November 2013 THE THANKSGIVING TURKEY Of all the Thanksgiving symbols, the turkey has become the most well known. The wild turkey is native to northern Mexico and the eastern United States. The turkey has brown features with buff-colored feathers on the tips of the wing and on the tail. The male turkey is called a Tom and as with most birds, is bigger and has brighter and more colorful plumage. The female is called a Hen and is generally smaller and drab in color. The Tom turkey has a long wattle (a fleshy, wrinkled, brightly colored fold of skin hanging from the neck or throat) at the base of its bill and additional wattles on the neck, as well as a prominent tuft of bristles resembling a beard projecting downward from its chest. The turkey was originally domesticated in Mexico and was brought into Europe early in the 16th century. Since that time, turkeys have been extensively raised because of the excellent quality of their meat and eggs. Some of the common breeds of turkey in the United States are the Bronze, Narragansett, White Holland and Bourbon Red. Though there is no real evidence that turkey was served at the Pilgrim’s first Thanksgiving, in a book written by the

Pilgrim’s Governor Bradford, he does make mention of wild turkeys. In a letter sent to England, another Pilgrim describes how the governor sent “four men out fowling” returning with turkeys, ducks and geese.

THANKSGIVING ON A BUDGET Go for What’s in Season When planning your meal, first consult the calendar. This is no time for asparagus and artichokes. Buy produce in season and you will get much more for your money, not to mention livelier flavors. Brussels sprouts are at their peak in late November; farmers’ markets should have them in huge quantities, still on their stalks. (Serving them sliced rather than whole not only makes them more tantalizing but also helps them go further.) Fresh herbs have become available all year round, so it can be a better deal to buy a bunch rather than an expensive jar of the dried kind - fresh sage might be $1.99 compared with $6.50 for half an ounce dried, which could go stale by the next time you need it. Buy a Supermarket Bird In an ideal world we would all be eating heritage turkeys. They have outstanding texture and flavor and when we buy

them, we help preserve unique breeds. But they are anything but a bargain: A 12 to 14 pound bird, which feeds eight, from Heritage Foods USA goes for $159 including shipping or more than $10 a pound. Supermarket turkeys can be fine alternatives for less than $2 a pound. Just be sure to buy a free-range or organic turkey rather than an industrial one injected with flavored oil. Plus, brining will add flavor and improve texture in even the least expensive birds, all for about $2.29 for a big box of kosher salt, an ingredient that can be used to season the rest of the meal. Start From Scratch Some convenience foods are often ridiculously cheap, loaded as they are with high-fructose corn syrup and chemicals, yet they rarely taste better than homemade. To cut costs and ensure the tastiest of feasts, make your own piecrust, cranberry sauce and gravy rather than opening up a box or can. Instead of paying $8 for a single loaf from an artisanal bakery, bake up some dinner rolls with yeast, butter and flour for a little over $7. A bakerybought pecan pumpkin pie can go for upwards of $50, but a homemade version will run you $15 and $5 less if you omit the pecans.

Know When to Buy Canned or Frozen Some canned and frozen foods are fine alternatives to fresh. Canned pumpkin is one of the great American ingredients and the generic brands are as good as premium labels. You could make a pie using a fresh pumpkin for $5, but you would wind up with a more watery filling than one made from a $2.49 can. And frozen vegetables can be both superior to and cheaper than out-of-season fresh ones; a bag of Cascadian Farms flash-frozen baby peas is $2.69, compared with $3.99 a pound or more for fresh snow peas, the only kind you are likely to find in November. Don’t Be a Slave to a Recipe If you don’t want to spring for three kinds of herbs in your soup or stuffing, choose one. Or none. Nothing but salt and pepper is ever really indispensable. Substitute water for canned stock in a soup; use a slurry of flour and water to thicken your pan gravy rather than making turkey stock. Instead of investing in a can of shortening for a piecrust, substitute butter for the two tablespoons needed in the recipe. The great thing about Thanksgiving is that the whole really is much more than the parts. Cut corners where you have to and all anyone will notice in the end is a heaping plate. Make It a Potluck Don’t be embarrassed to ask for help. People are happy to pitch in and bring a dish or two and potlucks are trendy right now. Wine is not included in the budget here, so be open about suggesting a suitable-for-turkey California Zinfandel, like Rancho Zabaco Dancing Bull, which is less than $10. www.epicurious.com

GARDENING TIPS FOR NOVEMBER • Brown patch will continue to plague St. Augustine lawns as nights get cooler and humidity and rain continue. Discolored circles will appear in low areas almost overnight. Apply a fungicide recommended for brown patch according to label directions. Avoid walking through brown-patched turf. It spreads easily from the bottom of your shoes. If brown patch appears in the same lawn areas every year, add an inch or two of sandy topsoil to eliminate those low spots. • Fertilize St. Augustine turf with a winterizing formula to promote root growth over the winter months. Lower your lawn mover blades now and mow on a schedule that cuts no more than one-third of the grass blade away. • As chrysanthemums and other perennials finish blooming, cut flowering stalks to the ground to permit all strength to be used in making root growth. • Feed roses lightly, but avoid nitrogen fertilizers. Do not prune now. Keep up spraying program and water deeply.• Remove dead foliage and plant debris to help eradicate insects and disease organisms. Thin out and transfer volunteer seedlings. Beds made now will benefit by weathering before being planted. If soil is heavy, dig six inches deep, leave rough, cover with gymsum and strawy manure, water and allow to mellow. • Bananas are more likely to bear fruit if the trunk does not die back in winter. Cut banana stalks back to six feet, wrap with newspaper and burlap. • Continue mulching for winter. Build up a thick top mulch to protect roots from freezing and winter drying. Don’t throw away those pine tree needles; they make great acidic mulch for azaleas, gardenias and next Spring’s impatiens. • Place pansies in beds after weather has cooled. Use a little blood meat mixed in soil under each plant. • Now is the best time to plant trees and shrubs.

THE LONE STAR SYMPHONIC BAND The group recently recorded a Christmas themed CD, which will be available for purchase at all concerts this season. The Band is based in west Houston, with rehearsals and concerts held at CrossPoint Community Church off of Westgreen Blvd. and I-10 (The Katy Freeway). Five concerts are slated for the Lone Star

CY-LAKES STERLING STARS HONOR FIREFIGHTERS AND SUPPORT CANCER AWARENESS

The Sterling Stars Drill Team at Cy-Lakes High School organized a most memorable community service project for the month of September. In honor of the four fallen firefighters from the hotel fire in Houston on May 31, 2013, the team visited Houston Fire Department stations #68 and #51, each of which lost two firefighters in the tragedy. In addition to bringing kolaches and doughnuts to the fire stations, the Sterling Stars also presented banners filled with personal messages from Cy-Lakes teachers, family members and students to the firefighters and the banners are now hanging in each fire station. As a final gesture of appreciation, the drill team donated cutlery sets to each station with engraved silver plates donated by Crown Trophy. Ms. Annette Stark, director of the Sterling Stars said, “The firefighters were amazing! Many of the Sterling Stars said it was the most memorable thing they have done as a part of the team. It was certainly worth waking up and putting that uniform and smile on at 4 AM that morning. Many lives were touched on both sides.�

CY-LAKES TEACHERS BRING WORLD TRAVELS TO THE CLASSROOM

During the 2013 spring break, two social studies teachers at CyLakes High School took a trip that changed their lives and their teaching forever. Andrew White and Shelby Touchy, social studies teachers at Cy-Lakes, along with Katherine Cantu (Cy-Springs High School) and Frank “Ross” Flood (Aragon MS) were accepted by the World Affairs Council of Houston to travel to Saudi Arabia for ten days. The trip turned out to be much more than just a “sightseeing tour.” To begin with, the teachers lodged at the Ritz Carlton and enjoyed first class dining throughout their stay in the country. The people of Saudi Arabia were extremely respectful to everyone in the group and they felt as though they were treated as dignitaries. Not only did the teachers enjoy numerous places of interest, they learned many things about the culture of the country. For example, there are no movie theaters or alcohol in the country. Women are not allowed to drive. Healthcare and schools are free to everyone and during prayer time, which occurs five times daily, everything stops. Actually, during prayer time one day the group toured a castle. They noticed one of the members was missing and began to

CHIROPRACTIC HEALTH and WELLNESS CENTER worry. However, he soon showed up with several of the locals. They did not speak English and he did not speak Arabic, but the people did everything they could to help him locate his group. Andrew White commented that he had never seen people be so helpful to a stranger. So what does this trip to Saudi Arabia mean for Cy-Lakes? Mr. White and Ms. Touchy collaborated after they returned to school and developed lessons in country profiles for their students. Of course, the lesson about Saudi Arabia is very rich and comprehensive. Throughout her stay in Saudi Arabia, Ms. Touchy wore the traditional dress that is required for women in Saudi Arabia. Mr. White rode a camel and brought back souvenirs such as a McDonald’s bag with Arabic writing on it to show his students. But the story does not end there. Andrew White will be travelling to Beijing, China from November 7th through November 12th as part of the Education First cultural exchange program. He will return with more cultural experiences to share with the students of Cy-Lakes High School.

While in Galveston, the girls enjoyed swimming, a trip on the Bolivar Ferry and a visit to Fort Travis Seashore Park. Brownie Troop 16998 has spent time working on their World of Girls Journey and visited the Harris County Constable’s Office.

JEFF FURSTENBERG EAGLE SCOUT PROJECT Thanks to Jeff Furstenberg, 15 year old sophomore at Cypress Falls High School and group of fellow scouts from Troop 202, the Labay Middle School concession stand has been renovated and is ready for use. He did this for his Eagle project, a requirement for the highest and hardest rank to earn in Boy Scouts. For this project, the boys had to tear down all of the old paneling, cut new paneling, trim and windows, paint and install it all. It took 3 days to do the work (in 100 degree weather), but it took months to prepare. He had to fill out lots of paperwork, get it approved and had to earn money for the supplies. But it turned out well and Labay now has a usable concession stand. Before,
