Neighborhood/Crime Watch We can all participate in our Neighborhood/Crime Watch! It is easy! It’s about neighbors looking out for each other. When suspecting criminal activities, you are encouraged to contact the police and not to intervene. Call Fort Bend Sheriff at 281-3414665. An alert and supportive neighborhood is the greatest single defense against crime. By getting to know your neighbors and their vehicles, you will most likely be aware of suspicious people, vehicles and/or sounds that could indicate criminal activity. Be a good neighbor. Report suspicious activity to the police and send an email alert to parkwaylakescommunity@inbox.com so that it can be shared with our neighbors. Some neighbors are interested in organizing a neighborhood watch. We need a Co-chair and committee members. Please let us know you are interested!

Celebrate Mardi Gras!

Translated from the French, Mardi Gras means “Fat Tuesday.” In short, it’s the last day before the traditional Catholic Lenten fasting season leading up to Easter Sunday. For those cities that celebrate it - most famously New Orleans, Louisiana - Mardi Gras means feasts, multiple parades, elaborate costumes and parties. Mardi Gras Origin Some scholars trace Mardi Gras’ roots to the ancient Roman Lupercalia festival, which was held in mid-February. Like many other pagan holidays, early Church leaders incorporated elements of the celebration into the new faith rather than risk alienating converted followers. As Catholicism spread across Europe, so did the Mardi Gras celebration. Mardi Gras Comes to America By the Middle Ages, Mardi Gras or “Carnival,” had become a major holiday in France and early French explorers brought the tradition to the New World when establishing settlements in their explorations of the Mississippi River. With its strong French roots, New Orleans naturally evolved into one of the premier Mardi Gras destinations in the world. Mardi Gras: The Religious roots The Mardi Gras kicks off on the Epiphany, twelve days after Christmas on January 6th, also known as Twelfth Night or Three Kings Day, celebrating the arrival of the three wise men and their gifts to the baby Jesus. The season ends promptly at midnight on Fat Tuesday, the day before Ash Wednesday, the beginning of Lent. What’s in a name: Eating a calf The name “Fat Tuesday” comes from the tradition of eating a slaughtered calf on the final day of Carnival. These days, though, that definition has expanded to include feasting on pretty much any rich fatty food.

Mardi Gras Around the world Mardi Gras or Carnival is celebrated in many cities around the world besides New Orleans, including Montreal, Quebec, Canada; Nice, France and Rio de Janeiro, Brazil. But many small towns and municipalities celebrate Mardi Gras as well, including the tiny community of Rubonia, Florida. The Universal Studios Florida theme park also throws a Mardi Gras celebration on weeknights from February to April, featuring parades and concerts by national acts.

HAPPY VALENTINE’S DAY! THE STORY OF CUPID Cupid is the most famous of Valentine symbols and everybody knows about the boy as a mischievous, winged child, armed with bow and arrows. The arrows signify desires and emotions of love and Cupid aims those arrows at humans, causing them to fall deeply in love. Cupid has always played a role in the celebrations of love and lovers. In ancient Greece, he was known as Eros, the young son of Aphrodite, the goddess of love and beauty. To the Roman’s, he was Cupid and his mother was Venus.

There is a very interesting story about Cupid and his mortal bride Psyche in Roman mythology. Venus was jealous of the beauty of Psyche and ordered Cupid to punish the mortal. But instead, Cupid fell deeply in love with her. He took her as his wife, but as a mortal, she was forbidden to look at him. Psyche was happy until her sisters persuaded her to look at Cupid, as soon as Psyche looked at Cupid, Cupid punished her by leaving her. Their lovely castle and gardens vanished, too. Psyche found herself alone in an open field with no signs of other beings or Cupid. She wandered trying to find her love, until she came upon the temple of Venus. Wishing to destroy her, the goddess of love gave Psyche a series of tasks, each harder and more dangerous than the last. For her last task, Psyche was given a little box and told to take it to the underworld. She was told to get some of the beauty of Proserpine, the wife of Pluto and put it in the box. During her trip, she was given tips on avoiding the dangers of the realm of the dead. She was also warned not to open the box. But Temptation overcame Psyche and she opened the box. But instead of finding beauty, she found deadly slumber. Cupid found her lifeless on the ground. He gathered the deadly sleep from her body and put it back in the box. Cupid forgave her, as did Venus. The gods, moved by Psyche’s love for Cupid, made her a goddess. Today, Cupid and his arrows have become the most popular of love signs. And two hearts pierced by an arrow, Cupid’s arrow, most frequently depict love.

THE FIRST WRITTEN VALENTINES Verbal and singing valentines began to be replaced by written missives in Europe in the 15th century. The first written valentine is usually attributed to the imprisoned Charles, Duke of Orleans, in 1415. He reportedly passed the time by writing romantic verses for his wife. By the 16th century, written valentines were commonplace. What were early valentines like? Early valentines were made by hand, using colored paper, watercolors and colored inks. These valentine styles, some still made today, included: • Pinprick valentines - Made by pricking tiny holes in paper with a pin to resemble the look of lace. • Cutout valentines - Lace-look cards made by folding paper several times and cutting out a lace design with small, sharp scissors. • Acrostic valentines - Verses in which the first letters in the lines spelled out the beloved’s name. • Rebus valentines - Verses in which small pictures took the place of some of the words (for example, an eye instead of I). • Cards decorated with black and white pictures painted by factory workers began to be created in the early 1800s; by the end of the century, valentines were being made entirely by machine. Sociologists theorize that printed cards began to take the place of letters,

particularly in Great Britain, because they were an easy way for people to express their feelings in a time when direct expression of emotions was not fashionable. Manufactured cards notwithstanding, increasingly beautiful handmade Valentines were often small works of art, richly decorated with silk, satin or lace, flowers or feathers and even gold leaf. Many featured Cupid, the cherubic, be-winged son of Venus and a natural Valentine’s Day “mascot.” Some of the more unusual valentines were created by lonely sailors during the Victorian era - they used seashells of various sizes to create hearts, flowers and other designs or to cover heart-shaped boxes.

FIRST COMMERCIAL VALENTINE’S DAY Esther Howland, the woman who produced the first commercial American valentine in the 1840’s, sold a then mind-boggling $5,000 in cards during her first year of business. The valentine industry in the United States has been booming ever since. Today, over 1 billion valentine cards are sent in this country each year - second in number only to Christmas cards, according to the Greeting Card Association. (The happy day is also celebrated in Canada, Mexico, the United Kingdom, France and Australia.) Around 85% of all valentines are purchased by women. In addition to cards, there are millions of boxes of chocolates and bouquets of roses purchased (mostly by men) for the February 14th holiday.

ORIGINS OF THE DAY OF LOVE The origins of Valentine’s Day are shrouded in mystery. According to University of Notre Dame Professor Lawrence Cunningham, scholars have two main theories to explain how February 14th became synonymous with romance: Roman Feast of Lupercalia - This ancient pagan fertility celebration, which honored Juno, queen of the Roman gods and goddesses and goddess of women and marriage, was held on February 14th, the day before the feast began. During festival time, women would write love letters, also known as billets and leave them in a large urn. The men of Rome would then draw a note from the urn and ardently pursue the woman who wrote the message they had chosen. (Apparently, the custom of lottery drawings to select valentines continued into the 18th century, coming to an end when people decided they’d rather choose - sight seen - their valentines.) The Birds and the Bees? - In the Middle Ages, people began to send love letters on Valentine’s Day. Medieval Europeans believed that birds began to mate on February 14th. There’s also some controversy regarding Saint Valentine, for whom the famous day is named. Archaeologists, who unearthed a Roman catacomb and an ancient church dedicated to St. Valentine, are not sure if there was one Valentine or more. Today, the Catholic Church recognizes at least three different saints named Valentine or Valentinus, all of whom were martyred on February 14th - at least two of those in Italy during the 3rd century. The most popular candidate for St. Valentine was a 3rd century Roman priest who practiced Christianity and performed secret marriages against direct orders from Emperor Claudius II, who believed single soldiers were more likely to join his army. Legend has it that Valentine sent a friend (the jailer’s daughter) a note signed “From Your Valentine” before he was executed on February 14th in 270 A.D. (That phrase is still used prominently on today’s cards!). Early Christians were happier with the idea of a holiday honoring the saint of romantic causes than with one recognizing a pagan festival. In 496 A.D., Pope Gelasius named February 14th in honor of St. Valentine as the patron saint of lovers. In 1969, Pope Paul VI dropped it from the calendar. However, the blend of Roman festival and Christian martyrdom had caught on, and Valentine’s Day was here to stay.

HOW TO CELEBRATE VALENTINE’S DAY ON A BUDGET

Step 1 For your kids. Do what you can to make this day special, especially if it falls on a weekday. Cut red hearts out of construction paper and cover your child’s door with them, creating a “Heart Attack.” Or, leave clues on the paper hearts for a scavenger hunt around the house, ending up in the kitchen with pink pancakes for breakfast. Tuck a handmade Valentine in their backpack or lunch to discover at school. Give your kids an “I Love You” coupon book with cool trade-ins for a “Get out of chores free” card or a “Stay up 1/2 hour later” coupon. Step 2 For your kids’ classroom party. The dollar store is a wonderful place to purchase holiday-related items. Rather than pick up a pack of plain old paper punch-out Valentines, try something different. Buy a few packs of themed pencils or erasers (usually sold in packs of 8 or 12) to pass out. Look for inexpensive Valentine candies to contribute or volunteer to coordinate the games, which is often much less expensive than distributing treats. Step 3 For work. Most workplaces have some sort of treat table on Valentine’s Day. Do your part by bringing treats that you can make at home that are inexpensive yet plentiful. Try making marshmallow rice cereal treats or cake mix cookies instead of swinging by the bakery to buy expensive goodies frosted in red and white. Another option is to volunteer to bring the napkins, plates or cups for the office snack table. Often these items can be purchased for less than the cost of treats and you are still contributing. If your workplace is having an actual party, volunteer for the games and contribute your creativity instead of food. Step 4 For your spouse/loved one. Actions and words can convey much more to a loving spouse than expensive jewelry and fancy dinners. Tuck a love note into their jacket pocket, purse or lunch bag for them to find. Gifts can be inexpensive and meaningful without costing a lot. Purchase a new book by their favorite author with a coupon for a lazy uninterrupted afternoon for reading. Give them some bubble bath with the promise of a full hour in the tub, alone. A CD mix of their favorite tunes or an assortment of love songs will be a sweet and thoughtful gift as well. Write a love note written from the heart. Let your spouse/loved one know how much you appreciate all they do and how attractive you find them. Write anything else that is special and tender between you.

GEORGE FOUNDATION HIGH SCHOOL SCHOLARSHIPS NOW AVAILABLE FOR GRADUATING SENIORS For graduating seniors from Fort Bend County public high schools, The George Foundation has established a financial-need based scholarship program administered by Scholarship Management Services, a department of Scholarship America. Scholarships in the amount of $20,000, awarded $5,000 per year, are renewable for up to four years for full-time students attending an accredited two-or four-year public Texas institution of higher learning. STAAR SCORES WILL NOT AFFECT COURSE GRADES FOR 2012 - 2013 Texas Commissioner of Education Michael Williams announced today that he will again defer the requirement that states that STAAR end-of-course examinations be counted as 15 percent of a student’s

final grade in each subject tested. With this announcement, local school districts have the option to move forward with the 15 percent rule for the 2012 - 2013 academic year. Last year, Katy ISD opted to participate in the deferral as the district adjusted to the rigor of the new STAAR test. “Katy ISD will again participate in the deferral, as we feel that this will allow both students and teachers an opportunity to better understand STAAR, while focusing on the subject matter and not just a final test score,” said Dr. Christine Caskey, Katy ISD Chief Academic Officer. As posted on the Texas Education Agency’s website: “Deferring the 15 percent rule for this school year relieves some of the pressure being felt in Texas districts as we continue the transition to a more rigorous accountability system,” Williams said. “This deferral also allows the Texas Legislature ample opportunity to address the various issues and concerns that have been expressed about implementation of the new system.”

Family Reading Club – Through March 2 nd

This six-week program is designed to encourage families to read, learn and have fun together. All Fort Bend County families are eligible to participate. Families who read 36 books or 6 hours - 6 books per week or 60 minutes per week - will be entered into a drawing for a $50 dining gift card, donated by the Friends of the Library. Each branch library will have a drawing for the gift card on March 4th. A single registration is required for each participating family. An adult (parent or guardian) is asked to register the family online by going to the library’s website (www.fortbend.lib.tx.us) and clicking on the “Family Reading Club Sign-Up” image, which became available January 19th. Families may also register at one of the libraries in the Fort Bend County library system. Upon registering, families will then have their own online page on which to record their books or reading time. There is no charge to join the Family Reading Club. RUOK Program Fort Bend County Sheriff’s Dept. has a computer-generated program called “Are You OK?” (RUOK). It is a computer-generated call intended for senior citizens (over 55) and disabled persons who live alone and could benefit from a daily check. A computer will generate a call each morning, at about the same time and the participant chooses a time frame. A voice will ask, “Are you OK?” After this, all they have to do is hang up the phone. If the participant goes out of town or leaves the residence for any time, you just temporarily un-subscribe and re-subscribe when you return. If the call goes unanswered, the computer will call back 3 times at 15-minute intervals. If there is still no answer, the sheriff will dispatch a deputy or the local police. They will have with them a print out of information on the person that is not responding to the calls. This program was established by FBC Sheriff Milton Wright, Commissioner’s Court and Ken Whitt (FBC Sheriff’s Citizens Academy Alumni Assoc.) in 1998. Many police chiefs in the county are also participating in the program and will proceed with the welfare check for citizens of their community. The 2013 Katy ISD FFA Livestock Show and Rodeo It made history in 1943 as the first of its kind to be established on a local school level and now the Katy Rodeo has grown to encompass three nights of rodeo entertainment for the whole family. 70 years later, the Katy Rodeo is one of the few remaining youth and professional rodeos still supporting FFA. In conjunction with the annual Katy ISD livestock show, the Katy Rodeo is an event that supports agricultural education within the Katy Independent School District. The livestock show, rodeo, carnival and parade draw sold out crowds from Katy and many of the surrounding areas. The Katy Rodeo has something for all ages. The Katy Cowgirl Mounted Drill Team opens each night’s performance while a Katy ISD student performs the national anthem. The rodeo consists of all pro events including Bareback and Saddle Bronc, Steer Wrestling, Ladies Breakaway, Calf and Team Roping, Bull Riding and Barrel Racing while allowing the Katy youth to participate in junior Calf Roping and junior Barrel Racing.

The Ayusa program is celebrating its 30th year this year and is responsible for more than 60,000 students from 75 different countries spending the school year in the United States.

There are not many strict requirements that need to be met to host a student. The most important thing is that those who host students are doing so for the right reason; providing a loving experience and an exposure to American culture. There are a few basic requirements, of course. Anyone older than 25 and can provide food and shelter for a student fulfills the requirements of being a host family. There is a background check, reference check and an interview. Background checks have to be done on everyone over 18 living in the home. The host families have to be interested in it for the right reasons, the cultural exchange of learning from them and them learning from us. It’s the language, the cooking, the music, the food. The host family has to be genuinely interested. Once the host families and students are matched, Ayusa stays involved by monthly contacts with the families, students and quarterly contacts with the schools. Ayusa coordinators also handle the host family orientations and the student orientations. Group activities, such as community service and seeing things with the group of exchange students is also arrange throughout their academic year. With the current school year quickly coming to an end Ayusa’s local staff is busy looking for families for students for the 2012-2013 school year. Many families are needed and with the schools having deadlines and limits for foreign exchange students the earlier the better. It also gives the families and students time to get to know each other via skype, facebook, etc. while waiting for their year abroad to start. Make Your Fat Tuesday Phat with New Creation Church! Fat Tuesday marks the end of Mardi Gras and the beginning of the Christian season of Lent. Many traditions celebrate Fat Tuesday with the eating of pancakes, giving the occasion the name ‘Pancake Tuesday’ or ‘Pancake Day.’ Pancakes contain flour, eggs and sugar, which were once forbidden rich foods during Lent. New Creation Church is reviving the old tradition of serving pancakes on Fat Tuesday with a Katy/Fulshear Community Pancake Supper. The public is invited to join us on Tuesday, February 12th, from 5 -7 PM at the Irene Stern Community Center for pancakes and the trimmings! A free will offering will be accepted. Carlos Vasquez, an Executive Sous Chef at the Hyatt Regency Houston, will head the kitchen staff. When asked to volunteer he replied, “Pancakes are too simple! I’ll have to add something special. The December 9th concert, “Christmas around the World,” was the nineteenth year that the congregations of Epiphany of the Lord Catholic Church and the Katy Stake of The Church of Jesus Christ of Latter-day Saints have combined for a Christmas concert. The collaboration began in 1994, at the invitation of Father Jack Dinkins, when new neighbors, the Katy Stake Center, was built across the street. This year’s choir was made up of 120 voices from both congregations, with the addition of a children’s choir of nearly 100, plus Epiphany’s small Contemporary Choir, as well as a community orchestra. The theme of the evening was introduced with flags from many countries being marched in while the congregation joined the choir for “O Come All Ye Faithful.” The Christmas music of the concert came from many nations: Italy, West Indies, Ireland, France, Ukraine,

Spain, Switzerland, Germany, Austria, Philippines and Africa, as well as some English and American traditional tunes. There were several highlights. The Latin “O Magnum Mysterium,” gave the impression of a cappella beauty resonating in a Roman cathedral. “O Holy Night,” with the choir backing up Debbie Siebert’s soprano solo, brought audience members the Christmas glory they were hoping to feel. “Silent Night,” sung simply to guitar, as it was originally written, was essential. The two choirs and any who join them from the community, plan to continue the tradition for years to come, with next year marking two decades of singing together. Epiphany includes about 2,500 members in and around Katy. The Katy Stake includes 10 congregations in and around Katy, as well as north to Bear Creek and Copperfield areas and west into Austin County and beyond.

Ingredients 2 packages (8-1/2 ounces each) corn bread/muffin mix 1 medium onion, chopped 2 cups (8 ounces) shredded cheddar cheese 1 can (14-3/4 ounces) cream-style corn 1-1/2 cups (12 ounces) sour cream 4 eggs, lightly beaten 1 can (4 ounces) chopped green chilies 1/3 cup canola oil 1 tablespoon finely chopped jalapeno pepper Directions In a large bowl, combine corn bread mix and onion. Combine the remaining ingredients; add to the corn bread mixture just until moistened. Pour into a greased 13-in. x 9-in. baking dish. Bake at 350° for 50-55 minutes or until lightly browned and the edges pull away from sides of pan and a toothpick inserted near the center comes out clean. Serve warm. Refrigerate leftovers.

Fiesta Turkey Tortilla Soup Recipe by Taste of Home Prep/Total Time: 25 min. Yield: 8 Servings

Ingredients 4 cans (14-1/2 ounces each) chicken broth 3 cups shredded cooked turkey or rotisserie chicken 1 can (15 ounces) black beans, rinsed and drained 1 can (15-1/4 ounces) whole kernel corn, drained 1/2 cup medium salsa 5 corn tortillas (6 inches), cut into 1/4-inch strips 1/4 cup chopped fresh cilantro Additional salsa, optional Directions In a Dutch oven, combine the first five ingredients; bring to a boil. Reduce heat; simmer for 10 minutes, stirring occasionally. Meanwhile, spread tortilla strips in a single layer on a baking sheet. Bake at 400° 4-6 minutes or until golden brown and crisp. Stir cilantro into soup. Top servings with tortilla strips. If desired, serve with additional salsa. Yield: 8 servings.
