Q. Does the Bible mention health as part of the GOSPEL? A. Well….let’s look at the definition of the GOSPEL, and let the Bible answer for itself. “And I saw another angel flying through the sky, carrying the eternal Good News (GOSPEL) to proclaim to the people who belong to this world—to every nation, tribe, language, and people. “Fear God,” he shouted, “Give glory to him, for the time has come when he will sit as judge. Worship him who made the heavens, the earth, the sea, and all the springs of waters.” Revelation 14:6-7 The Bible tells us how we give glory to God: “So whether you eat or drink, or whatever you do, do it all for the glory of God.” 1 Corinthians 10:31 “Don’t you realize that your body is the temple of the Holy Spirit, who lives in you and was given to you by God? You do not belong to yourself, for God bought you with a high price. So you must honor (glorify) God with your body.” 1 Corinthians 6:19-20 So, we believe that we as a church cannot focus only on spiritual matters, but that people have physical and social needs as well.

Q. Why then should a CHURCH concern itself with HEALTH AND NUTRITION? A. As Christians, we profess to follow Jesus Christ. And when we look at his ministry as found in the four gospels, one thing which stands clear is that Jesus ministered to the people’s physical needs as well as the spiritual. Some who have looked at the life of Christ feel that he healed more than he preached. God is interested in our physical health, as well as our spiritual health. “Dear friend, I hope all is well with you and that you are as healthy in body as you are strong in spirit.” 3 John 2 “And so dear brothers and sisters, I plead with you to give your bodies to God because of all he has done for you. Let them be a living and holy sacrifice—the kind he will find acceptable. This is truly the way to worship him.” Romans 12?1 We believe that part of the good news that we can give our fellow man is that God wishes us to have abundant health in all areas of our life….and that it is really a part of our gospel commission.

BLUEBERRY LEMONADE
ALMOND CARROT CRUNCH
1 1/4 cups blueberries, fresh or frozen, thawed 3 cups water 1 cup ice cubes 1/2 cup lemon juice 1/4 cup honey or agave
Salad: 4 large carrots 1/2 cup raw almonds 1/4 cup roughly chopped coriander 1 tsp. ground coriander 2 Tbsp. honey or date puree 1/4-1/2 tsp. salt Optional: 1/4 cup shredded coconut
Puree 1 cup of the blueberries in food processor. Transfer to a pitcher, add the water, ice, lemon juice, sweetener and remaining 1/4 cup of blueberries and stir. This lemonade keeps for 1 day in the refrigerator.
Lemon dressing: 1/4 cup olive oil or rice bran oil 1 clove garlic, crushed 1/2 tsp. ground cumin 1/2 tsp. salt 2-3 Tbsp. lemon juice Grate the carrots by hand or in your food processor: if they are fresh and clean you do not need to peel them. Make dressing with stick blender or shaker. Chop the almonds roughly or you can use slivered almonds. Combine all ingredients. Optional: Add some shredded coconut as a garnish. Optional: Dry roast the almonds in the oven for around 8 minutes at 350* for a greater flavor.

HONEY-MUSTARD BROCCOLI SALAD
WALNUT MAPLE COOKIES
Salad: 1/2 cup French Lentils 1 head broccoli, cut into florets (4 cups) 1 small red onion, sliced into rings, 2/3 cup 1/4 chopped or slivered almonds, toasted
2 1/2 cups walnuts, ground in food processor 2/3 cup whole wheat pastry flour or spelt flour 1 tsp. salt 1/3 cup flaxseed meal 1/3 cup carob chips or cranberries 1/2 cup + 2 Tbsp. maple syrup 2 tsp. vanilla
Honey Mustard: 2-3 Tbsp. cold-pressed olive oil 2 Tbsp. lemon juice 1/2 tsp. honey 2 tsp. Dijon mustard Cook lentils till tender with 2 cups water, add water as necessary. Steam broccoli 2-3 minutes. Meanwhile, whisk together dressing ingredients till smooth. Drain any liquid from lentils and broccoli. Transfer lentils, broccoli and red onion to a large bowl. Add dressing and toss to coat. Season with salt. Serve with almonds as a garnish.

Preheat oven to 350*. In a mixing bowl, add all the ingredients in the given order. Mix well. Drop cookies on cookie sheet with a scoop (I used a 4 tsp scoop) and flatten. Bake for 12-15 minutes or until lightly brown. Let cool before removing from cookie sheet. Makes 24 cookies.

B-S-C GREEN SMOOTHIE
FAST FRESH BORSCHT
1 cup of broccoli, chopped, stems are good! 1 handful of spinach or chard 1 medium cucumber, peel if not organic, chop into eighths Lemon juice to taste 1/4 tsp. Himalayan sea salt 1 cup water
1 cup almonds, soaked overnight, then rinsed 2 cups water OR 1 3/4 cups unsweetened almond milk 3 beets, chopped coarsely 1/4 cup chopped fresh dill, save some to garnish 1 clove garlic 1 Tbsp. extra virgin olive oil 1/2 tsp. Celtic salt 1 cup finely shredded cabbage lemon juice to taste
Place in blender. Blend on high till smooth.
Place the almonds and two cups water in a blender and liquefy. Strain the liquid through a sprout bag to collect the almond milk into a blender OR use the 1 3/4 cups unsweetened almond milk. Place all but cabbage in blender. Blend till smooth. Chill, add cabbage to borscht and garnish with dill to serve.

NEAT LOAF
ITALIAN TOMATO SAUCE
1/2 cup brown lentils 2 cups boiling water 1 cup quick rolled oats 1 onion finely diced 2 cloves garlic crushed 1/4 cup soy sauce or tamari 1 tsp. salt 1 cup cottage cheese or 10 oz. mashed tofu Up to 1/2 cup water 1 tsp. sage 1 tsp. oregano 2 carrots grated 1 red bell pepper, finely diced 1 cup Italian tomato sauce or barbecue sauce or ketchup
1 large onion, chopped 4 cloves garlic, minced 2 Tbsp. olive oil 36 oz. tomatoes 3/4 tsp salt 1 tsp Italian herbs 1 Tbsp honey or date puree Sauté onion and garlic till clear. Add remaining ingredients and cook till bubbling. Blend all of the sauce in blender or with hand blender.
1. Cook the lentils in the water for around 30 minutes or until soft. Drain so there is no liquid. 2. In a bowl, mix all ingredients (except tomato sauce). You should have a sticky mixture. You may need to add some water if it is dry. 3. Press into a lightly oiled oven tray—approximately 1 1/2 inch deep. 4. Pour over 1 cup of the tomato sauce. 5. Bake for 40 minutes at 300*F or until firm. 6. Cover with the remaining tomato sauce. 7. Cut into squares and serve so the tomato sauce cascades over the neat loaf.
