The View

One of the truly magical elements of being CoffeeTalk is our immediacy. We are able to react to news happening in the coffee world, and include it in the print magazine up to 24 hours before going on press. We can even shout ‘hold the presses’ if we need to include something extraordinary. (Although that is awesomely expensive) I am writing this editorial piece on Friday, we are in pre-press on Saturday, on the presses on Monday, and in the mail on Thursday. In the trade magazine universe, that turnaround is amazing. The problem with such immediacy however is that more often than not the news typically is so tragic that it is heart wrenching to consider. So it is today. In the daily dose over the past 3 days, we have witnessed the devastating natural disasters that have befallen the South Pacific and Southeast Asia. Thousands lay dead or dying along a band of devastation caused by earthquakes, resultant tsunami, and layered with one of the worst typhoon seasons on record. The swath of destruction arcs from American Samoa through Tonga into Sumatra and Singapore then up to Thailand, Cambodia, and Vietnam. The string of events is cataclysmic. On September 26th, Typhoon Ketsana swept across the Philippine main island then crossed to Vietnam and Laos, leaving hundreds, possibly thousands dead, vast areas of flooding, collapse of infrastructure, and crop (including coffee) destruction. On September 29th, an 8.3 magnitude earthquake struck about 120 miles off the coast of Samoa, the resultant damage flattened buildings and destroyed infrastructure across Samoa and American Samoa. But this was only preparing the killing fields as massive tsunami generated by the quake swept inland and sucked the living and the dead out to sea. There was no warning, the wave, traveling at 430 mph roared upon the vacation beaches of Samoa, American Samoa, and Tonga within 20 minutes of the violent earthquake. On September 30, a 7.6 magnitude earthquake struck the Indonesian city of Padang, on Sumatra, leaving an initial count of 1100 dead and vast areas of destruction with the final toll still to be determined. Isolated towns are cut off from communication and rescue operations. The Red Cross and Red Crescent report that aerial photos suggest that there maybe be 100% destruction across much of West Sumatra and Java. On October 1st, a second quake, measuring 6.2 on the Richter scale struck Sumatra once again, tightening the rubble already on the ground and collapsing

more buildings already weakened. This second quake effectively stopped any hope of rescue for those still trapped beneath the rubble. The effort now is for recovery of the dead. And now it is October 2nd. The Super Typhoon Parma is expected to make landfall on the lesser Philippine island today and then continue through Luzon. Packing sustained winds of over 145 mph, Typhoon Parma is expected to bear extraordinary destructive power to the doorstep of people already broken by Typhoon Ketsana. The loss of life and property is anticipated to be unimaginable. Also today, another powerful earthquake struck the island of Tongo in the South Pacific and the early estimates are that dozens have died and several hundred are still missing. This quake, measuring 7.1 on the Richter scale, was an aftershock from the Samoan quake from two days ago. As a side note, an underwater volcano is erupting off the Tonga coast since Monday morning. So… At this point, I am supposed to wax philosophical about a call to action to lend a hand, but I do not have a clue. The devastation is so vast and frankly, not finished. As I was preparing to write an upbeat piece on our award winners from Coffee Fest – Seattle, I was frozen by the realization that any aspirations our industry in America may have for its future is currently trivialized by the boundless destruction happening this very day, this moment, to my fellow humans on the other side of the globe. Many of us have business partners and friends in these coffeelands who at this moment are experiencing extreme personal and community tragedies. Take a moment to raise a cup of Sumatran and contemplate your coffee’s journey and the lives of those who bring it to you. Middle Eastern Coffee Experts to Compete at the Inaugural UAE Barista Championship

Preliminary Round Kicks Off in Dubai, Nov. 10, with the Final Round on Nov. 12 at the Specialty Coffee & Tea Convention 2009

Professional baristas from the Middle East – all experts of the espresso machine – will compete in the first-ever National United Arab Emirates (UAE) Barista Championship. The preliminary round takes place Nov. 10 - 11, and the highly anticipated final round, Nov. 12, declares a winner at the Specialty Coffee & Tea Convention in Dubai, UAE. The winner will represent the UAE at the World Barista Championship (WBC), June 2010, in London, England. Accredited by the World Barista Championship, the world’s biggest and premier coffee competition, the UAE Barista Championship is the first event of its kind for the region. The competition encourages and recognizes professional achievement in the art and skill of espresso beverage preparation and service. The championship event is organized by International Conferences & Exhibitions LLC, one of the Middle East’s pioneering and well respected convention management firms. “It’s thrilling to watch as the barista profession continues to gain much-deserved recognition at all corners of the globe,” said Ric Rhinehart, executive director of the Specialty Coffee Association of America. “The UAE Barista Championship will certainly elevate the role of the barista even further, as these competitors share their expertise, knowledge and passion for specialty coffee.” During the event, challengers will prepare and serve 12 coffee drinks – four espressos, four cappuccinos and four original signature drinks of their own creation – all within a 15-minute timeframe. Seven WBC-certified judges, including four

Customers Spending Habits Are Changing, Are You Ready? Our current recession will go down in the record books as one of those social phenomenons that will have a lasting change on consumer behavior. Much like other social phenomenon (war, threats to national security, weather disasters, etc.), serious recessions are known for forcing us to rethink what really is important to us and our spending habits. London ad agency M&C Saatchi’s study “Reacting to Recession” found eight consumer typologies with distinct approaches to spending, economizing, and applied coping strategies. As you review these eight, think about where your customers land (and you might see yourself in there too). Crash Dieters (26%) – The largest group of the eight are heavy cash-oriented shoppers who aim to shed the fat from their weekly budget by cutting out all non-essential spending until things improve. Go after this group with a promotion on the basics like, “You still need breakfast on the run, right?”). They will also respond to “we’re in this together” promotional messages. Abstainers (15%) – Will tend to postponing big purchases or at least postpone paying for these lifestyle products. You will capture their attention with buy nowpay-later, 0 down, pay nothing until 2010 type of offers. Scrimpers (13%) – Reluctant to sacrifice they are looking to save but want to maintain their lifestyle. They will trade down (try a private labels over brands)

Judges will focus on station cleanliness, taste, beverage presentation, technical skills and total impression. The 2010 UAE Barista Champion receives the highest national honor for a barista, a personalized tamp, and a multiday trip from Dubai to the World Barista Championship in London, June 2010. The National UAE Barista Championship is one major highlight of the Specialty Coffee & Tea Convention 2009, which will feature numerous global companies, all showcasing the latest products, equipment and trends in the specialty coffee and tea industry. The Specialty Coffee & Tea Convention 2009 takes place Nov. 10 - 12 in Dubai, and is expected to draw the largest gathering of coffee and tea traders, consumers and professionals from the Middle East and other international markets. The convention includes a focused exhibition, a high-profile conference, targeted educational sessions and workshops, and a wide range of opportunities for networking, business sourcing and market intelligence. rather than cut out all together. Add private label ingredients to their specialty beverage, offer to save them a few pennies and they will give it a try rather than go without. Justifiers (12%) – They need to justify their purchased to themselves. Given the current economic climate they know they need to curtail spending and are looking for you to give them a reason. You will get their attention with limited time offers, new models, or value-added deals. Treaters (12%) – These people like to treat themselves; recession or not. However, they know that recessionary times call for cutting back so they will reward their frugal behavior with regular smaller treats. Businesses can get their attention by cross-selling their own products and/or teaming with another business. For instance, Treaters will perk up if you suggest a cross coupon for take-out and a movie replacing their usual dinner-and-a-movie. Balancers (9%) – They prefer to sacrifice rather than compromise on their quality of life but also recognize the need to balance their budgets accordingly. Their approach is to rob Peter to pay Paul. Ostriches (9%) – You guessed it, this group keeps spending normally. They’re typically younger and have never really experienced a true downturn. They are great for your bottom line in the long run and will keep charging up those credit cards. Eventually, they will have to raise their heads and switch to one of the other strategies to lower their spending as the crisis catches up to them. Vultures (4%) – These are the hard and fast bargain hunters just waiting for hardship of others to allow them to make a killing. These consumers love a good economic crash and are cashing in. They are looking for liquidations, going out of business, etc. and eyeing the property market. Where do most of your customers fall? What strategy can you leverage to capture their attention? Chances are you’ll want to leverage several strategies. Maybe not all at once but try a few out and track your results. Customers are going to respond to shifts in the economy based on instinct and personality and their not going to walk in one day and tell you about it. It is your job to be paying attention and watch for signs that their attitudes and habits are changing so you can respond with offerings that are relevant and motivating to them. CBI and Probat Burns Partner for Environmental Success By Laura Everage

For the past two decades, the specialty coffee industry has placed environmental and social initiatives in the forefront. By investing in building partnerships with farmers, through direct trade and certification programs, specialty coffee buyers have helped set the stage for future success. Not settling on its laurels, the industry continues to invest in finding new ways to “meet the needs of the present without compromising the ability of future generations to meet their needs.” (The Brundtland Commission 1987). Moreover, they are doing so by designing new facilities that are as eco-friendly as possible. “As the green building and green business movements have found traction over the past few years, it has probably resonated sooner and louder in the specialty coffee industry than most others,” explains Bruce Mullins, vice president of coffee culture for Portland-based Coffee Bean International (CBI), who is confident that the industry will continue to examine new ways to meet sustainability initiatives. This is exactly what CBI did when making the decision to pursue LEED certification for the company’s newly opened roasting facility in Portland. “It represents our goal to build a sustainably healthy and profitable specialty coffee business that will grow and thrive for generations to come,” says Mullins. LEED, Leadership in Energy and Environmental Design, is an internationally recognized green building certification system, developed by the U.S. Green Building Council (USGBC), which provides third-party verification that a building or community was designed and build using strategies aimed at improving performance in a variety of ways including energy savings, water efficiency, CO2 emissions reduction, improved environmental quality and stewardship of resources and sensitivity to their impacts. CBI’s new 125,000-square-foot roasting facility in Portland is one of only three coffee roasting facilities in the U.S. to receive LEED Certification, including Peet’s Coffee & Tea’s new California plant and the South Carolina Starbuck’s facility. “CBI decided it was important enough for us individually and as an organization, to pursue LEED certification for our facility. It was not a single step towards better environmental stewardship, but one of many steps we have taken, and will continue to take.” The project did not come without challenges, but according the Mullins, it has been worthwhile. “You need to partner with people who know what they’re doing,” explains Mullins. “Since LEED is issued retroactively after a project is done and the plans and paperwork are submitted to the USGBC, there are no guarantees that someone’s project will get LEED certified.” In creating the project, CBI and the architects of the project examined specific points within the areas of site selection, materials and resources in construction, work environment, on-going us of water, on-going use of energy and innovation and design – all with an eye towards sustainability. In the end, CBI’s new facility reached many LEED benchmarks including utilizing a repurposed existing building, using regionally-sourced building materials; using low VOC paints, adhesives, materials and carpets; and focusing on fixturing that exceeds code and uses 30% less water than conventional fixtures. In addition to the facility, CBI’s role as a leading roaster for the specialty coffee industry, led the company to implement green roasting initiatives as an essential element of the project. Working in conjunction with Probat Burns, CBI sought to lower emissions from the process. “There is pollution at every step of the roasting process,” explains Karl Schmidt, president of Probat Burns. “Roasters should consider emissions controls, carbon

impact and energy costs when considering whether green roasting is something for their company.” CBI uses 100 percent Probat Burns roasting equipment in the new facility, ranging from the largest production roaster to our small sample roaster. “Probat Burns advised us on selecting the right matrix of batch roasters needed for our business,” explains Mullins, “and set them up to work with the RTO’s (regenerative thermal oxidizer) emissions cleaning technology that we separately purchased, which has allowed us to reduce our use of natural gas by 80% per pound roasted versus the amount consumed within we used traditional afterburner technology.” He adds, “This represents ongoing savings of tens of thousands of dollars monthly.” Adding to these savings, the company receives tax and grant incentives from the state of Oregon equaling approximately $500,000. Probat Burns has contributed significantly to the movement towards greener roasting alternatives. The company offers multiple solutions for the treatment of exhaust air, enabling roasters to meet the demands of environmental regulations. For instance, the reengineered Saturn 4000 is representative of the company’s efforts to meet the growing demand for environmentally friendly roasting equipment, and is the newest model of the centrifugal roaster series. Designed with a green coffee processing capacity of 4,000 kilograms per hour, the burner incorporated with the roaster makes long hot air piping redundant, minimizing energy losses. The Saturn 4000 includes in its standard package a low temperature catalyzer that further significant lowers the energy consumption when destructing pollutants from the roaster exhaust. Probat Burns also offers RTO and FRTO (FRTO – Flameless Regenerative Thermal Oxidation) systems that not only reduce lowers energy consumption further, but also greatly reduces the generation of NOx. While the choice of roasting equipment was only one component in CBI’s efforts to build a more environmentally friendly facility, it was an important one, considering the volume the company roasts. Further, it illustrates CBI’s commitment to sustainability. “I am confident and hopeful that other roasters are considering LEED certification for their facilities, but I don’t think that formal LEED recognition will become a strong movement,” explains Mulllins, “There remains, however, a movement within the specialty coffee to improve our individual and collective environment by doing more business recycling, composting, upgrading to more energy efficient machinery and practices.” With that in mind, Mullins suggests, “Even if you can’t make your roasting facility LEED certified today, almost everyone is doing what they can to evolve their businesses toward being green. Making the investment in the environment will take time and money, but a business mentality that focuses on the future, as opposed to here-and-now profits, will be more sustainable in the long run. That is the sentiment at CBI, as many of the investment dollars for LEED will be recaptured through things such as energy savings over the life of the facility. “However,” Mullins adds, “the primary return to CBI will be through knowing that we and our customers are doing what we can to positively impact the planet while doing what we love – with is roasting some of the best coffees on the planet. PJ’s Named ‘Preferred Coffee of the New Orleans Saints’

The next time you see the Louisiana Superdome, you may do a double-take at the two largerthan-life coffee cups outside of the world-famous arena. While the owners of PJ’s Coffee of New Orleans would like this to serve as a subliminal message that you are craving coffee, it’s really part of the company’s sponsorship of the New Orleans Saints. PJ’s Coffee of New Orleans has committed to a two-year partnership with the black and gold which includes referring to PJ’s as ”the Preferred Coffee of the New Orleans Saints.” Additionally, PJ’s Coffee will be served exclusively at the Dome. Another component of the partnership is that the Saints preseason home game on September 3 was sponsored by PJ’s Coffee. PJ’s passed out 20,000 Saints schedules with a coupon for a “free upsize” on any cup of coffee, or iced coffee at any participating PJ’s locations the Monday after every Saints game. PJ’s also

rolled out their slogan for the sponsorship, “Brew Dat!™” on the marketing piece. The New Orleans Saints and PJ’s Coffee are also working on developing a line of cobranded retail coffees that will be released this November to take advantage of the holiday sales season.

King’s Hawaiian appoints Eric Ahlin to Director of Logistics
