his month i had the great pleasure of attening kids instyle which reminded me why i love my job so much. i reconnected with some of the fabulous kids brands in the market and made some lovely new connections with businesses just launching onto the scene (you will see a few i have been able to sneak into this issue). the people behind the brands you love to dress your kids in are just as fun and funky as the clothes themselves and you can really see how their personalities shine though their designs. over the next few months i hope to bring you more interviews with these designers and the boutique owners where you shop so you can get to know them and their brands better.

fOUNDER OffRaNkiE DEaN inspired by the vision of seeing every australian school child achieve excellent eyesight and a desire to bring fashionable affordable eyewear to the market, Melbourne webrepreneur, giusep cosentino launched Frankie Dean in november 2012. with options to cater to all tastes and styles, the label is sure to be a huge success. we had a chat to giusep to learn more about the sight for schools™ program, the plans for Frankie Dean and more about the man himself. For those readers that don’t know who you are, tell us about the man behind the brand? having lived a rather public life in my early years, i prefer to remain a little more private these days. i graduated school and as my italian father would have it, i was immediately in work. i near completed a trade apprenticeship but skipped the final year to pursue a life long passion in dance. i moved overseas and performed on the internationally acclaimed tour, burn the Floor.

at age of 20, my inner entrepreneur emerged as i landed my first executive roll. at 22 i was a marketing wannabe living inside an i.tt systems administrator and when my employer at the time started to cut corners and failed to innovate, i resigned with a plan to finally write a resume, i was 23. tw t o weeks later i registered my first business, an i.tt & web marketing company, which is now based in south Melbourne with an amazing team, and client base that i could not be more proud of. last april i committed to Frankie Dean and we launched 24 days after the birth of my first daughter with my beautiful wife of 3+ years. lisa and i have been together for just over 13 years and i could have never in my wildest dreams imagined i could be so fortunate by the age of 31. i ride a motorbike to work, i love golf and mum always taught me the greatest gift is the gift of giving. i’ve got a ginger beard and i love calling australia my home. How was the Frankie Dean brand conceived? after ffter numerous years developing brands online for customers, the time and opportunity had finally come to build a new brand that australia could call its own. i’d ’’d been a long on and off prescription eyewear user and fashion brand junkie. i had also spent the past two years collaborating on and off with a leading australian photographer in the artistic/fashion space. i was going back and forth about a new business, product sales based, but unsure what. all i knew was a new business had to be different to my existing “service” based business. i was also inspired by the new wave of socially conscious brands emerging locally and abroad and that’s when it hit me. i’ve been in and out of eyewear constantly due to the expense of frames: buy a pair, love them for a year
or so, then start to get tired of them but could not bring myself to go and spend another $500+ on a new set of glasses (i love fashion brands but can’t say i’m a big spender). so i set out to build the Frankie Dean business model on the foundation of our sight for schools™ program, and design the range with the help of a couple of experts in the eyewear industry who i was fortunate enough to call my mates. essentially, Frankie Dean was founded out of the desire to lead a business that was more than just a product or a service, but something that every person could potentially buy into, and at its very core benefit more than just the customers and the staff driving it. Every new fashion label claims to offer something different from its competitors. How does Frankie Dean differ from other fashion eyewear labels? we don’t advocate a revolution in eyewear design or production. as a matter of fact we’re probably just the opposite. we’re using proven technologies and designs to target just about every face out there and ensure we’re delivering the best possible product within our grasp. Yes our design is our own and we’ve hand picked every colour combination and style from the ground up, right here in australia but what we are changing though, is the design and quality offered at our price point. that combined with our ability to offer every model in a clear, graduated tint or full-polarised lens is unique to us. as far as we’re aware, we’re the first fashion brand globally giving consumers those options at the click of a button online. but without doubt, the truly unique element of Frankie Dean is our foundation; our sight for schools program. i come back to it often, as
it is the driving force behind the brand. Quite simply, it’s success is our success and it defined our inception as it does our future.

How important to you is it that your brand remains Australian made and owned? We’re proud of our “Australian Owned” status! My Dad was born in Italy, and my Mum was born in Ireland. I’ve always said two great men made the choice to move their families to this country (my parent’s respective fathers), they believed this was the best place on earth to raise their families. As a first generation Aussie, I couldn’t agree more. We are Australian owned, Australian designed, and Australian produced and we love that. Frankie Dean will always be Australian owned - we’ve got green and gold in our veins!

I’d see us as an innovative brand offering models in multiple genres of fashion eyewear, helping kids from all around the country. I guess the ultimate goal would be a Sight for Schools program that enabled a country where no child experienced vision problems due to

How do think the fashion industry has changed in the last decade? Fashion is fashion. It has changed completely and by that accord, it hasn’t changed at all. We all know we should drink water but why is it really important that we do? Heart health A six-year study published in the May 1, 2002 American Journal of Epidemiology found that those who drink more than five glasses of water a day were 41 per cent less likely to die from a heart attack during the study period than those who drank less than two glasses. Research says when you drink water it is absorbed quickly and easily into the bloodstream and thins the blood which helps to prevent arteryclogging clots. Dehydration Dehydration can sap your energy, make you feel lethargic, create muscle weakness and other such symptoms. If you are thirsty it’s already too late. Dehydration can also speed up the rate of your heart causing it to work harder. Have you ever had a big night drinking and not drunk a lot of water? You may feel that your heart rate is elevated. Liquids other than water that require digestion, which may require fluids to move from the blood into the gut, create a bloodthickening effect. If you are going to drink, make sure that you have a glass of water after every glass of alcohol. Being hydrated will also help to avoid headaches. Improving your exercise routine Being dehydrated can severely hamper your athletic activities,

slowing you down and making it harder to lift weights or to do any form of cardiovascular exercise. Your blood volume drops if you are dehydrated which results in your heart having to work harder and you become more fatigued.

Often water can help cure stomach acid problems, and water along with fibre can cure constipation (often a result of dehydration). Water helps clean the stomach and helps digestion. Drinking water between your meals cleans the stomach of the small trapped food pieces and gives it a rest so it can stop producing acids. Water also helps to clean the digestive tract of small pieces of food. Enzymes, water, and good bacteria all work together
to maintain optimum digestion, nutrient absorption and health. Water is used by the body to help flush out toxins and waste products from the body. Weight loss Drinking water often replaces the intake of high calorie drinks such as soft drink and juices so there is an immediate benefit there. Water has no fat, no calories, no carbs, and no sugar. It’s also a great appetite suppressant, and often when we think we’re hungry, we’re actually just thirsty. An exerpt from Kidsí Food Allergies for Dummies The first step to managing your child’s food allergies is to help her avoid her food allergens. This can be a challenging task for you and other people who care for your child because the most common food allergens are prominent ingredients in foods from almost all cultures. Egg, milk and wheat are especially difficult to avoid in Western diets, because they’re staples in this kind of diet. Nuts are also difficult to avoid simply because they’re common ingredients in snack foods, cakes and biscuits. In this chapter, we provide some tips on how to replace the common food allergens in your child’s diet and in cooking.
Replacing Egg in Cooking Egg allergy is the commonest food allergy in children. Children with egg allergy react to allergens contained within the egg white, but the yolk can often be contaminated with some egg white so if your child has egg allergy, your child needs to avoid both the egg yolk and the egg white. The proteins in other bird eggs are similar to the proteins in hen’s eggs, so all eggs (for example, duck or quail egg) should be avoided by children with egg allergy. Avoiding egg in the diet can be difficult because it’s a very common ingredient in many foods that children eat. Eggs are used kidmagazine.com.au 28
in baking to bind ingredients together or to aerate the ingredients allowing a light texture. However, you can use several options to replace egg when you’re baking:
emulsifier. Egg lecithin and egg emulsifier are made from the fat component of the egg and the chance of an allergic reaction to these ingredients is very unlikely.
Commercially available egg replacer: Options include Orgran Egg Replacer, which is a powder made from potato starch, tapioca flour and vegetable gums. This product can be purchased from online allergy stores, health food stores and some supermarkets.
Finding Alternatives to Cow’s Milk Formula for Babies
Home-made egg replacers: These can be made out of water and baking powder, or gelatine, vegetable or fruit, as follows (each recipe replacing one egg): • 1 teaspoon baking powder, 1 tablespoon water, 1 tablespoon vinegar • 1. tablespoon water, 1. tablespoon oil, 1 teaspoon baking powder • 1⁄3 cup water and 2 teaspoons gelatine — dissolve gelatine in warm water • ¼ cup mashed potato or pumpkin • ¼ cup mashed banana or puree apple Egg substitutes can’t be used to replace egg if you have egg allergy — these are made of egg whites and are used for people with high cholesterol (who aren’t allergic to egg but wish to avoid egg yolk, which contains cholesterol). If your child is allergic to egg, your child must avoid egg substitutes — you can recognise egg substitutes on ingredient labels because the label clearly lists egg as an ingredient. Children with egg allergy don’t usually have to avoid egg lecithin or egg
Cow’s milk allergy is one of the most common food allergies in children. In the first year of life, breast milk or formula milk is the predominant source of nutrition for a baby and most formula milks are made from cow’s milk. So, if your baby has cow’s milk allergy and is under one year of age, you need to choose the right replacement that still provides an adequate source of nutrition. A good way to manage cow’s milk allergy is to breastfeed your baby. Although small amounts of milk allergen can cross over into your breast milk, most babies don’t react to such small amounts of milk allergen and you can continue to take cow’s milk and cow’s milk products in your diet. Some babies with delayed forms of allergy to cow’s milk do react to the small amounts of cow’s milk allergen in breast milk and you may need to avoid cow’s milk and cow’s milk products in your diet while you’re still breastfeeding. Your child’s doctor can advise you on this. Some mothers and babies are unable to breastfeed, and need an alternative milk formula that doesn’t contain cow’s milk allergens. Cow’s milk and cow’s milk products are the main source of calcium in your child’s diet, so you need to ensure that your child’s calcium intake is adequate if you’ve taken cow’s milk out of the diet. A person’s calcium needs change depending on age. If your child’s calcium intake is lower than the daily recommended amount for her age, your doctor or pharmacist can recommend a calcium supplement, available at supermarkets and pharmacies.
Replacing Nuts Two types of nuts can cause allergies: Peanuts and tree nuts.
Peanut is a legume and grows in the ground. Peanut allergy affects 1 to 2 per cent of children. Tree nuts are nuts that grow on trees, such as cashews, hazelnuts, almonds, walnuts, pecan nuts, pistachios, brazil nuts, macadamia nuts and pine nuts. The most common tree nut allergy is cashew allergy. Other common tree nut allergies include hazelnut, almond and walnut allergy, but children can be allergic to any of the tree nuts. Peanut and tree nut allergies are more likely to cause a severe allergic reaction (anaphylaxis) than other food allergies, and are the most common cause of a food-induced anaphylaxis. Children with peanut allergy are more likely (a 20 to 30 per cent chance) to also be allergic to tree nuts. Because of this increased risk for having other nut allergies, your child’s doctor may perform allergy tests for the tree nuts. Depending on the results of these tests, the doctor may be able to confirm whether or not your child has an allergy to the tree nuts but, in many cases, the testing may not provide a clear answer and a food challenge is required to clarify whether kidmagazine.com.au 31
an allergy is present or not. (Refer to Chapter 6 for more on testing for food allergies.) Clarifying whether your child has a tree nut allergy may be more important if your family relies on nuts as a staple part of the diet, such as if your family are vegetarian or vegan. Most children with peanut allergy don’t have allergies to the tree nuts and can include the tree nuts in their diet, taking care to avoid any situations that can result in cross-contamination, such as mixed-nut products. Most of our patients who are allergic to peanut but not the tree nuts can eat cashew butter, almonds, Nutella and other tree nut products, while taking care to avoid mixed nuts and any food that they can’t be sure doesn’t contain peanut. Peanut oil is something that can cause confusion. Here’s how you can tell the difference between peanut oil options:
• Refined peanut oils have been highly processed to remove the peanut proteins, so higher quality peanut oils are usually safe for children with peanut allergy. • Less-refined oil products, such as cold-pressed peanut oil, still have some peanut proteins remaining, and can cause allergic reactions in some children who are highly allergic to peanut and react to even small amounts of peanut protein. If your child has a severe allergy to peanut, you may need to avoid peanut oils, but most children with peanut allergy can tolerate peanut oil used in cooking. A number of foods sound like they may be a nut but aren’t. Coconut comes from the seed of the palm tree, nutmeg is from the seed of the drupaceous fruit, and water chestnuts are the edible portion of a plant root; so these are not related to peanut or tree nuts. Although peanut is a legume and comes from
the same family as other legumes, beans and pulses such as soy, lentils and peas, children with peanut allergy can eat these other foods safely. If your child is allergic to peanut or tree nuts and these foods are an important part of your family’s diet, you can try some alternatives. For example, if your child is only allergic to peanut and can take the other nuts, a healthy alternative to peanut butter is to try options from the Naturals Nut Spread range, such as almond, brazil and cashew spread, which has a similar appearance and taste to peanut butter.

If your child is allergic to both peanut and the tree nuts, you may consider soy butter or sunflower butter, which also have a similar texture to peanut butter. Snack foods commonly contain nuts, so you need to stock up on nutfree snack alternatives, such as fresh or dried fruit, or seek out nut-free snack products such as nut-free chocolate.
Some children may also be allergic to multiple grains so make sure you try the different grain replacements individually. Most supermarkets and health food stores offer products made from these alternative grains. Kamut, spelt, semolina and triticale are types of wheat so aren’t suitable replacements for children with wheat allergies.
Removing Wheat Wheat is a common staple in most diets around the world. Children with wheat allergy need to avoid all forms of wheat, but they don’t usually have to avoid other cereal grains, such as barley, oat or rye, unless they’re also allergic to these. Your child’s doctor or dietitian can advise you on whether your child with wheat allergy can try these other grains. People with coeliac disease must avoid all gluten-containing foods, which includes wheat, barley, oat and rye, whereas people with wheat allergy can usually tolerate other grains that contain gluten such as oats and rye. So gluten-free products are safe for your child with wheat allergy, but your child isn’t necessarily restricted to these products. You can use a number of cereal grains to replace wheat if your child is allergic to wheat; these include: • Amaranth • Arrowroot • Buckwheat

All of these grains can be used in place of wheat in cooking and most of these are available as flour.
Some wheat-based ingredients don’t contain wheat protein and so don’t have to be avoided. Ingredients like glucose, glucose syrup, caramel colour, dextrose and monosodium glutamate are made from wheat but are so highly purified and processed that no wheat proteins are left in the ingredient.
Avoiding Soy Soybeans and soy products are a common ingredient in Asian diets. Although soybeans are less prominent as a food in the Western diet, soy is commonly used as a flour in commercially prepared processed foods. If your child has soy allergy, your child needs to avoid all of the different foods that are made from soy. Many low-allergy foods (for milk or wheat allergy) are made from soy and so aren’t suitable for your child with soy allergy. If your child is allergic to cow’s milk or wheat as well as soy, you may want to get advice from a dietitian to help you manage your child’s diet.
Some ingredients are made from soy but don’t contain any soy protein and can be tolerated by most children with soy allergy. However, more caution may be required if your child has had severe allergic reactions (anaphylaxis) to small amounts of soy because soy oils may contain small amounts of soy protein. This means the issue is usually simply avoiding soy rather than trying to find a soy replacement. However, families with a vegetarian or vegan diet (who may use soy products such as tofu and tempeh as a good source of protein), may need a soy replacement. Options include other legumes such as chickpeas, lentils and kidney beans, and mushrooms.
Replacing Milk and Soy Between 20 and 40 per cent of children with cow’s milk allergy also have a soy allergy, and need to avoid both foods (see earlier sections on replacing cow’s milk and replacing soy). Babies with delayed forms of allergy to cow’s milk (non-IgE or mixed IgE/non-IgE mediated allergy) are more likely to develop an allergy to soy milk than babies with IgE mediated cow’s milk allergy, possibly because they’re more likely to have inflammation of the gut lining, which can result in a leaky intestinal barrier. If your baby is on formula and has allergy to cow’s milk and soy milk, your doctor can prescribe an extensively hydrolysed formula (eHF). For older infants and children who are allergic to both cow’s milk and soy milk, they may take cereal milks such as rice milk or oat milk. These are available at supermarkets

If your child has fish allergy, your child’s doctor may suggest allergy tests to work out if you can still include other fish in your child’s diet. If your child is only allergic to one or two types of fish, you can simply replace the problem fish with another fish option. However, if your child is allergic to a number of fish, avoiding all fish is best.

Avoiding foods that contain cow’s milk as well as foods that contain soy can result in a very restricted diet and you need to ensure that your child’s nutritional needs are still being met. Your child’s doctor can refer you to a dietitian who specialises in food allergies to guide with appropriate replacement options and help you plan a diet that provides adequate calories and nutrition for your child.
Keeping Away from Fish
Fish allergy is more common in adults and usually develops during adult life but some children can have allergy to fish. (Children can often have allergy

Children who are allergic to fish can have an allergic reaction to vapours coming from the fish while it’s cooking, and this can cause serious allergic reactions (anaphylaxis) as the allergen is inhaled, particularly if asthma is poorly controlled. Care should be taken if you’re going to a seafood restaurant because vapours from cooking fish are highly likely to be in the air and because of the risk of cross-contamination during food preparation and serving. Fish is a good source of protein and good fats (omega-3 fatty acids). If your child is allergic to fish, you may offer other healthy sources of protein such as shellfish or tofu, or meat such as chicken. Most children allergic to fishcan tolerate shellfish — your doctor can advise you on this.
Sidestepping Shellfish Shellfish allergy refers to allergies caused by the invertebrate seafoods, such as crustaceans, molluscs, cephalopods and gastropods. The proteins that cause allergy to a crustacean are different to the proteins that cause allergy to
the molluscs, so being allergic to a crustacean doesn’t necessarily mean that you’re also allergic to molluscs, although some people can be allergic to both. Similarly, the proteins that cause allergy to shellfish are different to the proteins that cause allergy to fish so having a shellfish allergy doesn’t necessarily mean that you’re allergic to fish — although some people are allergic to both shellfish and fish. In general, if your child is allergic to one of the crustaceans, he’s likely to also be allergic to other crustaceans in the group, and you should avoid all the crustaceans. However, your child may not be allergic to molluscs and so can still eat these. In reverse, if your child is allergic to a mollusc, she’s likely to be allergic to other molluscs in the group and you should avoid all molluscs; however, she may be able to tolerate the crustacean shellfish. Shellfish are a healthy source of protein, but don’t contain any essential nutrients, so can be replaced with any other forms of protein that your child likes. If your child is allergic to the crustacean family of shellfish, you can offer fish, molluscs, or other protein foods such as meat. If your child is allergic to the mollusc family of shellfish, you can replace these with crustacean shellfish, fish or meat. What are the most common issues you see with pregnant women and new mothers? Introducing Fred LeMarche, Owner of Petersham Hair Salon, To Fred Fred leMarche is the owner of Petersham hair salon, to Fred and a hairdresser with 19 years of experience. with a five-week waiting list, to Fred is one of the hottest salons in sydney. Fred is also on the international scene doing professional work for magazines and fashion shows. he has worked with the likes of tamara Jaber, Paulini and sharni vinson. Fred puts his loyal customer base down to how well he knows hair and works with clients on a vision for how they want their hair to look. “one of the most common questions people get asked when they go into a salon is ‘what do you want to get done’ and i think a sign of a good hairdresser is when they have a vision of what they want to do”, said Fred. Mums are busy with the multitude of lists of things that need to be done and hair is usually one of the last things on those lists. but we all know how crippling a bad hair day can be. Fred advises to pick a hairdresser that understands your natural texture and allow them to work with that. that way you aren’t working against nature and damaging hair with daily curling wand and straightening iron use. it will also cut down wn time. ““anytime you work within what your hair is willing to do you can make something really amazing work”, he said. in terms of colour he suggests keeping it minimal and sticking within a shade

or two of your natural colour to minimise the need for regular retouching. while he sees balyage as a trend that is coming to the end of its life he does think that a subtle balyage can still work and is a really great colour style for busy mums needing to manage their time. what about the kids? Fred prefers to look at adult trends and convert them to a younger version; giving kids a broader range and greater variety of styles so not all kids have the same traditional styles. For girls a current trend is one-length styles, which gives weight to hair and prevents frizzy flyaway pieces when they tie it back. it also gives a full and deep movement to the hair. For boys he tends towards a younger version of the mad men style with side parts and slicked back hair. Parting is a big trend at the moment and he says we are seeing less of the short back and sides with spikes on top. on the dreaded first hair cut, Fred’s advice is “if the kid is going to scream and misbehave, don’t do it. it isn’t doing the hairdresser and favours and it isn’t doing the kid any favours. You are never going to get good quality in that situation”. instead he suggests waiting until the child is old enough to understand that they need to sit still. if your little one isn’t rocking the long hair look then he also recommends seeking out a kid-friendly salon that target to that particular market, “they know what they are dealing with and how to control that kind of emotion.” Fred’s salon, ‘to tto Fred’ is located in Petersham, nsw. fishing with henry
Henry Roberts loves to fish and he wants the world to know it. Eleven-year-old Henry has started a blog to chronicle his adventures and wants other kids to get as excited about fishing as he is. In talking to Henry, it is easy to forget that this young man is only eleven. He is polite, confident and knowledgeable on a subject most kids know nothing about. When I spoke to Henry he was away on a family fishing trip to Pearl Beach on the NSW Central Coast, one of his favourite fishing destinations. When asked why he started his blog, Tightlines with Henry, Henry said “I wanted to let people know what it’s like to get into fishing.” He also saw it as a good way to get his news out to friends. Henry’s words of advice to other young bloggers are to not be afraid to share their news. “Even if I catch a bream that’s only 10cm long, I still tell people even though it’s not great”, he said. Fishing is a family affair for the Roberts clan. Henry started fishing when he was little and recalls helping his dad kidmagazine.com.au 48
to reel in fish. Even his three-year-oldbrother comes along on trips and despite being too young to do too much fishing, he gets involved by throwing the fish that don’t make the cut back into the water. It is not only Henry’s Dad and Grandpa, who he counts as his mentors, who love his blog. In just ten months since launching, Henry has attracted Australia’s leading fishing magazine, Fishing World, who have supported him with equipment advice. His dream is to one day open a charter in Patonga, NSW to teach people about fishing. Given his entrepreneurial spirit, I have no doubt he will achieve it. Henry has caught wahoo in Fiji, tuna and barramundi in Manigrida in the Northern Territory, giant trevally in Karratha in Western Australia, trout in Lake Taupo New Zealand, Australian salmon at Pearl Beach in New South Wales and bream, tailor, flathead and their friends in Byron Bay. His number one destination is Yarramalong in the NSW Hunter Valley. He enjoys the quiet of this spot as their aren’t many other people around and says it is a great spot for catching Australian Bass.
Henry’s final word to other kids on fishing is “Be prepared to spend a bit of money on a rod and then get started. It’s better to be outside than watching TV. Occasionally you bring home a feed which should make your parents happy.” If your kids are fishing mad like Henry, take them along to the 2013 Brisbane Tinnie and Tackle and the National 4 x 4 & Outdoors Show at Brisbane’s RNA Showgrounds between Friday 15 – Sunday 17 March. Carrot & Ginger Soup Serves 4 2 spring onions, sliced 1 tbs. freshly grated ginger 12 medium carrots, peeled and sliced 1 ltr. vegetable or chicken stock in a large saucepan, sauté the green onions and ginger for about 5 minutes. add the carrots and sauté for a few more minutes. add the stock and bring to a boil. turn heat to low and simmer for 30 minutes or until carrots are tender. transfer soup to a blender or food processor and purée until smooth. optional: season with sea salt and pepper, cumin and lemon juice to taste. For something really different, add a cup of orange juice and only 3 cups of stock ... Cheese & Tomato Olive Pizza Makes 1 x 25cm pizza Âź cup pizza sauce 1 x 25cm pizza base or pita bread 11/2 cups grated kraFt livefree cheese 6-8 cherry tomatoes Âź red onion, sliced 10 black olives 20g baby rocket leaves sread the pizza sauce over the pizza base then top with half of the grated cheese. top with tomatoes, onion and olives, then scatter over the remaining cheese. bake in a hot oven 200o c for 12-15 minutes or until the cheese is melted and crust is golden. sprinkle with rocket leaves. serve immediately. cooking time: 12-15 minutes

Creamy Chocolate Mousse Eggs Serves 6 350g caDburY Milk chocolate Melts 6 balloons 250ml PhilaDelPhia cream For Desserts, a double cream alternative 250g caDburY white chocolate Melts 2 egg whites 2 tablespoons caster sugar Yellow liquid food colouring Melt half the milk chocolate in a bowl over simmering water. remove from the heat add the remaining chocolate and stir until smooth. Partly inflate 6 balloons to the size of a small orange. lower just the bottom section of a balloon into the melted milk chocolate to coat then place on a paper lined tray to set. repeat with remaining balloons. refrigerate overnight. when milk chocolate has set, pop, remove and discard balloons. Place a chocolate cup on each serving plate. combine the PhillY with the white chocolate in a bowl and stir over simmering water until the chocolate has melted. remove from the heat and allow to cool. beat the egg whites until stiff peaks form, gradually beat in the sugar until dissolved to make a light meringue, and then gently fold through the chocolate mixture. colour 1 cup of the mixture yellow. Divide the white mousse mixture between chocolate cups. top each with a spoonful of yellow mousse mixture to resemble an egg yolk. refrigerate for at least 30 minutes before serving. Preparation time: 30 minutes cooking time: 10 minutes tiP: by refrigerating chocolate coated balloons overnight, upon coming back to room temperature the balloons will begin to pull away from the chocolate making removal much easier!

Lindt Easter Carrot Cupcakes Serves 12 350g self raising Flour 1 ½ tsp baking Powder Pinch sea salt ½ tsp cinnamon, ground 170g butter, melted and cooled 200g Dark brown sugar 1each egg, large 100g natural yoghurt 350g carrots- around 3 medium sized ones, finely grated and steamed in the microwave for 2 minutes 2-3blocks lindt excellence extra creamy, depending on how generous you feel, chopped coarsely 20ml brandy 12 cupcake liners Icing 250g cream cheese ½ each lemon juice 6-7each lindor balls white, melted Decoration 60g Desiccated coconut shreds, toasted 12 lindt 10g gold bunny or your favourite easter lindt chocolates

Divide mixture into a cupcake/muffin tray and bake for approximately 25 minutes or until a skewer comes out clean. allow to cool fully. For the icing soften the cream cheese in the electric mixer with a paddle attachment. add lemon juice and mix until light and fluffy. Mix in the chocolate and whip further until light. assemble. top the cooled cupcakes with a generous amount of icing and coat with toasted coconut creating the look of a little nest. top with the lindt gold bunny or your favourite easter treats. Preparation time: 15 minutes + baking

Risotto with Cherry Tomatoes, Basil and Peas Serves 4 250g cherry tomatoes, halved olive oil spray 2 teaspoons oil 1 onion, finely chopped 2 cloves garlic, crushed 13/4 cups arborio rice ½ cup white wine 6 cups boiling reduced salt chicken stock 1¼ cup frozen peas, thawed 2 cups grated kraFt live Free cheese 1/3 cup basil leaves, torn Freshly ground black pepper, to taste Place the tomatoes on a paper lined tray, lightly spray with oil then bake in a hot oven 200oc for 20 minutes. heat the oil in a saucepan and sauté the onion for 1 minute. add the garlic and cook for a further minute. add the rice and turn to coat with onion mixture. add the wine and cook until most has been absorbed. gradually add the stock in small amounts, stirring occasionally, until all the stock is absorbed and the rice is just tender, then add the peas a cook for 2-3 minutes stir through the cheese and basil then gently stir in the tomatoes. serve immediately. Seared Thai Salmon Serves 2 1 tbs. Mr. Beak’s Original Hot Dog With Buttermilk Coleslaw and Chipotle Mayo Serves 6 Hot Dogs 1 packet of Mr. beaks the original sausage 6 long rolls or hot dog rolls 2 cups of cheddar cheese, shredded tomato sauce, to serve Mustard, to serve Coleslaw ¼ head of red cabbage, thinly sliced ¼ head of green cabbage, thinly sliced 1 large carrot, shredded ½ red onion, thinly sliced Buttermilk Dressing 100ml of buttermilk ½ lemon, juiced 2 tbs whole egg mayonnaise 2 tbs apple cider vinegar 1 tsp dijon mustard ½ bunch of chives, finely chopped Chipotle Mayo ½ cup of whole egg mayonnaise 2 tbs of chipotle tabasco

Prepare the buttermilk dressing by combining the buttermilk, lemon juice, mayonnaise, apple cider vinegar, dijon mustard and season with salt and pepper to taste in a glass or ceramic bowl, whisk until smooth. stir in the chives until well combined and set aside. Prepare the chipotle mayo by combining the mayonnaise and chipotle tabasco in a bowl and whisk until smooth and set aside. cover the buttermilk dressing and chipotle mayo and refrigerate until needed. heat the barbeque or grill pan over medium heat and cook the sausages on low. turn the sausages every 4-5 minutes and cook until golden brown for approximately 12-15 minutes. Meanwhile combine all the coleslaw ingredients in a large salad bowl. stir the buttermilk dressing and pour over the salad, gently toss through until well combined. Prepare the hot dogs by cutting halfway down the bread rolls lengthways through the centre with a serrated knife. spread the inside of the rolls with the chipotle mayo. top with the buttermilk coleslaw and a sprinkling of cheddar cheese. Place a Mr. beaks sausage on top, dress with your choice of condiment and enjoy! Preparation time: 30 minutes cooking time: 10 minutes

Beef and Rice Meatballs 2 medium brown onions - roughly chopped 3 garlic cloves 2 tbl spoons chopped oregano 2 medium carrots - roughly chopped 1 medium zucchini - roughly chopped 450gm beef mince 1/3 cup grated Parmesan 1 cup cooked microwave brown rice Pinch ground nutmeg 2 x 400gm can tomatoes 2 tbl spoons tomato sauce Mashed pumpkin to serve Place the onion, garlic, oregano, carrot and zucchini in the bowl of a food processor. Process until finely chopped. heat a fry pan over medium heat, spray with oil. cook the vegetable mix until starting to soften. remove from the heat and cool for ten minutes. in a large bowl, add the beef mince, cheese, rice, nutmeg and vegetables. Mix until well combined. using wet hands roll the mixture into balls. Place on a plate and refrigerate for 15 minutes. using the same pan used to cook the vegetables, heat the can tomatoes and tomato sauce until boiling. reduce heat and simmer until sauce starts to thicken. in a separate fry pan, cook the meatballs in batches until brown on all sides. transfer meatballs to the sauce and cook for approx 10 minutes or until meatballs are cooked through. as a working mum with a son in daycare, i know all too well how hectic a household can be on a week night. You need to cram so much into a few short hours; cook dinner, feed kids, do dishes, bath kids, quality time, stories, maybe even homework. and i know personally that i sometimes struggle with making sure i feed the family something that’s not only good for them but also something that can be made with ease at 5pm. i will admit that there have been occasions when i’ve cooked up a batch of mac and cheese with some frozen veggies and ham thrown in. and i’m guessing i’m not the only mum guilty of that crime. these beef and rice meatballs are sure to be a crowd pleaser, and may even win over the fussiest toddler.

Hophophooray Cake 2 the Rescue is the best friend of time poor mums. Founded by Lisa and Lou, two fun-loving and passionate ladies who together have become the “Baker Girls” revolutionising the birthday cake market. They are your cake saviour in the kitchen and they do it in style!
For the non-professional baker, a trip to a cakedecorating store can be a costly exercise. A basket full of fondant, cutters in various shapes and coloured gels all to make the birthday cake of the moment for one of the kids. Most of which will go to waste as you don’t have time to bake that much cake! That’s why I love Cake 2 the Rescue. Choose from their huge variety of cake designs and receive everything you need to make that cake (minus the wet ingredients of milk, butter and eggs) all for less than $40. When I say everything that is literally what I mean. You get the box to bake the cake in, all the dry ingredients, fondant in the various colours required, rolling pin to roll the fondant, cake server and silver cardboard cake tray. In time for Easter this year the Baker Girls sent me a Hop Hop cake to review. As with my last review of the Hoot Dude I had a great time making the cake. This time I made the cake by myself so I could stop to take photos without the little hands of my niece and nephew moving into the shot each time. As this was my second review of a Cake Rescue Kit I thought myself somewhat an expert. I didn’t find myself looking for the tin and knew that the coated cardboard box the
ingredients come in doubled as the cake tin (genius – no washing up!). I was also able to organise myself by cutting out the templates for the cake and fondant in advance. I always struggle with fondant and with this cake discovered my problem. I always roll it too thin. I get a bit into the rolling and the pieces don’t retain their shape when I lift them off the bench. The mini rolling pin is perfect for the job; just watch how much you are rolling. Alternatively you could use a pasta maker if you have one to evenly roll the fondant. In terms of taste, Cake 2 the Rescue has one of the best cake mixes I have tried. The perfect moist buttery flavour coupled with soft sugary icing is a winner. We also enjoyed eating the cake offcuts once the shape was cut. No point good cake going to waste. For the decoration, pipe cleaners are included for the whiskers but an alternative could be to use long thin strips of liquorice. The Hop Hop cake really was very easy to make with minimal steps, easy to cut out shapes (although my clumsy fingers struggled with the ears) and the cake mixture is honestly one of the tastiest I have ever tried. Predictably, seven out of ten Australians reported making online purchases in the past 12 months with average annual purchases of $2500. Ask a room full of mums what they wish they had more of and I am sure the answer would be time.
