SPRING BREAK

SLOWCOOKERÂ

Vegetarian Chili YOU WILL NEED 1 can diced tomatoes

1 green pepper, diced

1 can tomato paste

1 large onion, diced

1 can kidney beens,

1/2 cup water

drained & rinsed

1/2 tbsp each:

1 can black beens,

chili powder, cumin,

drained & rinsed

garlic powder, onion powder

PROCEDURE Empty all ingredients into the crockpot and stir well so the spices are evenly distributed. Cook on low for 6 hours or on high for 4 hours. Serve with a scoop of Taste test every 2 hours or so and add additional spices to taste. sourcream & top Serve with a scoop of sour cream & top with grated cheese withcheddar grated cheddar and diced green onion for added flavour. cheese and green onions for added flavour.

Shrimp Tacos YOU WILL NEED 6 soft shell tacos 1 avocado pitted & diced 1/2 red onion, diced 1 green pepper, diced 2 cups lettuce, shredded 2 cups cooked shrimp with tails removed

PROCEDURE

1 egg 1 cup bread crumbs (we use gluten free) 1/2 cup corn starch 1 tbsp olive oil 1 cup mayo 2 tsp chipotle 1 tbsp lime juice 4 tbsp cilantro, chopped Pinch each of salt & pepper

Rinse shrimp and pat dry on a piece of paper towel. Toss in cornstarch. In a bowl, break up the egg with a fork and coat shrimp in egg. Mix 1 tsp of chipotle and salt & pepper with the bread crumbs. Toss shrimp until coated. In a pan over medium heat, warm the oil and fry shrimp until golden. Mix remaining chipotle with mayo. To serve, scoop a spoonful of chipotle mayo on each taco followed by the shrimp and veggies. Top with a squirt of lime juice and cilantro.


QUICK & EASY

Alfredo Pasta YOU WILL NEED 1/2 cup butter 3 cloves garlic, minced 2 oz cream cheese 2 cup whipping cream 1/2 cup milk 3 tbsp fresh parsley, chopped 1 cup parmesan cheese, grated salt & pepper to taste 1 box fettuccini pasta

PROCEDURE Bring a large pot of water to a boil. In a pan over medium heat, melt butter. Toss in the garlic, followed by the cream cheese. When the cream cheese is melted, add whipping cream and milk. When combined, add parmesan cheese and 2 tbsp of the parsley. Drain pasta and pour sauce over pasta. Top with more grated parmesan and parsley for garnish.

Sweet & Sour Ribs YOU WILL NEED 1 rack of pork ribs

1 cup brown sugar (or try 1/2 cup

2 cups ketchup

brown sugar & 1/2 cup honey)

1/2 tsp dry mustard

2 tbsp corn starch

1/2 cup soy sauce 1/2 cup vinegar

PROCEDURE Bring a large pot of water to a boil. Cut the rack into the individual ribs & pop in water.
