HOW TO CELEBRATE VALENTINE’S DAY ON A BUDGET Step 1 For your kids. Do what you can to make this day special, especially if it falls on a weekday. Cut red hearts out of construction paper and cover your child’s door with them, creating a “Heart Attack.” Or, leave clues on the paper hearts for a scavenger hunt around the house, ending up in the kitchen with pink pancakes for breakfast. Tuck a handmade Valentine in their backpack or lunch to discover at school. Give your kids an “I Love You” coupon book with cool trade-ins for a “Get out of chores free” card or a “Stay up 1/2 hour later” coupon. Step 2 For your kids’ classroom party. The dollar store is a wonderful place to purchase holiday-related items. Rather than pick up a pack of plain old paper punch-out Valentines, try something different. Buy a few packs of themed pencils or erasers (usually sold in packs of 8 or 12) to pass out. Look for inexpensive Valentine candies to contribute or volunteer to coordinate the games, which is often much less expensive than distributing treats. Step 3 For work. Most workplaces have some sort of treat table on Valentine’s Day. Do your part by bringing treats that you can make at home that are inexpensive yet plentiful. Try making marshmallow rice cereal treats or cake mix cookies instead of swinging by the bakery to buy expensive goodies frosted in red and white. Another option is to volunteer to bring the napkins, plates or cups for the office snack table. Often these items can be purchased for less than the cost of treats and you are still contributing. If your workplace is having an actual party, volunteer for the games and contribute your creativity instead of food. Step 4 For your spouse/loved one. Actions and words can convey much more to a loving spouse than expensive jewelry and fancy dinners. Tuck a love note into their jacket pocket, purse or lunch bag for them to find. Gifts can be inexpensive and meaningful without costing a lot. Purchase a new book by their favorite author with a coupon for a lazy uninterrupted afternoon for reading. Give them some bubble bath with the promise of a full hour in the tub, alone. A CD mix of their favorite tunes or an assortment of love songs will be a sweet and thoughtful gift as well. Write a love note written from the heart. Let your spouse/loved one know how much you appreciate all they do and how attractive you find them. Write anything else that is special and tender between you.

ORIGINS OF THE DAY OF LOVE

The origins of Valentine’s Day are shrouded in mystery. According to University of Notre Dame Professor Lawrence Cunningham, scholars have two main theories to explain how February 14th became synonymous with romance: Roman Feast of Lupercalia - This ancient pagan fertility celebration, which honored Juno, queen of the Roman gods and goddesses and goddess of women and marriage, was held on February 14th, the day before the feast began. During festival time, women would write love letters, also known as billets and leave them in a large urn. The men of Rome would then draw a note from the urn and ardently pursue the woman who wrote the message they had chosen. (Apparently, the custom of lottery drawings to select valentines continued into the 18th century, coming to an end when people decided they’d rather choose - sight seen - their valentines.) The Birds and the Bees? - In the Middle Ages, people began to send love letters on Valentine’s Day. Medieval Europeans believed that birds began to mate on February 14th. There’s also some controversy regarding Saint Valentine, for whom the famous day is named. Archaeologists, who unearthed a Roman catacomb and an ancient church dedicated to St. Valentine, are not sure if there was one Valentine or more. Today, the Catholic Church recognizes at least three different saints named Valentine or Valentinus, all of whom were martyred on February 14th - at least two of those in Italy during the 3rd century. The most popular candidate for St. Valentine was a 3rd century Roman priest who practiced Christianity and performed secret marriages against direct orders from Emperor Claudius II, who believed single soldiers were more likely to join his army. Legend has it that Valentine sent a friend (the jailer’s daughter) a note signed “From Your Valentine” before he was executed on February 14th in 270 A.D. (That phrase is still used prominently on today’s cards!). Early Christians were happier with the idea of a holiday honoring the saint of romantic causes than with one recognizing a pagan festival. In 496 A.D., Pope Gelasius named February 14th in honor of St. Valentine as the patron saint of lovers. In 1969, Pope Paul VI dropped it from the calendar. However, the blend of Roman festival and Christian martyrdom had caught on, and Valentine’s Day was here to stay.

Cupid is the most famous of Valentine symbols and everybody knows about the boy as a mischievous, winged child, armed with bow and arrows. The arrows signify desires and emotions of love and Cupid aims those arrows at humans, causing them to fall deeply in love. Cupid has always played a role in the celebrations of love and lovers. In ancient Greece, he was known as Eros, the young son of Aphrodite, the goddess of love and beauty. To the Roman’s, he was Cupid and his mother was Venus. There is a very interesting story about Cupid and his mortal bride Psyche in Roman mythology. Venus was jealous of the beauty of Psyche and ordered Cupid to punish the mortal. But instead, Cupid fell deeply in love with her. He took her as his wife, but as a mortal, she was forbidden to look at him. Psyche was happy until her sisters persuaded her to look at Cupid, as soon as Psyche looked at Cupid, Cupid punished her by leaving her. Their lovely castle and gardens vanished, too. Psyche found herself alone in an open field with no signs of other beings or Cupid. She wandered trying to find her love, until she came upon the temple of Venus. Wishing to destroy her, the goddess of love gave Psyche a series of tasks, each harder and more dangerous than the last. For her last task, Psyche was given a little box and told to take it to the underworld. She was told to get some of the beauty of Proserpine, the wife of Pluto and put it in the box. During her trip, she was given tips on avoiding the dangers of the realm of the dead. She was also warned not to open the box. But Temptation overcame Psyche and she opened the box. But instead of finding beauty, she found deadly slumber. Cupid found her lifeless on the ground. He gathered the deadly sleep from her body and put it back in the box. Cupid forgave her, as did Venus. The gods, moved by Psyche’s love for Cupid, made her a goddess. Today, Cupid and his arrows have become the most popular of love signs. And two hearts pierced by an arrow, Cupid’s arrow, most frequently depict love.

Get Ready for Summer: Diet and Fitness Tips

A healthy diet and the right fitness routine are key to looking and feeling healthier. Follow these tips during the spring and you’ll be in swimsuit shape once summer starts. In the springtime, the days get longer and the weather warms up. Swimsuit season isn’t far away. Start now in order to be ready to sport that summer bikini. Plan on two to three months to safely drop any extra pounds you put on over the winter and tone your muscles so you’ll be fit and confident in swimwear and other summer clothing. Get in shape for the summer The key to achieving a healthy body is having a plan, says Jim White, RD, a registered dietitian and personal trainer in Virginia Beach, Va. “When you have a plan for fitness and nutrition, you’re more likely to stick to it,” says White. Write down your “Healthy Body by Summer” plan and sign a contract with yourself to help you stick to your goal. Here are some strategies your diet and fitness plan can include: Eat five meals a day. It’s better to have five or six small meals a day than to skip meals or eat only two or three larger ones, says White, who is also a spokesman for the American Dietetic Association. Depending on how active you are, each meal should have 200 to 400 calories and contain protein and carbohydrates. By eating small amounts frequently, you will maintain your energy and stabilize your blood sugar levels. “You won’t be starving and overeat, especially late at night,” White says. Make healthy menu choices. A healthy diet is one that emphasizes fruits and vegetables. “During spring, fill up on non-starchy, seasonal vegetables such as broccoli, asparagus, and greens,” White says. To help curb hunger, have some protein at every meal, such as fish, chicken, and lean meats. Include some low- or non-fat dairy products such as fat-free milk or low-fat yogurt two or three times a day. Grill, bake, or broil your foods rather than frying them in fat. If you plan your meals around these healthy foods and leave out choices with empty calories, such as soda and chips, you’ll be better able to maintain a healthy weight.

Plan menus a week at a time. It’s easier to follow a healthy diet when you have the proper foods to cook with at home. If you’re busy during the week, prepare meals and snacks during the weekend and freeze weekday meals. That way you’ll control your portion sizes and also have healthy, lowcalorie foods ready for taking to work or when you’re short on time. Schedule aerobic exercise. Beginners should start with at least 20 minutes of aerobic exercise — such as walking, jogging, biking, rollerblading, or dancing — three times a week. As you build stamina, you can increase to 30 minutes and work up to 60 minutes. By summer, strive to do aerobic exercise for 60 minutes at least five times a week, White says. If you choose an activity you enjoy, you’re more likely to stick with it.

Weigh in. Every two weeks, weigh yourself first thing in the morning. Step on the scale after using the bathroom, and weigh yourself without clothes to accurately chart your progress. Watching your weight on the scale go down can be very motivating. However, it’s possible that you’ll lose body fat but not overall weight, so get a tape measure and wrap it around your waist at your belly button to assess your progress. The spring weather can be a great motivator to drop your winter weight gain and improve your health. Follow these simple diet and exercise tips and you’ll be in swimsuit-ready shape for summer. Build muscle. White also recommends weight training at least two days a week for at least 30 minutes each time. This helps build muscle and speeds up your metabolism. Women should start with 5- to 10-pound weights and do one set of 10 to 15 repetitions per exercise. Check in with a gym trainer who can ensure you’re doing the exercises correctly. As you gain strength, you can increase the number of sets per session. By 12 weeks, you could be doing several sets. “Most people recommend that you do one set per body part,” White says, but for efficiency he suggests full-body exercises. “That’s where you combine two exercises into one, like a lunge curl or a squat with an overhead shoulder press. That way you’re killing two birds with one stone and keeping the whole workout intense.” You can use bands, weights, kettlebells, dumbbells, or medicine balls — anything that creates resistance will improve your fitness. Find out more about losing weight by building muscle. Find a friend. Partner with someone who is also motivated to be swimsuit-ready come summer. “You will get better results if you exercise with a friend. This not only gives you camaraderie, but can provide some healthy competition,” White says. An experienced friend also can show you the fitness ropes.

Fudge Truffle Cheesecake 1 1/2 cups vanilla wafer crumbs 1/2 cup confectioners’ sugar 1/3 cup unsweetened cocoa powder 1/3 cup butter, softened 2 cups semi-sweet chocolate chips 3 (8 ounce) packages cream cheese 1 (14 ounce) can sweetened condensed milk 4 eggs 2 teaspoons vanilla extract Preheat oven to 300 degrees F (150 degrees C). In a large mixing bowl, mix together crushed vanilla wafers, confectioners’ sugar, cocoa and butter or margarine by hand. Press ingredients into a 9 inch springform pan. In the top of a double boiler, melt the chocolate chips, making sure that they are very smooth. In a large bowl, beat cream cheese until fluffy with an electric mixer. Gradually beat in condensed milk until smooth. Mix in melted chocolate, eggs and vanilla. Beat with electric mixer on low speed until the ingredients are thoroughly blended. Pour the filling into the prepared crust. Bake at 300 degrees F (150 degrees C) for 55 minutes. Preheat oven to 375 degrees F (190 degrees C). Butter and flour 12 (3 inch) madeleine molds; set aside. Melt butter and let cool to room temperature. In a small mixing bowl, beat eggs, vanilla and salt at high speed until light. Beating constantly, gradually add sugar and continue beating at high speed until mixture is thick and pale and ribbons form in bowl when beaters are lifted, 5 to 10 minutes. Sift flour into egg mixture 1/3 at a time, gently folding after each addition. Add lemon zest and pour melted butter around edge of batter. Quickly but gently fold butter into batter. Spoon batter into molds; it will mound slightly above tops. Bake 14 to 17 minutes, or until cakes are golden and the tops spring back when gently pressed with your fingertip. Use the tip of the knife to loosen madeleines from pan; invert onto rack. Immediately sprinkle warm cookies with granulated sugar. Madeleines are best eaten the day they’re baked. Leftover madeleines are wonderful when dunked into coffee or tea. Variation: Chocolate Madeleines: Omit lemon zest. Increase sugar to 1/2 cup. Substitute 1/4 cup unsweetened cocoa powder for 2 tablespoons of the flour; sift into batter with flour. EDITOR’S NOTE: If you do not have a Madeleine mold pan, you can use mini muffins pan or whoopee mold pan instead. The Arts at Cy-Christian High School Drama Takes Third in TAPPS Competition: The high school drama class recently completed a successful run of “The Great Pandemonium,” by Pat Cook, entertaining audiences with both in-class and evening performances. Since many of the roles were double cast and the performers took turns playing in the various shows, no two shows were alike, giving each performance an exciting “life of its own.” When the cast and crew took the show on the road to compete at the TAPPS Regional One Act Play Contest, the run culminated with an impressive third place finish. Director Dia Moore was pleased to report that in addition to the accolades for the show, the cast and crew won an extraordinary number of individual awards. Jordan Wandix was named Best Actor. Bailey Comeaux was named to the All Star Cast. Marya Gray, Ben Holman and Kaitlyn Miracle were named to

The Foundation will kick off its fifth “Salute to Our Heroes” event on February 9, 2013 at the Omni Hotel Westside Houston. “Salute to Our Heroes” honors the brave men and women who have served to preserve our freedom and liberty. Salute to Our Heroes has two purposes. First, to give tribute to our heroes soldiers serving now, veterans and those who have been wounded or killed in action. We want to honor those who have served their country.   The second purpose is to raise funds for scholarships for Cy-Fair ISD students. Each year we give three scholarships per Cy-Fair ISD high school, and the number of high schools is growing. It has been a challenge keeping up with the demand, but CFEF is dedicated to this mission.   The inaugural event honors Jersey Village High School graduate 1st Lt. Jeremy E. Ray, who was killed December 20, 2007 while serving his country in Iraq. A CFEF endowment was established in Jeremy’s memory by an anonymous donor. Last year the 1st Lieutenant Jeremy Ray Community Service and Peace Award was presented to Klein Funeral Homes & Memorials.   Following tradition, the event will have the Missing Man Table & Honors Ceremony. The table will have empty table settings with chairs leaning up against the table as though saved for someone. The table settings have a single red rose displayed in a vase in reminder of the bloodshed for our country and the vase was tied with a red ribbon - a symbol of the continued pledge to shed blood for our country. A slice of lemon on the bread plate is a reminder of the bitterness of the loss of comrades in arms; a bowl of salt to symbolize the tears shed by family members of lost loved ones and glasses turned upside down indicate no one will sit there. Last year’s ceremony was performed by the 75th Army Division Honor Guard and was proceeded by Taps performed by William Veenstra, Cy-Fair High School Senior. In response to reports of the influenza virus throughout the state, CypressFairbanks ISD is joining the Texas Department of State Health Services (DSHS) in urging students, staff and community members to receive a flu vaccination and taking additional steps to protect against the flu. According to the DSHS, each season’s flu vaccine provides protection against three strains of flu. Researchers with the U.S. Centers for Disease Control and Prevention (CDC) have reported that the current vaccine is well matched with strains of the flu in circulation.

“Since prevention of disease is the best way to protect the health and wellness of CFISD students, staff and community, the CFISD health services department supports the CDC and DSHS recommendation that all people aged 6 months and older be immunized against influenza,” said Bevin Gordon, CFISD director of health services. As of Dec. 3rd, the CDC reported that approximately 37 percent of the U.S. population aged 6 months and older had been vaccinated, with children showing the highest rate of vaccination (45 percent). The DSHS recommends a vaccination for everyone 6 months or older, especially those in the high-risk groups - children, those aged 65 and older, pregnant women and people with chronic health conditions. In addition to vaccinations, Gordon and the health services team are encouraging parents and students to protect themselves and others by washing their hands frequently, covering coughs and sneezes and staying home from school if they are exhibiting flu-like symptoms until they are feverfree for 24 hours without the use of fever-reducing medications. Smith Middle School is seeking community mentors to serve as positive role models for our students. Being a community mentor is extremely rewarding and only takes a commitment of 30 minutes to an hour a week to mentor/ meet with one of our 6th, 7th or 8th grade students.
