INGREDIENTS
• 2 tbsp olive oil • 1 med onion, finely chopped. • 2 clove garlic, crushed • 1/2 C dry white wine • juice and grated zest of 1 lemon • 1 jar tomato-based pasta sauce (700 ml)
DIRECTIONS
• salt & pepper to taste • pinch sugar • 24 peeled cooked prawns • ¾ lb. linguini • 3 tbsp. chopped fresh parsley

1. Bring a large pot of lightly salted water to boil. Heat the oil in a large skillet over medium heat. 2. Add the onion, garlic and cook 3-4 minutes, then add the wine, lemon juice and zest, pasta sauce, salt, pepper and sugar.
Loosely cover and gently simmer 10 minutes. Add the linguini to the boiling water and cook until just tender. When the sauce has simmered 10 minutes, add the prawns and 2 tbsp (30 ml) parsley. 3. Cook until prawns are just heated through, 1-2 minutes. Drain the pasta and add it to the sauce; gently toss. Sprinkle portions of the pasta with remaining parsley.
