Cashew Crème Pear Tart 1. Preheat your oven to 325ºF. Combine the sugar, almond flour or meal, cornmeal, chickpea flour, and salt in a medium bowl. Melt the butter or coconut oil and pour it in, along with the water. Stir to combine all the dry ingredients and press this mixture firmly into a lightly greased 9-inch round tart pan with a removable bottom. Bake for 10 minutes and let cool, leaving the oven on.

CRUST

2. In a blender or food processor, begin blending the soaked cashews, non-dairy milk, maple syrup, and vanilla. Once the nuts are mostly broken down, crank up your machine to high speed and thoroughly puree. It may take 5 to 10 minutes for the mixture to become completely smooth, so don’t stop short. Pause as needed to scrape down sides of the container with your spatula to ensure that there are no lumps. Smooth the resulting crème into your crust and set aside.

CASHEW CRÈME

3. Peel, core, and thinly slice the pears. Toss the slices with the sugar and cinnamon to evenly coat. Arrange them in an overlapping spiral on top of the cashew crème layer. Bake for 20 to 25 minutes, until the pears are fork-tender. Let cool and sprinkle with sliced almonds before serving.

Five-Minute Coconut Fudge 1. Line an 8x8-inch square baking pan with aluminum foil and lightly grease. 2. In a large microwave-safe bowl, combine the chocolate chips, butter or coconut oil, and coconut milk. Heat for 1 minute on full power and stir thoroughly until completely smooth. 3. Sift together the confectioner’s sugar and cocoa powder, breaking up any clumps, before adding both to the bowl of liquid chocolate goodness. Next, add the vanilla and salt, stirring vigorously until thick, silky, and uniform. 4. Pour the mixture into your prepared pan. Smooth out the top and sprinkle coconut evenly over the entire exposed surface. Press the coconut gently into the fudge with the palm of your hand to make sure that it adheres. Chill for at least 30 minutes, or until fully set before cutting into squares.

Not-Nog Cupcakes 1. Preheat your oven to 350ºF and line two dozen muffin tins with cupcake papers.

2. In your stand mixer, cream the butter with the sugar, nutmeg, vanilla, and black salt. While the mixer churns, blend the flaxseeds with the water, allowing them to sit and slightly gel. Introduce the flax mixture into the bowl of the stand mixer and stir to combine. The batter will be somewhat lumpy at this point, but as long as you don’t have any obscenely large clumps of solid butter, it should be fine.

3. In a separate bowl, combine your flour, baking powder, and baking soda. Slowly add these dry ingredients to the contents of the bowl waiting in your stand mixer, alternating with the eggnog until both are used up. Fully incorporate each addition but be careful not to over mix. 4. Pour the resulting batter into your prepared cupcake liners about ⅔ to ¾ of the way full and bake for 20 to 22 minutes. The cupcakes should not appear particularly browned; keep a close eye on them. 5. For the glaze, place the butter and brown sugar in a medium saucepan over medium heat. Stir until the butter melts and the sugar dissolves, creating a smooth syrup. Add the eggnog, rum, and salt, and bring the mixture to a gentle boil. Remove from the heat. Slowly introduce the confectioner’s sugar, whisking vigorously into the mixture until the glaze thickens and loses a little of its shine; 1 to 2 minutes. Pour or spoon a dollop on top of each cupcake. Garnish with sliced almonds, lavishing your little cakes with as much of the nuts as desired. [Story contains an Amazon affiliate link.]

Cooking spray 1 cup finely chopped broccoli florets 2 Tablespoons water 8 large eggs, separated ½ cup frozen chopped Spinach, thawed and squeezed dry ¼ cup chopped scallions ¼ cup chopped fresh parsley ½ teaspoon kosher salt ½ teaspoon black pepper | KITCHEN HACK

Fold the whipped egg whites immediately into the yolk mixture (don’t let the eggwhites stand too long before adding) to get the soufflé effect. MAKES 6 servings (4 frittata bites per serving) PER SERVING

DIRECTIONS

1. Preheat the oven to 350°F. Lightly coat a 24-cup mini-muffin pan with cooking spray. Place the broccoli in a small microwaveable bowl. Microwave on high until just tender, about 2 minutes. Let cool completely, about 15 minutes. 2. Combine the egg yolks, spinach, scallions, parsley, salt, pepper, and broccoli in a large bowl and whisk to combine. 3. Place the egg whites in a medium bowl. Beat with an electric mixer on high speed until stiff, about 2 minutes. Fold one-third of the egg whites into the yolk mixture; repeat twice with the remaining egg whites. Spoon the egg mixture into the prepared muffin pan, filling each cup completely. 4. Bake until the centers are set, about 8 minutes. Let cool in the pan for 2 minutes. Remove the bites from the pan and transfer to a wire rack. Serve warm, or let cool completely, about 20 minutes, and store in an airtight container in the refrigerator for up to 5 days. DELICIOUS DAIRY VARIATION

Stir ¼ cup crumbled feta cheese or grated Parmesan cheese into the egg mixture after folding in the egg whites in step 3. Proceed with the recipe as directed.

Add the sweet potato cubes and sprinkle with ¹⁄8 teaspoon of salt and garlic powders; cook for 6 minutes or until crisp and brown on the outside. Remove from the pan; keep warm. 3. Coat the same skillet with cooking spray. Whisk together the egg whites, eggs, and remaining ¹⁄8 teaspoon salt in a medium bowl. Add to the pan; cook over medium for 3 minutes or until soft-scrambled. Serve with the potatoes; top with pepper and thyme, if desired.


YOGURT-GRANOLA BREAKFAST BARK INGREDIENTS

1 (7-ounce) container plain 2% Greek yogurt 2 Tablespoons honey or pure maple syrup, or ½ to 1 teaspoon liquid stevia 1 Tablespoon fresh lemon juice (optional) ½ cup fresh or frozen wild blueberries ²⁄3 cup whole-grain, gluten-free granola | NOTE

You can use 1 cup of yogurt in place of a 7-ounce container. MAKES 4 servings PER SERVING

DIRECTIONS

1. Combine the yogurt, honey, lemon juice (if using), and blueberries in a small bowl. Stir well to combine, mashing the blueberries against the side of the bowl. 2. Line a rimmed baking sheet or shallow storage container with aluminum foil. Pour the yogurt mixture onto the prepared baking sheet or into the container, spreading the mixture to ¼-inch thickness. Sprinkle evenly with the granola, breaking apart any large clusters. Freeze for at least 1 hour before serving. Store in the refrigerator until ready to serve. Just before serving, break into pieces. Return leftover pieces to the freezer. To serve, remove the pieces from freezer, and eat immediately.

ooking for kids can be one of the most challenging parts of a parent’s day. With picky eaters and some fierce aversions to veggies, it isn’t always easy. Finding food for energy that’s both nutritious and kid-friendly is a task. That’s why moms and dads give into selecting foods that are less than healthy to appease blowouts and meltdowns. Since feeding your children healthy food is so important, diffusing the power struggle during mealtime is key to properly nourishing them.

But small changes can give you big results and more open-minded kids at meal times.

Instant oatmeal tends to be just as high in sugar as other cereals marketed to kids—sometimes as high as 12 grams of sugar per serving in certain flavors like maple. Additionally, some instant oats may be contaminated with gluten during manufacturing. If your child is gluten sensitive, this can cause a real problem.

Move towards having the kids eat what you eat. In most other countries, this is how it is. There isn’t a separate kids’ menu. Kids eat smaller amounts (except for my bigappetite 3 year old!) of the same food you eat. These foods should be whole food-based for the most part, and will save you time and stress from creating a separate menu for the little ones. It also creates unity and bonding when everyone eats the same thing.

Read the label of breakfast or granola bars and you’re likely to discover the first ingredient is enriched flour. Next usually comes the ubiquitous sugar, listed in all its different alias, or HFCS. You’ll often find other chemicals as well. While these foods appear to be healthy, they are actually filled with empty calories that make hunger return shortly after. You’ll save calories by providing your child a real meal that fills them up first thing in the morning. A BETTER CHOICE: Green smoothies with extra banana to give it a yummy, kid-friendly flavor. About 25 minutes later, give them almonds to snack on, steel-cut oatmeal, or gluten-free sprouted toast with hummus or avocado.

PEARS WHY WE LOVE THEM: As one of the highest fiber fruits available, pears contain important vitamins like C, K, B2, B3, and B6. Not only is the pear a hypoallergenic fruit, but its skin also contains quercetin, an antioxidant that helps reduce blood pressure.

HOW TO CHOOSE THEM: To find a good pear, gently apply pressure to the top to see if it gives. The harder the fruit, the less ripe it is. Avoid any pears with large dark or mushy spots, as they are overripe.

HOW TO STORE THEM: Store pears at room temperature to help them ripen. If they are underripe, you can place the pears in a paper bag to trap ethylene, the ripening hormones. They can also be refrigerated for up to five days in a food storage bag for preservation.

DELICIOUS WAYS TO USE THEM: Move over apples, it’s time for a change in flavor. You can use pears in just about any recipe you would make with an apple. Whether they’re grilled, paired with your favorite soup, or used for a delicious dessert cobbler, pears are versatile and oh, so yummy!
