pring's first blooms call for gin, and summer’s desert heat pairs beautifully with tequila, but there’s no better way to embrace fall’s shiver than with a rocks glass filled with whiskey.

While any Austin bar worth its salt carries at least a few bourbons and Scotches, and others like Nickel City and Seven Grand even specialize in rare bottles, a few unexpected spots have established themselves on the whiskey map. No pun intended, but we think that’s pretty neat. Bourbon Bar Tucked between the Hilton Austin’s lobby and its Cannon + Belle restaurant, this micro-bar has a singular focus, ignoring boozy distractions like beer, wine, and vodka. Instead, guests can try more than 60 whiskies, ranging from hard-to-find Japanese varieties like Yamizami to classic Kentucky brands like George T. Stagg. Turn any of them into an Old Fashioned, customized with a deep shelf of bitters in flavors such as black walnut, cinnamon, and plum. The Grackle The main bar is barely lit, the bathrooms are covered in graffiti, and the patio could double as a prison yard. Who could ask for anything more? Though decidedly a dive, this East Austin mainstay crowds an impressive array of more than 100 whiskey bottles on its makeshift shelves. With an intriguing selection of craft beers available on tap, boilermakers are de rigueur. Jack Allen’s Kitchen Known for its lavish brunch buffet and its family-friendly atmosphere, this chain may not be the most obvious place to steal a nip, but that didn’t stop beverage director David Toby from starting a barrel program in 2018. Currently, the collection includes selections from

WhistlePig, George Dickel, and Elijah Craig, as well as some exclusive Texas pours keeping with the eatery’s locavore spirit. All are available neat or on the rocks. Guests can stir them into a Boulevardier, Old Fashioned, or Manhattan for $2 more. Vince Young Steakhouse Given whiskey’s longtime friendship with steak, it’s only natural that this downtown steakhouse would have space for a few prime bottles. Still, the bourbon selection raises the bar. From nationally famous brands like Maker’s Mark to local faves like Garrison Brothers, the restaurant boasts a wide variety of pours — and price points. Sip it plain or in a cocktail like the potent Marshall with rye and sweet vermouth. Watertrade Slightly overshadowed by its eternally red-hot neighbor Otoko, this South Congress Hotel lounge can be enjoyed even if patrons don’t have a seat for chef Yoshi Okai’s coveted omakase. In addition to hosting bartenders Whitney Hazelmyer and Ricky Cobia’s considerable talents, the shelves runneth over with Japanese whiskies from makers like Hakashu and Ichiro. Plus, the bar is unbearably chic with glittering mirrors and a subtle ‘70s vibe. The Whiskey Bar at Pinballz Lake Creek No, that’s not a typo. Hiding among a neon blur of 3D video games, laser tag arenas, and bumper cars is a long bar stocked with a hefty selection of American, Japanese, and Irish whiskies. Settle in for a classic Sazerac or Vieux Carre, accompanied by charcuterie and house-made focaccia. Better yet, buy a ticket to one of the entertainment complex’s regular tastings hosted by owners Darren and Mikki Spohn.

he coming holiday season is a whirlwind of entertaining, and no one wants to be caught serving last year’s legumes with this year’s must-eat meat substitutes.

Whole Foods Market's fifth annual roundup of upcoming culinary trends can help. Compiled by the company’s buyers and resident buyers, it provides a roadmap into chic holiday dining and beyond. Regenerative agriculture Though the phrase may be new to the foodie lexicon, the various farming practices under the regenerative agriculture umbrella have been around for hundreds of years. As part of an overall movement towards transparency, savvy shoppers are now wanting to know if farmers use techniques that enrich soil, aid biodiversity, and improve watersheds. Brands are following suit, whether they make tortilla chips, cheese, essential oil, or wine. Flour power In 2020, wheat flours will be as passé as Uggs and Juicy Couture. Instead, bakers will be using alternative flours made from ingredients like teff (the grass traditionally used in Ethiopian injera), cauliflower, tigernut, or banana. These “super” flours add a protein and fiber oomph to the average muffin — and taste delicious no matter what. Foods from West Africa The iconic flavors of West African cooking are undeniably electric and shaped modern American cuisine. By all means, diners should happily dip fufu in peanut soup and enjoy the smokey sizzle of jollof rice. What they shouldn’t do is diminish the culinary heritage of hundreds of millions of people by labeling it a mere “trend.” Out-of-the-box, into-the-fridge snacking With the assortment of salty chips, deceptive nutrition bars, and pressed cheese logs available at most stores, it’s no wonder snacking has such a bad name. But Whole Foods says the category will soon see a renaissance in the refrigerated section. Think hard-boiled eggs with savory toppings, pickled vegetables, fresh dips, and drinkable soups. Even bars are getting fresher with the addition of raw fruits and vegetables. All of it is a boon to customers who get hangry in the afternoon. Plant-based, beyond soy Soy you later. The vegan staple is taking a back seat to creative alternatives in the upcoming year. The trend is especially taking hold in the supplement aisle where mung bean, hempseed, pumpkin, avocado, and golden chlorella are subbed in as a way to avoid the common allergen. Meat alternatives and

classic condiments are also getting into the act. Why bust out the Kikkoman when you could have Ocean’s Halo organic no soy soy-free sauce? Everything butters and spreads In the future, only goobers will dip their paws in a jar of crunchy Jif. Watermelon seeds and macadamias are being made into newfangled spreads. Even chickpeas are taking a break from hummus. The trend is partly being driven by the paleo and keto crazes, but there is also environmental impact as brands eschew the use of ingredients like palm oil that can cause pollution. Rethinking the kids’ menu Kids may be driving JoJo Siwa’s career, but when it comes to food, they have a much more sophisticated palate. Fermented, spiced, and umami dishes are no longer off the table and alternative flours are reshaping pasta. And while chicken nuggets and fish sticks may always be popular among small fries, now they are organic and made without breading. Babies are also becoming epicures with wild caught salmon and pea basil puree pouches. Maybe it’s all those repeat viewings of Ratatouille. Not-so-simple sugars Like flours, sweeteners are getting a makeover as syrupy reductions from monk fruit, pomegranates, and coconut take the baton from agave nectar, stevia, and honey. For a deeper, molasses-like flavor, bakers can try concentrates made from sorghum or sweet potato. And coffee drinkers looking for a cup-to-cup, non-glycemic replacement for regular sugar can try Swerve, a product that combines erythritol (a common sugar alcohol food additive) with ingredients from fruit and root vegetables. Meat-plant blends A Depression-era idea is finding new currency with home cooks bulking up burgers and meatballs with a variety of veggies and grains. Though Americans first adopted the practice as a matter of economy, today the trend is being guided by the benefits of plant-based diets. Adding mushrooms and other “fillers” to meat cuts fat and cholesterol and sneaks in additional nutrients — all without sacrificing the beefy taste. Zero-proof drinks Carbonated or not, nonalcoholic beverages can often seem flat. Now, a new generation of booze-less sippers is borrowing distilling techniques to give the market some buzz. From zero-proof “liquors” to beverages infuses with botanicals and hops, today’s mocktails are just as spirited as their more spirited cousins.

FAVORITE AUSTIN FASHION DESIGNER DEBUTS NEW HOME GOODS SHOP ON WEST 12TH STREET BY K AT I E F R I E L

T

here's no place like home — especially if Mallary Carroll has anything to do with it. The prolific fashion designer and owner of Good Company recently opened her first-ever home goods shop, the aptly named Good Company Home. Located 904D W. 12th St., just steps away from the first Good Company Carroll opened in 2017, the new home goods retailer "carries a variety of vintage and new furniture, rugs, gifts, and accessories." Carroll goes "coast to coast" to curate the shop, and customers will find everything from vintage glassware to pottery created by local ceramicist Isabel Glatthorn tucked among the treasures. Though it may seem like a leap for the fashion designer, who made a name for herself in local circles first as a go-to stylist at By George and then as owner of SBJ Austin, Carroll says home design was actually her first love. "Home decor has always been my first love and passion," she says in a release. "I love the stories behind each vintage piece and it is really a creative outlet for me, whereas designing clothing can sometimes be more practical." However, she didn't abandon design entirely for the new store. Exclusive to the store will be Good Company Home textiles, a new line designed by Carroll, which includes stylish pajamas, throws, and slipcovers. Like SBJ Austin, her Good Company Home line will be made in the U.S. using natural fabrics. And textiles aren't the only new offering. Carroll and team are also moving into the world of fabrication. Good Company Home offers custom tables, designed using reclaimed wood customized per customers' specifications, and will eventually move into apothecary. The product line is currently in development, but it will include lip balm, rose facial mist, scented candles, a facial serum, and more. Good Company Home marks the third store in three years for Carroll and her Good Company brand. ound Rock — Money magazine’s Best Place to Live in America for 2019 — is on a roll. Personal finance website WalletHub just crowned the Austin suburb the 10th fastestgrowing city in the U.S. and the second fastest-growing city in Texas.

WalletHub published its list of America’s fastest-growing cities October 14. To come up with the list, WalletHub compared 515 cities of varying sizes on 17 key measures of both growth and weakness over a seven-year period. Cities were judged in areas such as population growth, economic gains, and unemployment declines. Aside from landing at No. 10 among all 515 cities, Round Rock claimed the No. 6 spot for midsize cities (100,000 to 300,000 residents) with the highest growth. It took the No. 15 ranking in WalletHub's "sociodemographics" category and ranked 28th for "jobs and economy." Austin, too, shines on the list, ranking No. 15 overall and landing in the No. 1 spot for large cities with the highest growth. The title of fastest-growing city in Texas goes to Frisco. The DFW suburb claimed the No. 5 spot overall and ranked No. 3 among midsize cities. In the category for highest population growth, Frisco tied for No. 1 overall with McKinney and Sugar Land, plus three cities outside Texas. Frisco also tied for No. 1 in the category of highest job growth (6.88 percent); McKinney shared that ranking. Two other Texas cities, both in the Houston area, made WalletHub’s top 30: Sugar Land, No. 21, and Pearland, No. 27.
