FLOWERS • Plants to set: Alyssum, Calendula, Canterbury Bells, Carnations, Columbine, Cornflower. Daisies, Delphinium, Hollyhock, Larkspur, Lobelia, Nicotiana, Pansy, Petunia, Phlox (Louisiana), Shrimp Plant, Snapdragon, Stock and Verbena. VEGETABLES • Plant beets, broccoli (plants), Brussel sprouts (plants), cabbage (plants), carrots, cauliflower (plants), celery, Chinese cabbage (plants), chives collards (plants), endive, kale, lettuce (leaf and head), mustard, onions (plants), parsley, garden peas, radishes, rutabagas, spinach, tomato (seeds) and turnips. TREES AND SHRUBS • Finish all transplanting, get everything in the ground for a good spring spurt of growth. Transplant balled and burlap, containergrown, bare-root deciduous evergreen trees, shrubs, roses and vines while still dormant. • Finish pruning roses. Weed and cultivate lightly all beds. Replenish mulch as needed. • Control early spring insects like thrips on glads and aphids on young tender growth. Spray with Malathion, Diazinon or Orthene. • At the end of February: peach, apple and pear fruit must be thinned to insure quality production at harvest. • Give groundcovers a haircut. They will spread faster. • Divide daylilies, daisies and other perennials now.

The origins of Valentine’s Day are shrouded in mystery. According to University of Notre Dame Professor Lawrence Cunningham, scholars have two main theories to explain how February 14th became synonymous with romance:
You probably thought that President’s Day was just to celebrate George Washington’s and Abraham Lincoln’s birthdays. But really, it’s a day set aside to honor each of our presidents. Here are a few presidential facts for you...
Roman Feast of Lupercalia - This ancient pagan fertility celebration, which honored Juno, queen of the Roman gods and goddesses and goddess of women and marriage, was held on February 14th, the day before the feast began. During festival time, women would write love letters, also known as billets and leave them in a large urn. The men of Rome would then draw a note from the urn and ardently pursue the woman who wrote the message they had chosen. (Apparently, the custom of lottery drawings to select valentines continued into the 18th century, coming to an end when people decided they’d rather choose - sight seen - their valentines.)
• Until he was 19, George Washington celebrated his birthday on February 11th. But when the British parliament replaced the Julian calendar with the Gregorian, his birthday fell 11 days later: February 22nd. • Has there ever been a White House without a First Lady? Yes, James Buchanan (1857-1861) was a lifelong bachelor. • The presidents carved on Mount Rushmore were chosen to represent the nation’s founding (Washington), its political philosophy (Jefferson), its preservation (Lincoln) and its expansion and conservation (Teddy Roosevelt).
The Birds and the Bees? - In the Middle Ages, people began to send love letters on Valentine’s Day. Medieval Europeans believed that birds began to mate on February 14th. There’s also some controversy regarding Saint Valentine, for whom the famous day is named. Archaeologists, who unearthed a Roman catacomb and an ancient church dedicated to St. Valentine, are not sure if there was one Valentine or more. Today, the Catholic Church recognizes at least three different saints named Valentine or Valentinus, all of whom were martyred on February 14th - at least two of those in Italy during the 3rd century. The most popular candidate for St. Valentine was a 3rd century Roman priest who practiced Christianity and performed secret marriages against direct orders from Emperor Claudius II, who believed single soldiers were more likely to join his army. Legend has it that Valentine sent a friend (the jailer’s daughter) a note signed “From Your Valentine” before he was executed on February 14th in 270 A.D. (That phrase is still used prominently on today’s cards!). Early Christians were happier with the idea of a holiday honoring the saint of romantic causes than with one recognizing a pagan festival. In 496 A.D., Pope Gelasius named February 14th in honor of St. Valentine as the patron saint of lovers. In 1969, Pope Paul VI dropped it from the calendar. However, the blend of Roman festival and Christian martyrdom had caught on, and Valentine’s Day was here to stay.

Step 3 For work. Most workplaces have some sort of treat table on Valentine’s Day. Do your part by bringing treats that you can make at home that are inexpensive yet plentiful. Try making marshmallow rice cereal treats or cake mix cookies instead of swinging by the bakery to buy expensive goodies frosted in red and white. Another option is to volunteer to bring the napkins, plates or cups for the office snack table. Often these items can be purchased for less than the cost of treats and you are still contributing. If your workplace is having an actual party, volunteer for the games and contribute your creativity instead of food.
There is a very interesting story about Cupid and his mortal bride Psyche in Roman mythology. Venus was jealous of the beauty of Psyche and ordered Cupid to punish the mortal. But instead, Cupid fell deeply in love with her. He took her as his wife, but as a mortal, she was forbidden to look at him.
Step 4 For your spouse/loved one. Actions and words can convey much more to a loving spouse than expensive jewelry and fancy dinners. Tuck a love note into their jacket pocket, purse or lunch bag for them to find. Gifts can be inexpensive and meaningful without costing a lot. Psyche was happy until her sisters persuaded her to look at Cupid, as soon as Psyche looked at Cupid, Cupid punished her by leaving her. Their lovely castle and gardens vanished, too. Psyche found herself alone in an open field with no signs of other beings or Cupid. She wandered trying to find her love, until she came upon the temple of Venus. Wishing to destroy her, the goddess of love gave Psyche a series of tasks, each harder and more dangerous than the last. For her last task, Psyche was given a little box and told to take it to the underworld. She was told to get some of the beauty of Proserpine, the wife of Pluto and put it in the box. During her trip, she was given tips on avoiding the dangers of the realm of the dead. She was also warned not to open the box. But Temptation overcame Psyche and she opened the box. But instead of finding beauty, she found deadly slumber. Cupid found her lifeless on the ground. He gathered the deadly sleep from her body and put it back in the box. Cupid forgave her, as did Venus. The gods, moved by Psyche’s love for Cupid, made her a goddess.
Today, Cupid and his arrows have become the most popular of love signs. And two hearts pierced by an arrow, Cupid’s arrow, most frequently depict love.

INGREDIENTS: 1 1/2 cups vanilla wafer crumbs 1/2 cup confectioners’ sugar 1/3 cup unsweetened cocoa powder 1/3 cup butter, softened 2 cups semi-sweet chocolate chips 3 (8 ounce) packages cream cheese 1 (14 ounce) can sweetened condensed milk 4 eggs 2 teaspoons vanilla extract
DIRECTIONS: Preheat oven to 300 degrees F (150 degrees C). In a large mixing bowl, mix together crushed vanilla wafers, confectioners’ sugar, cocoa and butter or margarine by hand. Press ingredients into a 9 inch springform pan. In the top of a double boiler, melt the chocolate chips, making sure that they are very smooth. In a large bowl, beat cream cheese until fluffy with an electric mixer. Gradually beat in condensed milk until smooth. Mix in melted chocolate, eggs and vanilla. Beat with electric mixer on low speed until the ingredients are thoroughly blended. Pour the filling into the prepared crust. Bake at 300 degrees F (150 degrees C) for 55 minutes. INGREDIENTS: 2 eggs 3/4 teaspoon vanilla extract 1/8 teaspoon salt 1/3 cup white sugar 1/2 cup all-purpose flour 1 tablespoon lemon zest 1/4 cup butter 1/3 cup granulated sugar for decoration
DIRECTIONS: Preheat oven to 375 degrees F (190 degrees C). Butter and flour 12 (3 inch) madeleine molds; set aside. Melt butter and let cool to room temperature. In a small mixing bowl, beat eggs, vanilla and salt at high speed until light. Beating constantly, gradually add sugar and continue beating at high speed until mixture is thick and pale and ribbons form in bowl when beaters are lifted, 5 to 10 minutes. Sift flour into egg mixture 1/3 at a time, gently folding after each addition. Add lemon zest and pour melted butter around edge of batter. Quickly but gently fold butter into batter. Spoon batter into molds; it will mound slightly above tops. Bake 14 to 17 minutes, or until cakes are golden and the tops spring back when gently pressed with your fingertip. Use the tip of the knife to loosen madeleines from pan; invert onto rack. Immediately sprinkle warm cookies with granulated sugar. Madeleines are best eaten the day they’re baked. Leftover madeleines are wonderful when dunked into coffee or tea. Variation: Chocolate Madeleines: Omit lemon zest. Increase sugar to 1/2 cup. Substitute 1/4 cup unsweetened cocoa powder for 2 tablespoons of the flour; sift into batter with flour. EDITOR’S NOTE: If you do not have a Madeleine mold pan, you can use mini muffins pan or whoopee mold pan instead. STAAR SCORES WILL NOT AFFECT COURSE GRADES FOR 2012 - 2013
Texas Commissioner of Education Michael Williams announced today that he will again defer the requirement that states that STAAR end-of-course examinations be counted as 15 percent of a student’s final grade in each subject tested. With this announcement, local

school districts have the option to move forward with the 15 percent rule for the 2012 - 2013 academic year. Last year, Katy ISD opted to participate in the deferral as the district adjusted to the rigor of the new STAAR test. “Katy ISD will again participate in the deferral, as we feel that this will allow both students and teachers an opportunity to better understand STAAR, while focusing on the subject matter and not just a final test score,” said Dr. Christine Caskey, Katy ISD Chief Academic Officer. As posted on the Texas Education Agency’s website: “Deferring the 15 percent rule for this school year relieves some of the pressure being felt in Texas districts as we continue the transition to a more rigorous accountability system,” Williams said. “This deferral also allows the Texas Legislature ample opportunity to address the various issues and concerns that have been expressed about implementation of the new system.” On Nov. 29th, Williams received letters from Gov. Rick Perry, Lt. Gov. David Dewhurst and Senate Education Committee Chair Dan Patrick urging deferral of the 15 percent rule. All three state leaders noted the rule would be an issue that would be discussed during the upcoming legislative session. The 2013 Katy ISD FFA Livestock Show and Rodeo
It made history in 1943 as the first of its kind to be established on a local school level and now the Katy Rodeo has grown to encompass three nights of rodeo entertainment for the whole family. 70 years later, the Katy Rodeo is one of the few remaining youth and professional rodeos still supporting FFA. In conjunction with the annual Katy ISD livestock show, the Katy Rodeo is an event that supports agricultural education within the Katy Independent School District. The livestock show, rodeo, carnival and parade draw sold out crowds from Katy and many of the surrounding areas.

The Katy Rodeo has something for all ages. The Katy Cowgirl Mounted Drill Team opens each night’s performance while a Katy ISD student performs the national anthem. Hosting a foreign exchange student is easier than you may think
During the 2012-2013 school year, students from all across the world will have the opportunity to travel to Houston and surrounding communities to spend the entire school year in the United States, learning and working with American Families. In order for the students to come to the U.S. they must have proper host families lined up. Now is a crucial time of year for the Ayusa program as local staff coordinators to find local host families for the upcoming school year. The Ayusa program is celebrating its 30th year this year and is responsible for more than 60,000 students from 75 different countries spending the school year in the United States. There are not many strict requirements that need to be met to host a student. The most important thing is that those who host students are doing so for the right reason; providing a loving experience and an exposure to American culture. There are a few basic requirements, of course. Anyone older than 25 and can provide food and shelter for a student fulfills the requirements of being a host family. There is a background check, reference check and an interview. Background checks have to be done on everyone over 18 living in the home. The host families have to be interested in it for the right reasons, the cultural exchange of learning from them and them learning from us. It’s the language, the cooking, the music, the food. The host family has to be genuinely interested. Once the host families and students are matched, Ayusa stays involved by monthly contacts with the families, students and quarterly contacts with the schools. Ayusa coordinators also handle the host family orientations and the student orientations. Group activities, such as community service and seeing things with the group of exchange students is also arrange throughout their academic year. With the current school year quickly coming to an end Ayusa’s local staff is busy looking for families for students for the 2012-2013 school year. Many families are needed and with the schools having deadlines and limits for foreign exchange students the earlier the better. It also gives the families and students time to get to know each other via skype, facebook, etc. while waiting for their year abroad to start. Katy Churches Combine to Celebrate Christmas around the World
The December 9th concert, “Christmas around the World,” was the nineteenth year that the congregations of Epiphany of the Lord Catholic Church and the Katy Stake of The Church of Jesus Christ Williamsburg Parish

of Latter-day Saints have combined for a Christmas concert. The collaboration began in 1994, at the invitation of Father Jack Dinkins, when new neighbors, the Katy Stake Center, was built across the street. This year’s choir was made up of 120 voices from both congregations, with the addition of a children’s choir of nearly 100, plus Epiphany’s small Contemporary Choir, as well as a community orchestra. The theme of the evening was introduced with flags from many countries being marched in while the congregation joined the choir for “O Come All Ye Faithful.” The Christmas music of the concert came from many nations: Italy, West Indies, Ireland, France, Ukraine, Spain, Switzerland, Germany, Austria, Philippines and Africa, as well as some English and American traditional tunes. There were several highlights. The Latin “O Magnum Mysterium,” gave the impression of a cappella beauty resonating in a Roman cathedral. “O Holy Night,” with the choir backing up Debbie Siebert’s soprano solo, brought audience members the Christmas glory they were hoping to feel. “Silent Night,” sung simply to guitar, as it was originally written, was essential. The two choirs and any who join them from the community, plan to continue the tradition for years to come, with next year marking two decades of singing together. Epiphany includes about 2,500 members in and around Katy. The Katy Stake includes 10 congregations in and around Katy, as well as north to Bear Creek and Copperfield areas and west into Austin County and beyond.

Fat Tuesday marks the end of Mardi Gras and the beginning of the Christian season of Lent. Many traditions celebrate Fat Tuesday with the eating of pancakes, giving the occasion the name ‘Pancake Tuesday’ or ‘Pancake Day.’ Pancakes contain flour, eggs and sugar, which were once forbidden rich foods during Lent. New Creation Church is reviving the old tradition of serving pancakes on Fat Tuesday with a Katy/Fulshear Community Pancake Supper. The public is invited to join us on Tuesday, February 12th, from 5 -7 PM at the Irene Stern Community Center for pancakes and the trimmings! A free will offering will be accepted.
