PAYMENT PLANS ARE AVAILABLE Payment plans are available by calling or emailing the onsite office. You must call or email to request the plan - it will not be set up automatically. The earlier you call to set up a plan, the easier it will be to work the plan into your budget. The board is willing to work with those having financial difficulties, but urges all homeowners to set a plan up early and keep up with the payments. Please note that delinquent accounts get sent to the attorney for collection on April 1st. Payment plans must be set up (and the first payment received) before April 1st to avoid collection.
LOOSE ANIMALS There have been a number of loose animals in the community recently. Please be mindful of your pet and regularly check the perimeter of your fence to be sure it will stay safely within the confines of your yard. There are many people who are afraid of pets (dogs in particular) and can find them very frightening, even it if they are not aggressive.
RECREATION CENTER RENTAL The recreation center has a room available for parties, meeting, reunions, etc. A signed contract plus a $300 security deposit will hold your reservation. Homeowners must be current on their dues (or payment plans) and rental fees must be received prior to the party. The rental rate is $35 an hour with a two-hour minimum. The key for the clubhouse is to be signed out and returned to the guards in the guardhouse. Please READ THE CONTRACT CAREFULLY before signing - this is a binding legal document and the rules and regulations stipulated in the contract will be enforced. Remember to bring your trash home with you after a party - the clubhouse trashcans are being filled to overflowing regularly. Fines will start being assessed if the rec center trashcans are filled up with party debris.
HARRIS COUNTY TOLL TAGS Please call the onsite office (281-492-6020) or email us to register your Harris County toll tag (phardilek@ccbpropertymanagement. com). The following information is required: Name, Address, Vehicle Make & Model and Old and New EZ Tag Numbers. Please do not give tag information to the guards - they do not have access to the gate computer. PLEASE REMEMBER to have your old tag number available when you are registering a new tag, so we can remove it from the system. The sticker-type EZ tags can be programmed into the system. However, the signal is not as powerful as that of the battery-powered tags. Please approach the gate slowly and stay as close to the left median as possible (that is where the reader is located); the new tags can’t be read by the system until you are very close to the gate.
REMINDER ABOUT PARKING REGULATIONS The Association would like to remind everyone that there is NO CURBSIDE PARKING between the hours of 11:00 PM - 9:00 AM. VEHICLES IN VIOLATION WILL BE STICKERED. If vehicles are found repeatedly in violation, they will be towed at the owner’s expense. These parking regulations were put in to place to alleviate the difficulty school buses were having navigating the neighborhood and to allow a time for problem-free residential access for emergency vehicles. Safety issues relating to morning work traffic and children going to school, garbage trucks, bike lanes and homeowner complaints about blocked driveways were also concerns. Please remember that angle or perpendicular parking is against deed restrictions. It is also a violation of local ordinance. Please remember that the front and back wheels of a vehicle must be parallel and within 18 inches of the curb. Angle or perpendicular parking may prohibit police, fire or any other emergency personnel from ingress or egress. Violators will have their vehicles stickered and if necessary, towed, if the vehicle is repeatedly found in violation.

FITNESS CENTER/RECREATION CENTER LOBBY Anyone under the age of 18 is not allowed in the fitness center unless accompanied by a parent or guardian. The recreation center lobby is not to be used as a gathering place for kids to socialize. The Association is asking for all homeowners who use these facilities to help with watching over these areas. If a child is under the age of 18 and is in the fitness center without a parent or guardian or appears to be simply loitering in the lobby, please politely ask them to leave. Thank you.
EZ TAGS FOR FRONT GATE ACCESS The Homeowners’ Association sells EZ tags that will open the resident gate at the Canyon Gate entrance. Residents may purchase these at the onsite office for $35. These EZ tags contain a battery that should last for, approximately, 3 years. The HOA offers a one-year warranty on these tags. If the battery goes bad and your EZ tag stops working within the first year, the tag will be replaced at no cost. If your EZ tag stops working after the one-year time limit, a new EZ tag will need to be purchased.

EASY VEGAN VALENTINE SUGAR COOKIE RECIPE! As a vegetarian, it’s difficult to find sweets that are eggless and also dairy-free. But it’s not impossible! Be sure to surprise your valentine with this super easy and vegan sugar cookie recipe: • 1 cup plain white flour • 1/2 cup or slightly less granulated sugar • 1/2 cup SmartBalance or soy butter • 1 tsp. baking powder • 1 tsp. vanilla extract Directions 1. Pre-heat the oven to 345 degrees. 2. Cream the butter and sugar in a large bowl using a spatula or an electric whisk until it is fluffy. Stir in the vanilla extract and thoroughly mix. 3. In a separate bowl, combine the flour and baking powder. 4. Add the flour to the creamed butter and mix until a soft dough is formed. 5. Shape into a log and wrap in cling film or foil and refrigerate for an hour or overnight. 6. Tear off small amounts of dough and shape into balls spacing them well apart on a baking sheet, as they will spread in the oven. 7. Bake for 15-20 minutes depending on your oven. Ease them off using a palate knife - they will be a little soft still but that is fine. 8. Allow them to cool on a rack for at least an hour. Store in an airtight container for up to a week.

The season ends promptly at midnight on Fat Tuesday, the day before Ash Wednesday, the beginning of Lent. What’s in a name: Eating a calf The name “Fat Tuesday” comes from the tradition of eating a slaughtered calf on the final day of Carnival. These days, though, that definition has expanded to include feasting on pretty much any rich fatty food. Mardi Gras Around the world Mardi Gras or Carnival is celebrated in many cities around the world besides New Orleans, including Montreal, Quebec, Canada; Nice, France and Rio de Janeiro, Brazil. But many small towns and municipalities celebrate Mardi Gras as well, including the tiny community of Rubonia, Florida. The Universal Studios Florida theme park also throws a Mardi Gras celebration on weeknights from February to April, featuring parades and concerts by national acts.

FLOWERS • Plants to set: Alyssum, Calendula, Canterbury Bells, Carnations, Columbine, Cornflower. Daisies, Delphinium, Hollyhock, Larkspur, Lobelia, Nicotiana, Pansy, Petunia, Phlox (Louisiana), Shrimp Plant, Snapdragon, Stock and Verbena. VEGETABLES • Plant beets, broccoli (plants), brussel sprouts (plants), cabbage (plants), carrots, cauliflower (plants), celery, chinese cabbage (plants), chives collards (plants), endive, kale, lettuce (leaf and head), mustard, onions (plants), parsley, garden peas, radishes, rutabagas, spinach, tomato (seeds) and turnips. TREES AND SHRUBS • Finish all transplanting, get everything in the ground for a good spring spurt of growth. Transplant balled and burlap, containergrown, bare-root deciduous evergreen trees, shrubs, roses and vines while still dormant. • Finish pruning roses. Weed and cultivate lightly all beds. Replenish mulch as needed. • Control early spring insects like thrips on glads and aphids on young tender growth. Spray with Malathion, Diazinon or Orthene. • At the end of February: peach, apple and pear fruit must be thinned to insure quality production at harvest. • Give groundcovers a haircut. They will spread faster. • Divide daylilies, daisies and other perennials now.

Texas Commissioner of Education Michael Williams announced today that he will again defer the requirement that states that STAAR end-of-course examinations be counted as 15 percent of a student’s final grade in each subject tested. With this announcement, local school districts have the option to move forward with the 15 percent rule for the 2012 - 2013 academic year. Last year, Katy ISD opted to participate in the deferral as the district adjusted to the rigor of the new STAAR test. “Katy ISD will again participate in the deferral, as we feel that this will allow both students and teachers an opportunity to better understand STAAR, while focusing on the subject matter and not just a final test score,” said Dr. Christine Caskey, Katy ISD Chief Academic Officer. As posted on the Texas Education Agency’s website: “Deferring the 15 percent rule for this school year relieves some of the pressure being felt in Texas districts as we continue the transition to a more rigorous accountability system,” Williams said. “This deferral also allows the Texas Legislature ample opportunity to address the various issues and concerns that have been expressed about implementation of the new system.” On Nov. 29th, Williams received letters from Gov. Rick Perry, Lt. Gov. David Dewhurst and Senate Education Committee Chair Dan Patrick urging deferral of the 15 percent rule. All three state leaders noted the rule would be an issue that would be discussed during the upcoming legislative session.

KATY ISD’S CREECH ELEMENTARY STUDENTS CREATE NEARLY 900 GINGERBREAD HOUSES IN ONE DAY Every year in mid-December, the students at Sue Creech Elementary participate in Gingerbread Day festivities during their “specials” time. Emily Silva, a Creech Mom, chairs the annual event. Parents and the Creech PTA donate supplies such as graham crackers, peppermint sticks, gumdrops, skittles and more and a virtual army of teachers and parent/family volunteers assist the children (more than 850 students enrolled) in making their own individual Gingerbread Houses to take home. Creech Art Instructor Natalie Sansom kicks off each grade’s production with an instructional overview for the students that combine art and architecture. Then, the entire school is filled with the pleasant aroma of goodies. And when they’re finished, the students gather up their projects to take home.

Valentine’s Day One to Remember…
Ranch Junior High. Robotics teams of 4th to 8th grade students from all over the Houston metro area competed in the tournament. Team Cryptonite also organized a tournament toy drive to collect board games for the Krause Children’s Center in Katy. FIRST LEGO League teams of two to ten members work alongside adult mentors to design, build and program autonomous robots using LEGO MINDSTORMS® NXT technologies and create an innovative solution to a problem as part of a research project. This year’s competition is the SENIOR SOLUTIONSSM Challenge, where students explore the topic of aging. Can FIRST LEGO League teams improve the quality of life for seniors by helping them continue to be independent, engaged and connected in their communities? Team “Bud-Botics,” an independent team from the Cy-Fair area, won the First Place Champions Award as the team with the highest combined score from all elements of the competition. They also won the award for Robot Performance. Team “Beck Tech,” from Katy ISD’s Beck Junior High won the Second Place Champions Award. As First and Second Place Champions, both Bud-Botics and Beck Tech will advance to compete in the Lone Star FLL Championship Tournament, which takes place on February 23, 2013 at John H. Reagan High School in Houston. FLL Teams are judged on each of the three parts of the FLL Challenge: The Robot Game - the performance of their robot in head-to-head competition, along with robot design and programming; The Project - a research project and presentation and FIRST Core Values – for how well a team embodies these values. Throughout the build, research and competition process, FLL robotics teams deal with real-world application of science, technology, engineering and math (STEM) concepts and hands-on problem solving, as well as honing research and presentation skills. Team CRyptonite students and adult volunteers organize and run the Katy Qualifier Tournament as part of their commitment to community service and to promoting FIRST robotics to inspire future scientists and engineers. The team also founded the FLL programs at Beck JH and Cinco Ranch JH and currently mentor the two Cinco Ranch Junior High FLL teams.

CC Building by Design, LLC Katy Elks Host Annual Best Buddies Christmas Dance Friday, December 7th was the date - Katy Elks lodge was the place - food, fun & dancing were the order of the night as 100 Katy ISD Best Buddies participants converged to claim an evening created just for them. The Best Buddies program, founded in 1989, is a nonprofit national organization dedicated to establishing a global volunteer movement that creates opportunities for one-to-one friendships, integrated employment and leadership development for people with intellectual and developmental disabilities (IDD). Since 1993, Best Buddies High Schools has paired students with IDD in one-to-one friendships with high school students. By introducing Best Buddies into public and private high schools, participants are crossing the invisible line that too often separates those with disabilities from those without. Today, Best Buddies boasts more than 900 high school chapters worldwide. In Katy ISD we have six high schools that participate in the Best Buddies program and the Katy Elks lodge Christmas and end-ofschool dances. Since this was the Christmas dance, it would have not been complete without a visit from Santa, an event eagerly awaited by all present. Katy Elks member Don Accord subbed for the North Pole Santa and was quite a hit as each student present had the opportunity to have his/her picture taken with him and received a copy to take home.

This six-week program is designed to encourage families to read, learn and have fun together. All Fort Bend County families are eligible to participate. Families who read 36 books or 6 hours - 6 books per week or 60 minutes per week - will be entered into a drawing for a $50 dining gift card, donated by the Friends of the Library. RUOK Program Fort Bend County Sheriff’s Dept. has a computer-generated program called “Are You OK?” (RUOK). It is a computer-generated call intended for senior citizens (over 55) and disabled persons who live alone and could benefit from a daily check. A computer will generate a call each morning, at about the same time and the participant chooses a time frame. A voice will ask, “Are you OK?” After this, all they have to do is hang up the phone. If the participant goes out of town or leaves the residence for any time, you just temporarily un-subscribe and re-subscribe when you return. If the call goes unanswered, the computer will call back 3 times at 15-minute intervals. If there is still no answer, the sheriff will dispatch a deputy or the local police. They will have with them a print out of information on the person that is not responding to the calls. This program was established by FBC Sheriff Milton Wright, Commissioner’s Court and Ken Whitt (FBC Sheriff’s Citizens Academy Alumni Assoc.) in 1998. Many police chiefs in the county are also participating in the program and will proceed with the welfare check for citizens of their community. Ingredients 2 packages (8-1/2 ounces each) corn bread/muffin mix 1 medium onion, chopped 2 cups (8 ounces) shredded cheddar cheese 1 can (14-3/4 ounces) cream-style corn 1-1/2 cups (12 ounces) sour cream 4 eggs, lightly beaten 1 can (4 ounces) chopped green chilies 1/3 cup canola oil 1 tablespoon finely chopped jalapeno pepper Directions In a large bowl, combine corn bread mix and onion. Combine the remaining ingredients; add to the corn bread mixture just until moistened. Pour into a greased 13-in. x 9-in. baking dish. Bake at 350° for 50-55 minutes or until lightly browned and the edges pull away from sides of pan and a toothpick inserted near the center comes out clean. Serve warm. Refrigerate leftovers.

Fiesta Turkey Tortilla Soup Recipe by Taste of Home Prep/Total Time: 25 min. Yield: 8 Servings
Ingredients 4 cans (14-1/2 ounces each) chicken broth 3 cups shredded cooked turkey or rotisserie chicken 1 can (15 ounces) black beans, rinsed and drained 1 can (15-1/4 ounces) whole kernel corn, drained 1/2 cup medium salsa 5 corn tortillas (6 inches), cut into 1/4-inch strips 1/4 cup chopped fresh cilantro Additional salsa, optional Directions In a Dutch oven, combine the first five ingredients; bring to a boil. Reduce heat; simmer for 10 minutes, stirring occasionally. Meanwhile, spread tortilla strips in a single layer on a baking sheet. Bake at 400° 4-6 minutes or until golden brown and crisp. Stir cilantro into soup. Top servings with tortilla strips. If desired, serve with additional salsa. Yield: 8 servings.

It made history in 1943 as the first of its kind to be established on a local school level and now the Katy Rodeo has grown to encompass three nights of rodeo entertainment for the whole family. 70 years later, the Katy Rodeo is one of the few remaining youth and professional rodeos still supporting FFA. In conjunction with the annual Katy ISD livestock show, the Katy Rodeo is an event that supports agricultural education within the Katy Independent School District. The livestock show, rodeo, carnival and parade draw sold out crowds from Katy and many of the surrounding areas. The Katy Rodeo has something for all ages. The Katy Cowgirl Mounted Drill Team opens each night’s performance while a Katy ISD student performs the national anthem. The rodeo consists of all pro events including Bareback and Saddle Bronc, Steer Wrestling, Ladies Breakaway, Calf and Team Roping, Bull Riding and Barrel Racing while allowing the Katy youth to participate in junior Calf Roping and junior Barrel Racing. The young children can also participate in the rodeo events by joining the Stick Horse race or the ever-popular Mutton Bustin’. The KISD FFA students have a chance to compete in the “ever popular” Calf Scramble. The carnival also delights spectators of all ages, as well as the annual Saturday Morning Parade. The 2013 Katy ISD FFA Livestock Show and Rodeo kicks off its historic 70th year on Thursday, February 21st and runs through Saturday, February 23rd. Hosting a foreign exchange student is easier than you may think During the 2012-2013 school year, students from all across the world will have the opportunity to travel to Houston and surrounding communities to spend the entire school year in the United States, learning and working with American Families. In order for the students to come to the U.S. they must have proper host families lined up. Now is a crucial time of year for the Ayusa program as local staff coordinators to find local host families for the upcoming school year. The Ayusa program is celebrating its 30th year this year and is responsible for more than 60,000 students from 75 different countries spending the school year in the United States. There are not many strict requirements that need to be met to host a student. The most important thing is that those who host students are doing so for the right reason; providing a loving experience and an exposure to American culture. There are a few basic requirements, of course. Anyone older than 25 and can provide food and shelter for a student fulfills the requirements of being a host family. There is a

Once the host families and students are matched, Ayusa stays involved by monthly contacts with the families, students and quarterly contacts with the schools. Ayusa coordinators also handle the host family orientations and the student orientations. Group activities, such as community service and seeing things with the group of exchange students is also arrange throughout their academic year. With the current school year quickly coming to an end Ayusa’s local staff is busy looking for families for students for the 2012-2013 school year. Many families are needed and with the schools having deadlines and limits for foreign exchange students the earlier the better. The December 9th concert, “Christmas around the World,” was the nineteenth year that the congregations of Epiphany of the Lord Catholic Church and the Katy Stake of The Church of Jesus Christ of Latter-day Saints have combined for a Christmas concert. The collaboration began in 1994, at the invitation of Father Jack Dinkins, when new neighbors, the Katy Stake Center, was built across the street. This year’s choir was made up of 120 voices from both congregations, with the addition of a children’s choir of nearly 100, plus Epiphany’s small Contemporary Choir, as well as a community orchestra. The theme of the evening was introduced with flags from many countries being marched in while the congregation joined the choir for “O Come All Ye Faithful.” The Christmas music of

the concert came from many nations: Italy, West Indies, Ireland, France, Ukraine, Spain, Switzerland, Germany, Austria, Philippines and Africa, as well as some English and American traditional tunes. There were several highlights. The Latin “O Magnum Mysterium,” gave the impression of a cappella beauty resonating in a Roman cathedral. “O Holy Night,” with the choir backing up Debbie Siebert’s soprano solo, brought audience members the Christmas glory they were hoping to feel. “Silent Night,” sung simply to guitar, as it was originally written, was essential. The two choirs and any who join them from the community, plan to continue the tradition for years to come, with next year marking two decades of singing together. Epiphany includes about 2,500 members in and around Katy. The Katy Stake includes 10 congregations in and around Katy, as well as north to Bear Creek and Copperfield areas and west into Austin County and beyond.
