beef tenderloin steaks with sauteed spinach

Four 5 oz USDA Choice Beef Tenderloin Steaks

4 cups organic baby spinach, washed well

2 tsp garlic, minced

1 tbsp organic extra virgin olive oil

Salt and ground black pepper to taste

DIRECTIONS: Rub salt and ground black pepper on all sides of the tenderloin steaks. Let stand for at least 10 minutes. Grill the steak in medium heat for about 4-6 minutes per side. Note: if you are using a charcoal grill, try flipping the steak once in a while to prevent it from burning. Remove the tenderloin steaks from the grill and let it rest for 10 minutes. Meanwhile, heat a pan and pour in the extra virgin olive oil. Add the garlic and cook until the color turns light brown. Carefully add in spinach (any remaining water might make pan sizzle) and sauté for 2-3 minutes. Turning constantly, cover, lower heat to low and slowly wilt. Taste and season with salt and pepper. Arrange the spinach in a large serving plate. Place the grilled tenderloin steaks on top of the spinach. Serve with mashed potato on the side along with your favorite steak sauce.

It’s OKAY to eat chocolate-especially dark chocolate, eat fresh colorful, earth-based foods, exercise but most important Relax and Enjoy yourself.

Coeur de Bray Neufchâtel

Neufchâtel is produced in Haute Normandie, in the area around the village of Neufchâtel-en-Bray. Made from cow’s milk, it’s one of France’s oldest established cheeses with production reputedly dating back as far as 1035. The heart shape is said to have originated during the Hundred Years War when English soliders were stationed in Normandie. The French farm girls, all of whom made cheese, fell in love with them and started making heart shaped cheeses. The exterior rind is white and velvety. Flavors are mushroomy, rich and slightly yeasty, depending on age.

Chef Prepared Balsamic & Herb Grilled Flank Steak

20 large Kings shrimp, peeled and deveined

4 tbsp olive oil

1/2 cup white wine, good quality drinking wine

4 cloves garlic, minced

1/4 stick organic sweet butter

1 lemon, juiced

1/2 cup clam juice

2 tbsp chopped Italian parsley

Salt and pepper to taste

1 bunch broccoli rabe, heavy stems removed and cut into 3” pieces

1 pt organic grape tomatoes, roasted in a 325° oven for 8-10 minutes uncovered

DIRECTIONS: Season shrimp with salt and pepper. In a medium size pan, sauté 2 tbsp olive oil and 1/2 of the minced garlic. Add shrimp. Sauté over medium heat until shrimp turn pink, keep warm. In a large pan heat 2 tbsp olive oil with minced garlic over medium heat. Simmer for 2-3 minutes, add in broccoli rabe and cook for 4-5 minutes covering the pan. Stir in wine, when broccoli rabe is tender remove with a slotted spoon and keep warm. Add in butter, clam juice and lemon juice. Stir, adding in salt and pepper as needed. Add cooked shrimp back into the sauce with chopped parsley. Arrange on a platter and garnish with roasted tomatoes.

2 Dogfish Head Beer Infused Brats

3 tbsp Dijon mustard

2 cups thinly sliced yellow onions

2 green peppers thinly sliced

1 tbsp olive oil

1/2 tbsp whole grain mustard

1/4 tsp black pepper

pinch salt

DIRECTIONS: Pre heat grill on medium. While grilling Dogfish Head Brats baste with Dijon mustard. In a small sauté pan heat olive oil over medium heat. Add onions and peppers and cook until soft and golden brown, approximately 15 minutes. Stir whole grain mustard into onions and season with salt and pepper. Place one grilled brat in pretzel roll and generously top with caramelized onions and peppers.
