Ramanand Balmaadi Estate Elan Organic Coffees imports a beautiful award winning coffee from the Balmaadi Estate situated in the Blue Mountains of Southern India, the Nilgiris district of the state Tamil Nadu. It is part of the O’Valley group of plantations that were developed over 150 years ago by an enterprising Scotsman, John Ouchterloney. Nilgiris is also home to the mysterious Toda tribes. The Estate grows coffee at 1200-1800m, making it one of the highest grown coffees in India. Native shade trees, called Sholas, nurture their coffee. The producer uses the methods of Rudolf Steiner of Germany, referred to as bio-dynamics. This agriculture method depends not only on the quality of the soil but also the cosmos-movements of the sun, moon and planets. To maximize the effect of their inputs, the producers follow a biodynamic calendar for planting, harvesting and applying natural fertilizers. The Estate is surrounded by a forest where sambhar, bison, deer, elephants, panther, and monkeys roam freely. Every year, the producers plant more shade cover and add many new varieties of trees, increasing bio-diversity and sustainability.

The View Beyond Brand Everyone raise their hand if they believe that coffee farmers should be paid fairly, based on quality, for their product!
Okay, that is just about everyone, now…
Keep your hand up if you are willing to pay 3 dollars more per pound delivered over your current price!
Hmmmm…
Do not misunderstand me; I agree with your resistance to pay more than you currently are for coffee. The problem is not that you are greedy or insensitive; rather you know as business people that to pay a huge amount more for coffee than your competitors is economic suicide, even if that coffee is of extraordinary quality. No, the problem has nothing to do with us personally, or as roasters, or cafes, or importers, or exporters. The problem is that the fundamental business model must be fixed! That is correct; I said that the core business model upon which we all operate is not working correctly. Our current model is entirely brand driven. We are positioning specialty coffee based on our brands and what that represents – quality, service, support, and values. And, in passing, by the way we also have really fabulous coffees. By forcing the vast and remarkable world of coffee through the rather narrow funnel of brand identity, we really should not object when consumers treat our coffees as merely elements of our brand. And where does that leave consumers? Because we all are positioning based on brand, our company labels, the consumer can only judge us upon the parameters of brand positioning – quality, service, or price. In a purely economic world, that would be fine; but we are not in a purely economic model. Specialty coffee is a little side eddy within the raging river of commercial coffee. Millions of dollars in marketing is being spent by companies that are perfectly comfortable and successful in brand based marketing. These millions are dedicated to sell consumers on the notion that commercial roasters have coffee of the highest quality. (“Made with the finest 100% Arabica beans and roasted to perfection; vacuum sealed to lock in that just roasted freshness”) We all know that this is bologna; that there are Arabicas and then there are Arabicas. However, here is the thing… The consumer does not know nuances of sourcing Arabicas, the consumer does not know about degassing and the use of steel (or plastic) cans; the consumer
does not know about storage and transportation conditions; the consumer does not know about machine strip picking and engineered coffee plantations. What the consumer does know, thanks to the specialty coffee industry, is that 100% Arabica beans are the best. You have 100% Arabica Coffee, you are good. This simplistic approach has come back around and bit us in the posterior. What we as an industry need is to get ‘Beyond Brand’. We need to adopt an expanded business model that still rewards competition based on quality, skill, service, and values. Now however, we must add a new element, the glorification of the bean and those who grow it. We might take a lesson from the California Wine industry. Faced with becoming a value based commodity in the 40’s and 50’s, the California growers decided to aggressively market California wines; not Gallo or Mondavi or Christian Brothers, but the essential product itself – grapes and the California country it came from. The result has truly been spectacular. So much so that now the vineyards of California are generally considered the finest in the world. Individual wineries still have to compete for shelf space, recognition, and respectability through craft and marketing, but that is about their ‘Brand’, they have already convinced consumers that their grapes are superior and their common mission to produce fine wines is beyond reproach. It is important to understand however, that California would not have been successful if the task of elevating the vineyards had the individual wineries tried to do it themselves, there is too much competition, too much ‘brand’. It took the formation of the California Wine Growers Association to pull it off. A third party that could rise above the dust of competition and exalt the beauty of California Wine without any other bias than wishing for the entire industry to succeed. This brings us back to coffee. As many of you know, CoffeeTalk and the Songbird Foundation have joined forces with the common mission to elevate the story of coffee above the fray of competition and show the world consumers, through video, music, lecture outreach, and publication, what an amazing place the world of coffee is. Why consumers should be willing to pay more for extraordinary coffees of quality that are produced in some of the most exotic places in the world. CoffeeTalk hopes that through this initiative consumer awareness of the triumphs and challenges of coffee will ultimately lead to greater prosperity in the coffeelands and a more sustainable business model for all of us.

Water Filtration: Ensuring the Best Brew (and Steep)
With all the effort taken to procure the highest quality coffees and teas, café operators often neglect to invest an equal amount of effort to ensure the quality of the water they are using is up to par. Whether it is coffee, tea or even ice, coffee café owners must seriously consider the quality of their water. Not only can poor water quality lead to bad-tasting beverages, (after all, the main ingredient in brewed coffee and tea is water), but the equipment used may be damaged as well. Although the water coming through pipes is designated as being safe to drink, the water at your store’s location may not be suitable for making the highest quality and best-tasting beverage. The quality factors for brewed coffee and tea depend on three things: bean quality, water quality, and equipment that is operating properly. As for water quality, the three most common water variables that affect the brewing of coffee and tea are chlorine, the amount of total dissolved solids, and hardness. Chlorine and Chloramine (Ammonia) “The presence of chlorine and chloramines, or ammonia in the water surely affects taste. You need to make sure the filters you install remove these disinfectants,” explains Juan Vasquez, vice president, international sales for Selecto, Inc. To help operators deal with this issue, the Selecto SMF filters reduce chlorine and chloramines with virtually no pressure drop utilizing Hollow Carbon Technology, in which the carbon contains small void spaces that act as a mechanical filter. This property removes dust particles, while eliminating the need for a membrane or pre-filter. Adding to its efficiency, the Micro-Pore Membrane, which is a porous wrapper, ensures the efficiency of the Hollow Carbon particles within. Further, with the SMF series offers store operators the ability to configure a system that meets their needs. TDS and Hardness Total Dissolved Solids refers to the contents such as mud, silica, iron, and the like that are found in water. Generally, if the TDS level is above 225 ppm, it will interfere with coffee’s flavor, over-extracting the brew and causing scale build-up on the heat elements and other surfaces. Too few TDS and the brew will be underextracted also causing corrosion on the brew parts. Hardness refers to the dissolved calcium compounds in the water. Calcium is required for extraction, however, when hardness exceeds 129 ppm, scale accumulates and damages the equipments elements. Eventually the scale can interfere with the heat transfer, thereby increasing fuel consumption. An effective filtration system for dealing with TDS and hardness is through Reverse Osmosis. For instance, EverPure’s RO systems are designed to improve equipment life and performance by removing at least 90% of all dissolved solids that cause scale build-up, and also reduce chlorine taste and other contaminants that can affect the taste of beverages. Further, the recent U.S. introduction of the Claris water technology System

from EverPure is a family of water filter cartridges that are designed for hot drink machines. “It is a method of decarbonization, which is similar to softening, helping temporary hardness, alkalinity, and hardness,” explains Tony Fisher of EverPure. “Basically those things that scale up in the equipment.” The system offers a five-stage filter system that removes undesirable contaminates, and provides a blend feature allowing them to dial in the proper mineral content for maintaining optimal brewing parameters for their different applications. For example, calcium minerals can be reduced to protect the equipment from scale buildup, but enough minerals can be retained to ensure the desire flavor of the beverages. Similarly, Cirqua’s new AB Formulater is a filtration system that allows the user to dial in and maintain the desired TDS levels. It provides taste and odor filtration, adding minerals to low TDS water (or RO water), and compensates when changes in levels are detected. The Kinetico system is designed to produce safe, clean and crystal-clear water while increasing energy efficiency and lowering waterrelated costs. For example, the TQ Series RO is a non-electric system that provides water through reverse osmosis or nanofiltration featuring a prefilter to remove small particles and sediment, and the EverClean Rinse cleans system membranes with reverse osmosis water, extending the membranes life and improving water quality. There are those companies who use an alternative to reverse osmosis. “Selecto offers a nanofiltration process, instead of reverse osmosis, because we feel that reverse osmosis leaves the water naked, leaving no conductivity,” explains Vasquez. The nanofiltration system is designed for high concentrates of TDS and hardness, and unlike conventional reverse osmosis systems, boasts operation at low pressure and higher flow. It is also environmentally friendly, with less wastewater generation and energy consumption compared to RO systems. Choosing a System The first thing to do to determine which system, or combination of solutions is best for your location is to test the water. Utilizing various resources such as EverPure’s SmartWorks program, which allows café owners to make the assessment themselves, café operators can gather information that will be helpful in guiding them to which products they might need to ensure water quality. And, once the equipment is in place, many systems such as EverPure, can be tuned it. “People can be individualistic as far as their shop. They can tinker around and adjust results,” adds Fisher. “The trick,” says Fisher from EverPure, “is that coffee café operators brew multiple beverages. Each may require different parameters for brewing.” Keep in mind, every water quality company has a suite of products to meet your needs. Take the time to discuss your issues with several companies before making the decision. The key is to take water quality seriously. Thoroughly investigate your options with professional guidance so that you can insure you find the right product to meet the needs of your entire operation. CT

As a business owner, you are constantly juggling the day-to-day tasks that make your business run more smoothly – from hiring employees and inventory control, to customer satisfaction and building sales. What better time to look at a few business tools that can help streamline tasks, manage inventory and build sales.
The POS System For many independents, a highly functional point of sale system may seem too elaborate, and expensive, for their needs. However, as any business owner utilizing a POS system can tell you, it is well worth the investment. The POS system allows the operator to become more efficient in dealing with anything from loss prevention and inventory management, to managing employee time cards and capturing data from customer loyalty cards. Beyond that, the versatile system allows for easy implementation of promotions, with accurate tracking of what works and what does not. “Most coffee shop owners say a POS system is as crucial to their business as an espresso machine,” says David Reuland of Coffee Shop Manager. “It is truly a business management tool that you can’t live without.” He adds, “the key is to
take advantage of all the system has to offer.” As an example of its importance in the coffee shop environment, Reuland points to one of the most common problems that occur when using a register – inconsistent pricing. What a POS system can do is ensure that each barista will ring up each drink correctly, even if it is a special order such as a medium latte with vanilla syrup and an extra shot. With a POS system, those options are preprogrammed onto the machine helping ensure that pricing is the same from one barista to the next, or from store to store. All in all, “A POS system can give owners a good grasp of what is going on in their business,” explains Reuland. Gift and Loyalty Cards In addition to being a great tool to help cafes better run their business, the POS system is an ideal marketing tool, especially when hooked up with gift and loyalty card programs. “We find many independents turned off to the concept of gift and loyalty because they believe it is a costly proposition,” explains Peter Krauss, chief business development officer for Plasticard-Locktech International, LLP (PLI). “In continued on page 12...

...continued from page 10... fact, gift and loyalty programs can be put into place for a nominal cost, and they can grow your business 30 to 40 percent.” The benefits of utilizing gift certificates are numerous, which is why retailers have used them for years. However, as Krauss points out, in nearly every state, the gift certificate is redeemable for cash. Therefore, if someone spends $20 of a $30 gift certificate, the customer can ask for cash change. “That is lost revenue directly out of your register. On the other hand gift cards are not redeemable for cash.” What makes the gift card even more beneficial to the business is that, “more often than not, a customer who is using a $20 gift card, will spend an extra $10 out of their pocket.,” he adds. As for loyalty cards, which can easily be integrated with a gift program, and offer operators the ability to track customer activity, and reward them for coming back – or find out why they are not. Krauss mentions a recent Starbucks promotion in which the company experienced a drop in sales in late afternoon, when frequent customers usually returned for their second beverage. Through information captured through gift and loyalty cards, the company was able to directly market to those loyal customers, creating a promotion that would give them an incentive to return after 2 p.m. Many cafe owners utilize loyalty programs, but instead of integrating into a POS system, they use the low-tech punch or stamp a card. What the electronic card does for the customers is give them the ability to preload cards so they do not need to have cash on hand. Moreover, if lost, the owner can easily reissue a new card, with the appropriate amount on it. For the operator, the loyalty card provides for loss prevention when an undertrained barista punches a few extra spots for a friend or to gain a tip. The cards also provide operators the added ability to track customers and sales, and help with marketing directly to those customers. Gift and loyalty cards offer operators a tremendous opportunity to market to customers. Take a bunch of cards and preload them with $5, then hand them to real estate agents, other shops, local dentists to give out to new customers. This will surely drive new traffic into your store. Be sure to gather data such as name, phone number, birthday, whenever a customer signs up for a card. All this information can be useful in promotions or direct marketing. New Technologies Adding to the efficiency of order taking and inventory management, many newer technologies are giving café owners a leg up on the competition. Electronic messaging boards, such as those offered by Wand Corporation, help ensure order accuracy and prompt additional sales. Miles Mjolsnes of Wand explains how quick service restaurants have embraced new LCD screens that are attached to the registers. Facing towards the customer, as the staff inputs the order, it appears on the screen. As Mjolsnes explains, “It speeds up the process and nearly eliminates voids, which may require a manager to perform. However, the most important thing, is that it can track food costs – when a beverage is ordered, the POS can be programmed to subtract the ingredients from your inventory – and the inventory can be automatically adjusted. “These
are concepts that are working in the QSR world,” he adds, “and they are definitely concepts that can work in the coffee environment.” Other technologies, including digital menu boards, can be tied to the POS system and controlled on a daily basis for coffee of the day, or specific day parts. This subtle messaging can be related to the weather, promoting cold drinks on a hot day, for example. It is often used to promote the beverages that have higher margins. Mjolsnes does admit that the electronic technologies are not for everyone. “If you are a laid back, rustic chalk board atmosphere, then the electronic menu boards would not work.” The Internet and Beyond Beyond the beverages and food sold to customers, coffee shop patrons have come to expect Internet capabilities while at the café. By taking the opportunity to market to customers who are using internet capabilities while in the store, operators are helping build sales through customer loyalty. “Clearly, the Internet is important to nearly everyone; whether blogging, checking email, or connecting with the world. For a coffee shop to be the ‘third place’, consumers expect to have Internet access while enjoying their favorite cup of coffee; this allows the coffee shop to provide customers with a home-away-fromhome appeal. “Although mobile devices connected to the Internet have become commonplace, a secure and easy-to-use guest computer can allow coffee shop patrons to do the same things, and more, in less time,” explains Don Van Oort, CIO Thinix. “For example, by using the TS-1900ti, consumer can utilize Skype to have a video conference/chat with any of their friends, family, or colleagues anywhere in the world. In turn, providing guest-use computers can give the coffee shop a strategic and competitive advantage.” Other abilities, such as the WebConcierge technology from Thinix provide patrons with area information, events, maps, specials and more. “This is another way coffee shop owners can build a sense of community with patrons, while enhancing brand loyalty,” he adds. When using services such as these, customers can “easily broadcast their full menu, daily specials or discount coupons to anyone using their internet connect,” says Van Oort. “When these items are readily available, consumers may be more inclined to stay longer and make more purchases.” CT

Economy Down, Coupons Up: How to take advantage of it It is a fact of consumer behavior history, when the economy makes a downturn, coupon redemption rises. Here is a little background, a little research, and a whole bunch of ideas to help you take advantage this surge in usage and the newfound opportunities that coupons offer. Coupon usage peaked in 1992 then started to decline at an annual rate of 5-7% until 2007. Last year was the first year it did not decline. “Were we not in this economy, we probably would be looking at a slight decrease again,” said Mathew Tilley, cochairman of Promotion Marketing Association’s Coupon Council and director of marketing for CMS. A recent Direct Marketing News survey sponsored by Pitney Bowes turned up some interesting information about consumer attitudes toward coupons now and in our new digital age. • More than 3/4rds of consumers still prefer to receive their coupons in the mail, prompting 37% to purchase a new product or patronize a new business. While 68% were prompted to renew a brand or business relationship. • Email was consumers 2nd choice in how they receive coupons. • Newspaper inserts were 3rd • The most important consideration for redemption was the level of discount. • Consumers expect discounts to be at least 10%. • Grocery store coupons were the most likely redeemed with the least likely to redeem where on furniture. There is no time like right now, when consumers are most receptive, to pull the coupon tool out of your marketing tool box and pull business away from your competitors or find new business in untapped areas. There is no magic formula for the value, timing, distribution, etc. for coupons. Here is a smattering of ideas and thoughts on coupons to guide you in refreshing your couponing program or getting one started to drive traffic: • Test, code, and track – Test different offers and distribution by putting codes on your coupons and track where they come from. And I do not mean intuitively track – your memory will trick you, I have seen it many times. I mean collect the hard data. It is easy to do with a basic spreadsheet – coupons codes on one axis, distribution point on the other. This intelligence is invaluable to helping you refine our coupon program. • One coupon, many uses - If the coupon is good on a multitude of products, write the product purchased and the before coupon sale amount. This information can be used to pinpoint what kinds of products are important to your customers and what their tolerance for savings is. • Coupons lead to more sales – Use a strong coupon offer on a commonly purchased product to drive traffic for additional sales. • Coupons – Choose popular products with good margins and to encourage complimentary sales. For instance, it is not likely that a customer is going to walk into your coffee shop with a muffin coupon without ordering their favorite cup of java to go with it. • Coupon a friend – Print two identical coupons side by side to encourage passaround. One for them and suggest giving one to give a friend. • Coupon an office – Create a coupon designed for a bulletin board or office passaround. Give to customers during the day and tell them it is a gift for them to give to their colleagues. • Coupon for status – Make the customer feel important with a “secret code.” Making the customer feel like an insider makes them more likely to share and show off their status. Make the secret code a wacky word and add some fun. • Double the coupon – Have double coupon Wednesday. Better yet, tie it to bringing a friend. Test which day and what the tie is to hone what works best. • Coupon relevancy – If you coupon on some obscure item you will be wasting your time. What products, price point, and time period are most important to your customer? This is another case for testing and tracking to see what works. • No trick coupons – Use restrictions that have some protection (“with purchase of a beverage) and are simple and practical. A coupon with a stellar offer and a whole lists of restrictions (Thursday only, between 10 and 11 am, wind blowing from the south) is not going to do you any favors. Customers feel like you are trying to trick them, which does nothing for your goodwill. • Mix it up – Do not be afraid to try new offers and keep your customers guessing what your next coupon offer will be. • Co-op coupons – Ask your vendors if they will go in with you on the ad space cost or the redemption in exchange for using their logo in the ad. What is the worse they can say, no? • A word of caution - The takeout pizza business has learned the hard way what it is to be coupon driven – i.e. customer will not choose them as a meal choice without a coupon. If you change up offers, distribution points and timing then when the economy turns around you will not be stuck with only the customers who only buy with coupons. When times get tougher economically, coupons become more relevant to your customers. If you have not done any couponing in awhile, try it again. If you already do couponing, try something new. International Paper launches ecotainer compostable cold cup

The Colombian Cup of Excellence auction, held April 23, 2009, set a record despite the difficult economic environment when US-based Target bidding through Coffee Bean International of Portland bought the first place winner for $21.00/lb. The previous record set in 2007 was $19.20/ lb. The winner, from the El Porvenir farm received an overall cupping score of 91.68 during the international cupping competition held in March. Target and Coffee Bean International also bought the second place coffee from the Bellavita farm for $13.10/lb. The Q expands in Eastern Africa
Thirty-six more coffee professionals have earned the professional accreditation of Q Grader, joining the total of 606 worldwide. Training courses and exams were held in Rwanda and Uganda with the purpose of expanding the number of trained cuppers at origin qualified to identify and differentiate quality coffees. The work was conducted by the Coffee Quality Institute (CQI) as part of their Q Program and with the ultimate goal of creating a more sustainable supply of quality coffee. In Rwanda, the USAIDfunded SPREAD Project, Technoserve, and OCIR Café funded the program.
