El CARMEN ESTATE ACATENANGO, CHIMALTENANGO

Between 1873 and 1885 a german immigrant

sold to Jose María Monzón 2 farms located in Acatenango known as “ La Colina” and “ El Carmen”. They were inherited by Jose María´s son, Mateo Mejía Monzón.

By the time Don Mateo started to manage

the farm corn, black beans and maguey occupied most of the fields. The maguey was used to obtain fibers for ribbon production and it hosted an insect from which indigo was extracted, a natural colorant used as clothing taint back then. Only 2 rows in one quarter of a hectare composed the coffee plantation. The positive business peak at that time motivated Mateo Mejia to build a small mill and process his own coffee cherries. Don Mateo is said to be the pioneer of coffee production in Acatenango.

A few years passed and Mateo Mejia

Monzón named one of his sons, Jose Maria Mejia Mazariegos manager of finca “El Carmen”. Don Jose Maria planted the farm entirely with coffee and built his own mill which actually processes our remarkable coffee from El Carmen Estate.

In 1944, many indigenous families migrated to the municipality of Acatenango

because of the cruel and historic “massacre of Patzicía”. José María Mejía Mazariegos was Acatenango´s mayor at that time and he managed to accommodate the families among several farms n the region including finca “El Carmen”. “El Carmen” hosted 25 families that with time moved to the lower areas of the farm and established what we know today as “Los Planes Village”.

When Mateo Mejía Monzón died in 1966, his sons José María and Carlos

Humberto Mejía Mazariegos became the new farm owners. In 1967, only one year after, the farm was inherited to their descendants, the Mejía Garcia and the Mejía Lima brothers. Juan José Mejía, one of the five Mejía García brothers, actually manages El Carmen Estate. He belongs to the third generation of coffee producers in the family.

The View

of Lingle Bros. Coffee, Ted is one of the founding members of the SCAA and its first Executive Director. His leadership and analytical mind lead to the astounding growth of the association from an idea to what we are today. Ted’s quiet passion for all things coffee has lead to standards and practices that we take for granted. Ted literally wrote the book on cupping and grading of specialty coffee. His leadership established specialty coffee as a unique and sustainable business model that would support millions of people worldwide. No single person can claim as huge an impact on all facets of what differentiates specialty coffee from commercial coffee. Standing in Specialty Coffee’s Pantheon with Erna Knudsen, Alfred Peet, Dr. Ernesto Illy, and a handful of others, Ted Lingle truly is one of our superstars although he is sure to deny it. Congratulation Ted Lingle on this industry recognition!

This year’s exposition seemed to go by in flash. We spent 8 days in Atlanta attending the first Annual SCAA Symposium and then the Conference and we still did not get everything done. We apologize to all of you whom we did not get to see. We could have spent another 8 days there and still not have the job done. CoffeeTalk received an award from the SCAA! Thank you so much. We were honored as the 2009 Distinguished Publisher at the Awards Reception on Friday. All of us at CoffeeTalk are grateful to be chosen for this honor and intend to continue to pursue the stories and issues that are important to our industry and our world. Winning awards is like passing road signs on the highway. They tell you that the journey you are on and the direction you are heading is the right one. Thank you for that and we intend to keep on this journey, in this direction, for a long, long time. We shared the podium with four bright luminaries of the specialty coffee industry. Jean Sleeper, the profoundly competent owner of JBS and Associates, the event management company that has managed the SCAA Conference seemingly forever was awarded the ‘Special Recognition’ award. Many of us would recognize her on sight but would not know her name, but without her extraordinary guidance, the Annual Conference would not have grown to the premier event it is today. This is the last year on her contract to manage the SCAA Exposition. Let us hope that those who decide on this have the wisdom to keep what works with someone who knows our industry from the beginning and helps make us tick. Tracy Allen from Brewed Behavior was awarded the ‘Mose Drachman Sales and Service’. This award honors individuals who, by their actions and words exemplify the values and ethics of the industry through sales and representation. This award is not given annually. The ‘Mose Drachman’ is a unique and rare honor, congratulations to our friend Tracy Allen. Rick Peyser! I really do not think there is a nicer and more considerate individual in coffee. The SCAA awarded him the ‘Outstanding Contribution’ award but I do not think it is possible to fully enfold all of Rick’s passion and accomplishments into a single award. As President of the Association he sheparded us out of the dark valley of financial ruin; his passion for the welfare of the growers and their communities holds no bounds; his humility for his own achievements and high praise for the efforts of others has helped to empower us all to seek greater heights. Rick Peyser is no saint, but he is pretty close. We are proud to credit Rick as our friend, but I think he is a friend to all of coffee. Congratulations to Rick Peyser. The winner of the ‘Lifetime Achievement Award’ is one of my personal heroes. To me, Ted Lingle represents the finest standards and values of our industry. A graduate of West Point, a veteran of Vietnam, an avid sailor, and part

The SCAA Symposium I have to admit that I was a little skeptical. I questioned the wisdom of such a massive and untried event during a time of financial uncertainty for the association and for the industry. I am very pleased to say that I was completely wrong. If you decided to miss the symposium, you missed an outstanding, and a little avante garde, moment of SCAA history. This very well attended 2-day event delivered as promised. The forums reached for higher levels and encouraged listener participation with important and timely policy and business topics. We ranged from the economic impact of quality and the sustainability of the gourmet specialty business model to sensory taste awareness programs; from heated discussion of the marketplace changes being applied to the coffee trade by the government of Ethiopia to the rationale of Sumatran coffee as specialty and the special place it holds in the roasters toolkit (that taste may be from mold – fascinating). Although a startlingly expensive registration fee, the symposium was worth it. The networking opportunities alone are worth the price. The event schedule was tight with planned lunches and dinners backing immediately up to core presentations. The event space was small and intimate. You could not help but engage with strangers on business and personal levels. The format busted the typical separation of rookies from the old hands and forced everyone to participate. Bravo to the SCAA, Mike Ebert, and to Peter Giuliano for a truly memorable experience.

The tea industry is experiencing remarkable change. The explosion of the market, from its multitude of offerings to its ubiquity in a variety of venues, illustrates that there is no stopping the tea category. Even with the economic downturn, “the overall state of the tea industry is very robust,” explains Saunam Bhattacharjee, managing director, Assam Tea Company, Ltd., whose business is designed to support small and medium sized tea distributors and retailers. “Our medium size buyers are doing great business and are quite busy,” Bhattacharjee says,” and our smaller buyers – the single and multiple unit retailers – who are experiencing a slowdown of business, are actually not seeing a growth on year-to-year consumption, as opposed to an actual loss of sales.” In particular, for coffee café owners, tea represents a category that presents high growth potential, even if you think your customers are hard-core coffee people. In fact, Keith Hutjens, director of tea, Starbucks, notes, “tea is one of the few drinks providing positive comps in the coffee environment.” With that in mind, coffee establishments should not underestimate the tea consumer. They have come to expect quality from your coffee offerings, and they expect the same from all you offer – including tea. “Coffee people spend a lot of time obtaining the best coffees and training baristas,” explains Tim Smith of The Tea Smith, but oftentimes when it comes to tea, it is an afterthought. But having mediocre tea offerings affects the customer’s perception of your establishment.” To ensure your tea program is up to par with customers’ expectations, it is essential to revisit the basics of category management and promotion, and make sure that you are taking full advantage of the potential of the category. Diversification of Offerings Just as specialty coffee has expanded to offer customers a plethora of coffee and espresso based beverages for any mood and any day part, so too must the tea industry. Rather than serving as a niche product to live in the shadow of coffee, “retailers must realize that because of the increased awareness in availability and tea’s part in a healthy lifestyle, tea is no longer confined to the old demographic,” says Smith. “The tea demographic has expanded considerably and is broadening to include people from all walks of life, young and old. The key is to create awareness and education that will welcome customers into the world of tea.” Tea and its many forms offer retailers the opportunity to provide customers with a multitude of beverages. For example, “tea lattes are easy for an establishment to add,” explains Hutjens, who says the success of a recent two-month tea latte promotion resulted in the company adding the beverages as core products year round. Bill Waddington of The Tea Source adds this, “who will thrive in the tea category will be those who have created mini niches, or signature blends that allow them to differentiate themselves from others selling tea. Build your identity in tea, and create a feeling that ‘we are part of your neighborhood’ and you’ll be able to separate yourself from others and build an identity in tea.” One of the main reason’s tea is becoming more popular is because it is more convenient to drink. John Wilson of Allen Flavors notes the solid and continued growth of the RTD (Ready to Drink) market as consumers make an exodus from sodas. “They’re turning to tea products because they are better for you. Its further appeal is the more sophisticated flavors.” Wilson says, “The popularity of super

fruits and the many different flavor combinations available, as well as interest in organics, are helping grow the RTD category.” Kiley Biggins, marketing manager, China Mist Brands says the company has experienced a nice jump in the sale of their newest product, the China Mist Pure Bottle Organic teas. Introduced in late 2008, the tea is finding its place in many foodservice and retail environments. “As dining out is slowing due to the economy, we’ve found our foodservice customers brewing less tea. However, consumers still want to taste the refreshing flavor of our teas, therefore the graband-go sector has increased.” Specialty tea companies offering the highest quality teas from around the world, now have new opportunities to expand their reach. Having struggled with the mainstream U.S. consumer’s preference for brewing tea in a bag, recent advances in tea bags now allow for the full leaf to be used, while also meeting ‘green” standards of many companies. With the new tea bag offerings, high-end companies can provide consumers with the same high quality teas, in a more convenient bag form. SerendipiTea recently launched a small line of teas packaged in a single serve, biodegradable bag. “Customers have been asking for it for a long time,” explains Linda Villano, “and I had been resisting. But, a plant-based biodegradable sachet allows us to offer nine of our teas in this more convenient form.” Likewise, Beth Johnston, founder and CEO, Teas Etc. Inc., notes the launch of the company’s new line of teas focused on moving consumers into a specialty loose tea product, with the convenience of a tea bag. “The bright packaging colors and the new mascot, Lucy Tea will focus on capturing consumers who might not otherwise try high quality loose leaf teas.” Ice tea is also a great opportunity yearround. The quality of the iced tea will go a long way in getting iced tea customers to return,” adds Hutjens. “As consumers turn away from sugary soft drinks, they seek flavor options like flavored iced teas,” says Biggins. “Since our iced teas are naturally flavored and have no sugars of carbonation, it is a natural transition for soda drinkers to move to our teas.” To help meet the needs of the tea-drinking customers, many companies have been focused on the accessories that can help them brew at home and even consume on the go. Companies like Finum are bringing consumers new options that allow consumers to brew tea properly on the go. New introductions, such as the Travel Tumbler, incorporates a brewing basket in the top of a travel mug, and the Tea Control Traveller, a portable version of the Tea Control, which allows the user to brew loose leaf tea, then by using the brew stop insert, closes off the flow of water to the tea leaves, so the beverage does not become bitter from overinfused leaves. These and other similar brewing accessories will be the key to helping consumers easily brew at home and on the go. Because consumers are demanding more quality, more variety and exciting new ways to enjoy tea, both hot and cold, there is no shortage of opportunities for retailers to capture the consumer with tea. Says Johnston of Teas Etc., “This is a perfect opportunity for retailers to expand their offerings, increase their service and customer communication.” In the end, you will build sales in all categories.

The Caffeine Conundrum

A Two-part Investigation: First, the Questions, Next, the Answers…

Caffeine in coffee? Of course. Caffeine in energy drinks? Always. Caffeine in pharmaceuticals? Definitely. And there is a plethora of clever caffeinated products that are ingested ¬– gum, mints, lollipops, cookies, even breath spray. (Look at http://www.thinkgeek.com/caffeine/all.) But caffeine in panty hose? YES, the lacy black kind a girl wiggles into before a night on the town… When browsing through a women's wear catalog one afternoon recently I spotted an advert for the above-mentioned underwear and (okay I will admit it) ordered them. Perk up, aching calf muscles! Then, not a week later, I saw an ad in a magazine for an under-eye concealer that touted, as its main ingredient, caffeine! Wake up, baggy eyes! And yet another product aims its arrows at ladies who suffer from cellulite – yikes! And the answer to all of these aching, baggy, saggy, dimpled, and tired old problems? Caffeine! This novel use of caffeine piqued my curiosity and set me on an investigation with quite a few questions to be answered. Where does this caffeine come from? Is it a by-product of the decaffeination of coffee (natural caffeine) or is it synthetic caffeine? How does this caffeine get into products like panty hose? Is the caffeine jolt more or less powerful than drinking coffee or tea or eating chocolate? If this caffeine is absorbed directly through one's skin, and it is a chemical, who knows what the end result can be? Caffeine in products other than coffee is not a new concept. From WWII on, good old No-Doz, and Coca-Cola, both established themselves in everyday American life with legions of imitators following. Pain relief products such as Excedrin, cold relief remedies galore, stay-awake pills that help workers get through night shifts, energy drinks that power party hounds through all night raves, all are boosted by caffeine. According to the Food and Chemical Toxicology Journal, Volume 34, Issue 1, January 1996, Pages 119-129, by J. J. Barone and H. R. Roberts, “Caffeine or 1, 3, 7-trimethylxanthine is the most widely consumed pharmacologically active substance in the world. Its major action is to stimulate the central nervous system. Chemically speaking caffeine belongs to the alkaloid family and the methylxanthine group. Caffeine is found in over 60 plant species of which the most well-known are cocoabeans, tea, and coffee.” FYI: Standards for the caffeine content of foods and beverages have been set by the Food and Drug Administration (http://www.access.gpo.gov/nara/ cfr/waisidx_03/21cfr182_03.html) but the interpretation of the wording is, not

surprisingly, pretty loose. A limit of 65 mg of caffeine per 12 liquid ounces may only be for carbonated beverages (the colas). Most energy drinks have more, but these are considered “supplements” like vitamins, and have a lower oversight than food and drugs. And coffee and coffee based drinks are also exempt from FDA regulations because they have naturally occurring caffeine - the sky's the limit for java heads! For a comprehensive list of caffeine content in bottled beverages, coffee and teas, foods, pills and medications check out (http://www.erowid.org/ chemicals/caffeine/caffeine_info1. shtml). At the Center for Science in the Public Interest's website one can find a similar listing of caffeine content (http://www.cspinet.org/ new/cafchart.htm) with energy drinks, frozen desserts, and some candy thrown into the mix. But how in the world can the caffeine content for these new products on the market (the stockings, the face and body creams) be measured? Again, from the authors of the article in the Food and Chemical Toxicology Journal, “Caffeine absorption from the gastrointestinal tract is rapid and virtually complete about 45 minutes after ingestion. The peak plasma caffeine concentration is reached 15-120 minutes after ingestion. Intakes of 5-8 mg caffeine/kg body weight give plasma caffeine concentrations of 8-10 mg/l. The half-life of caffeine in the plasma is 2.5-4.5 hours in young and elderly men increasing to 80 hours in newborn infants and over 100 hours in premature infants. The caffeine half-life is reduced by 3050% in smokers, doubles in women taking oral contraceptives and rises to 15 hours in the last trimester of pregnancy. The metabolism of caffeine is species specific. In humans about 80% of caffeine is demethylated to paraxanthine and about 16% converted to theobromine and theophylline in the liver. Further demethylation and oxidation forms urates and uracil derivatives. About a dozen caffeine metabolites can be recovered in the urine but less than 3% of ingested caffeine.” WHEW! And if I rub in caffeine charged products under my eyes, on my face (and other body parts) and I wear those caffeinated stockings all day, I must be absorbing unknown amounts of said caffeine through my skin. So, how does that affect me? Besides becoming a guinea pig to get a first person answer to this particular question, I asked some decaffeinators, a few doctors, and other experts to answer all of the questions posed herewith. Leveraging the Internet for Low Cost Marketing Last year, Internet sales rose 6% over 2007. In the third quarter of 2008, for example, retail ecommerce sales were up 0.3%, while total retail store sales were down by 1.4%. As times continue to get tough, consumers are turning more and more to the Internet for good deals and for research on the products they buy, from big ticket items (major appliances, cars, computers) to everyday and smaller ticket items (restaurants, small appliances, professional services). Not only is being on the web and leveraging this critical medium to get to consumers a must, it’s a great way to stretch your marketing budget. Here are some great reasons and ways to strengthen your company’s presence online: PR packs new punch online - Press releases enjoy a new life because they are (when done right) content-driven. People turn to the Internet for commercial as well as editorial content. Display ads can't convey as much information as a press release. If you send a newsworthy press release, you can reach the end user, news outlets and the blogosphere all at once. You can track the success of that press release by seeing how many Tweets, blog mentions or pickups by syndicated RSS feeds it collects. Online marketing is closer to the money - There are at least three ways Internet marketing is closer to the money than any other medium: • The offer and the call to action are together. No other medium serves up the infinite array of offers and the ability to buy instantly the way the Internet does. As TV is a "lean-back" experience, the Internet is a "lean-in" experience in which the user is more engaged and thus more likely to buy. • Real-time testing optimizes ad budget. Testing feedback, in close to real time, makes the Internet an attractive medium when you want to optimize every nickel of your ad budgets. • Web analytics helps you track results. Hook Google Analytics (google.com/ analytics) onto your site pages. They offer step by step instructions, the reports are easy for even a non-techie like me, and it’s free!

But, let's keep it real, people do go other places than the web so don’t go dark on your print advertising, etc. but just do it differently. For instance, buy a smaller ad, hit one key compelling point hard and then direct them web site for additional information. In today’s economic situation, the consumer’s gone from, “I’ve got more money than time,” to “I’ve got more time than money,” which means people are more willing to take the time to visit a web site. They already know that there is more information and marketplace feedback immediately available online than in any other medium. The permanent shift in media consumption favors online -Tectonic shifts in media consumption were underway years before this downturn hit. However, the downturn might have accelerated this shifting economic landscape. Almost weekly, we hear of another newspaper (and the advertising/PR opportunities) that has stopped publishing in print but maintains an online presence. What does this tell you? You had better be online. Online marketing is critical to every business - Remember last month I said to refresh your knowledge? Wilsonweb.com and marketingprofs.com are two good sites with solid, archived articles to help you to get up to speed fast on: • Search and pay-per-click marketing – Focusing your learning in these areas will give you some new low-cost marketing tools that you might not have considered before. If you are already using these, learn more about it and test, test, test. • Social networks – Social networks are fast becoming a source where consumers looking for peer-to-peer information on anything from how a particular new car performs to the best restaurants to eat. This is another great place to learn more to provide you with low to no cost marketing opportunities. • Mobile marketing - In the coming months and years, look for more marketers to tech up to mobile device users (cell phones, podcasts, PDAs, etc.) and start making offers in that medium. Now is the time for savvy marketers to exploit the lack of competition in this medium, and the lower prices due to that lack of competition, in the mobile arena. The hospitality industry is perfect for mobile marketing and yet very few are using it. • Yellow pages online – Yellow pages went on-line some time ago and have enough experience under their belt now to really help you figure out what will work online and what won’t. Talk to your rep and consider adjusting your yellow pages budget to include more online directory use. The Internet is innately a two-way medium unlike any other medium that has come before it. Not only is this where the action is, it’s also a great place to focus your marketing efforts when budgets are tight. World Barista Championship appoints Chang Executive Director

After an extensive six-month worldwide search and interview process, Ms. Cynthia Chang has been appointed to the position of Executive Director for the World Barista Championship (WBC). During the competition, expert SCAA cuppers evaluated and ranked the world’s finest specialty coffees. More than 30 experienced judges selected the winning coffee by cupping, or thoroughly evaluating the scent and taste of each coffee sample. The judges specifically assessed six distinct attributes of the coffee samples, including: fragrance, aroma, taste, flavor, aftertaste and body. Cupping is a systematic method of evaluating the aroma and taste of coffee and is used by growers, buyers and roasters to evaluate the quality and flavor profile of coffee. To properly gauge the taste of the hot beverage, the judges slurped and swirled a soupspoon-sized portion evenly over their palate, then spit out the sample without swallowing. Top Scorers from Rainforest Alliance Cupping Announced at SCAA Breakfast Farms in Brazil, Colombia, Costa Rica, El Salvador, Ethiopia, Guatemala,Indonesia and Panama have earned top scores from a panel of coffee experts at the 2009 Rainforest Alliance Cupping. Representatives from the Rainforest Alliance announced the results of the cupping on Friday at the Specialty Coffee Association of America (SCAA) conference in Atlanta. The top ranking farms were among 80 Rainforest Alliance Certified™ farms in 11 countries that participated in the organization’s cupping events in Long Beach,California and New York City last month. Coffee from 94 percent of the participating farms received scores of 80 or above, the threshold score to receive specialty coffee status – demonstrating that sustainable farming practices often contribute to the production of high-quality coffee. “Rainforest Alliance Certified farms implement better farm practices that result in environmental, social and economic benefits, and those methods tend to result in better conditions for growing coffee,” said Sabrina Vigilante, director of markets at the Rainforest Alliance. Compared to previous years, the coffees this year had fewer defects, such as broken pieces, malformed beans or insect damage, due to guidance at the coffee’s origin. The Rainforest Alliance works with farmers to help them document the quality of their coffees, determine defects and make improvements. To further strengthen the link between sustainability and quality, the Coffee Quality Institute (CQI) has partnered with the Rainforest Alliance to connect the Q Coffee System, which certifies high-quality specialty coffees, with the network of Rainforest Alliance Certified™ coffee farms. Once coffees have been graded and certified as “Q,” the Q Certificate can be linked directly to the Rainforest Alliance online Marketplace, where users

can trace coffee through the supply chain, from exporter to importer to roaster. Now, in addition to knowing that their coffee was grown in a way that conserves the environment and improves livelihoods, buyers of Rainforest Alliance Certified coffees can identify the coffee quality and profile they seek. The SAN standards cover ecosystem conservation, worker rights and safety, wildlife protection, water and soil conservation, agrochemical reduction and education for farm children.

United States Cup Tasting Champion Ben Kaminsky of Barismo Coffee The Specialty Coffee Association of America’s (SCAA) declared Ben Kaminsky of Barismo Coffee the United States Cup Tasting Champion. The Taster’s Championship competitions were created to educate and motivate the cup tasters of the world, recognize their credibility and status as on par with wine tasters, and to promote the concept of quality coffee. Kamisnsky will go on to compete at the 6th World Cup Tasting Championship (WCTC) in Cologne, Germany, June 26-28 (www.worldcuptasting-championship.com). The 2009 United States Cup Tasting Championship winners are: • Champion – Ben Kaminsky, Barismo Coffee • Second Place – Andy Sprenger, Caffe Pronto • Third Place – Geoff Watts, Intelligentsia Coffee & Tea Recognizing that different taste preferences are found in coffee cultures around the world, the United States Cup Tasting Championship does not ask contestants to judge or identify coffee. Instead, participants in the competition test their skills to discriminate between tastes in a “triangulation” format. In the United States Cup Tasting Championship, tasters were presented with eight sets of three cups, or triangles, where two cups were identical and one was different. Competitors were asked to identify the one cup that was different, testing their ability to smell, taste, recall and concentrate on the task at hand, against the clock. The competitor with the most correct answers in shortest amount of time is named the champion. The competition began with three-person qualifying heats. Scoring was kept in real time and displayed immediately for participants and spectators. The top six competitors moved on to the semi-final, where triangles were made more difficult. The three high scorers become finalists. Kaminsky took the title of United States Cup Tasting Champion, and automatically qualified for the World Championship.

Gwilym Davies crowned 2009 World Barista Champion in Atlanta Gwilym Davies of the United Kingdom has won the 2009 World Barista Championship in Atlanta, Georgia, U.S.A. National barista champions from 51 countries converged in Atlanta to compete for the ranking of world’s top coffee maker in front of a live and online audience of thousands of viewers from around the world. As the winner of the 2009 competition, Mr. Davies receives a highly sought after Victoria Arduino Athena espresso machine and Mahlkonig K30 grinder in addition to the prestigious title of World Barista Champion. In three days of preliminary round competition at the Georgia World Congress Center, each competitor served 4 espressos, 4 cappuccinos and 4 original signature drinks to exacting standards in 15-minute performances.
