2 cloves organic garlic, minced

1/4 cup organic lemon juice
2 tsp Dijon mustard
2-3 tbsp chopped organic parsley
1 cup shredded Meadowkaas Spring Gouda
1 cup pitted cherries

A Unique Twist on
Grilled Produce
DIRECTIONS: • Prepare dressing by combining garlic, scallions, Dijon mustard, lemon juice, olive oil, balsamic vinegar and salt and pepper to taste. • Brush some dressing onto asparagus and grill 2-3 minutes. At the same time, brush the reserved scallion stalks with olive oil and grill with a piece of tin foil for support (keep in mind, these stalks can be fragile when tying so you may want to grill a few extra strips). • In a large bowl, toss salad greens, shredded Gouda, pitted cherries and parsley with remaining dressing. • Lay out a scallion stalk horizontally and soldier asparagus vertically on top (be sure to leave enough room to tie). • Place a small amount of the salad mixture in the center of the asparagus and roll up tower. • Secure by making a knot with your scallion. • Use a sharp knife to even out the bottoms of asparagus and stand tower upright to serve.
