About Londis Fresh Service with a Smile Good service cannot be over emphasised. Your customers are the most important people you will meet in your daily work. It is imperative that you apply the following guidelines in every interaction with a customer. • • •

Always be courteous and smile to the customer over the service counter, first impressions last! Engage with the customer over their choices and point out the diﬀerent products on oﬀer. They may not know or be familiar with some items and this is a great way of selling to them. Learn the ingredients and uses of the Londis Fresh products and be confident in explaining them to customers. For example, if your store offers an at home catering service you should be able to promote this service to customers if the opportunity arises. Listen carefully and be attentive to the customers needs and wants. Produce and deliver the customers request as speedily as possible, but make sure quality standards are maintained. Direct customers to other areas of the store, not just where you work. Be aware of special offers that are also relevant to your area e.g. mineral and water offers, snack and confectionery offers. Treat every customer with the intention that you want them to return to your store after a positive experience.

Getting Started Running your Delicatessen Counter Below are some tips on how to Set up and Dismantle your Delicatessen Counter.

Setting up your Delicatessen Counter Steps: 1. 2. 3. 4. 5. 6. 7.

Lay out a clean deli liner on base of the Deli. Check dates of the stock of items in the Deli storage fridge. Using older stock first where applicable, assemble Deli as per Planogram. Update any old stock dates on todayâ&#x20AC;&#x2122;s Traceability sheets. If using any new stock, make note of the dates on your Traceability sheet. Make sure each item on display in the Deli is set up as per Planogram provided. Make a check of breads and top up where necessary, using fresh stocks, and freshly baked baguettes and sliced pans. Display breads to entice your customers. 8. Using Prep/Stock sheet, plan your products which will be needed for today and prepare as appropriate.

Dismantling your Delicatessen Counter Steps: 1. Empty all existing stock into clean stainless steel containers, cover with cling film and date code as appropriate. 2. Store all dated stock items in the designated fridge for use first thing next morning. 3. Cover all breads in airtight containers and return to the bread holding press. 4. Discard any stale items and note in waste log book. 5. Check stock levels of all delicatessan products, ensuring suďŹ&#x192;cient stock is available for use next day. 6. Remove bottom deli liner and shake out, clean as appropriate. 7. Clean all surfaces of the Deli including the glass areas and remove all garnishing and display trays. 8. Clean all Deli containers and replace in the Deli as per planogram, ready for immediate use by set up staff, the following morning. 9. Switch off and wipe down the panini grills or ovens with a damp cloth and remove any burnt on residue with supplied scraper or brush. Oil Lightly. Do not use detergents. 10. Leave Deli ready to use by the morning shift staff.

Sandwich Range The Londis Fresh Sandwich Range Traditional sandwiches with a modern twist. Our specially developed range of sandwiches allows you to offer your customers their favourite sandwiches with a touch of variety. • • • •

Crumbed Deli Ham & Irish Cheddar with Ballymaloe Country Relish. Roasted Breast Of Chicken with Sage & Onion Stuﬃng. Mediterranean Tuna & Mixed Lettuce with Sun Blushed tomato. Moroccan Sweet Chilli and Cheese Salsa Wrap.

When preparing a sandwich for a customer: • • • • • • • •

Always use fresh bread of customer’s choice. Be helpful to your customer by explaining the different options available. Ask the customer whether they would like dairy spread/ butter or mayonnaise on their sandwich. Engage with the customer over their choices and point out the diﬀerent products on oﬀer. Add ingredients as per customer’s request spreading evenly over the surface of the bread. Always ask your customer whether they would like a sauce or relish on their sandwich. Place the top slice on the sandwich but do not squash down too hard as this will spoil the appearance of the sandwich. Where applicable, ask your customer whether they would like their sandwich toasted. If so, follow the toasting guidelines. Neatly serve on Londis Fresh sandwich paper or appropriate packaging.

Sandwich Range Preparation Guidelines for Crumbed Deli Ham & Irish Cheddar with Ballymaloe Country Relish

Upon request spread the bottom slice of floury bap with butter or spread of choice.

Lay four slices of fresh tomato onto the cheese.

Spread one spoon of Country Relish onto the top slice of the bap.

If making for Grab & Go fridge, wrap in bloomer square packaging as per instructions. If serving from deli counter wrap in Londis Fresh parchment paper.

Enjoy

Place two slices of deli ham onto the buttered bread slice.

Add two half slices of red cheddar cheese to the ham.

Place one spoon of diced red onion neatly onto the tomatoes.

Add one small handfull of mixed lettuce onto the diced onion.

Finish by placing the top slice onto the top of the sandwich Bap.

Leaving uncut wrap the finished Bap as per Instructions.

Apply appropriate label to seal the paper folds with side facing aspect, as per diagram.

Place neatly on the Londis Fresh Grab & Go fridge shelf as per planogram for customerâ&#x20AC;&#x2122;s convenience.

Fold the left and right edges of the wrap over to 1/3 the way across.

Holding the folds raise the bottom edge of the wrap upwards to meet the top edge.

Tuck the top fold of the wrap tightly under the filling to seal it in almost like gripping a rolled newspaper.

Neatly and firmly roll the wrap up until you have a complete cylindrical tube.

Preparations Guidelines for The Special Classic

Upon request spread the first slice of bread with butter or spread of choice.

Lay four slices of fresh tomato onto the cheese.

Place two slices of deli ham onto the buttered bread slice.

Place one spoon of diced red onion neatly onto the tomatoes. Spread one spoon of Country Relish onto the second slice of Bread.

Add two half slices of red cheddar cheese to the ham.

Finish by placing the second slice onto the top of the sandwich.

Transfer to Merrychef and toast as per instructions. If sandwich is brought from the Londis Fresh Grab & Go fridge shelf for toasting, follow the instructions as supplied. Check Merrychef oven is fully heated to 250 degrees.

Set the microwave setting to 75% heat, oven will start automatically.

Place the toasty onto the teflon mat on the inner tray.

Close the door and set the time for 1 minute & 40 seconds.

When the toasting is complete the alarm will sound. Remove the toasty from the oven immediately.

Make sure to close the oven door immediately after every use to retain optimum heat.
