For instance, about Global, We Knife, and Chris Reeve and what makes these top brands so unique. Our very own Chris explains how you can make your sharpening stones even smoother. SEASONING A STEEL PAN The De Buyer steel pans have been favoured in professional kitchens for years. Solid and practically indestructible. From stove to oven: anything is possible. Without the non-stick coating because you apply this yourself. We will tell you how.

Applying the non-stick coating. First, cover the insides of the pan with a thin layer of oil. Sunflower or peanut oil if you have any.

Second, allow the pan to become acquainted with the flames and don’t forget to turn on your hood. After all, this part of the process might smell a bit. Heat the pan and let the oil smoke for a couple of minutes.

The thinner the layer, the better. It is better to apply 10 thin layers than one that is too thick. Rub out the oil with a paper towel and don’t forget the edges.

Turn down the heat and allow the pan to completely cool off. Clean it with a paper towel and that’s it, you’re done. Repeat this process at least five times until the pan has gotten a beautiful dark colour.

P RO- TIP Never clean your pan with soap, only use water. Used soap? Or has the layer been affected by acids? Simply apply the non-stick coating again. That is the benefit of steel. 5

DMT DIA-FLAT LAPPING PLATE I love sharpening my knives using Japanese sharpening stones, it really makes me feel like somewhat of an expert. Lapping plates are the only way to go when you properly want to sharpen your tools. For this reason I often lap my sharpening stones, preferably with the DMT Dia-Flat Lapping Plate.

T

he DMT Lapping Plate is a steel plate enhanced with diamond particles. But one that is, up to 0.0127 mm, guaranteed to have a flat surface. The diamond particles will make it feel as if you are using a diamond sharpening stone. However, you won’t sharpen steel, but flatten the uneven parts of your sharpening stone. I love that it is such a quick process, faster even than using a flattening stone made from silicon carbide.

In minutes your stone will be smooth again enabling you to continue your work. You can use this plate for any type of ceramic sharpening stone because it is massive! For the truly fine grain sizes I recommend a dressing stone to finish the surface even better. Freshly lapped stones will make sharpening a piece of cake! Something I believe everyone should experience at least once.

he French Lion Sabatier has been known for its knives forged from a single piece of steel since 1812. Knives with a traditional slim shape, full-tang, recognizable crop, and a handle which has been fixed in place with three handle fasteners. And suddenly the Fuso Nitro+ emerged. A collection of kitchen knives throwing practically all recognizable elements overboard. However, this collection is still very Lion Sabatier. Made by the same experts with the same know-how and high standards. It simply has a different look.

The kitchen knives have a blade made from nitrogen hardened 14c28N steel. Stainless and, as is usual for these knives, extremely hard. This blade seamlessly merges with the handle and is slightly weighted for an optimal balance. No seams so very hygienic. The little nob at the end of the handle works as a type of invisible protection for your hand and is a subtle nod towards the classic Lion Sabatier knife. rom a pair of binoculars you expect the best focus, always. Without compromising on user-friendliness and design. The brand Eden describes itself as a good and affordable alternative for the large names. Sounds perfect for the rugged terrain I often come across. Can this brand live up to its promise? Eden has two collections of binoculars: HD and XP.

can we have a drumroll please as we introduce to you: the wüsthof epicure. a new collection of kitchen knives which take the already high wüsthof standards to a new level. The design of industrial designer Björn Berger serves as the basis for these knives. After two years of work the results are finally in. And wow, those are some results. What immediately stands out is the broad blade. The centre of gravity is placed slightly further towards the tip than with traditional knives, which works perfectly when cutting or chopping.

Does it take some getting used to? Perhaps. But you will quickly notice that this blade feels natural in hand. Knives for anyone who doesn’t only love to eat the food, but also loves preparing it.

Via a crop the blade merges with the handle made from a composite of paper and synthetic resin. Like the blade the handle is slightly bigger.

USING A GLASS BREAKER They are a part of many pocket knives, multi tools, and tactical pens: glass breakers. Life hammers are also widely known. Life-savers you’ll never hope to need. But how do you use a glass breaker? We have tested it and will tell you how.

1. First, firmly take hold of the glass breaker and choose a car window. The windscreen is not a good option: because of the laminated glass it will only crack, not break. A side window is the better option. 2. Hit the window with the glass breaker with all you’ve got. You might think that hitting it in the middle is the way to go, but you are mistaken.

Take one of the corners, preferably at the bottom. In the corners the glass is held back properly because of the window seal making the impact that much greater. As a result you end up with a broken window and with a minimum amount of strength you will be able to free yourself from your car. We hope you will never have to use this knowledge but when disaster strikes you better be prepared. Drive carefully!

P RO- TIP Don’t worry about your hand when breaking the glass. Superficial cuts are the least of your concerns during an emergency situation. Go for speed.
