CLEAN IMPROVE YOUR MEAL! Experience taught us that we use all of our senses when we savour food, not only the taste. We don’t eat, indeed, only with the mouth: it’s necessary to involve the sense of smell, sight and touch so that the experience would be really remarkable. We would gladly sit down to the table only if everything was in order.

itting to the table is, by now, a complete experience that will satisfy all the five senses. Food definitely plays a key role because

it stimulates the taste, the sense of smell as well as the sight, but there are also other factors that influence our experience at the restaurant. A recent studies of the University of Arkansas have shown, in fact, that music has effect on the way in which people perceived the flavour of food. So we know that the acoustic environment plays an important role on this kind of experience as well as the tactile and visual feeling of textiles used in the room: softness, freshness, cleanliness and hygiene have a great incidence on it. Approaching the napkin

to the mouth stimulates all the senses and this feeling it should be, at least, equal to the dish. All that is connected to the certainty of cleaning, hygiene and professionalism of the textiles treatment.

People at restaurant: hygiene is the first request 85% of people who eats out wouldn’t return into a restaurant if they considered it dirty, even though the food and the price were good.

A

ccording to an Ipsos MORI research the hygienic conditions are one of

the key factors for choosing a restaurant for the Western Europe customers. Clients want to eat a good meal but only in a well maintained and clean place, in which surfaces and fabrics are hygienically safe. According to this survey, therefore, the consumers are frightened, in the first place, by dirty crockery, cutlery and tissues (35%), then, stained uniforms and poor personal grooming of the waiters (34%), unclean kitchen (28%), foul odours (24%), and, finally, dirty bathrooms (23%). A dirty restaurant or simply perceived as such, can lead to a huge economic damage for the owner, that must solved this problem effectively and as quickly as possible.

Know-how: the consequences of textiles stress We are able to use the experience that our company has developed on a large scale market in the daily work of family and medium-sized businesses.

hat’s the main consequence that fabrics’ stress may cause to the catering activity? Certainly the increasing of the running costs,

due to the necessity of replacing, completely or partially, the textile supply became unusable. Increasingly high cost management, dissatisfaction for the presence of permanent stains (due to the fibre destroyed by high temperatures or aggressive detergents), initial colouring turned from white into yellow or pale grey, faulty ironing: these are some of the reasons why the restaurateurs leave the in-site laundry service and rely on the rental service or, even more drastically, on the paper supply. While at first glance these seem advantageous solutions, actually both are very expensive. The rental, indeed, requires that the restaurateur adapts himself to the standard supply of the centralized laundry, giving up at any chance of expression of his personality through the linen as well as he usually does by the dishes. Paper supply, however, produces a radical change of the restaurant’s image and of the perception that the customer has about its service. Finally, it’s a very common misconception believe that paper is environmentally friendly and preferable than the fabric. According to a recent study by Ambiente Italia, it’s the reusable textile linen to have a lower environmental impact compared to the disposable, saving 80% of non-renewable resources, 60% of energy and water, 55% of greenhouse gas emissions and 75% of waste. How to combine, therefore, acceptable costs, quality and environment?

very restaurateur knows that part of the necessary investment for the management of his business comes from the textile supply, not only as tablecloths and napkins, but also as uniforms and fabrics used by the entire staff. The more its quality will last over the time, the more the first investment has been fruitful. We must consider, however, that the restaurant’s linen is constantly exposed to stress, not only due to the stains of oily, egg, wine, coffee or sauces, but even of the make-up! And this, unfortunately, is just the appetizer, remaining on the HORECA theme... The biggest source of stress for the fabrics is the washing process (washing, drying and ironing) especially when it’s performed in an inappropriate manner and with an unreliable equipment. High temperature, aggressive and general detergents, mechanical action of washing machine or dryer and elevated ironing temperatures, put the resistance and the lifetime of fibres to the test. All that undermines, wash after wash, the feeling of quality that the restaurateur would like to offer to his customers.

The catering services cannot disregard from the hygiene, in the interest of health, of course, but above all to ensure a positive clients’ experience and build a long-lasting relationship.
