Dutch design is hip and happening. It is, however, a shame you don’t often run into those Dutch designs. Until today! We present to you: the Grailer 1, designed by Dirk de Wit.

GRAILER 1 Dirk has been making top-quality pocket knives for over 20 years. He has a loyal fan base and a very long waiting list. Dirk is as crazy about knives as we are and often visits us during which we admire his creations. One day, however, we made a bold move and asked Dirk to design us a production knife. An exclusive knife, yet still available to the knife enthusiast and collector. Our very own Holy ‘Grail knife’. To produce this knife we decided to cooperate with one of Europe’s leading manufacturers: LionSteel. Together we developed the Grailer 1. An EDC pocket knife with a titanium handle and a blade made from M390 steel. Enhanced with ingenious little gimmicks and clever design elements. Want to learn more about this unique knife? Systems that allow anyone to sharpen their knives and tools using the right angle. At home and on the road. The Lansky Turn Box is a great example of an improved pocket sharpening system. Easy to use and compact enough to store in your kitchen drawer. And because of its weight also perfect to carry around in your backpack. There are different types of knives you can use to cut meat. The size, shape and flexibility of the blade and cutting edge determine the function of the knife. We have listed the different types of knives and their most important functions.

Cutting meat.

But with which knife? CHOPPING KNIFE

A chopping knife is a robust knife with a wide, rectangular blade that is slightly thicker than a regular kitchen knife. The blade is less sharp because you use it to chop instead of cut. Use a chopping knife to cut through bones or cartilage.

BONING KNIFE

The blade of a boning knife is lean and has a smooth edge with a sharp point. With a length between 14 and 16 cm you can cut using short strokes. This makes the knife perfect for removing raw meat from bones, skinning and removing tendons and fat. CARVING KNIFE

The carving knife has a long, narrow and inflexible blade with a fine edge. Great for cutting large pieces of meat such as a roast or roulade. When cutting use the entire length of the blade and cut through in one go.

The shape of a ham knife blade is striking. Long, narrow, flexible, and with a rounded tip. Sometimes with dimples. These dimples ensure that air comes in between the ham and the blade to make sure the slices won’t stick to the surface.
