November 2011 UPCOMING COMMUNITY EVENTS Community Garage Sale -

Saturday, November 5th, 7:00 AM – 12 Noon: It’s almost time again to clean out your closets for our Fall communitywide garage sale. You won’t have to haul your items far; the garage sale will take place in YOUR OWN garage! Just be ready to open your garage at 7 AM on November 5th. To help increase traffic to your home, we suggest that you place signs at the end of your street. Don’t forget to take them down afterwards. We’ll be creating a map of all the garage sales in the community. To be added to the map, please email your address to mevrard@canyongate. com and include a short list (five words or less) of the types of items you are selling. No additions will be accepted after Wednesday, November 2nd. The maps will be handed out at the onsite office located at SplashPad Texas the day of the event. Holiday Yard Decorating Contest -

December 4th – 10th: We will be having our annual “Holiday Yard Decorating Contest” during the week of Sunday, December 4th through Saturday, December 10th. No formal registration is required. Participants need to only keep their Christmas lights on every night during that week. One winner will be chosen from each section. Winners will receive a prize and a “Holiday Yard Contest Winner” sign to display in the front of their homes during the month of December. If you would like to help with judging, please contact Michelle at mevrard@canyongate.com or 713-783-6702. It will take at most an hour of your time to drive through your assigned section.

Cookies with Santa & Toys for Tots Drive Saturday, December 17th, 1:00 PM – 4:00 PM: Take your photo with Jolly St. Nick as we welcome in the Holiday Season! Located at the Westheimer Lakes North Clubhouse, we’ll be serving holiday treats & entertainment for children young & old! Don’t forget your camera! We’re hosting a Toys for Tots Toy Drive! Vandalism In Community Over the last few months, Westheimer Lakes has been the target of numerous acts of vandalism. The POA believes that some of this vandalism may be occurring from individuals in the community. When items such as street signs, park signs, windows, lights are in need of replacement as result of this vandalism, your POA bears this expense. As a reminder, please beware of your surroundings and should you see any suspicious activity in the community please contact the Sherriff’s department (281-341-4665) immediately.

Fireworks Prohibition in the Deed Restrictions The Board asks that residents refrain from celebrating holidays with the use of fireworks and fireworks display. This not only poses a nuisance and disturbance to your neighbors, it also leaves a messy aftermath to be cleaned up. Thank you for helping to keep Westheimer Lakes community fireworks free!

“Back to School” Pool Party 2011

It was a blast celebrating the return of the school year with our annual “Back to School” pool party. DJ Tommy entertained us with games, music and tons of prizes, including goody bags. Golf Balls Hitting golf balls is meant for the golf course only. It can cause damage not only to personal property but to people as well. Please respect your neighbors and refrain from hitting golf balls inside the community.

No Trespassing on Residents Private Property There have been complaints about children crossing through residents’ private yards to get to the facilities. Please let children know that they cannot cross private property. If this should occur more than once, we ask homeowners’ to contact the proper authorities.

Rules of the Road for Westheimer Lakes and Westheimer Lakes North This is a reminder…. The operation of motorized vehicles (ATV’s, dirt bikes, golf carts, etc.) other than mowing equipment on pathways or trails maintained by the Association or any other Common Area within the community is not allowed. According to the Texas department of public safety: • ATV’s are not allowed on a street and an operator crossing a street must have a valid driver’s license. • Golf carts are allowed on roads, but must obey all traffic laws including speed limits. If operated on a road the golf cart must have a license plate and the driver must have a valid driver’s license and proof of insurance. • Mopeds and motor assisted scooters are treated as regular bicycles. All vehicles used on roads must obey traffic laws including stop signs and speed limits. For additional information on this subject go to www.txdps.state.tx.us/msb/pages/Electric.htm. Basketball Goals Basketball is a fun sport that many like to play. As a reminder, please make sure that all basketball goals are kept in an upright position in your driveway. Basketball goals should not be left in the street at anytime or left on the side of your home when not in use. Leaving Basketball goals in the street can be a nuisance to drivers in the community and a hazard should there be a need for an emergency vehicle to gain access to your street. Please note this is also a violation of deed restrictions and if you receive violation letters regarding this matter you could be sent to the attorney and be liable for those charges.

Unwanted Solicitors NO SOLICITING signs are posted throughout the entrances of the community. If this continues to be a growing issue at your residence and would like to place a NO SOLICITING sign in your yard, you may certainly do so. Please be sure that the sign is placed by your front door and place only (1) sign at your home. If you feel in danger and think the solicitor will be in the community long enough to call the authorities, we suggest you call the local Police Department. Thank you and please be safe…

Hours of operation are 24/7 Sunday thru Saturday. The gate attendant’s office is located at the entrance to Canyon Gate at Westheimer Lakes on Idlewood Crossing Dr.

Canyon Gate EZ Tag Lane Access

Please be patient when approaching the EZ Tag barrier arm and obey the signs. After stopping at the stop sign, proceed slowly and wait until the barrier arm opens fully. Bumping or hitting the barrier arm causes costly and unnecesary repairs to the Association. If there is a car in front of you, please remain at the stop sign until the car has gone through the arm and the arm is closed. The barrier arm closes after each vehicle every time.

• EZ TAG LANE (RIGHT LANE) is for EZ Tag stickered vehicles ONLY that are residents and have registered at the onsite office. • Residents with a Westheimer Lakes vehicle windshield sticker must enter by way of the Gate attendant only. (2 lanes under the cover). • Visitors must enter through the visitor lane (far left lane) nearest the building and must be signed in by the Gate attendant. If the gate attendant is not on duty, the EZ tag lane is left open and visitors can enter the community. * Contact the SplashPad Texas onsite office at 832-222-2355 to register or for more general information *

CANYON SPRINGS AND CANYON FALLS SECTION UPDATES

The Canyon Springs and Canyon Falls Gates EZ Tag Entry lanes are for registered resident entry only via electronic EZ Tags (Harris County EZ TAG or Community fast pass tags for community use only). Electronic entry tags, including credit card size Access Cards and telephone home number registration services are available to all Canyon Springs and Canyon Falls residents at the SplashPad office from 9 AM until 5 PM, Tuesday through Saturday. The entry will remain open during the day while sales and construction of new homes are in operation and gates will close at night. The gated areas may be accessed three (3) ways; with EZ Tag or fast pass tags, Access Card (reader is located at the dial up box in the left lane) or you may dial the home code on the telephone 10 key pad. If someone is home to answer, access may then be granted. If you experience difficulty, the gate attendant’s office may be called by pressing #0001 on the 10 keypad. In the event the gates do not open, please call the gate attendant and they can open the gate during the evening hours of 7 PM until 7 AM. Report all gate malfunctions to either 832-222-2650 or at 832-222-2355, if no one is available, please leave a message with your name, phone number and a brief description of the situation. The gate repairs will be called into the gate service company.

Deed Restriction Process

1st letter: Notifying owner of violation and giving them (30 days) to cease and desist. (Legally no further letters can go out for this violation until the (30 days) has expired.) 2nd letter: After the (30 days) has expired from the 1st letter a 2nd letter notifying the owner of violation will be sent. (Please note that depending on what the violation is the board can send the account to the attorney when the (30 days) has expired from this letter.) 3rd letter: This letter is optional to the board and depending on what the violation is they do not always feel the need to send a 3rd letter. At any time you feel that you get a letter that is not warranted, please feel free to contact PCMI immediately to discuss at 281-870-0585.

IMPORTANT TRASH INFORMATION

Remember: Unless it is trash pick up day, your trashcans (and any bags of trash) must be hidden from public view. Please do not store your trashcans in front of your garage or on the side of your home – your neighbors don’t want to look out their windows and see your garbage either. Please be respectful and only place trash out on specific trash days.

WESTHEIMER LAKES TRASH PICK-UP SCHEDULE

Garbage collection days are: Wednesday and Saturday. Trash containers must be at curb by 7 AM on Wednesdays and Saturdays. * Holidays - when the pickup day falls on a holiday there will be no trash pickup that day and instead will be picked up on the next scheduled pickup day. Note: Saturdays – Heavy pick-up day. Recycling collection day is: Wednesday. Items collected: newsprint only, aluminum & bi-metal cans, plastics coded #1 & #2. Please rinse all food containers. PLANNING ON OUTDOOR HOME IMPROVEMENTS?

Please remember that when planning to do any outdoor home improvements, you must first apply for approval from the Architectural Review Committee by submitting a home improvement form. STREET LIGHT MAINTENANCE

To report a street light that is not working, call Centerpoint Energy at 713-207-2222. You will need to report both the number on the base of the pole and the street address. You may also report outages online at www.centerpointenergy.com/outage.

New Homeowners Must Register to gain access to amenities

All new homeowners, as well as current residents (if not already registered), are asked to register at the Westheimer Lakes onsite office located on the second floor of the SplashPad Texas building. This process ensures that all residents have access to the amenities such as the pool, automobile stickers and EZ Tag enrollment (no cost with a Harris County EZ Tag) for entry into the EZ Tag lanes at the gated sections. Some electronic tag fees are applicable. Your proof of resident ownership will be needed to properly complete your registration. The gate attendants maintain a list of residents that have registered at the onsite business office. Your visitors should also be reminded to stop and register with the gate attendant. Association’s property is under camera surveillance cameras are in place throughout strategic areas of the community. School News STANLEY ELEMENTARY SCHOOL BRANDON WEES OF STANLEY ELEMENTARY WINS UMDF VIDEO AWARENESS CONTEST

On Monday, September 19, 2011, the National Office of the United Mitochondrial Disease Foundation (UMDF), based in Pittsburgh, PA, announced the first, second and third place winners of its video awareness contest. Brandon Wees, age 6 of Katy, TX won first place and will be receiving an iPad from the UMDF. The UMDF decided to have the contest to spread awareness about mitochondrial disease. When Brandon’s mom, Kristi told him about the contest, he immediately wanted to do it. He came up with the idea of dressing as Professor B in the video and describing the correlation between mitochondrial disease and batteries by using Legos. Kristi said that she and her husband, Kevin have talked about how our mitochondria are similar to batteries. Brandon even typed his own script for the video on the family’s home computer. If you want to see the video, go to the UMDF Facebook page wall and scroll down the page. Brandon’s video is called 2011 Awareness Week Video 7. The reason that Brandon wanted to do the contest is because he wanted to help his sister, Ashlynn who at age 2 1/2 has symptoms of mitochondrial disease. The Wees family is currently undergoing testing to receive a diagnosis. Ashlynn has trouble digesting certain foods, has issues with sleep and fatigue. She has reactions to chemicals used in perfumes and detergents and shows signs of regression in speech and development when she has the reactions. What is mitochondrial disease? Mitochondrial diseases occur when the mitochondria in a person’s cells cannot convert food into life-

sustaining energy. For many, it’s an inherited genetic condition. For others, especially adults, the disease may be triggered by damaged mitochondria. There is no cure for mitochondrial disease. Research tells us that one in every 200 people carries the mutation that could develop into mitochondrial disease at some point in their life. We also know that mitochondrial dysfunction is at the core of many more common diseases like Alzheimer’s, Parkinson’s, ALS, Autism Spectrum Disorders and some cancers. Founded in 1996, the UMDF works to promote research and education for the diagnosis, treatment and cure of mitochondrial disorders and to provide support to affected individuals and families. Since its inception, the foundation has funded nearly $8 million in research, making it the leading non-governmental contributor of grants focused solely on mitochondrial disease. Award winning theatre troupe Studio VII from Seven Lakes High School captured more awards this past spring and summer. The Tommy Tune Awards nominated the school for numerous categories and won the top spot for Best Scenic Design and Best Supporting Actress, as Carley Nunn took the prize. Studio VII has rapidly risen to the top as one of the most successful programs in the state of Texas. The International Thespian Convention is held every year in Lincoln, Nebraska and 2011 witnessed the first ever winners from Seven Lakes High School as Abby Emery and Jane Weber conquered the world with their work in Stage Management and Theatre Marketing. These awards display the true dedication and prowess that the troupe has to offer. Fort Bend House of Hope - Bringing Healing and Restoration to Hurting Teens and Their Families House of Hope Fort Bend is a non-profit 501 (c)(3) charitable organization affiliated with National House of Hope. We are a Christcentered non-residential program working with troubled teens and their parents. Our six month program is set up to provide weekly counseling for the teens and parents. Our goal is to be a catalyst in healing and restoration in broken families. We use a modest sliding scale and books are an additional fee. We also present F.A.M.I.L.Y. Rules Workshops for schools and other groups. This program is for any faith, culture and ethnicity in assisting parents to “parent with purpose.” If your family is in chaos, then this program is for you! This family system is designed to start with children at the age of 5 through 18 teaching authority, consequences, affirmation and being consistent and correct as parents. JUNIOR HIGH GROUP PREPARE SCHOOL KITS The Junior High group from Living Word Lutheran Church in Katy held a packing session to prepare school kits to be used in areas of the world where kids are recovering from wars, tsunamis and other strife. The Katy Parents of Gifted and Talented is an advocacy organization dedicated to promoting quality educational services for the gifted students in the school district. ECI Project TYKE is a year round Early Childhood Intervention program (ECI) in the Katy Independent School District that specializes in working with children who need extra help. Slow Cookers are a Cook’s Best Friend By The Paula Deen Test Kitchen

More leisure time and a homemade meal? Save money on groceries, use less electricity, and enjoy better flavor? You bet! And with a slow cooker, you don’t even have to be there while your dinner cooks. With the invention of the original Crock-Pot® in the 1970s, we’ve been able to layer ingredients in our slow cookers, leave the house for work or play, and come home, hours later, to an inviting aroma-filled house and evening meal. Rival still manufactures the Crock-Pot®, but many other manufacturers are in the game with competitive models. The “crockpot” moniker has become an icon for any slow cooker. These days, choices are not limited to 2-temperature manual units; they also come programmable, with multiple time and temperature settings, countdown timers, built-in thermometers, and automatic temperature shifts to warm in case you are late getting home. There are slow cooker sizes and settings to fit your family’s individual needs. Though shape is not necessarily a deal breaker when purchasing, it is a consideration. A money-saving attribute of slow cooking is that tougher, less expensive meats are rendered meltingly tender and juicy. Larger roasts and whole chickens fit better into an ovalshaped model and will cook more evenly, although you can trim them to fit into a round one. It’s easy to adapt your favorite oven or stovetop recipes to slow cooker cooking. Regardless of yield, if your dish normally cooks in 15 to 30 minutes, you can count on 1 1/2 to 2 1/2 hours cooking in a slow cooker on High power or 4 to 6 hours on Low. If it takes 35 to 45 minutes, you should allow 2 to 3 hours on High power or 6 to 8 hours on Low. Main dishes like roasts and stews that cook up to 3 hours will take 4 to 5 hours on High or more than 8 hours on Low. For instance, Sweet Merlot Beef Stew should cook in about 4 hours on High or 8 to 10 hours on low; after you brown the meat, add everything to the slow cooker for the total cooking time, including the onions and mushrooms. *To eliminate excess fat, remove skin from poultry and trim excess fat from meats before cooking. Pre-brown meats, and drain before adding to the crockpot, especially ground meats. *Brown chops and roasts to caramelize the outsides for richer flavor and attractive appearance. For Low Country Smothered Pork Chops, prepare the chops as directed and layer in the cooker with the strips of green pepper, onion, garlic, half of the broth, and Worcestershire. Add more broth as needed to thin the gravy. *Vegetables, especially roots like potatoes, rutabagas, and carrots, cook more slowly than meats, so cut pieces uniformly and add them at the beginning. (It can take 8 to 10 hours on Low for a “baked” potato to cook until tender!) Italian Chicken and Vegetable Soup is a perfect example; just put all the ingredients into the slow cooker, reserving half a can of broth to add at the end of cooking, if necessary. Let it cook 2 to 2 1/2 hours on High or 4 to 6 hours on Low. *Most stews, soups, and other braised dishes require less liquid. If you end up with too much, pour it into a saucepan and reduce it until flavorful and thickened. If you need more liquid, it can be added at the end of the cooking time. *Cheese, milk, cream, and other dairy: Add dairy products close to the end of cooking.

*Spices tend to loose their power during long, slow cooking; be ready to re-season towards the end.

*Most slow cooker liners are removable, allowing you to fill it up to a day before cooking. Remove the stone liner and assemble the casserole in it; cover and refrigerate until you are ready to cook. Sweet Merlot Beef Stew Recipe

Courtesy of Paula Deen Ingredients 4 slices bacon, rendered 2 lb chuck roast, cut into 2” pieces 1 1/2 t Salt Freshly ground pepper 2 T Flour1/4 C Steak Sauce 1 1/2 C Red Wine 1 1/2 C Water 1 t fresh thyme 2 Garlic Cloves, minced 1 lb Pearl onions 1/2 lb. Button Mushrooms, chopped 2 T Fresh parsley, chopped

Directions In a medium saute pan fry bacon until crisp. Remove bacon and reserve. Brown beef slowly on all sides in the bacon fat. Sprinkle with salt, pepper and flour. Toss to coat evenly. Place beef in a heavy 4 qt. saucepan. Add reserved bacon (chopped), Paula Deen Merlot Steak Sauce, wine, water, thyme and garlic. Cover and cook over low heat for 1 hour. Add onions to stew and cook for an additional 30 minutes. In the final 10 minutes, add the mushrooms and parsley. Add additional water if necessary. Salt and pepper to taste. Serve along side crusty tuscan bread for dipping.
