Best friend Tokki Nokki bakes Chocolate orange sugar cake An elf who ‘specially loves to eat When the cakes are crumbly sweet
Chocolate weighs into a bowl Butter churns as it is told Then they meet and melt on heat Which Tubby thinks is very neat
Orange peel turns into zest Its smell thinks Tubby is the best But watch your knuckles when you grate Or they will bleed and then they’ll ache
Pour some sugar in a dish Close your eyes and make a wish Until the hen flaps in and lays Eggs for which your wish was made
Tokki casts a Nokki spell So eggs and sugar whizz so well White and fluffy filled with air As big as Tokki Nokki dare SUGAR
Then bit by bit they slowly pour The chocolate till there is no more Into the sugar ’n’ eggs it goes As Tubby and Tokki Nokki shows
Sieve the coffee, salt and flour

When this is done it’s time to bake Tubby and Tokki Nokki’s chocolate cake Get Mum or Dad’s help with the rest To make the cake you bake the best
To Mum and Dad. 185g butter 185g dark chocolate Zest from 1 orange

3 large eggs 275g brown sugar

85g plain flour 1 tbsp. coffee 1 tsp. salt 1 tsp. baking powder

Method: Melt A in a water bath. Then leave to cool at room temperature Whisk B with an electric mixer until light and fluffy and almost double in size. Add A to B slowly. Sieve C together and gently fold into the mix. Line a shallow 20cm square tin with baking parchment then pour in the mixture. Sprinkle the chopped chocolate on top of the cake and bake on the middle shelf of the oven for 30 mins at 160ยบ C. until the top has a shiny, papery crust and the sides come away from the tin. Cool and enjoy.
