DIRECTIONS: • Beat together yolks and sugar in a large bowl with an electric mixer at medium speed until thick and pale, about 2 minutes. • Beat in the mascarpone until just combined. • Beat heavy cream in another bowl with whisk attachment until it just holds soft peaks. • Fold cream into the mascarpone mixture gently but thoroughly. • Stir together coffee and Marsala in a shallow bowl. • Dip 1 lady finger in coffee mixture, soaking it about 3 seconds on each side and transfer to an 8-inch glass baking dish. • Repeat with 9 more lady fingers and arrange in bottom of dish, trimming as needed to fit snugly. • Spread half of mascarpone mixture evenly over lady fingers. • Make another layer in same manner with remaining lady fingers and mascarpone mixture. • Chill tiramisu, covered, at least 6 hours. • Just before serving, sprinkle with the cocoa powder.
TIP: If you want to save time you can make the mascarpone mixture and the whipped cream ahead… just store them in airtight containers in the fridge. Before assembling the tiramisu, let the mascarpone mixture sit out a bit so it is soft.
