FLOWERS • Plants to set: Alyssum, Calendula, Canterbury Bells, Carnations, Columbine, Cornflower. Daisies, Delphinium, Hollyhock, Larkspur, Lobelia, Nicotiana, Pansy, Petunia, Phlox (Louisiana), Shrimp Plant, Snapdragon, Stock and Verbena. VEGETABLES • Plant beets, broccoli (plants), brussel sprouts (plants), cabbage (plants), carrots, cauliflower (plants), celery, chinese cabbage (plants), chives collards (plants), endive, kale, lettuce (leaf and head), mustard, onions (plants), parsley, garden peas, radishes, rutabagas, spinach, tomato (seeds) and turnips. TREES AND SHRUBS • Finish all transplanting, get everything in the ground for a good spring spurt of growth. Transplant balled and burlap, containergrown, bare-root deciduous evergreen trees, shrubs, roses and vines while still dormant. • Finish pruning roses. Weed and cultivate lightly all beds. Replenish mulch as needed. • Control early spring insects like thrips on glads and aphids on young tender growth. Spray with Malathion, Diazinon or Orthene. • At the end of February: peach, apple and pear fruit must be thinned to insure quality production at harvest. • Give groundcovers a haircut. They will spread faster. • Divide daylilies, daisies and other perennials now.

HOW TO CELEBRATE VALENTINE’S DAY ON A BUDGET

Step 1 - For your kids. Do what you can to make this day special, especially if it falls on a weekday. Cut red hearts out of construction paper and cover your child’s door with them, creating a “Heart Attack.” Or, leave clues on the paper hearts for a scavenger hunt around the house, ending up in the kitchen with pink pancakes for breakfast. Tuck a handmade Valentine in their backpack or lunch to discover at school. Give your kids an “I Love You” coupon book with cool trade-ins for a “Get out of chores free” card or a “Stay up 1/2 hour later” coupon. Step 2 - For your kids’ classroom party. The dollar store is a wonderful place to purchase holiday-related items. Rather than pick up a pack of plain old paper punch-out Valentines, try something different. Buy a few packs of themed pencils or erasers (usually sold in packs of 8 or 12) to pass out. Look for inexpensive Valentine candies to contribute or volunteer to coordinate the games, which is often much less expensive than distributing treats. Step 3 - For work. Most workplaces have some sort of treat table on Valentine’s Day. Do your part by bringing treats that you can make at home that are inexpensive yet plentiful. Try making marshmallow rice cereal treats or cake mix cookies instead of swinging by the bakery to buy expensive goodies frosted in red and white. Another option is to volunteer to bring the napkins, plates or cups for the office snack table. Often these items can be purchased for less than the cost of treats and you are still contributing. If your workplace is having an actual party, volunteer for the games and contribute your creativity instead of food. Step 4 - For your spouse/loved one. Actions and words can convey much more to a loving spouse than expensive jewelry and fancy dinners. Tuck a love note into their jacket pocket, purse or lunch bag for them to find. Gifts can be inexpensive and meaningful without costing a lot. Purchase a new book by their favorite author with a coupon for a lazy uninterrupted afternoon for reading. Give them some bubble bath with the promise of a full hour in the tub, alone. A CD mix of their favorite tunes or an assortment of love songs will be a sweet and thoughtful gift as well. Write a love note written from the heart. Let your spouse/loved one know how much you appreciate all they do and how attractive you find them. Write anything else that is special and tender between you.

INGREDIENTS: 1 1/2 cups vanilla wafer crumbs 1/2 cup confectioners’ sugar 1/3 cup unsweetened cocoa powder 1/3 cup butter, softened 2 cups semi-sweet chocolate chips 3 (8 ounce) packages cream cheese 1 (14 ounce) can sweetened condensed milk 4 eggs 2 teaspoons vanilla extract

DIRECTIONS: Preheat oven to 300 degrees F (150 degrees C). In a large mixing bowl, mix together crushed vanilla wafers, confectioners’ sugar, cocoa and butter or margarine by hand. Press ingredients into a 9 inch springform pan. In the top of a double boiler, melt the chocolate chips, making sure that they are very smooth. In a large bowl, beat cream cheese until fluffy with an electric mixer. Gradually beat in condensed milk until smooth. Mix in melted chocolate, eggs and vanilla. Beat with electric mixer on low speed until the ingredients are thoroughly blended. Pour the filling into the prepared crust. Bake at 300 degrees F (150 degrees C) for 55 minutes. The cake will seem under-baked in the center, but will continue to cook after you remove it from the oven. Source: allrecipes.com, Submitted by: Macs

RECIPES Fudge Truffle Cheesecake

French Butter Cakes (Madeleines)

INGREDIENTS: 2 eggs 3/4 teaspoon vanilla extract 1/8 teaspoon salt 1/3 cup white sugar 1/2 cup all-purpose flour 1 tablespoon lemon zest 1/4 cup butter 1/3 cup granulated sugar for decoration

DIRECTIONS: Preheat oven to 375 degrees F (190 degrees C). Butter and flour 12 (3 inch) madeleine molds; set aside. Melt butter and let cool to room temperature. In a small mixing bowl, beat eggs, vanilla and salt at high speed until light. Beating constantly, gradually add sugar and continue beating at high speed until mixture is thick and pale and ribbons form in bowl when beaters are lifted, 5 to 10 minutes. Sift flour into egg mixture 1/3 at a time, gently folding after each addition. Add lemon zest and pour melted butter around edge of batter. Quickly but gently fold butter into batter. Spoon batter into molds; it will mound slightly above tops. Bake 14 to 17 minutes, or until cakes are golden and the tops spring back when gently pressed with your fingertip. Use the tip of the knife to loosen madeleines from pan; invert onto rack. Immediately sprinkle warm cookies with granulated sugar. Madeleines are best eaten the day they’re baked. Leftover madeleines are wonderful when dunked into coffee or tea. Variation: Chocolate Madeleines: Omit lemon zest. Increase sugar to 1/2 cup. Substitute 1/4 cup unsweetened cocoa powder for 2 tablespoons of the flour; sift into batter with flour. EDITOR’S NOTE: If you do not have a Madeleine mold pan, you can use mini muffins pan or whoopee mold pan instead. For graduating seniors from Fort Bend County public high schools, The George Foundation has established a financial-need based scholarship program administered by Scholarship Management Services, a department of Scholarship America. Scholarships in the amount of $20,000, awarded $5,000 per year, are renewable for up to four years for full-time students attending an accredited twoor four-year public Texas institution of higher learning. As posted on the Texas Education Agency’s website: “Deferring the 15 percent rule for this school year relieves some of the pressure being felt in Texas districts as we continue the transition to a more rigorous accountability system,” Williams said. “This deferral also allows the Texas Legislature ample opportunity to address the various issues and concerns that have been expressed about implementation of the new system.” On Nov. 29th, Williams received letters from Gov. Rick Perry, Lt. Gov. David Dewhurst and Senate Education Committee Chair Dan Patrick urging deferral of the 15 percent rule. All three state leaders noted the rule would be an issue that would be discussed during the upcoming legislative session. Texas Commissioner of Education Michael Williams announced today that he will again defer the requirement that states that STAAR end-of-course examinations be counted as 15 percent of a student’s final grade in each subject tested. With this announcement, local school districts have the option to move forward with the 15 percent rule for the 2012 - 2013 academic year. Last year, Katy ISD opted to participate in the deferral as the district adjusted to the rigor of the new STAAR test. “Katy ISD will again participate in the deferral, as we feel that this will allow both students and teachers an opportunity to better understand

“Changing Acorns to Oaks” is the theme at Texas Christian School this fall, as well as the title of their annual school wide play this past November. Families and community members enjoyed an eventful evening at the farm where Jr. High and High School students played key roles and students 2 years old – 12th grade sang songs. This fun filled evening will be remembered for years by the class of 2013 as they gave the audience quite a laugh in their roles. Upward Baseball - T-Ball, Kid & Coach Pitch at Bear Creek Baptist

We would like to invite children from 4 yrs (as of Sept. 1, 2012) to 5th grade to join us as we enjoy another season of T-Ball, Kid & Coach Pitch. We look forward to teaching your children the skills and watching them enhance their abilities. We will offer several evaluation days so we can check on their skills so we can even out the teams. The dates for these are February 25th, 26th and 28th, between 5:00 PM - 6:30 PM. Also, on March 2nd at 10:00 AM - 12:00 noon. It only takes a few minutes for us to run them through the drills and then we will contact each player about practices. After March 4th, we cannot guarantee a place on a team. They will practice for one hour a week on a Monday, Tuesday or Thursday. Practices begin the week of March 18th and the league runs through May 18th. The cost will be $75. The 2013 Katy ISD FFA Livestock Show and Rodeo

It made history in 1943 as the first of its kind to be established on a local school level and now the Katy Rodeo has grown to encompass three nights of rodeo entertainment for the whole family. 70 years later, the Katy Rodeo is one of the few remaining youth and professional rodeos still supporting FFA. In conjunction with the annual Katy ISD livestock show, the Katy Rodeo is an event that supports agricultural education within the Katy Independent School District. The livestock show, rodeo, carnival and parade draw sold out crowds from Katy and many of the surrounding areas.

The Katy Rodeo has something for all ages. The Katy Cowgirl Mounted Drill Team opens each night’s performance while a Katy ISD student performs the national anthem. The rodeo consists of all pro events including Bareback and Saddle Bronc, Steer Wrestling, Ladies Breakaway, Calf and Team Roping, Bull Riding and Barrel Racing while allowing the Katy youth to participate in junior Calf Roping and junior Barrel Racing. The young children can also participate in the rodeo events by joining the Stick Horse race or the ever-popular Mutton Bustin’. The KISD FFA students have a chance to compete in the “ever popular” Calf Scramble. The carnival also delights spectators of all ages, as well as the annual Saturday Morning Parade. The 2013 Katy ISD FFA Livestock Show and Rodeo kicks off its historic 70th year on Thursday, February 21st and runs through Saturday, February 23rd. Hosting a foreign exchange student is easier than you may think

During the 2012-2013 school year, students from all across the world will have the opportunity to travel to Houston and surrounding communities to spend the entire school year in the United States, learning and working with American Families. In order for the students to come to the U.S. they must have proper host families lined up. Now is a crucial time of year for the Ayusa program as local staff coordinators to find local host families for the upcoming school year. The Ayusa program is celebrating its 30th year this year and is responsible for more than 60,000 students from 75 different countries spending the school year in the United States. There are not many strict requirements that need to be met to host a student. The most important thing is that those who host students are doing so for the right reason; providing a loving experience and an exposure to American culture. There are a few basic requirements, of course. Anyone older than 25 and can provide food and shelter for a student fulfills the requirements of being a host family. There is a background check, reference check and an interview. Background checks have to be done on everyone over 18 living in the home. The host families have to be interested in it for the right reasons, the cultural exchange of learning from them and them learning from us. It’s the language, the cooking, the music, the food. The host family has to be genuinely interested. Once the host families and students are matched, Ayusa stays involved by monthly contacts with the families, students and quarterly contacts with the schools. Ayusa coordinators also handle the host family orientations and the student orientations. Group activities, such as community service and seeing things with the group of exchange students is also arrange throughout their academic year. New Creation Church now blends Lutheran Worship and Contemporary Praise

Everyone is welcome to New Creation’s Grand Opening on Sunday, February 10th at the Irene Stern Community Center in Fulshear. The services are a blend of Lutheran worship and contemporary praise with Holy Communion offered at 10 am. The worship leader, Josh Pack, will make you feel at home and inspire your worship. Fat Tuesday marks the end of Mardi Gras and the beginning of the Christian season of Lent. Many traditions celebrate Fat Tuesday with the eating of pancakes, giving the occasion the name ‘Pancake Tuesday’ or ‘Pancake Day.’ Pancakes contain flour, eggs and sugar, which were once forbidden rich foods during Lent. Katy Churches Combine to Celebrate Christmas around the World

The December 9th concert, “Christmas around the World,” was the nineteenth year that the congregations of Epiphany of the Lord Catholic Church and the Katy Stake of The Church of Jesus Christ Oak Park Trails

of Latter-day Saints have combined for a Christmas concert. The collaboration began in 1994, at the invitation of Father Jack Dinkins, when new neighbors, the Katy Stake Center, was built across the street. This year’s choir was made up of 120 voices from both congregations, with the addition of a children’s choir of nearly 100, plus Epiphany’s small Contemporary Choir, as well as a community orchestra. The theme of the evening was introduced with flags from many countries being marched in while the congregation joined the choir for “O Come All Ye Faithful.” The Christmas music of the concert came from many nations: Italy, West Indies, Ireland, France, Ukraine, Spain, Switzerland, Germany, Austria, Philippines and Africa, as well as some English and American traditional tunes. There were several highlights. The Latin “O Magnum Mysterium,” gave the impression of a cappella beauty resonating in a Roman cathedral. “O Holy Night,” with the choir backing up Debbie Siebert’s soprano solo, brought audience members the Christmas glory they were hoping to feel. “Silent Night,” sung simply to guitar, as it was originally written, was essential. The two choirs and any who join them from the community, plan to continue the tradition for years to come, with next year marking two decades of singing together. Epiphany includes about 2,500 members in and around Katy. The Katy Stake includes 10 congregations in and around Katy, as well as north to Bear Creek and Copperfield areas and west into Austin County and beyond.
