It has to be said that Primitivo di Manduria has promoted the name and image of Apulian wines all over the world. This vine produces some important red wines with a great structure and high alcohol content, also in naturally sweet and strong versions. This strength is due to many “secret� ingredients: red soils with a lot of minerals which give Primitivo an intense ruby red colour; vineyards dating back several decades, often tiny plots of land cultivated using the traditional Apulian alberello method of training the vines; excellent exposure to sunlight and to the breezes from the Ionian Sea. This vine is the undoubted symbol of the entire production area. As well as producing the Primitivo di Manduria doc wines it has also been the inspiration for the twenty-sixth Apulian doc, Colline Joniche Tarantine, which

offers a rather different interpretation and is the result of the hilly terroir in the vast area of Laterza, Grottaglie, Mottola and Castellaneta. The wine scene in this area includes both indigenous local vines and international vines: Chardonnay and Verdeca for whites, Cabernet Sauvignon, and of course Primitivo for rosĂŠs and reds. There are the typical features of a limestone landscape also in this area, where the force of the water has cut deep gorges in the countryside, now a paradise for rare plant species including herbs, and for many birds of prey. In addition, there are the remains of a flourishing culture of cave-dwellers, of Byzantine religious architecture and iconography surviving in frescoes. These will allow the visitor to imagine the remote past of this area. For centuries the local economy has

been based almost entirely on agriculture: olive trees, vines and more recently citrus fruits (the clementines from the Gulf of Taranto are justly famous), and dessert grapes. Local gastronomy has simple linear features. The meats are excellent, and so are the cheeses and dairy products because the area is naturally suitable for animal husbandry. Home-made pasta is also a must here, and works well with the straightforward flavours of the local products and also with seafood. Taranto is well-known as a port and has always been able to boast production of oysters and mussels, the vital basis of the local cuisine which is almost all seafood. The so-called “City of the Two Seas” is also a must for visitors who should see the National Museum there, absolutely essential to understand “Magna Graecia” with its archaeological remains: these are precious witnesses to the bond between the territory and its vines and olive trees, a bond dating back thousands of years. The hinterland offers some uncommonly genuine rural landscapes, like the Crispiano area. Crispiano is known as “the town of a hundred farmhouses”, and these were built between the 16th and 17th centuries after the nearby cave dwellings were finally abandoned. Finally, there is the independent wine “island” of the vineyards at Faggiano and Lizzano, giving the name to the local doc wine. This stands out in the local scene dominated by Primitivo because it is mostly Negroamaro, along with other red grape varieties like Bombino Nero, Sangiovese, Montepulciano, Pinot Nero and Malvasia Nera. 131

Cignomoro Cignomoro Salento Bianco igt 2008 Grapes: Chardonnay 100% Alcohol: 13,50% Cost: euro 15,00 Intense golden yellow hue with hints of amber. A strong woody scent on the nose, with a delicate suggestions of pear. Unbalanced by excessive smoothness on the palate, but still pleasantly full-bodied and fairly persistent. Delightful ripe pear finish. An ideal wine with soft crusty cheeses.

Cignomoro was founded in 2008 near Carosino, and consists of a young team with varied experience at international level. As a new winery it has been able to install modern advanced wine-making technology which makes possible rigorous quality control from the vineyard to the wine. Hugo Rojo De Castro and Ciro Matichecchia are at the head of the winery, and aim to create wines which are attractive, enjoyable and fresh, because wine should not be “boring, or too serious”. This is the philosophy of the winery and it uses a modern cosmopolitan image to market the wines it produces from Primitivo and Negroamaro grapes. It is possible to visit the winery and buy its wines.

Cignomoro Salento Rosso igt 2008 Grapes: Negroamaro 100% Alcohol: 14% Cost: euro 9,50 Ruby red colour with purplish highlights. Lively scents of blackberry and withered roses. The palate confirms that this is a young wine, with a strong acidity still requiring aging and a structure not particularly defined. Its strong alcohol content makes it full and quite pleasant. Fairly persistent, and recommended with zampina di Sammichele al fornello.

Nico Casa Vinicola

Nico was founded in 1935 at Castellaneta, the town where silent film star Rudolph Valentino was born. The winery is managed by Giuseppe and Stefano Nico, and they have chosen this unforgettable actor to inspire the image of the winery and communicate their enormous love for this area and for its wine. Local native varieties and international varieties grow in the winery vineyards, and enjoy the excellent local conditions: a hill site, sea breezes, chalky volcanic soils. Visitors can see the atmospheric winery building built by their grandfather Giuseppe which has now been renovated. Nico Primitivo Puglia Rosso igt 2007 Grapes: Primitivo 100% Alcohol: 14% Cost: euro 9,50 Definite intense ruby red hue. Inviting suggestions of Ferrovia cherry, black pepper and coffee on the nose, with hints of rocket and myrtle. Intense and pleasantly tannic on the palate, balanced by a fairly good flavour which brings out the balance. Excellently persistent. Straightforward and agreeable. Suggested with roast boar. Comes close to excellence.

Nico Puglia Bianco igt 2008 Grapes: Falanghina 100% Alcohol: 13% Cost: euro 8,00 Intense brilliant straw yellow colour. Cyclamen, ripe banana and hawthorn blossom fragrances on the nose, with notes of lime flowers and acacia. Excellent freshness on the palate, due to a consistent flavour. Full-bodied, with a balance slightly tipped towards harshness. Delicately intense. Perfect accompaniment to raw salmon with extra virgin olive oil.

Vini Rudy Aquila Nera Puglia Rosso igt 2007 Grapes: Montepulciano 80%, Merlot 20% Alcohol: 13% Cost: euro 5,00 Ruby red colour with purplish highlights. Intense fragrant scents of forest fruits and vegetal notes of green beans on the nose, with hints of tarragon. A little disconnected on the palate but full-bodied with an intense echo of tobacco. Vegetal and spicy, this wine is perfect with bucatini with green beans and tomato sauce.

Perrini Organic Vine & Wine

Perrini is a family-run winery founded two centuries ago which produces high quality organic wines in the Castellaneta countryside. The real heart of the business is Masseria Carabella, where Tonia and her children Vito and Mila Perrini personally follow the entire production cycle. Negroamaro Bio Salento Rosso igt 2007 Grapes: Negroamaro 100% Alcohol: 13,20% Cost: euro 6,90 Pale ruby red hue with garnet nuances. Fresh scents of strawberries, withered flowers and orange marmalade on the nose, with spicy hints. Not very full-bodied, but quite balanced and intense on the palate. A vaguely vegetal finish. To serve with a stuffed free-range chicken.

Primitivo Bio Salento Rosso igt 2005 Grapes: Primitivo 100% Alcohol: 13,40% Cost: euro 12,00 Ruby red hue with strong purplish highlights. Fragrances suggesting intense echoes of cherry jam, musk, cacao and mineral notes. A little more discreet on the palate, lightbodied and delicate, with refined balance. Persistence is a little below par. Its excellent smoothness and development suggest accompanying with an onion calzone.

Primitivo Bio Vendemmia Tardiva Salento Rosso igt 2004 Grapes: Primitivo 100% Alcohol effettivo: 14% Total alcohol 19% Cost: euro 11,90 Ruby red hue with consistent purplish highlights. Agricola Guida Società Coop.

The Azienda Agricola Guida is in the countryside near Crispiano, known as the town “of a hundred farmhouses” because it has always been an agricultural area. The winery was founded over a century ago by a family which has always believed in the value and potential of the Ionian area. In 2002 Giovanni Guida and his wife Rosa gave a new impetus to the tradition they had inherited, by choosing to concentrate on quality and local native vines which express their territory, rather than on quantity. They select their own grapes and produce a limited quantity of wine, almost exclusively from Primitivo grown ad alberello and Fiano and Verdeca grown on trellises. Egiale Colline Joniche Tarantine Rosso doc 2008 Grapes: Primitivo 100% Alcohol: 15,50% Cost: euro 24,00 Ruby red colour with intermittent pleasant purplish highlights. Not very wide-ranging on the nose, with intense fragrances of cherry jam and leather. Intense and almost chewable on the palate. Good persistence with some not quite ripe fruits returning on the finish. Not quite blanced. Suggested with pappardelle and beans.

Egiale Colline Joniche Tarantine Bianco doc 2008 Grapes: Verdeca 100% Alcohol: 12% Cost: euro 12,00 Straw yellow hue with brilliant golden flashes. Suggestions of ripe banana and hawthorn blossom on the nose. Not up to expectations on the palate, thin and not very persistent. Average intensity and easy to drink in any case. Suggested with a green salad.

Egiale Puglia Bianco igt 2008 Grapes: Fiano Minutolo 100% Alcohol: 12% Cost: euro 5,00 Straw yellow hue with definite greenish highlights. Intense floral hints of jasmine and litchi blossom. A little weary on the palate, has lost some of its freshness. Thin-bodied, but fairly persistent with an unusual slightly bitter finish. Perfect with cavatelli and rocket.

Masseria Mita

The story of Masseria Mita began in 1700 with a Trappist convent, a beautiful building surrounded by stunning countryside. Salento Rosso igt 2007 Grapes: Negroamaro 100% Alcohol: 13,50% Cost: euro 8,00 Intense ruby red colouring. Fragrances suggesting blackberry jam, vanilla, tobacco and coffee on the nose, with hints of graphite and smoke, and the same minerals appear on the palate. It is smooth, full-bodied and quite balanced, with a fairly long fruity finish. The best accompaniment is a roast leg of lamb.

MarĂŹ Salento Rosato igt 2008 Grapes: Negroamaro 100% Alcohol: 12% Cost: euro 8,00 Light pink colour. Delicate fragrances recalling redcurrants and rose petals on the nose. Delicate on the palate, not very intense and thin-bodied. Fairly balanced and persistent. Fragile, should accompany very light foods like grilled vegetables.

Profumo di Terra Salento Bianco igt 2008 Grapes: Sauvignon 100% Alcohol: 13% Cost: euro 8,00 Brilliant straw yellow colour with greenish highlights. Confused fragrances on the nose, are not well defined. Definitely better on the palate, pleasantly fresh with a good texture and fairly good balance. Drinkable with a keen taste. Suggested with fried anchovies.

Azienda Agricola Domenico Russo

The Azienda Agricola Domenico Russo has been working since 1998 to enhance the local native Ionian vines like Primitivo and Malvasia, as well as growing Sangiovese and Chardonnay. The winery lies in the countryside near Ginosa and belongs to the Russo family, who love the land and follow all stages of wine production with great dedication. Magliolo Salento Rosso igt 2005 Grapes: Primitivo 100% Alcohol: 14,50% Cost: euro 8,50 Garnet red hue with slightly orange highlights. Intense perfumes of cherries preserved in alcohol, with cacao butter, aniseed and liquorice. Persuasive on the palate, with a delicate balanced texture: fine tannins give an excellent acidity as a pleasant contrast to the robust alcohol content. A delicate and persistent spicy finish. Suggested with sirloin.

Marrate Puglia Rosso igt 2004 Grapes: Sangiovese 70%, Primitivo 30% Alcohol: 13% Cost: euro 5,50 Garnet red with soft orange highlights. Developed scents of leather, cacao and cinchona on the nose. Smooth on the palate, not very structured with memories of tannins. Delightful echoes of cherry on the finish, and averagely persistent. Fragile body, but elegant at times. Ideal with medium ripe cheeses with forest fruit fragrances.

Verdiano Puglia Bianco igt 2008 Grapes: Malvasia 50%, Chardonnay 50% Alcohol: 12% Cost: euro 4,50 Quite intense golden yellow colouring. Scents of ripe apricot and straw with floral notes. Good ripe fruitiness on the palate, pleasant with a fairly good texture and intensity. Not very persistent, and the balance swings towards smoothness. Ideal with primo sale cheese.

Pruvas Soc. Coop. Agricola Raggio di Sole Salento Bianco igt 2008 Grapes: Chardonnay 100% Alcohol: 11,50% Cost: euro 3,00 Pale straw yellow colouring with gold highlights. Intense perfumes of green apple, lime and bread crust. Fresh and full-bodied on the palate. Perlage is fine and quite persistent. The finish is medium persistent with toasted echoes. To serve with fresh cheeses and as an aperitif.

Pruvas was founded in 1956 by Senator Gaspare Pignatelli, and now with 500 members it is one of the largest cooperatives in the Ionian area. The cooperative is headed by Antonio Cavallo and the entire production cycle is managed directly, from the vineyards to wine-making. This makes it possible to produce wines which are a good expression of the sun-drenched hill territory of Grottaglie. The labels use local native varieties like Aglianico and Primitivo, alongside international varieties like Cabernet and Montepulciano for reds, and Chardonnay for whites and spumante. Primitivo Dolce Salento Rosso igt 2008 Grapes: Primitivo 100% Alcohol effettivo: 14% Total alcohol 17% Cost: euro 4,00 Ruby red colour with definite garnet highlights. Cherry jam, roasted coffee, prunes and balsamic notes on the nose. Good intensity and a fair structure, smooth on the palate and alcohol not completely balanced by acidity and flavour. The medium persistent finish is lightened by delicious echoes of coffee. To accompany coffee-flavoured almond cakes.

Manzoni Tarantino Bianco igt 2008 Grapes: Manzoni Bianco 100% Alcohol: 12,50% Cost: euro 4,00 Clear bright straw yellow colour. Clear and intense fragrances of peach, chive, hawthorn and white musk on the nose. Full-bodied and fairly intense on the palate. A pleasant finish reminiscent of wild Mediterranean, not too persistent. A hint of harshness and a robust aromatic acidity suggest serving with linguine and lobster.

Tenuta San Barbato Montefellone Salento Rosso igt 2007 Grapes: Primitivo 100% Alcohol 13,50% Cost: euro 8,00 Intense ruby red colour with soft amaranthine nuances. Simple on the nose, with scents recalling black cherries, vanilla and nutmeg. Has a fairly good structure and is intense on the palate, with the balance tipped slightly towards hardness. Good persistence. Ideal with a soup of pulses and pearl barley.

Tenuta San Barbato originated on the fertile Brindisi and Francavilla Fontana plain from a farming tradition, inherited by brothers Leonardo and Francesco D’Urso. They have built on the work started by their grandfather Pietro and installed modern technology in order to obtain quality wines. The winery is near Grottaglie and has decided to use music in the vineyards: Primitivo, Negroamaro, Sangiovese and Fiano Minutolo are immersed in the notes of Mozart, Beethoven, Bach and other composers. The idea comes from some university research into the positive interactions of this kind of sound on grape ripening and quality. The winery building is surrounded by centuries-old olive trees, and is a lovely place to visit.

Pietraia Primitivo di Manduria doc 2003 Grapes: Primitivo 100% Alcohol: 14,50% Cost: euro 20,00 Intense garnet red hue. Fragrances suggesting cherries preserved in alcohol, cut hay, black pepper and toasted almonds. Full-bodied on the palate, with strong tannins from the wood, only slightly softened by the robust alcohol content. Average persistence. Recommended with tripe rolls.

Symphònia Salento Rosso igt 2007 Grapes: Negroamaro 100% Alcohol: 13% Cost: euro 10,00 Intense solid ruby red hue. The first fragrances on the nose are those of the vine, leather and hay, then blackberry jam, vanilla and black pepper. Good contrast between smoothness and the strong flavour on the palate. Fairly full-bodied and persistent, with a wonderfully mineral finish. To accompany stewed tripe.

Gianfranco Fino Viticoltore

Gianfranco Fino studied at the Locorotondo school of oenology and started a brilliant career in winegrowing when he bought a vineyard near Manduria in 2004. The alberello vines are about fifty years old, and he produces a Primitivo di Manduria doc with a very suggestive name, Es. The aim is to bring out the basic instinct of this variety by using a term from Freudian psychology. The immediate success of this venture led him to expand production to include Negroamaro, also used alone for a very limited production. Gianfranco and his wife Simona aim to achieve the highest quality, and make no compromises. It is possible to visit the winery by appointment.

Es Primitivo di Manduria doc 2007 Grapes: Primitivo 100% Alcohol: 16,50% Cost: euro 35,00 Impenetrable ruby red and purple colour. The first fragrances are cherries preserved in alcohol followed by spicy scents - vanilla, mace and paprika walnuts, cacao and Mediterranean herbs. Pleasant on the palate, balanced and agreeable. Strong and long-lasting echoes of fruit, pepper and liquorice. Excellent with complex meat dishes, and sublime on its own in a moment of intense reflection.

Jo Salento Rosso igt 2007 Grapes: Negroamaro 100% Alcohol: 16,50% Cost: euro 35,00 Ruby red colour tending towards purple. The first scents on the nose are fresh fragrances of black cherries and cherries, followed by vanilla, eucalyptus and flint. Decisive on the palate, slightly sweet, with a weighty structure and a good correspondence between aroma and flavour. Still a little aggressive, should be served with very mature and complex cheeses.

Tenuta Trefontane Civiltà Mediterranea Tarantino Bianco igt 2008 Grapes: Verdeca 100% Alcohol: 12% Straw yellow hue with greenish highlights. Fragrances on the nose reminiscent of unripe banana, almond and acacia flowers. Delicate and fresh on the palate, but with a good balance. Fairly full-bodied with a delightful floral finish of average persistence. Suggested with pepata di cozze.

The Castellaneta family name has been linked with wine-growing for over eighty years. It was Nicola Castellaneta who founded Tenuta Trefontane near Taranto, and his grandson Nicola is now at the head of the winery. Over half of the wine produced is obtained from organically grown vines, mostly local native varieties like Primitivo, Negroamaro and Malvasia Nera. The land slopes down towards the coast almost to the Ionian Sea - and benefits from the sea breezes. The winery takes care of the entire production process from the vineyards to bottling, and much of the wine made is for the international market. Fabula Nera Salento Rosso igt 2007 Grapes: Primitivo, Negroamaro Alcohol: 13,50% Sharp ruby red colouring. Light scents of leather on the nose, with toasted and spicy notes. Fairly full-bodied on the palate with a strong tannic astringency. Slightly harsh, but with character. Perfect with wild boar salumi from Noci.

Not persistent enough for its excellent aroma and flavour, but still above average. A good accompaniment to buckwheat ravioli with a meat filling.

Cantina e Oleificio Sociale di Lizzano

The Cantina Sociale di Lizzano was founded in 1959, in an area with a long tradition of wine-growing. The cooperative is headed by Rita Macripò and is the only producer of the local doc, with about 400 members who contribute to the production of quality wines. These are obtained almost essentially from local native varieties like Primitivo, Negroamaro and Malvasia Nera, with the addition of Sangiovese and Montepulciano for reds and rosés, Pinot Bianco and Trebbiano Toscano, with Malvasia Bianca, for whites and spumante. Mille Una Genius Salento Rosso igt 2006 Grapes: Primitivo 100% Alcohol: 13,50% Prezzo: euro 42,00 Cost: euro 42,00 Intense garnet red colouring. Fragrances of black cherries in alcohol, dried fruit, allspice, sultanas and chocolate. Almost like treacle on the palate, filling the mouth with heavy fruitiness. Smoothness is definitely dominant. Fairly persistent. Good with chocolate nougat.

Mille Una was established in 2001, in the heart of the Taranto countryside. The name of this winery led by Dario Cavallo conjures up fascinating distant lands, whereas the wines produced really enhance the local area by concentrating almost exclusively on the local native varieties like Primitivo. The vineyards are near the sea, in the countryside around the towns of Sava, Lizzano and Maruggio, and are cultivated using the alberello basso system. The average age of the vines is 30 and some are even 60 to 70 years old. The rich red soil gives the grapes an intense red-purple colour, and this is a feature also of the well-structured wines with their complex bouquets and flavours. Cantine Soloperto

The hard-working Soloperto family and the history of Primitivo di Manduria are closely linked. The family realised the potential of this variety and took part in promoting the regulations for the production of Primitivo di Manduria doc. The winery is headed by Ernesto and Sabrina Soloperto, and is still important when it comes to appreciating wine in this area. Cantolio Manduria

In 1962 a small and courageous group of growers established this cooperative. At present there are over 700 members headed by Raffaele Pignataro, and they deliver their grapes to make Primitivo di Manduria doc, and their olives to make extra virgin oil. The grapes come from the provinces of Brindisi and Taranto, where they enjoy the sun and Ionian Sea breezes. The pride of the winery is its new and innovative solar energy plant: since 2008 the winery has used only alternative energy sources in its production processes. Restyling of its image and buildings, including an excellent wine shop have made Cantolio into a favourite winetasting destination.

Balanced on the palate, with a good balance between the robust alcohol content and pleasant tannins and good flavour. Fairly persistent, and ideal with red lasagna.

Scents of bilberry jam, cacao, cut hay and mace on the nose, with hints of hydrocarbons. Its weighty structure fills the palate with pleasantly intense smoothness and flavour. Excellently balanced, this is a very harmonious wine. It has a lingering persistent finish with a lot of mineral and spicy echoes. Approaches excellence. Complex fragrances of yeast, acacia, pineapple, cut grass and savory. Intense and smooth on the palate and fairly balanced with a definite trace of citron giving a lovely freshness. The Pirro Varone winery was founded ten years ago in the Manduria area, known for its generous grape harvest. The winery name recalls this generosity, because Pirro Varone is remembered as a local benefactor of the 16th century. Tannins are still slightly lively on the palate, and need softening, but this is also full-bodied and fairly intense. Deliciously fruity, and at times winy, not very persistent. Ideal to accompany peppers stuffed with meat.

Le Vigne Rare Salento Bianco igt 2008 Grapes: Fiano 100% Alcohol: 13% Cost: euro 14,00 Straw yellow colouring with greenish highlights. Scents of unripe banana and floral notes on the nose. Quite warm and persistent on the palate, reminiscent of citron. Fairly balanced, but body is a little uneven and the bitterish finish is not quite refined. Goes well with fried mix of fish .

The Accademia dei Racemi project was the idea of Gregory Petrucci, and aims to enhance the Apulian vines. Felline Primitivo di Manduria doc 2006 Grapes: Primitivo 100% Alcohol: 14% Cost: euro 9,50 Lovely brilliant ruby red colouring and garnet highlights. Fragrances of blackberries, black pepper, vanilla and notes of eucalyptus on the nose. Warm, full-bodied and intense on the palate, with some elegant tannins which are still a little exuberant. Suggests an interesting process of maturation. Good smoothness and definite tannins make this perfect with tagliatelle alla bolognese.

Rufiano Salento Bianco igt 2008 Grapes: Fiano Minutolo 100% Alcohol: 13,50% Cost: euro: 9,50 Pale straw yellow colour. Strong and pungent on the nose, with scents of pear and freshly cut grass. Still a little aggressive on the palate, with a fairly good body and intensity. An averagely persistent and interesting liquorice final. Definitely has a touch of citron, and goes well with raw seafood.

Tenuta del Barco

Tenuta del Barco was created in 2004, a combination of the experience acquired by Barone Pizzini in Franciacorta and in Apulia, and the wine-growing potential of the Ionian area. The intention was to create a kind of experimental “workshop” for producing quality native wines. The vineyards are cultivated using only organic methods and are dominated by Primitivo, Negroamaro, Malvasia Nera and Fiano Minutolo. Delicate scents reminiscent of just-ripe cherries, carobs, coffee and notes of cedar. Full-bodied with delightful tannins, well contrasted by its high alcohol content. Scoglio del Tonno Salento Bianco igt 2008 Grapes: Malvasia Bianca 50%, Fiano 30%, Garganega 20% Alcohol: 12,50% Cost: euro 8,00 Straw yellow with strong greenish-gold highlights. Le Fabriche

Alessia Perrucci started her winegrowing adventure in the late 1990s at Le Fabriche, a farm complex from the 1600s. Her aim was to work with native vines and create quality wines. Delicate scents of toasted almonds, soft toffee, cinnamon and plum jam. Round, intense and delicious on the palate. Fairly balanced with a good structure. Excellent echoes of soft toffee on the persistent finish. Ideal to serve with chocolate almond nougat.

Negroamaro Salento Rosso igt 2006 Grapes: Negroamaro 100% Alcohol: 13% Cost: euro 8,00 Intense ruby red colour. Inviting scents of cherries preserved in alcohol, toasted almonds, butter, cinnamon and liquorice. Full on the palate, with pleasant balance and structure. There is a good correspondence between flavour and aroma, and this wine can be appreciated as a straightforward expression of its variety. Softly tannic with a reasonable alcohol content. Ideal with fava bean purée and cardoncelli mushrooms.

Masseria Ludovico

Masseria Ludovico is a typical example of a traditional rural complex still found on the Murgia hills near Taranto, a reminder of the agricultural past of this chalky red land. The farm is headed by Giangiuseppe Ludovico and since 2003 has also been a winery using modern oenological methods: from gentle pressing to fermentation at controlled temperature, to maturing in oak casks. Cantina Dolcemorso

One priority of Dolcemorso has always been enhancement of its surrounding territory, and the winery was one of the principal promotors of the twentysixth Apulian doc, Colline Joniche Tarantine, in the area between Mottola, Castellaneta, Laterza and Palagianello. After half a century of intense activity the cooperative, headed by Giuseppe D'Onghia, now has over 200 members at the heart of wine production using native vines like Verdeca, Primitivo and Negroamaro. Tenuta Giustini was founded at Pulsano in 2005, in the heart of a historical area with beautiful countryside. The owner, Maria Grazia Longo, had been given the land by her Aunt Maria, and wanted to make her aunt's dream come true. The winery has 13 hectares of vineyards and devotes a lot of attention to native varieties like Negroamaro, Malvasia Nera and Primitivo. Scents are mainly ripe fruits and withered violet, with spicy notes on the finish. Definite intensity on the palate, with clear flavours. Tannins are still rather weighty, but promise well for aging. The finish is rather short, with notes of cloves and ginger. Perfect with grilled pork sausages.

Patù Salento Rosso igt 2008 Grapes: Primitivo 100% Alcohol: 13,50% Cost: euro 12,00 Intense ruby red hue with very slightly purplish highlights. Scents of violets and tulips on the nose, followed by bilberries and spicy vanilla notes. Lively tannins underline a balance which still requires aging and development over time. A bitterish finish, and average persistence. Ideal with a meat pizza rustica.

L'Arcano Primitivo Dolce Naturale Rosso igt 2008 Grapes: Primitivo 100% Alcohol: 13% Total alcohol: 17% Cost: euro 18,00 Lively ruby red hue. Intense fragrances on the nose recalling black cherries preserved in alcohol and geraniums with balsamic notes. Intense on the palate with a good structure. Contrasts are not well-defined and do not make the wine absolutely balanced. Delicious spicy notes on the medium-persistent finish. Suggested to accompany sanacchjudere tarantini.

Wine-growing has been important in the San Marzano area, a strip of desert where vines are grown ad alberello, requiring careful hand-rearing and boundless passion. Sud Primitivo di Manduria doc 2007 Grapes: Primitivo 100% Alcohol: 14% Cost: euro 8,90 Ruby red hue with purplish highlights. Fragrance of blackcurrant, withered rose, mace and vanilla on the nose, with vegetal hints. Velvety on the palate, and delightfully smooth. Slightly sweet and not quite balanced due to a shy hint of acidity. Pleasant altogether, and ideal to accompany a pork carré in crosta di pane.

F Negroamaro Salento Rosso igt 2007 Grapes: Negroamaro 100% Alcohol: 14,50% Cost: euro 24,00 Intense impenetrable ruby red hue. The wide range of scents includes cassis, bay leaves, paprika, pine and dried flowers. Its weighty structure and good balance make an immediate impression on the palate, with lively, elegant tannins together with fleshy fruitiness. Average persistence and wonderfully fresh finish recalling sweet spices. Approaches excellence. To serve with wild boar's stracotto.

Vinicola Savese Tradizione del Nonno Primitivo di Manduria doc 2007 Grapes: Primitivo 100% Alcohol: 16% Cost: euro 16,00 Very deep ruby red colour with vaguely purplish highlights. Scents of dried figs, tamarind, vanilla, aniseed and an underlying hint of goudron and cacao on the nose. Intense with a good structure on the palate. Fairly balanced, with an average persistence and echoes of liquorice. Ideal with blue-veined cheeses.

More than a hundred years ago, Gaetano Pichierri began to grow Primitivo, and then to make wine in the winery at Sava. The Pichierri family has the same passion today and proudly continues the age-old tradition of “homemade wine” with Vinicola Savese, using modern processing methods for the grapes and improved cultivation methods for the vines. The winery has made continual improvements and has expanded its commercial horizons to the international market. Totally enveloping on the palate, with a grandiose structure and plenty of smoothness, but perfectly balanced due to a great flavour and tannins. Endless finish. Vittoria Salento Rosso igt 2008 Grapes: Negroamaro 100% Alcohol: 12,50% Cost: euro 4,50 Pale ruby red colour, but bright. Interesting and unusual on the nose, with fruity scents, hydrocarbons and black pepper. Light on the palate and a little thin on structure, but drinkable. This is an easy wine to drink daily with rather simple foods like stewed turnip tops. Rather short persistence.

Simple on the nose, with suggestions of fruit and flowers and the light notes of leather and hay which are typical of this vine. A fairly thin body, but with good balance and pleasant fruitiness. A straightforward wine reflecting its terroir. Very good with beef tea and cardi.

Drago Salento Rosato igt 2008 Grapes: Negroamaro 100% Alcohol: 13% Cost: euro 6,50 Pale cersauolo pink colour with fragrances of strawberry, banana and withered violet on the nose. Clean and light on the palate with a fairly good balance. Good texture with a slightly fleeting finish. Pleasant liquorice flavours. Ideal with a coda di rospo soup.

Annamaria and Francesca Bruini have been managing the family farm since 2002, competent and professional in their approach. The wine-growing tradition goes back a long way and the two sisters live with their families in the old family house, surrounded by a splendid view of trellis vineyards. The centre of Vetrere production is the beautiful wine cellar cut directly into the volcanic rock below, dating back to the 1800s, with its imposing vaulted ceilings and an atmospheric room where the wine is stored in casks. Wine made here reflects the heritage of the area, and is based almost exclusively on the local native varieties like Primitivo, Negroamaro, Malvasia Nera and Fiano di Puglia. Aureo Vino Spumante Brut 2008 Grapes: Fiano Minutolo 100% Alcohol: 12,60% Cost: euro 10,00 Sparkling intense straw yellow colouring with gold highlights. Dense persistent perlage, with delicate scents of bread crust, ripe pineapple and dried flowers with citrus and balsamic notes. Round on the palate, developing freshness and flavour. Fragrant citrus notes on the long finish. To serve with cavatelli with tomatos and chards sauce.

Passaturo Salento Rosso igt 2008 Grapes: Malvasia Nera 100% Alcohol: 14% Cost: euro 7,50 Lovely ruby red colour with purplish highlights. Intense fragrances of ripe black cherries on the nose, of vanilla and black cumin. A little less intense on the palate, but full-bodied. There is a good contrast between the strong acidity of this young wine and the rich smoothness derived from its high alcohol content. The finish is slightly bitterish and not very persistent. Ideal with breaded lamb cutlets.

Barone Pazzo Salento Rosso igt 2007 Grapes: Primitivo 100% Alcohol: 14% Cost: euro 12,50 Intense garnet red colour. Intense fragrances of black cherry jam on the nose, with walnut husk, withered violets and nutmeg. Full-bodied and fairly balanced on the palate, with a good texture and a pleasant vein of acidity giving a lot of freshness. Delicate on the finish and quite persistent, recalling oregano. With cavatelli ai quattro formaggi.
