Leftover roasted sweet potatoes, peeled and mashed Leftover cranberry sauce 1 onion, diced 2 cloves of garlic, minced 4 cups vegetable or chicken broth 1 teaspoon ground cumin 1/2 teaspoon ground cinnamon Salt and pepper to taste
INSTRUCTIONS
Olive oil for sautéing
1. In a large pot, heat olive oil and sauté the onion and garlic until translucent. 2. Add the mashed sweet potatoes, cranberry sauce, ground cumin, and cinnamon. 3. Pour in the broth and bring to a boil. Reduce heat and simmer for 15 minutes. 4. Transfer the soup to a blender, blend until smooth (optional.) 5.
