Mexican Tortilla Pie

Ingredients
• 500g minced beef
• 500g cheddar cheese, grated
• 500g tomatoes, diced
• 2 teaspoons olive oil
• 1 large red onion, chopped
• 2 garlic cloves, crushed
• 125g sweet corn, drained and rinsed
• 2 teaspoons paprika
• 1 teaspoon ground cumin
• ½ cup coriander leaves, finely chopped
• 1 can kidney red beans, drained and rinsed
• 4 tortillas
• Salt and pepper to taste
Directions
• Preheat oven to 180 degrees Celsius. Heat oil in a frying pan over medium heat. Cook and stir onion and garlic until soft. Add minced beef and season with salt and pepper. Cook until browned.
• Add corn, paprika and cumin and stir until tender, and then add the diced tomatoes and red kidney beans. Reduce heat and simmer for 5 minutes. Add half the coriander and season with salt and pepper. Combine the mixture together well and set aside for 10 minutes to cool.
• Place a 6cm –deep, 20cm round pan on a baking tray. Place 1 tortilla, spread 1/3 of the mixture, and then sprinkle some cheese on the top. Repeat using the remaining layers. Sprinkle the remaining cheese on top.
• Bake for 15 minutes then set aside for 5 minutes before removing from pan. Garnish with chopped onions, diced tomatoes, and coriander leaves.
