To keep your mum looking its best, place it in an area that is partially sunny and water it approximately every two days.

a great addition to the fall garden and walkways. As the name suggests, they are extremely hardy and can withstand the dips in temperature of cold autumn nights.

INSPIRATIONS TO GO
Organic Black Bean Soup
baked honeycrisp
apple brie 14 ounce round Brie, carefully slice off top rind (discard) to expose creamy brie
1/2 stick butter plus 2 tbsp
2 Kings organic Honeycrisp Apples
1/4 tsp cardamom
4 slices cooked bacon, crumbled
1 French bread baguette, sliced
1/2 cup brown sugar 1/3 cup chopped toasted pecans
1/2 stick of butter, melted, for the crostini
DIRECTIONS:
FALL PRODUCE
Preheat the oven to 400°F. Melt the 1/2 stick of butter in a sauté pan. Add the cardamom. Peel and slice apples into thin slices and sauté until the apples caramelize, around 10 minutes. Remove apples from the pan and set aside. Add and melt the remaining butter to the pan. Turn off the heat and add the brown sugar, toasted pecans and crumbled bacon. Stir to combine. Place the Brie in an ovenproof serving platter. Pour the butter & brown sugar mixture over the top of the Brie. Place in the oven for 5 minutes and top with the caramelized apples. Arrange baked crostini pieces around Brie and apples.

CROSTINI: Preheat the oven to 400°F. Place sliced French bread on a large cookie sheet. Brush each piece with melted butter. Place in the oven for 8-10 minutes, roast until golden brown. Remove and store in a zip lock bag. (May be made the day before serving).

6 dried calimyrna figs
2 cups water
6 ripe (but firm) organic bosc pears, peeled, cut in half & cored
2 cups sugar Zest of 1 orange, cut into wide strips 2 cinnamon sticks
1/4 cup good-quality honey 2 tbsp coarsely chopped Marcona almonds
DIRECTIONS: In a large pot, place the port, water, sugar, orange zest, cinnamon sticks and figs and bring to a boil. Simmer until the sugar is dissolved. Add the pears to the pot and simmer the pears for 18-20 minutes, until softened but still firm. Remove the pot from the heat and allow the pears to cool in the poaching liquid. To serve, place 2 pears halves on each plate. Cut the figs into quarters and garnish the pears with them. Drizzle the fruits with the honey and sprinkle the almonds over all.
Pears are best picked early and allowed to ripen indoors. To choose the perfect pear, apply gentle pressure near the stem. If it yields to pressure, it’s ripe!
Pears are a good source of dietary fiber and vitamin C. Leave the skin on your fruit because that’s where most of the nutrients are contained.

pumpkin & root vegetables 1-2 cups flour
2 medium onions, diced
2 lbs Kings beef bottom round, or boneless chuck, cubed (the Kings butcher will be happy to do this)
5 cloves garlic, minced
1/2 cup olive oil
2 cups peeled and diced parsnips
2 cups red wine
2 cups cubed fresh pumpkin
5 cups prepared beef stock
2 bay leaves
5 carrots, thickly sliced, washed, cut into chunks
A pinch of paprika
7 stalks celery, sliced
5 medium potatoes, cubed
1 tbsp parsley Black pepper, to taste
DIRECTIONS:
FALL PRODUCE
In a large frying pan, heat 1/2 the olive oil and sauté the carrots, pumpkin, parsnips, celery, onion, potatoes, and garlic until slightly browned. Set aside. Combine 1 cup flour, paprika, parsley, and pepper in a shallow bowl, and roll the beef in it until well coated on all sides. Heat remaining oil into in a large stew pot, and then add meat. Sauté the meat until well browned. Add the previously prepared vegetables and sauté for about two minutes with the beef in the stew pot. Add the wine, and sauté another three or four minutes. While the pot is hot, pour in the prepared beef stock and the bay leaves and simmer covered for about 2 1/2-3 hours. Whisk in additional 1 cup of flour required to thicken to desired consistency and allow the liquid to simmer 30 minutes or until ready. Adjust seasoning with salt and pepper.

1 large Granny Smith or organic Fuji apple, peeled, cored, and diced
2 large acorn squashes, rinsed, cut in half length-wise and seeded 8 oz sweet Italian pork or chicken sausage, loose (buy it this way or remove it from the casing)
1/4 cup dried cranberries or currants (or both!)
1 large onion, chopped
2 tsp fresh sage, chopped
1 cup cooked short-grain brown rice
1/4 cup maple syrup
2 eggs, beaten
2 tsp olive oil Salt and pepper, to taste
DIRECTIONS: Preheat oven to 350° F. Rub a little olive oil over the cut surface of each squash half and place, cut-side down in a 9” x 13” baking pan. Pour an inch or two of water into the pan and bake until tender when pierced with a fork, 35-45 minutes. Meanwhile, cook the sausage in a frying pan over medium heat until it is crumbly and lightly browned all over. Put the meat aside and use the fat in the pan to sauté the onions until translucent, 5 to 7 minutes. Add the apples, cranberries or currants, and sage; stir often until apples have softened. Transfer to a bowl and add the sausage, rice, salt and pepper. Mix in the eggs and stir well to combine. Remove the cooked squash halves from the oven, empty the baking dish of any leftover water and place the halves back inside turned upright. Fill the halves equally with the stuffing mixture and drizzle with maple syrup. Bake, uncovered until the filling is slightly browned on top, about 15 minutes longer.
