Diana Condori is bringing tiki back. And she’sincorporating her Bolivian culture into the cocktails she makes, pouring diversity into KC’s bar scene.
“It’s a chance to share the history of my culture and my story by having conversations about the ingredients I use or the decorations I use,” said the Condor’s Cove mobile-bar founder.
What started as a one-time pop-up bar experience turned out to be a business opportunity for Diana to help tiki thrive in KC.
Now, the liquid chef is guest starring at soldout pop-ups throughout the metro while raising her voice about the need for more representation in the service industry and spreading awareness about her heritage.
“I grew up in this industry and now having my own business I’ve had the opportunity to take leaps of faith. I believe in myself more and I really want to represent women and Hispanic culture and people of color in this industry,” says Diana.
Since launching Condor’s Cove in 2020, she has been featured in industry publications for its skyrocketing success.
Diana credits a lot of her business success to the collaborative nature of Kansas City, dubbing it a great place to start a business.
“KC is all about community and supporting each other. There’s a lot of people trying to make it and we’re all excited about creating new opportunities and partnering,” she says.
“It’s been a ride; I was not ready for it! I thought it was going to be a cute pop-up and now we have a lot of bars that want to work with us and people who want to help us with merchandise. It’s insane!”
