It’s time to push back! A major aggravation of ours as we prepare the Daily Dose each day is the impact of local media on our industry. A single cynical food or business writer who ridicules a café’s efforts just to get a cheap laugh can dash all the legwork in the world spent educating consumers about the nuances of coffee. A recent example is the experience of Café Grumpy in New York trying to introduce an extraordinary coffee to their consumers. However, there are many, many more ways that local media can nibble away at coffee’s success. Headlines like… Another mom and pop café beating the odds against the green giant “any town” café still brewing through bad economy another pricey café closes, victim of economy does “any town” really need another café? “your name” café declared nuisance by neighborhood group “your name” café hangout for unemployed laptop users But the one that really makes me crazy is the dual drum beat of business, food, and lifestyle writers counseling us to save money by first dumping those $3.00 cup of coffee and second, ‘make your coffee at home in the morning and take some to work, it is just as good, if not better than the coffee at those ‘coffeehouses’ and no lines!’ Well, first off we all know that unless the coffee itself is rare and valuable or the preparation is difficult and involved there is no such thing as a $3.00 cup of brewed everyday coffee; there are $3.00 mocha lattes with maybe a shot of syrup, but not $3.00 brewed everyday coffees. And as for the second, if someone is really capable of duplicating the café experience at home then they already are our customers. These enthusiastic consumers are looking to equal the home experience while on the road and so are frequent visitors. Those coffee drinkers that believe they can duplicate the coffeehouse experience at home, but can’t, were not likely to become our regular customers in the first place. So what is the damage here? What is so aggravating? It is the need for local media to fill editorial space and airtime at any cost while seeming to be wise, on the side of the angels, and helpful. They are actually reaching for humans’ more base instincts of attracting followers by ridiculing and dismissing someone or something else. In coffee’s case, many local media outlets seem to want to paint specialty coffee as pretentious and frivolous. So what is the damage, the damage is that if your local paper and television/radio reporting is repeatedly talking about coffee as something just for the rich and foolish, they are gradually and persistently putting you out of business. What percentage of your lost sales is the result of customers following the guidance of your local sarcastic food, business, or lifestyle writer? How many consumers have heard their morning drive-time radio DJ’s finding lame humor at the expense of specialty coffee in YOUR community? It is hard to tell, but it is human nature to not want to look abnormal, to conform, and if the media establishes in consumers’ minds that having a café cup in their hands is not acceptable, is nonconforming to their peers, then that equals lost sales. And what does that loss look like in the big picture, how many of the 100s of thousands of workers in the United States coffee industry have been terminated because of this pressure in every town and city newspaper or television/radio station throughout the US? Let’s take a wider view, how many children have died from disease or famine in the coffeelands because shock-jocks think specialty coffee drinkers are ridiculous? Hard to tell. So why does this continue? Because we let them! We need to be activists for our own businesses. Your café and other cafes and roasters in your community are being bled to death from a thousand small cuts. Something must change, but what? You are too busy running your businesses to march down to the local paper and rant for an hour to the editor. Here is an idea. When you read or hear a local media talking head making negative remarks about coffee, tell us. E-mail us the name and type of media, where you are located, what the date was, and what was said. Let us do the ranting. E-mail us at truth@coffeetalk.com, we will let them know why specialty coffee is important to their community and the world. We are serious! It is time coffee pushed back! The Marketing Tool That Makes All the Difference and Costs Nothing When surveying customers, what marketing tool comes up repeatedly over time, is more important than price or service, and is not affected by changes in the economy? Trust. It’s very simple, people do business with those who earn their trust and make them feel secure. What makes trust an exceptionally valuable tool is that it won’t cost you any money. It’s not enough to be trustworthy. You need to clearly communicate your trustworthiness to your customers in a sincere and authentic way. Trust is a frame and state of mind, whether you are the one trusting or you are the trusted. In every company the mindset of trust starts at the top, with you, the manager and/or business owner. Below is a list of eight mindsets that create trust between you and your customer and will help build your business. #1 - Friend of the family – You must sincerely care about the person in front of you and have a connection with them that opens the door for my next point. #2 - Customer for life – Seeing each customer as a life-time friend of your business, not just a single transaction. #3 - Mindfulness –This is being in the moment with your customer, undistracted, with heightened awareness of the customer. Being fully present helps you listen to the customer’s needs and connects you with them. People can feel it when you are right there with them. Of all eight, this is the one I find the most difficult to do as it is so easy to become distracted. My trick to being mindful is to “notice.” For instance, read the customer’s name off their credit card. Look them in the eye and thank them by name as you feel the transfer of the weight of their card as you pass it back to them. Your customer will feel this connection and translate it into trust.

#4 - It’s not personal –If a customer behaves grumpy or irritable for no apparent reason, or explodes over something seemingly minor, it’s likely that something is going on for them that has nothing to do with you. To build trust, reframe what you are experiencing by reminding yourself that you’ve done nothing wrong. No one trusts someone who is defensive and angry, even if they “started it.” #5 - Collaborative mindset – Think of you and your customers as collaborative problem solvers. The customer has a need and they’ve come to you for assistance. Approaching every customer interaction as an opportunity to work together for a common goal will build trust. The collaborative mindset will put you both on the same side instead of an opposing buyer-seller relationship. By putting the focus on working together to satisfy their needs, your need for the sale will be satisfied too. #6 - Transparency – Secrets and our inherent fear of the unknown breaks down trust whether they are perception or reality. Be open and honest. This is particularly important when something goes sideways. If you’re out of their favorite syrup don’t just tell them, “Sorry, we’re out.” Go back to how you would treat a friend. Likely you would say, “Our supplier had it back ordered and says we will have it in another week,” and then suggest an alternative. Which answer builds more trust to you? #7 - Consistency, persistence and patience – Inconsistent behavior is a red flag for distrust. Your attitudes, actions and words all have to match, every day of the week. Since trust comes in varying degrees and grows with each interaction, persistence and patience are also important parts of the trust equation. #8 - Smile - It’s virtually impossible to distrust someone whom you believe has an authentic smile; it exudes competence and builds trust. It’s not just a mouth thing. It’s what some call the practice of, “acting if,” and if you do it, a magical thing will happen, you’ll actually feel it. There is a direct correlation between trust and sales. When trust is built, customers will be back to buy from you, and they will also tell their friends. Trustworthiness is about a whole bunch of little things. Building trust is about you and your employees practicing all eight trust-building habits every day. Customers who feel secure in their trust of you and your products or services are more likely to buy from you, and it won’t cost you a dime of your marketing budget. Judy Ganes Record Production Isn’t Necessarily Bearish

By Judith Ganes-Chase, President, J Ganes Consulting, LLC www.jganesconsulting.com There is a common misconception amongst commodity professionals that a record crop is bearish. It makes the imagination conjure up images of bales of cotton piled high or a mountain of sugar and of course, warehouses chock full of coffee beans. While oftentimes, record production of a commodity does result in oversupply, this is certainly not always the case and the level of output needs to be measured against actual use. If production, even though it may be an all-time high, falls short of consumption, a surplus will not result but instead a shortfall and prices would be justified in climbing rather than sinking In 2002-03 Brazil produced a record coffee harvest of upwards of 53 million bags. It was the first time Brazil ever produced more than 50 million bags and the crop was about 12 million bags more than what was truly needed by the market. Prices were justified in falling and falling hard in response to this massive overhang. Brazil is in the later stages of harvesting another record crop, but this time, the expected surplus will be rather limited and the excess production is needed to help fill the gap created by last year’s smaller harvest and be used to cover an expected shortfall in 2011-12. The excess this year is already spoken for and therefore is not having the same bearish implications as it did in 2002-03. Harvesting of the Brazilian crop generally provides seasonal pressure on the market with prices falling under the weight of this fresh supply. There are few instances when the market has not dropped at this time of year and in nearly every instance it was because of poor weather in Brazil that marred crop prospects. I can’t think of one instance since 1989 and the return to “free” market conditions, following the collapse of the International Coffee Agreement that the market actually raced higher, bucking the seasonal downswing. This year may be one for the history books. Prices of coffee have sped higher despite the harvest progressing fairly smoothly with excellent weather helping farmers pick the ripened cherries in what could have been very difficult conditions due to the erratic flowering of the

trees last year. The ability of the coffee market to rally when it ordinarily should be falling, especially with a record harvest in the works, underscores just how stretched the physical market has become. Rather than declining as the Brazilian harvest progressed, instead prices have rallied as farmers have been able to quickly sell the crop and they are finding demand for higher grades of coffee has been strong and prices were holding surprisingly firm. The Brazilian coffee has been quickly absorbed into the pipeline to plug the supply gap created by the lack of fresh Mild coffee that is currently available. Since there was little Brazilian coffee available that was carried over from the prior harvest, especially of better qualities, some of the new crop has been used to meet prior commitments. It would seem ludicrous to think that supplies of coffee are limited with Brazil in the later stages of harvesting a record crop. there should be ample coffee available to meet immediate needs. As noted above, the real issue is that much of this coffee is already accounted for and the amount of excess supply beyond what is needed to cover domestic and international requirements is small relative to the expected shortfall in 2011-12. The rise in price reflects this fear and the necessity for prices to be high enough to attract renewed investment in the sector. Although world coffee production will also reach record levels, the gains in output have not kept pace with increases in world coffee use, creating an ongoing drain in world stocks. Following the price crisis of last decade, when the market slipped to historic lows, farmers have been dedicating their attention more to improving the quality of their coffee to add value to their production at the expense of recklessly expanding output as has been done in the past. The effect of this shift in focus is the real driver behind the market. Consumption started to climb at a faster pace with the improved product offerings and production has not been able to keep up. Global coffee stocks are expected to finish the 2009-10 season at extremely low levels, especially relative to demand. Producers have already reduced their holdings and swept warehouses clean, carrying only minimal working stocks. If there was additional supply, it would have been sold already given the attractive prices this year in the cash market. Consumer stocks have been falling in the United States and in Europe on a steady basis for both Arabica and Robusta types of coffee. While still large relative to exceedingly low consumer stocks held in 1997, the last time prices spiked sharply higher, at that time producers had far greater inventories and demand was not nearly as strong as it is today. Buyers have had to clamor for supply and in the next few months, this scramble will continue until the onset of the new harvests of mild type coffee from Colombia and Central America. HAWAII COFFEE ASSOCIATION CROWNS GRAND CHAMPION OF HAWAIIAN COFFEE AT 15TH ANNUAL CONFERENCE The Hawaii Coffee Association crowned its second statewide Grand Champion of Hawaiian Coffee last evening at its 15th Annual Conference and Trade Show at the Sheraton Keauhou Bay Resort & Spa located on Kona’s Gold Coast. Rusty’s Hawaiian 100% Ka’u Coffee received top honors along with coffees entered from each growing origin. Awards were given to the top scoring entry from each district. The top ten overall rankings were recognized at the annual banquet. Lorie Obra of Rusty’s Hawaiian accepted the coveted HCA award presented Sandra Lee Kunimoto, Chairperson of the Board of Agriculture. Earning a 91.1 score, Obra said, “This is for the legacy of my late husband, Rusty”. “It is dream of mine, of his, for Ka’u to be up there with the elite coffees of the world. This is not just a victory for Rusty’s, this is victory for all of Ka’u, for the HCA and all of Hawaii” Earlier this month, Obra was recognized for her industry contributions with the 2010 Outstanding Producer Award by the Specialty Coffee Association of Europe. “This is good for our industry,” said HCA president Tom Greenwell. “This will make us all work harder, which will raise the bar for Hawaiian coffee.” “What Ka’u is doing is an example, a bright spot,” said Kunimoto. Kona’s District winner is Kuaiwi Farm. Una Greenway, operator of the 5 acre organic farm said, “I attribute the quality of our coffee to our micro-climate, organic practices, hard work and attention to detail that my husband Leon Rosner gives to every step in the production.” The District Champion hailing from Maui is Kupa'a Farm who also placed second in the overall competition with a 89.65 score.

Puna’s District Champion is Manny's Brew Coffee Farm. Hamakua’s District Champion is Hawaiian White Mountain. Oahu’s District Champion is Manoa Valley Farms. MoLoa'a Bay Coffee earned District Champion from Kauai. Molokai’s district Champion is Coffees of Hawaii. Five coffees from Kona, three others from Ka’u and one from Maui rounded out the top ten finishers.

The top ten coffees were cupped through a 5-round elimination process by a diverse panel of expert cuppers using standardized procedures. To ensure integrity, the samples were blind cupped and no panel member is from Hawaii. “It was extremely difficult to rank the top ten”, said panel member Paul Thornton of Coffee Bean International located in Portland, Oregon. “All are exceptionally good coffees.” “We started with 67 coffees, systematically narrowed the field to 27, then 15, then 10. The top scorers were cupped several times. It is apparent that Hawaii producers are taking this competition very seriously and are employing a variety of processing methods”, said fellow panelist Shawn Hamilton of Java City Roasters of Sacramento. “These are really, really good scores”, said fellow cupper Warren Muller, Jr. of InterAmerican Coffee of Pleasant Hill, California. Coffee cupping is a combination of art and science where coffees are evaluated and scored based on subtle characteristics including, flavor, aroma, ‘mouth-feel’, acidity, sweetness and aftertaste. HCA members re-elected Greenwell as president at their annual member meeting. The conference also featured an industry trade show, distinguished guest speakers, growers’ reports presented by representatives of Hawaiian coffee growing origins from across the state, and a keynote speech given by Lieutenant Governor Duke Aiona. The Hawaii Coffee Association’s mission is to represent all sectors of the Hawaii coffee industry, including growers, millers, wholesalers, roasters and retailers. The HCA’s primary objective is to increase awareness and consumption of Hawaiian coffees. A major component of HCA’s work is the continuing education of members and consumers. This annual conference has continued to grow each year and has gained increased international attention.
