trees for signs of the gall wasp and the citrus leafminer. If you discover some, prune off the offenders. The cuttings should go in a plastic bag in the garbage bin. Liquid fertiliser could be applied to vegetable plants to ensure steady growth. Meetings commence immediately after morning tea which is served at 9.45am. Visitors and new members are most welcome. There is a lucky door prize, continuous raffle and plant exchange table. For more information, please phone Pat, the president, on 3356 1256.
Ferny Grove Garden Club Meeting

Counselling Corner
How Early Relationships Influence Happiness And Attachment This article is brought to you by Social Worker, Elena Bishop. Elena is the director of Supportive Therapy and Social Work in Arana Hills. She has a wealth of knowledge and insight into the industry.
Attachment theory is my bread and butter – I want everyone to understand why we are the way we are, and how to be in safe secure relationship. For me, this is the most simplistic explanation that can describe who we are and why we react the way we do. This influences how we choose our friends and partners, how we feel we deserve to be treated and how we resolve conflict. So, there are four types of Attachment; they can evolve over time and we can have different ones with different people, determined by how we were raised. This influences how we parent our own children. This is amazing, because it proves that we can evolve into the person we want to be - we are not bound by our past. 1. ‘Secure’ Attachment Parents were always appropriately responsive and supportive of you, no judgement or unconditional love. As an adult, you can confidentially say ‘I’m worthy of being seen, my opinions are worthwhile, people should listen and respect my feelings
because that’s what we all deserve.’ This is the name of the game! You can recognise healthy relationships, can set healthy boundaries, and expect love when love is given with no ulterior motives. 2. ‘Avoidant’ Attachment Growing up, parents were quite strict and dismissive: ‘Stop crying or ill give you something to cry about, grow up, toughen up, don’t speak unless you are spoken to, your grade isn’t good enough.’ Also smacks, wooden spoon? Yes, as an 80’s baby, I can still feel it now… Ouch! When we are constantly criticised and made to feel like an inconvenience, it teaches us the feeling that we aren’t safe. Therefore, we avoid emotions and don’t ask for support or help. We have learnt we don’t need anything from anyone, we withdraw to avoid conflict, we crave attention but are scared of rejection, we can also be quick to find faults in others since we may be ruled by our own perfectionism. This means negative self-image and low self-esteem. 3. ‘Ambivalent’ Attachment Hot and cold, parents not consistent at all. So, you never really know where you stand. Sometimes they were there, then not. Sometimes they were loving, then insensitive. They were inconsistent and unpredictable. You were always worried about what ‘mood’ they were going to be in when you got home. Would you be loved or yelled at? It was always about them and never about you. So now, as an adult we have learned that I need a lot of reassurance, I need to know that people really care about me - so prove it. Sometimes I push others away to see if they will fight for me and come back. I get called clingy or moody, and I feel like my partner sometimes isn’t reliable or can meet my needs. Funny, as adults – avoidant and ambivalent are like magnets… trigger each other’s insecurities. Avoidant shuts down and walks away. Ambivalent feels like they are being ignored, then pushes avoidant away. Then keeps going around and around in circles. But they both want to feel safe with unconditional support. 4. ‘Disorganised’ Attachment A small percentage of the population. These beautiful children experienced significant abuse, chaos and unpredictable responses. Your needs were never met, severe, abusive or neglectful. Registered in the body as trauma. Without support and compassion, you may repeat patterns. You can become untrusting with anxious and avoidant behaviours. You honestly just crave acceptance and security. We all deserve love. This is not for judgement, but for understanding. By this simplistic explanation, we can recognise our patterns, normalise our reactions, acknowledge motivations & help prevent negative cycles. Also gives us something to aim for, Secure Attachment! If you are feeling upset or triggered by this article, listen to your body, find someone safe to talk to & seek a therapist who understands Attachment Theory like myself. You may not have had control over the events that have happened in your life, but you can control if they define you – or motivate you.
