Grand Lakes News Winter has settled in here within Houston, Texas and it’s a nice, refreshing change. Hopefully, you’ve put away your holiday trimmings and décor, and are gearing up for a month filled with activities for everyone: MARDI GRAS! I lived in Biloxi, MS, as my first job was at WLOXTV-ABC13. I lived about an hour or so away from New Orleans, but wasn’t interested in the hurrah of Nawlins’ Mardi Gras celebrations. However, this is indeed a fun-filled holiday for everyone. My friend Terri and I drove along the lovely MS Gulf Coast through Biloxi, Gulfport and then Pass Christian just to see the parades and the excitement along the faces of spectators. Mardi Gras is so colorful, so spirited that you just immediately get put in a good mood. Sure catching the beads was nice, but one must be careful, because you can also catch the flu from the beads! We would do live reports at the TV station and the food - my goodness. King Cake, treats and gold coin candies. And the traditional Mardi Gras dishes were absolutely delicious from what I heard and witnessed. (I couldn’t eat any of these delights as I’m vegetarian; and yes, it was very hard to find a “safe” place to eat in Biloxi!) But indeed, this was a lovely event. Celebrate! FOODS TO SUPER CHARGE YOUR WORKOUT! Whatever your workout or sport, these “energy-packed eats” will help you maintain steady energy throughout the week and boost it during your toughest workouts. • Whole grains: Whole oats oatmeal, brown rice, quinoa, amaranth, millet or farro. Your body needs the fast energy of carbs during heavy training cycles. Whole grains are good sources of protein too. • Nuts: A handful of unsalted, natural nuts is a great quick energy source just before a workout. Avoid peanuts, macadamia nuts and cashews. Your best bets are: almonds, walnuts and pecans. • Eggs • Fresh fruit and vegetables • Lean protein: Fish, poultry and beans keep saturated fat to a minimum. • Ground chia seed: Packed with protein, fiber and a good balance of essential fatty acids. Add a spoonful to smoothies or oatmeal for a nutty flavor similar to flax seed. • Sweet potatoes: Try them baked with a sprinkle of walnuts and cinnamon - great for breakfast or a snack. • Fluids: Hydrate! Hydrate! Hydrate! • Avocado: Fats should make up about 25% of your daily diet when you’re training, so avocados are an easy way to get the healthy fat.

EASY VEGAN VALENTINE SUGAR COOKIE RECIPE! As a vegetarian, it’s difficult to find sweets that are eggless and also dairy-free. But it’s not impossible! Be sure to surprise your valentine with this super easy and vegan sugar cookie recipe: • 1 cup plain white flour • 1/2 cup or slightly less granulated sugar • 1/2 cup SmartBalance or soy butter • 1 tsp. baking powder • 1 tsp. vanilla extract

Directions 1. Pre-heat the oven to 345 degrees. 2. Cream the butter and sugar in a large bowl using a spatula or an electric whisk until it is fluffy. Stir in the vanilla extract and thoroughly mix. 3. In a separate bowl, combine the flour and baking powder. 4. Add the flour to the creamed butter and mix until a soft dough is formed. 5. Shape into a log and wrap in cling film or foil and refrigerate for an hour or overnight. 6. Tear off small amounts of dough and shape into balls spacing them well apart on a baking sheet, as they will spread in the oven. 7. Bake for 15-20 minutes depending on your oven. Ease them off using a palate knife - they will be a little soft still but that is fine. 8. Allow them to cool on a rack for at least an hour.

Celebrate Mardi Gras!

Translated from the French, Mardi Gras means “Fat Tuesday.” In short, it’s the last day before the traditional Catholic Lenten fasting season leading up to Easter Sunday. For those cities that celebrate it - most famously New Orleans, Louisiana - Mardi Gras means feasts, multiple parades, elaborate costumes and parties.

Mardi Gras Origin Some scholars trace Mardi Gras’ roots to the ancient Roman Lupercalia festival, which was held in mid-February. Like many other pagan holidays, early Church leaders incorporated elements of the celebration into the new faith rather than risk alienating converted followers. As Catholicism spread across Europe, so did the Mardi Gras celebration. Mardi Gras Comes to America By the Middle Ages, Mardi Gras or “Carnival,” had become a major holiday in France and early French explorers brought the tradition to the New World when establishing settlements in their explorations of the Mississippi River. With its strong French roots, New Orleans naturally evolved into one of the premier Mardi Gras destinations in the world. Mardi Gras: The Religious roots The Mardi Gras kicks off on the Epiphany, twelve days after Christmas on January 6th, also known as Twelfth Night or Three Kings Day, celebrating the arrival of the three wise men and their gifts to the baby Jesus. The season ends promptly at midnight on Fat Tuesday, the day before Ash Wednesday, the beginning of Lent.

What’s in a name: Eating a calf The name “Fat Tuesday” comes from the tradition of eating a slaughtered calf on the final day of Carnival. These days, though, that definition has expanded to include feasting on pretty much any rich fatty food. Mardi Gras Around the world Mardi Gras or Carnival is celebrated in many cities around the world besides New Orleans, including Montreal, Quebec, Canada; Nice, France and Rio de Janeiro, Brazil. But many small towns and municipalities celebrate Mardi Gras as well, including the tiny community of Rubonia, Florida. The Universal Studios Florida theme park also throws a Mardi Gras celebration on weeknights from February to April, featuring parades and concerts by national acts.

Organizing Grand Lakes Community Emergency Response Team (CERT) The Community Emergency Response Team (CERT) Program educates people about disaster preparedness for hazards that may impact their area and trains them in basic disaster response skills, such as fire safety, light search and rescue, team organization and disaster medical operations. Using the training learned in the classroom and during exercises, CERT members can assist others in their neighborhood or workplace following an event when professional responders are not immediately available to help. CERT members also are encouraged to support emergency response agencies by taking a more active role in emergency preparedness projects in their community.

Pet Poops/You Scoop When your pet poops during your walk, be prepared to scoop and trash. This is a growing issue within the community. Come with a scooper and a recycled grocery bag or anything else. It may not be the most fabulous way to walk your pet, but it does show your respect for every Grand Lakes homeowner and our beautiful community. Pet feces damages lawns and many residents are working hard to maintaining their grass!

KEEP YOUR Pets on Leashes For the safety of all Grand Lakes residents, please use all precautions with your pets and keep them on leashes when walking pets in the community EVEN IF YOU FEEL YOUR PET IS HARMLESS. If you do come across a loose pet or a pet that may be lost, please try to take in the pet temporarily to your home if you can and immediately email the Grand Lakes Pets Lost and Found: grandlakes4pets@aol.com

Stop That Barking! Dogs left alone all day get lonely, bored and restless. Many find relief in barking. Some respond noisily to any and all activity. Nothing is as annoying as incessant barking-even for dog lovers. If your dog is a yapper or a yowler, please consider some of these bark-abatement ideas to keep the noise down in your area. Your neighbors will thank you! • Training. Always the first recommendation for any behavioral problem! Training not only helps your dog, you’ll be surprised how much it helps you, too. You may get some insight into why your dog barks so much, or what it is trying to communicate. • Citronella collars. A humane alternative to the electric-shock, anti-barking collar and costs about the same. • Confinement. Sometimes simply bringing an outspoken dog indoors or confining it to a crate cuts down on the disturbance to neighbors. • For inside dogs, reduce stimulus. Close drapes to help muffle street noise, or leave a radio on to mask it. • Companionship. Dogs are pack animals; they need companionship-a cat, bird or another dog. Consider a mid-day visit from a pet-sitting service or drop your pooch off at a friend’s place or a day-care facility once or twice a week.

The Louisiana Society for the Prevention of Cruelty to Animals is seeking partners across the country for donations in rebuilding their facility, which was destroyed by hurricane Katrina. The Katy community was overwhelmingly instrumental in supporting families that were displaced after Hurricane Katrina through the support of Katy ISD, local businesses, various community organizations and churches. We are, once again, given the opportunity to “unleash our hearts” and be a part of the rebuilding of Louisiana SPCA. Fiesta Turkey Tortilla Soup Recipe by Taste of Home Prep/Total Time: 25 min. Yield: 8 Servings

Ingredients 4 cans (14-1/2 ounces each) chicken broth 3 cups shredded cooked turkey or rotisserie chicken 1 can (15 ounces) black beans, rinsed and drained 1 can (15-1/4 ounces) whole kernel corn, drained 1/2 cup medium salsa 5 corn tortillas (6 inches), cut into 1/4-inch strips 1/4 cup chopped fresh cilantro Additional salsa, optional Directions In a Dutch oven, combine the first five ingredients; bring to a boil. Reduce heat; simmer for 10 minutes, stirring occasionally. Meanwhile, spread tortilla strips in a single layer on a baking sheet. Bake at 400° 4-6 minutes or until golden brown and crisp. STAAR SCORES WILL NOT AFFECT COURSE GRADES FOR 2012 - 2013 Texas Commissioner of Education Michael Williams announced today that he will again defer the requirement that states that STAAR end-of-course examinations be counted as 15 percent of a student’s final grade in each subject tested. With this announcement, local school districts have the option to move forward with the 15 percent rule for the 2012 - 2013 academic year. Last year, Katy ISD opted to participate in the deferral as the district adjusted to the rigor of the new STAAR test. “Katy ISD will again participate in the deferral, as we feel that this will allow both students and teachers an opportunity to better understand STAAR, while focusing on the subject matter and not just a final test score,” said Dr. Christine Caskey, Katy ISD Chief Academic Officer.

BECKENDORFF JR. HIGH BEAR BUDDIES Beckendorff Junior High’s Bear Buddies program has teamed up with the Life Skills class to sell pickles to students during advisory every Wednesday. Proceeds benefit the Life Skills department and help fund the department’s CBI trips (Community Based Instruction). CBI events include activities such as shopping for groceries, where students learn about following budgets then taking their ingredients and cooking recipes, behind the scenes tours of how facilities work, generalizing a variety of skills they learn in the classroom into the community, practicing restaurant skills such as ordering and paying and learning how to engage in activities that typically developing children enjoy, such as bowling and painting ceramics, etc. BDJH Bear Buddies is a program developed to introduce and engage typically developing students with their peers who have intellectual and developmental disabilities.

It made history in 1943 as the first of its kind to be established on a local school level and now the Katy Rodeo has grown to encompass three nights of rodeo entertainment for the whole family. 70 years later, the Katy Rodeo is one of the few remaining youth and professional rodeos still supporting FFA. In conjunction with the annual Katy ISD livestock show, the Katy Rodeo is an event that supports agricultural education within the Katy Independent School District. The livestock show, rodeo, carnival and parade draw sold out crowds from Katy and many of the surrounding areas. The Katy Rodeo has something for all ages. The Katy Cowgirl Mounted Drill Team opens each night’s performance while a Katy ISD student performs the national anthem. The rodeo consists of all pro events including Bareback and Saddle Bronc, Steer Wrestling, Ladies Breakaway, Calf and Team Roping, Bull Riding and Barrel Racing while allowing the Katy youth to participate in junior Calf Roping and junior Barrel Racing. The young children can also participate in the rodeo events by joining the Stick Horse race or the ever-popular Mutton Bustin’. The KISD FFA students have a chance to compete in the “ever popular” Calf Scramble. The carnival also delights spectators of all ages, as well as the annual Saturday Morning Parade. The 2013 Katy ISD FFA Livestock Show and Rodeo kicks off its historic 70th year on Thursday, February 21st and runs through Saturday, February 23rd. Hosting a foreign exchange student is easier than you may think During the 2012-2013 school year, students from all across the world will have the opportunity to travel to Houston and surrounding communities to spend the entire school year in the United States, learning and working with American Families. In order for the students to come to the U.S. they must have proper host families lined up. Now is a crucial time of year for the Ayusa program as local staff coordinators to find local host families for the upcoming school year. The Ayusa program is celebrating its 30th year this year and is responsible for more than 60,000 students from 75 different countries spending the school year in the United States. There are not many strict requirements that need to be met to host a student. The most important thing is that those who host students are doing so for the right reason; providing a loving experience and an exposure to American culture. There are a few basic requirements, of course. Anyone older than 25 and can provide food and shelter for a student fulfills the requirements of being a host family. There is a

Once the host families and students are matched, Ayusa stays involved by monthly contacts with the families, students and quarterly contacts with the schools. Ayusa coordinators also handle the host family orientations and the student orientations. Group activities, such as community service and seeing things with the group of exchange students is also arrange throughout their academic year. With the current school year quickly coming to an end Ayusa’s local staff is busy looking for families for students for the 2012-2013 school year. The December 9th concert, “Christmas around the World,” was the nineteenth year that the congregations of Epiphany of the Lord Catholic Church and the Katy Stake of The Church of Jesus Christ of Latter-day Saints have combined for a Christmas concert. The collaboration began in 1994, at the invitation of Father Jack Dinkins, when new neighbors, the Katy Stake Center, was built across the street. This year’s choir was made up of 120 voices from both congregations, with the addition of a children’s choir of nearly 100, plus Epiphany’s small Contemporary Choir, as well as a community orchestra. The theme of the evening was introduced with flags from many countries being marched in while the congregation joined the choir for “O Come All Ye Faithful.” The Christmas music of

There were several highlights. The Latin “O Magnum Mysterium,” gave the impression of a cappella beauty resonating in a Roman cathedral. “O Holy Night,” with the choir backing up Debbie Siebert’s soprano solo, brought audience members the Christmas glory they were hoping to feel. “Silent Night,” sung simply to guitar, as it was originally written, was essential. The two choirs and any who join them from the community, plan to continue the tradition for years to come, with next year marking two decades of singing together. Epiphany includes about 2,500 members in and around Katy. The Katy Stake includes 10 congregations in and around Katy, as well as north to Bear Creek and Copperfield areas and west into Austin County and beyond.
