HOMEWORK HELP

It is back to school time and for some families that means it is back to battling homework issues. Many families complain that getting their child to complete their homework is a hassle every night, while other students calmly stick to a routine and get their homework done with only one or two reminders. Here are some tips from Homework: A Guide for Par Parents ents by Peg Dawson, EdD, CCSP at the Seacoast Mental Health Center in Portsmouth, New Hampshire: WRITE A HOMEWORK HOMEW CONTRACT CONTRACT.. The contract should say exactly what the child agrees to do and exactly what the parents' roles and responsibili responsibilities will be. When the contract is in place, it should reduce some of the tension parents and kids often experience around homework. For instance, if part of the contract is that the child will earn a point for not complaining about homework or that the child actually turns in their homework after completion, then if the child does complain or does not turn in homework; this should not be cause for a battle between parent and child: the child simply does not earn that point. Parents should also be sure to praise their children for following the contract. Don’ Don’tt give up and don’t don’t give in. HOMEWORK ROUTINE. SET UP A CONSISTENT CONSIS Step 1. Find a quiet location in the house with no distractions where homework will be done. Step 2. Set up a homework center complete with school supplies including a calculator calculator,, dictionary and if the child is older,, a computer older computer.. Step 3. Establish a homework time. You You may want w to allow your child some exercise outside and a snack time before completing homework. Step 4. Establish a daily homework schedule. In the beginning you will have to review homework assignments with your child and help them establish a priority list and how much time each assignment should take. HISTORY WRITER AT BARR LIBRARY By Michael Steinmacher Historian Ron Elliott contributes the August 2012 "Authors at Your Library" program with a discussion focusing on his book From Hilltop to Mountaintop: The Story of One Iwo Jima Flag Raiser on Thursday, August 23, at 6:30 PM. Elliott‘s book focuses on Kentuckian Franklin Sousley, one of the Marines who raised the American flag atop Iwo Jima. “We can never pay the debt we owe to those who gave so much to preserve our freedom,” said Elliott. “When (photographer) Joe Rosenthal snapped that picture on Iwo Jima, fate chose Franklin Sousley (and the other 5 flag raisers) to be representative of them all.” That moment is but a part of Elliott’s work, which, through research into private and public sources, brings to life Franklin Runyon Sousley. While Sousley’s name might not be commonly known, his story is filled with remarkable moments as recounted by the author. Elliott says he sees special importance in telling Sousley’s story to the Fort Knox community, who have much in common with the World War II Marine. HANSEN THRIFT STORE OFFERS SOMETHING FOR EVERYONE By Ursula Anderson The Hansen Thrift Store, located in the Hansen Community Center at 1053 Spearhead Division Avenue, offers something for everyone. Consignments are accepted from Active Duty and Retired Military and their Family members, DoD civilian workers and DoD contractors. All proceeds from the sale of consignments are used for programs and activities to enhance the quality of life for Soldiers and their Families. The store covers about 3000 sq. ft. of floor space. It includes a consignment area, a loading dock, and several rooms containing a variety of furniture, household goods, clothing, books, sports

and miscellaneous items. Gabi Ruiz, who manages the Hansen Thrift Store, said, “The shop has been operated by Fort Knox’s Family and Morale, Welfare and Recreation for more than 20 years. Army Families transitioning to Post from another assignment can find bargins here, such as household goods, including furniture, kitchen utensils, bedding, and cleaning equipment. When they transfer out, selling their items helps lighten the shipping load and puts some extra money in their pocket. People can think of the store as an extended yard sale.” Morgan Valenzuela, a Family member, said with the money she got back from her consignment of gently used clothes, she furnished her dorm room at college with bargains she found at the Hansen Thrift Store. The Hansen Thrift Store operates Mondays, Tuesdays, Thursdays, and Fridays from 9:00 AM to 4:00 PM, Wednesday from 9:00 AM to 6:30 PM. RECIPES TO CELEBRATE NATIONAL CATFISH MONTH August is National Catfish Month. Catfish has become one of America’s favorite fish due to its mild flavor, versatility and health benefits. There are hundreds of recipes for broiling, grilling, frying, or blackening catfish because it works in virtually any recipe. To honor the savory fish, the Saber & Quill’s Executive Chef, Craig Osterhoudt, has provided serveral mouth-watering catfish recipes for you and your family to enjoy. You don’t like to cook? CAJUN CATFISH 4 catfish fillets (6 to 8 ounces each) 3 tablespoons Cajub Rub 4 tablespoons unsalted butter, melted 1 cup Cajun Sauce Sprinkle the catfish fillets on both sides with half the rub. Cover and marinate in the refrigerator for 30 minutes. Preheat the grill to High, if you use a fish grate, preheat it as well. When the grill is hot, oil the grate. Next coat each piece with melted butter, then put the remaining rub on the fish. Then place the fish on the grate and grill until cooked through, 4 to 6 minutes per side. Transfer it to plates and spoon the Cajun Sauce on top.

CAJUN SAUCE

1/2 cup kosher salt 1/4 cup paprika 3 tablespoons black pepper 1 tablespoon cayenne pepper 1 tablespoon dried thyme 1 tablespoon onion powder 1 tablespoon garlic powder 2 teaspoons white pepper 1 teaspoon ground bay leaf

Combine all ingredients in a bowl and mix well. 1 cup mayonnaise 1/4 cup Creole mustard 2 tablespoons prepared horseradish 2 tablespoons Worcestershire sauce 2 tablespoons fresh lemon juice 1 tablespoon ketchup 1 teaspoon Tabasco

1 tablespoon paprika 1/2 teaspoon black pepper 1/2 teaspoon sugar Kosher salt to taste 1 shallot, minced 3 tablespoons chopped parsley 1 green onion, chopped

FRIED CATFISH 6 (6oz) catfish fillets, cut into 2 oz strips 2 cups milk 2 cups corn meal 1 cup flour 2 teaspoons pepper 1 tablespoon salt 1/2 teaspoon onion powder 1/2 teaspoon garlic powder Vegetable oil Place catfish in a shallow baking dish, cover with the milk. Chill for one hour. Combine all the dry ingredients in a shallow bowl. Remove the fillets from the milk, drain the excess milk. Sprinkle the fillets evenly with a salt and pepper mixture. Dredge catfish fillets in corn meal mixture. Heat oil to 350 degrees. Fry fillets for about 4 minutes per side or until golden brown. Drain on racks over paper towels. www.KnoxMWR.comŇ$XJXVW Ň
