“Every day is different! That’s the fun part of opening a restaurant. Now that Bludorn is up and running, I’m working on documenting all the systems we have in place. The first few weeks we tried out a lot of different ways of operating – from the style of service, to the best way to space the tables, to how to properly seat a guest. Now that we’ve defined how we’d like things to play out, we can make sure the right procedures are followed each service. And that’s all before we open our doors to guests. At 5 PM, we move into service. The daily hustle and bustle leading up to opening then happily welcoming each guest to a night out is what makes this job so worth-while.”
