Kimchi Fried Rice Recipe: How to Make it in a Rice Cooker

1 cup of chopped Kimchi
2 tablespoons of oil
1 tablespoon of Korean Sesame Oil
2 cloves of minced garlic
1 small onion, diced
1 carrot, peeled and diced
1/2 cup of frozen peas
2 eggs, beaten
2 tablespoons of soy sauce
1 tablespoon of gochujang (Korean chili paste)
Salt and pepper to taste
Green onions, chopped (optional)

Cook the rice in a rice cooker according to the manufacturer's instructions.
Heat the oil in a large skillet over medium heat.
Add the minced garlic and diced onion to the skillet and sauté until the onion is translucent.
Lightly season with salt and pepper as you stir-fry the garlic and diced onion. This is the 1st layer of flavor.
Add the diced carrot and frozen peas to the skillet and sauté for another 2-3 minutes. Again, lightly season with salt and pepper as you stir-fry the added ingredients. This will help cook the carrot and peas faster, giving them a more fragrant flavor.
Next, add the chopped kimchi to the skillet and sauté for another 2-3 minutes.
Push the vegetables to the side of the skillet and add the beaten eggs to the empty space.

8. Scramble the eggs until they are cooked through, then mix them in with the vegetables. Remove the cooked ingredients and pour them into a bowl.
9. Drizzle the Sesame Oil into the cooked rice in the cooker. Use a circular motion so that the oil is evenly spread across the rice surface.
10. Next, pour the soy sauce and gochujang into the cooker, followed by the cooked ingredients in the bowl.

You can try the following optional steps.
If you don't have leftover rice, you can cook fresh rice in the rice cooker (recommend Zojirushi - NP NVC18) before starting the recipe.
You can adjust the amount of kimchi and gochujang to your desired level of spiciness.
You can also add other ingredients to the recipe, such as diced ham or tofu, to make it more substantial.
While this Kimchi fried rice recipe may not be as dry if you would have stir fry everything in a wok or pan. It is a delicious and easy-to-make Korean dish that is perfect for a quick and satisfying meal, especially with a rice cooker.
