Beef Rib Roast, bone-in roast with 3 bones (approximately 7 pounds)

2 garlic cloves

3 tsp freshly ground sea salt

1 tbsp freshly ground Spice Hunter black pepper

DIRECTIONS:

BEST OF THE BEST

Preheat oven to 475°F. Stud the roast with the garlic by pushing the cloves into the natural seams of the beef. Tie the roast in between the bones. Season liberally with salt and freshly ground black pepper. Set the roast in a roasting pan and place in the hot oven for fifteen minutes to sear the outside. Lower oven to 275°F and continue roasting until the beef reaches the desired internal temperature (Rare: 120°F, Medium: 130°F). Remember that the roast will continue to cook and the temperature can rise, up to 10° during the resting period. You can baste the roast after the first forty-five minutes if you wish. Remove the roast from the oven and tent loosely with foil. Allow the roast to rest at least thirty minutes before carving.

TIP: When serving a prime rib roast, count on a minimum of 1 lb per person with bone-in and 3/4 lb if boneless. In other words, a 12 lb bone-in roast is perfect for 10 – 12 people.

Green Beans with Roasted Tomatoes


brussels sprouts

with bacon & fresh pomegranates

1 lb Kings Brussels Sprouts

2 tbsp Kings extra virgin olive oil

1/2 tsp kosher salt

1/4 tsp freshly ground Spice Hunter black pepper

1/2 lb bacon

1/2 cup shredded Parmesan cheese

1/2 cup fresh pomegranate seeds

DIRECTIONS: Preheat oven to 400ËšF. Trim stem end of Brussels sprouts, removing any discolored outer leaves. Toss the Brussels sprouts with olive oil, salt and pepper. Place in roasting pan and roast for about 35-40 minutes, until tender and crisp on outside. Stir the Brussels sprouts occasionally so they brown evenly. Cook bacon until crisp. Break into 1 inch pieces. Sprinkle additional kosher salt on finished Brussels sprouts and sprinkle with bacon. Garnish with shredded Parmesan cheese and pomegranate seeds, serve immediately.

6 baking potatoes 1 large onion, chopped fine 1/2 cup sour cream 1 tsp salt 2 eggs 1/2 tsp Spice Hunter pepper 1/4 cup flour 1/2 cup bread crumbs

Oil for frying

DIRECTIONS: Mix onion, sour cream, salt, eggs, pepper, flour, and bread crumbs in a large bowl. Peel and shred potatoes in food processor with shredding blade. Squeeze dry. Immediately add half of potato shreds to the egg mixture and mix well. Chop remaining half with steel blade, squeeze dry again and mix into the egg mixture. Fry latkes in oil (350째F) until golden on both sides. Serve hot.

Fingerling potatoes and parsnip are a great addition to your holiday brisket. The potatoes are visually stunning and will add contrasting colors to the dish, while the parsnips will bring a rich flavor.

3 lbs center cut salmon fillet, skinned, cut into six equal portions

1/4 cup finely chopped kale

2 tbsp lemon zest

1 tbsp chopped basil

Imported Dijon mustard

Freshly squeezed orange juice

1/4 cup finely chopped parsley

Salt and pepper

DIRECTIONS: Preheat oven to 500°F. Combine chopped kale, lemon zest, chopped basil, chopped parsley, salt and pepper to form a colorful topping. Heat a cast iron (or other heavy, stove-top to oven skillet) until smoking. It should be large enough to hold the fish in a single layer without touching. Dry salmon fillet with paper towels and turn skin side up. Sprinkle generously with salt and pepper and pat firmly so it adheres. Do this just before adding to skillet. Turn over and spread with mustard. Place in the hot skillet skin side down and cook just until it has browned lightly and no longer sticks to the skillet. Immediately place in the center of the oven and cook for about five minutes, or until the flesh is opaque. Place on a warm serving plate, cover loosely with foil and allow to rest for 5 minutes. Drizzle with orange juice, and top with crunchy kale and herb topping.

CHRISTMAS

Preheat oven to 350°F. Bake whole ham according to directions. About 45 minutes before the ham is done, remove it from the oven. Remove the drippings from the pan. Score the fat diagonally using a sharp knife, about 1/2” deep. In a separate saucepan, stir together the mango juice, Dijon mustard, brown sugar, honey, ham drippings and orange peel to make a glaze. Simmer for 30 minutes. Pour 1/3 of the glaze over the ham. Return glazed ham back to oven. Bake for another 30-40 minutes, basting the ham every 10 minutes with the remaining glaze.

DIRECTIONS: Rinse raspberries. Place in blender or food processor with remaining ingredients and purée until smooth. Pour through fine sieve to remove seeds. Sauce may be made up to 3 days ahead of time and chilled, covered.
