The Williamsburg Hamlet Subdivision has cancelled their contract with the Harris County Sheriff’s Dept. and they will no longer have any kind of Deputy Patrol in their neighborhood during the day or night. This is a concern to the Williamsburg Parish Community considering we have always shared Contract Deputies in duties only (ours on the day shift with the Hamlet and the Hamlet’s on the night shift with the Parish). The Board of Directors of the Williamsburg Parish Subdivision have discussed this at length and realize with the night deputy being gone and the word getting around that this might possibly cause crime problems in the Parish, so the Board is placing this matter for vote to retain a night time deputy to come in and patrol in the evening. After our next meeting, we will place a notice on decision. RECIPES GARLIC PRIME RIB INGREDIENTS: 1 (10 pound) prime rib roast 10 cloves garlic, minced 2 tablespoons olive oil 2 teaspoons salt 2 teaspoons ground black pepper 2 teaspoons dried thyme

DIRECTIONS: Preheat the oven to 500 degrees F (260 degrees C). Place the roast in a roasting pan with the fatty side up. In a small bowl, mix together the garlic, olive oil, salt, pepper and thyme. Spread the mixture over the fatty layer of the roast and let the roast sit out until it is at room temperature, no longer than 1 hour. Bake the roast for 20 minutes in the preheated oven, then reduce the temperature to 325 degrees F (165 degrees C), and continue roasting for an additional 60 to 75 minutes. The internal temperature of the roast should be at 145 degrees F (53 degrees C) for medium rare.
